Abstract
本发明公开了一种组合物,包括姜科植物可食部位、甘草、枸杞和青梅果;所述组合物可以作为底方添加入酒水、糖果中,还可用与米粉、粗粮粉类混合通过3D打印技术做出主食,也可以应用与中药和/或保健品中。本发明与现有技术相比,具有口感丰富,风味独特,最大限度地保存了各组分的原色风味和生物活性成分,营养价值高,满足广大消费者对食品多元化的需求,可以提高人群接受度,适合大规模的推广应用。

技术领域
本发明属于食品领域,涉及一种组合物及其应用。
技术背景
青梅,又称果梅、酸梅等,蔷薇科植物,主要分布在我国的广东、浙江、江苏、广西、云南、福建、湖南、台湾等地。青梅果中营养物质丰富,含有所有人体必需氨基酸,尤其富含有机酸,维生素含量丰富,其中维生素B2含量可达苹果、梨、桃等其他水果的数百倍;青梅果中钙、磷、铁、锌等矿物质的含量丰富,钙磷比合理。青梅果中含有多种功能成分,如绿原酸、3-氧-咖啡酰奎宁酸、咖啡酸、顺式/反式对香豆酸、阿魏酸等多种多酚类化合物;还有一定数量的黄酮类化合物、苄基β-D-葡糖苷等糖苷类化合物;在青梅果汁浓缩物中,发现了三萜酸、齐墩果酸、熊果酸、植物甾醇、谷甾醇、三萜烯醇、羽扇豆醇和α-香树精等多种三萜类化合物。
除了作为休闲食品,青梅果更宝贵的是其药用价值。近年来,
国内外学者利用现代研究方法,对鲜梅和其他加工形式青梅果的药理学作用及机制进行研究发现:(1)青梅果汁浓缩物具有抗菌、抗病毒作用;(2)青梅果甲醇提取物的正己烷相对癌细胞的生长有很强的抑制作用,从中分离出一种新的化合物,这种化合物对癌细胞系Hep-2、SW-156、HEC-1-B和SK-OV-3都有非常显著的抑制作用,但对正常细胞的生长几乎没有影响;(3)青梅果能够调节糖、脂肪和尿酸的代谢,从而起到预防或辅助治疗这些代谢性疾病的作用;(4)青梅果的水溶相提取物能够促进成骨前体细胞MC3T3-E1的增殖和分化,从而预防骨质疏松;(5)青梅果可以通过激发非特异性免疫以增强机体的免疫功能等作用。
青梅,不论在传统医学中的应用,还是在现代健康食品和天然药物成分开发中,其药用价值和保健价值都非常值得重视。但因青梅果中含有氰基糖苷、野樱苷、苦杏仁苷和其极酸的味道,所以大部分的青梅果都是在加工成蜜饯类青梅果、青梅果汁、梅酒、梅子酱(醋)后才被食用的,为了延长食用期,制作过程中还需添加防腐剂,不仅使青梅果的风味和营养成分受到破坏,而且过量食用不利于人体的健康,同时目前青梅制品,终端产品少,产品口味单一,
不能满足广大消费者对食品多元化的需求,人群接受度低。
发明内容
鉴于以上问题,本发明的目的是提供一种口感丰富,风味独特的食品组合物,该食品组合物最大限度地保存了各组分的原色风味和生物活性成分,营养价值高,满足广大消费者对食品多元化的需求,可以提高人群接受度,适合大规模的推广应用,具有良好的应用前景和市场价值。
为了解决上述技术问题,本发明提供了一种组合物,包括姜科植物可食部位、甘草、枸杞和青梅果;
所述的姜科植物的可食部位为姜、砂仁、益智仁、高良姜、山奈、草果和姜黄中的至少一种;优选为姜、高良姜和草果中的至少一种。
优选地,所述组合物包括如下重量份的组分:姜科植物可食部位1-4份、甘草0.5-2.5份、枸杞1-2份、青梅果1-3份。
优选地,本发明的上述组合物还包括2.5-3份的菊科植物的可食部分;所述的菊科植物的可食部分为小蓟、菊花、红花、菊苣和蒲公英中的至少一种;进一步优选为小蓟、菊花和红花中的至少一种。
优选地,本发明的上述组合物还包括2-5份的大枣、酸枣仁和黑枣的至少一种。
优选地,本发明的上述组合物还包括0.5-3份的芸香科果实/果皮;所述的芸香科果实/果皮为佛手、柚子、橙子、柑橘、陈皮、花椒、椿叶花椒、香橼和桔红中的至少一种;进一步优选为佛手、椿叶花椒、香橼和桔红中的至少一种。
优选地,本发明的上述组合物还包括0.5-1.5份的胡椒科植物果实,所述的胡椒科植物果实为为黑胡椒和荜茇中的至少一种。
进一步优选地,所述胡椒科植物果实的粒径小于100nm。
优选地,本发明的上述组合物还包括如下重量份的组分:蜂蜜1-4份、膳食纤维2-5份、食源性短肽0.05-0.5份、功能性营养素0.01-0.05份和矿物质0.001-0.01份。
进一步优选地,所述的膳食纤维为低脂果胶、高脂果胶、苹果果胶、柚皮果胶、蓝莓果胶、菠萝果胶、低聚异麦芽糖、低聚乳糖、低聚木糖、大豆低聚糖和羧甲基纤维素中的至少一种;更进一步优选为琼脂粉。
进一步优选地,所述的食源性短肽为海洋胶原肽、海洋骨原肽、大豆蛋白肽、小米低聚肽、玉米肽、乳清蛋白肽和卵白蛋白肽中的至少一种;更进一步优选为海洋胶原肽。
进一步优选地,所述的功能性营养素为维生素A、维生素D、维生素E、维生素K、维生素C、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、肌醇、牛磺酸、左旋肉碱、硫辛酸和生物素中的至少一种。
进一步优选地,所述的矿物质元素为钙、磷、钾、钠、镁、氯、铁、锌、硒、铜、锰、碘、氟、铬和钼中的至少一种。
同时,本发明还提供了一种组合物的制备方法,包括以下步骤:
S1、剔除青梅果的果核,获得青梅果肉;
S2、将步骤S1获得的青梅果肉和其余的组分物混合干燥,制得干品组合物;
S3、将步骤S2制得的干品组合物进行粉碎,即得本发明所述的组合物。
优选地,步骤S2中所述的干燥为红外干燥,干燥温度为50-
70℃。
优选的,步骤S2中所述的干品组合物的含水量低于7.5%。
优选地,步骤S3中所述的粉碎的粒径为100-500nm。
本发明还提供了上述组合物的应用,所述组合物可以作为底方添加入酒水、糖果中,还可用与米粉、粗粮粉类混合通过3D打印技术做出主食,也可以应用与中药和/或保健品中。

益智仁,具有温脾止泻摄涎,暖肾缩尿固精的功效。

山奈,具有温中化湿,行气止痛的功效。
草果,具有燥湿除寒、行气止痛、祛痰截疟、消食化积的功效。
姜黄,具有破血行气、痛经止痛的功效,药理研究表明,姜黄有保肝、利胆、抗菌、抗炎、抗肿瘤、抗艾滋病、抗生育、降血脂、抗病原微生物及抗病原虫、加快创伤愈合、抗突变等作用;对消化系统有保护作用;增加心脏冠脉血流量;抗凝血和抑制血小板聚集。
甘草,具有清热解毒、祛痰止咳、防治肿瘤的功效。
枸杞,具有养肝,滋肾,润肺的功效。
大枣,具有补脾和胃,益气生津,调营卫,解药毒的功效。
黑枣,具有补中益气,养胃健脾,养血壮神,润心肺,调营卫、生津液,悦颜色,通九窍,助十二经,解药毒,调和百药的功效。
酸枣,具有养肝,宁心,安神,敛汗的功效。
酸枣仁,具有养肝,宁心,安神,敛汗的功效。
小蓟,具有凉血止血,祛瘀消肿的功效。
菊花,具有散风清热、平肝明目、清热解毒的功效。
菊苣,具有降低血糖、通便利尿、清肝去火的功效。
蒲公英,具有清热解毒、消肿散结、利尿通淋的功效。
佛手,具有和胃止痛、化痰止咳、疏肝理气的功效。
花椒,具有有温中行气、逐寒、止痛、杀虫等功效。
香橼,具有利膈止呕、和中化痰、疏肝理气的功效。
桔红,具有理气宽中,燥湿化痰的功效。
黑胡椒,具有有温中下气,消痰解毒的功效,药理研究表明:
胡椒碱在镇痛、镇静、抗炎、抗惊厥、杀虫、抗癌等多方面具有生理活性。
荜茇,具有温中散寒、下气止痛的功效,药理研究表明:荜茇有抗肿瘤、降脂、抗菌抗炎、抗抑郁的作用,胡椒碱可以抑制脂肪的形成,具有治疗与肥胖相关疾病的潜在活性。
膳食纤维具有抗腹泻、预防某些癌症、治疗便秘、解毒、治疗胆石症、降低血液胆固醇和甘油三酯、降低成年糖尿病患者的血糖和控制体重等功效。
本发明所述的食源性短肽为低聚肽,是指利用生物酶工程技术从动物或植物蛋白中分离提取的一类小分子蛋白质。其平均分子量在1000Dalton以下,易溶于水,对酸、热稳定,可以不经消化而直接吸收,生物利用率高,在吸收和利用上优于游离的氨基酸和完整的蛋白质,可应用于蛋白质补充食品中。
如无特殊说明,本发明中所述的姜科植物的可食部分为姜的根茎,阳春砂、绿壳砂和海南砂的成熟果实,益智仁的去壳果仁,高良姜和山奈的根茎,草果的果实和姜黄的根茎;所述的菊科植物的可食部分为刺儿菜的地上部分,菊的头状花序,毛菊苣和毛菊苣的地上部分或根,蒲公英和碱地蒲公英的全草;所述的芸香科果实和/或果皮为佛手的果实、青椒的成熟果皮、花椒的果实,枸橼和香圆的成熟果实,橘及其栽培变种的外层果皮。
本发明的有益效果是:
(1)本发明的组合物,精选食品和药食同源性植物原料,通过科学配伍姜科植物可食部分的辛,青梅果的酸、枸杞的甘和甘草的特殊气味,口感丰富,气味独特,最大限度地保存了各组分的原色风味和生物活性成分,营养价值高,可作为基础组分应用于食品领域,满足广大消费者对食品多元化的需求,提高人群接受度,适合大规模的推广应用,具有良好的应用前景和市场价值。
(2)本发明的组合物,取食品和药食同源的优势,不会给身体带来副作用,利用甘草调和各原料的营养与药效,具有暖胃、活血、降脂减重,护肝养颜,抗疲劳的作用,长期食用可以预防和/或辅助治疗肥胖和高脂血症等慢性疾病。
(3)本发明的组合物还添加菊科植物的可食部分、大枣、酸枣仁、酸枣、芸香科果实/果皮、胡椒科植物果实、蜂蜜、膳食纤维、食源性短肽、功能性营养素和矿物质,增强了本发明的保健功能,能迅速补充人体流失的氨基酸、矿物质等营养物质,改善细胞新陈代谢、对细胞具有靶向修复作用,从而修复受损机体,改善身体状态,具有抗疲劳,增强机体免疫力的作用,同时使口感更加丰富,风味独特。

实施例1
一种组合物,包括如下重量份的组分:姜1份、甘草0.5份、枸杞1份、青梅果1份;
该组合物的制备方法,包括以下步骤:
S1、剔除青梅果的果核,获得青梅果肉;
S2、将步骤S1获得的青梅果肉和其余的组分物混合,在50-70℃下红外干燥,制得水分含量低于7.5%干品组合物;
S3、将步骤S2制得的干品组合物进行粉碎,粉碎至粒径为100-500nm,即得本发明所述的组合物。
实施例2
一种组合物,包括如下重量份的组分:姜4份、甘草2.5份、枸杞2份、青梅果3份;
制备方法如实施例1。
实施例3
一种组合物,包括如下重量份的组分:姜2.5份、甘草1份、枸杞1.5份、青梅果2.5份;
制备方法如实施例1。
对比例1
一种组合物,包括如下重量份的组分:姜1.5份、甘草0.3份、枸杞2份、青梅果2份;
制备方法与实施例1的不同之处在于干燥的方式不同,本实验采用低温烘干。
对比例2
一种组合物,包括如下重量份的组分:姜1份、甘草0.3份、枸杞2.5份、青梅果3份;
制备方法与实施例1的不同之处在于干燥的方式不同,本实验采用冷冻干燥。
1、口味实验
将本实施例1-3、对比例1-2得到的组合物,按1g/kg添加到面粉中制作面包,随机选取100人进行口味评分试验,以打分形式作比较,5分制,分值越高说明越好,结果见表1。

由表1可知,本发明的组合物口感丰富,气味独特,受试人群对本实施例1-3的口感与味道接受程度较高。同时本发明利用甘草调和各原料的营养与药效,丰富口感的同时,使营养成分更易被人体吸收利用。
2、食品保存期加速实验
取山梨酸钾(购自武汉秉德生物科技有限公司,货号24634-61-5)、本实施例1-3和对比例1-2得到的组合物,按1g/kg添加到面粉中制作面包,并将上述制得的面包置于温度为37℃,湿度为75%的容器内进行加速实验,根据GB4789.3-94进行面包中大肠菌群的近似值的测定,以食品中活菌数达到108cfu/g,认定为食物开始腐败,结果发现,含山梨酸钾的面包的保存时间为48h,实施例1-3组面包的保存时间分别为46h、48h和50h,而对比例1和2的面包保存时间为40h和42h。由此可知,本实施例1-3的组合物抑菌效果好,可以延长食物的保存时间,是很好的山梨酸钾等食物防腐剂的替代品,同时,本发明的组合物,取食品和药食同源的优势,长期食用不会给身体带来副作用,利用甘草调和各原料的营养与药效,丰富口感的同时,使营养成分更易被人体吸收利用。
3、辅助降血脂功能检验方法
实验依据:保健食品检验与评价技术规范(2003)
试验方法:选取SD大鼠100只,体重18-22g,随机分为10组,每组10只,其中一组给予正常饲料喂养,其余大鼠均饲喂高脂饲料,连续15天后禁食16小时,取尾血,测定血清总胆固醇(TC)、甘油三酯(TG)和高密度脂蛋白胆固醇(HDL-C)水平,根据血清总胆固醇(TC)水平选择造模成功的实验动物80只。
将模型动物称体重,按照TC水平,随机分成8组,试验1组灌胃实施例1得到的组合物,试验2组灌胃实施例2得到的组合物,试验3组灌胃实施例3得到的组合物,试验4组灌胃对比例1制得的组合物,试验5组灌胃对比例2制得的组合物,试验1组至试验5组的剂量均为0.1g/kg/d;阳性对照组灌胃辛伐他汀片,剂量为0.1g/kg/d;模型对照组灌胃相应剂量的饮用水,正常对照组正常饲料喂养,其他均继续喂高糖高脂饲料。将大鼠每天灌胃1次,连续灌胃4周,实验结束称体重禁食16小时,测定血清TC、TG、HDL-C水平,血清TC、TG和HDL-C水平检测结果见下表。

由表2-4可知,实验1-5组血清总胆固醇、甘油三酯、高密度脂肪胆固醇三项指标检验中血清总胆固醇和甘油三酯两项指标阳性,可以判定实验组1-5的组合物辅助降血脂功能动物实验结果为阳性,即本发明的组合物具有辅助降血脂的功效,其中,试验1-3组相比试验4-5组的效果相对明显,说明本发明原料配方及其制备方法对组合物辅助降血脂的功效存在一定的影响;同时通过4周的灌胃实验后发现,试验1-3组SD大鼠的体重增加了0.3-1%,试验4和5组SD大鼠的体重增加了3.-8%,模型对照组增重了8-10%,阳性对照组SD大鼠的体重增加了3-5%,正常组增重3-8%。
因此,本发明的组合物,科学配伍青梅果、枸杞和姜科植物的可食部分,并利用甘草调和各原料的营养与药效,加工过程中采用红外干燥,最大限度地保存了各组分的原色风味和生物活性成分,
营养价值高,同时更易被人体吸收利用,具有暖胃、活血、护肝养颜的作用,同时,可以降脂减重,长期食用可以预防和/或辅助治疗肥胖和高脂血症等慢性疾病。

一种食品组合物,包括如下重量份的组分:高良姜3.5份、甘草1.5份、枸杞1.2份、青梅果1.5份、小蓟2.5份、大枣5份、佛手0.5份;

一种合物,包括如下重量份的组分:姜黄2.5份、甘草1份、枸杞1.5份、青梅果2.5份、小蓟2.6份、酸枣仁3份、椿叶花椒3份、黑胡椒0.5份;
制备方法如实施例1,不同之处在于,黑胡椒粉碎的粒径为90nm。
将本实施例4-7得到的组合物,按1g/kg的比例添加到糖果、饮料和饼干等休闲食品的原料中、制作风味糖果、风味饮料,风味饼干等休闲食品,所得产品口感丰富,气味独特,同时由于原料中青梅果、姜科植物可食部分、枸杞、黑胡椒等的抗菌消炎作用,可以有效的延长食物的保质期,替代休闲食品中的防腐剂,有利于人体健康。
实施例8
一种组合物,包括如下重量份的组分:草果2.5份、甘草1份、枸杞1.5份、青梅果2.5份、小蓟2.5份、黑枣2.5份、桔红1.5份、荜茇1.5份、蜂蜜1份、琼脂粉5份、海洋胶原肽0.05份、硫辛酸0.01份和锌0.001份;
制备方法如实施例1,不同之处在于,荜茇粉碎的粒径为80nm。
实施例9
一种组合物,包括如下重量份的组分:益智仁2.5份、甘草1份、枸杞1.5份、青梅果2.5份、蒲公英2.5份、黑枣2.5份、桔红1.5份、荜茇1.5份、蜂蜜4份、柚皮果胶5份、小米低聚肽0.5份、维生素A0.05份和硒0.01份;
制备方法如实施例1。
4、动物抗疲劳试验
选取SD大鼠30只,体重18-22g,分为三组,试验1组喂食本发明实施例8制得的组合物,试验2组喂食本发明实施例9制得的组合物,每天50毫克,另外,10只喂食重量含量5%蔗糖水作为对照组,每天50毫克。30只小白鼠均关在装有跑圈的笼子里,每天规定小白鼠在跑圈内一次连续跑4个小时,每天3跑次,其他因素相同,一个月后,结果显示服用本发明实施例8和9组合物的SD大鼠依然精力旺盛,爱活动,并且食欲增加,不贪睡,毛色显得光亮,
不易掉毛;反之喂食5%蔗糖水的白鼠则没有那么爱活动,有些懒惰,贪睡。
因此,本实施例8-9得到的组合物,营养均衡,能迅速补充人体流失的氨基酸、矿物质等营养物质,改善细胞新陈代谢、对细胞具有靶向修复作用,从而修复受损机体,改善身体状态,提高人力耐力,具有抗疲劳,增强机体免疫力的作用。在使用过程中意外的发现,与实施例9相比,实施例8采用纳米化的荜茇,使植物细胞内的有效成分充分溶出,提高了有效成分的吸收速度,增加了生物利用度;纳米化的荜茇的抗菌、降脂作用明显增强,同时与其他的组分配伍,可以有效改善植物神经紊乱引起的头痛、失眠等问题。
Claims (10)
1.一种组合物,其特征在于,包括姜科植物可食部位、甘草、枸杞和青梅果;
所述的姜科植物的可食部位为姜、砂仁、益智仁、高良姜、山奈、草果和姜黄中的至少一种。
2.根据权利要求1所述的组合物,其特征在于,所述食品组合物包括如下重量份的组分:姜科植物可食部位1-4份、甘草0.5-2.5份、枸杞1-2份、青梅果1-3份。
3.根据权利要求1所述的组合物,其特征在于,所述的姜科植物的可食部分为姜、高良姜和草果中的至少一种。
4.根据权利要求1所述的组合物,其特征在于,还包括2.5-3份的菊科植物的可食部分;所述的菊科植物的可食部分为小蓟、菊花、红花、菊苣和蒲公英中的至少一种。
5.根据权利要求1所述的组合物,其特征在于,还包括2-5份的大枣、酸枣仁和黑枣中的至少一种。
6.根据权利要求1所述的组合物,其特征在于,还包括0.5-3份的芸香科果实/果皮;所述的芸香科果实/果皮为佛手、柚子、橙子、柑橘、陈皮、花椒、椿叶花椒、香橼和桔红中的至少一种。
7.根据权利要求1所述的组合物,其特征在于,还包括0.5-1.5份的胡椒科植物果实,所述的胡椒科植物果实为为黑胡椒和荜茇中的至少一种。
8.根据权利要求7所述的组合物,其特征在于,所述胡椒科植物果实的粒径小于100nm。
9.根据权利要求1所述的组合物,其特征在于,还包括如下重量份的组分:蜂蜜1-4份、膳食纤维2-5份、食源性短肽0.05-0.5份、功能性营养素0.01-0.05份和矿物质元素0.001-0.01份。
10.根据权利要求1-9任意一项所述的组合物在生产制造食品、中药和保健品中的应用。
