Abstract
本发明公开了一种药食同源的西红花酒及其制备方法。由如下重量份数的原料制成:主料:高粱30‑50份,红曲米30‑50份,炒麦芽20‑30份,天然矿泉水100‑300份;辅料:西红花1‑8份,人参1‑8份,大枣1‑8份,甘草1‑3份,覆盆子1‑3份,益智仁1‑3份。本发明的药食同源的西红花酒,可有效增加脑供血,预防脑细胞萎缩,补充中老年人体内类激素水平,蜂王浆和麦芽含类雌酮植物激素和蛋白激酶,有抗氧化作用,改善老年人记忆力。此外还可活血化瘀、舒经活络、补肾益阳。得到的酒品色泽明亮、金黄透红,无沉淀,酒香浓郁,有独特的炒米香,保质期长。

技术领域
本发明属于保健型食品技术领域,具体涉及一种药食同源的西红花酒及其制备方法。
背景技术
西红花,又称藏红花,是一种鸢尾科番红花属的多年生花卉,多年生草本。球茎扁圆球形,直径约3厘米,外有黄褐色的膜质包被。叶基生,9-15枚,条形,灰绿色,边缘反卷;叶丛基部包有4-5片膜质的鞘状叶。花茎甚短,不伸出地面;花1-2朵,淡蓝色、红紫色或白色,有香味,花柱橙红色,柱头略扁,顶端楔形,有浅齿,子房狭纺锤形。蒴果椭圆形,长约3厘米。
其干燥柱头味甘性平,能活血化瘀,散郁开结,止痛。用于治疗忧思郁结,胸膈痞闷,吐血,伤寒发狂,惊怖恍惚,妇女经闭,血滞月经不调,产后恶露不尽,瘀血作痛,麻疹,跌打损伤等。国外用作镇静、驱风剂。活血化瘀,凉血解毒,解郁安神。温毒发斑、忧郁痞闷、惊悸发狂。
老年痴呆是一种中枢神经系统变性病,起病隐袭,病程呈慢性进行性,是老年期痴呆最常见的一种类型。主要表现为渐进性记忆障碍、认知功能障碍、人格改变及语言障碍等神经精神症状,严重影响社交、职业与生活功能。AD的病因及发病机制尚未阐明,特征性病理改变为β淀粉样蛋白沉积形成的细胞外老年斑和tau蛋白过度磷酸化形成的神经细胞内神经原纤维缠结,以及神经元丢失伴胶质细胞增生等。老年痴呆病症发展到后期极难治愈,因此,预防老年痴呆及治愈轻微老年痴呆成了一个研究的热点。
专利CN107951999A公开了一种防治老年痴呆中药组合物,该组合物中采用药性差异巨大的中药进行配伍,药理不明确,同时,配方中加入当归,川穹、远志、石菖蒲等组分,长期服用会加重肝脏、肾脏的排泄负担,最终对肝脏和肾脏造成不可逆的损伤。因此,需要研发一种绿色、安全,药食同源的保健型食品,且能有效预防老年痴呆症的发生。
发明内容
本发明的目的在于提供一种药食同源的西红花酒及其制备方法。
一种药食同源的西红花酒,由如下重量份数的原料制成:
主料:高粱30-50份,红曲米30-50份,炒麦芽20-30份,天然矿泉水100-300份;
辅料:西红花1-8份,人参1-8份,大枣1-8份,甘草1-3份,覆盆子1-3份,益智仁1-3份。
所述辅料还包括海参卵巢浸出液1-3份。
所述辅料还包括蜂王浆提取物1-3份。
所述辅料还包括丝瓜藓1-3份。
一种药食同源的西红花酒的制备方法,按照如下步骤进行:
(1)按照重量份数,取西红花1-8份,用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成西红花提取物;
(2)将西红花提取物与人参1-8份,大枣1-8份,甘草1-3份,覆盆子1-3份,益智仁1-3份混合,加入红曲米30-50份,天然矿泉水50-200份,混合均匀,制备成混合料,自然发酵10-20天,制成酒曲;
(3)加入高粱30-50份,炒麦芽20-30份,天然矿泉水50-100份,接入酵母菌制剂,制剂继续发酵10-20天;
(4)蒸馏发酵液制备原浆酒,制成西红花酒。
所述步骤(4)中还加入海参卵巢浸出液1-3份,所述海参卵巢浸出液的制备方法为:将海参卵巢打碎成浆液,加入3-10倍重量的水,加热至50-80℃,浸提1-3小时,离心,取上清液,浓缩至上清液体积的1/5-1/10,制成。
所述步骤(4)中还加入蜂王浆提取物1-3份,所述蜂王浆提取物的制备方法为:用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成蜂王浆提取物。
所述步骤(2)中还加入丝瓜藓1-3份。
所述酵母菌制剂的接入量为物料质量的0.5%,酵母菌制剂中酵母菌的含量为2X108cfu/g。
本发明的有益效果:本发明的药食同源的西红花酒,可有效增加脑供血,预防脑细胞萎缩,补充老年人体内类促性腺激素水平,蜂王浆和麦芽含雌酮类激素和蛋白激酶,有抗氧化作用(即抗衰老),改善老年人记忆力。此外还可活血化瘀、舒经活络、补肾益阳。得到的酒品色泽明亮、黄金透红,无沉淀,酒香浓郁,有独特麦芽香味,保质期长。

下面结合具体实施例对本发明做进一步说明。
实施例1
一种药食同源的西红花酒,由如下重量份数的原料制成:
主料:高粱40kg,红曲米40kg,炒麦芽25kg,天然矿泉水200kg;
辅料:西红花5kg,人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg。

一种药食同源的西红花酒,由如下重量份数的原料制成:
主料:高粱50kg,红曲米50kg,炒麦芽30kg,天然矿泉水300kg;
辅料:西红花8kg,人参8kg,大枣8kg,甘草3kg,覆盆子3kg,益智仁3kg。

(1)按照重量份数,取西红花8kg,用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成西红花提取物;
(2)将西红花提取物与人参8kg,大枣8kg,甘草3kg,覆盆子3kg,益智仁3kg混合,加入红曲米50kg,天然矿泉水200kg,混合均匀,制备成混合料,自然发酵20天,制成酒曲;
(3)加入高粱50kg,炒麦芽30kg,天然矿泉水100kg,接入酵母菌制剂,制剂继续发酵20天;所述酵母菌制剂的接入量为物料质量的0.5%,酵母菌制剂中酵母菌的含量为2X108cfu/g;
(4)蒸馏发酵液制备原浆酒,制成西红花酒。
实施例4
一种药食同源的西红花酒,由如下重量份数的原料制成:
主料:高粱40kg,红曲米40kg,炒麦芽25kg,天然矿泉水200kg;
辅料:西红花5kg,人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg,海参卵巢浸出液2kg。
一种药食同源的西红花酒的制备方法,按照如下步骤进行:
(1)按照重量份数,取西红花5kg,用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成西红花提取物;
(2)将西红花提取物与人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg混合,加入红曲米40kg,天然矿泉水130kg,混合均匀,制备成混合料,自然发酵15天,制成酒曲;
(3)加入高粱40kg,炒麦芽25kg,天然矿泉水70kg,接入酵母菌制剂,制剂继续发酵15天;所述酵母菌制剂的接入量为物料质量的0.5%,酵母菌制剂中酵母菌的含量为2X108cfu/g;
(4)蒸馏发酵液制备原浆酒,加入海参卵巢浸出液2kg,制成西红花酒;所述海参卵巢浸出液的制备方法为:将海参卵巢打碎成浆液,加入6倍重量的水,加热至60℃,浸提2小时,离心,取上清液,浓缩至上清液体积的1/8,制成。
实施例5
一种药食同源的西红花酒,由如下重量份数的原料制成:
主料:高粱40kg,红曲米40kg,炒麦芽25kg,天然矿泉水200kg;
辅料:西红花5kg,人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg,蜂王浆提取物2kg。
一种药食同源的西红花酒的制备方法,按照如下步骤进行:
(1)按照重量份数,取西红花5kg,用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成西红花提取物;
(2)将西红花提取物与人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg混合,加入红曲米40kg,天然矿泉水130kg,混合均匀,制备成混合料,自然发酵15天,制成酒曲;
(3)加入高粱40kg,炒麦芽25kg,天然矿泉水70kg,接入酵母菌制剂,制剂继续发酵15天;所述酵母菌制剂的接入量为物料质量的0.5%,酵母菌制剂中酵母菌的含量为2X108cfu/g;
(4)蒸馏发酵液制备原浆酒,加入蜂王浆提取物2kg,制成西红花酒;所述蜂王浆提取物的制备方法为:用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成蜂王浆提取物。
实施例6
一种药食同源的西红花酒,由如下重量份数的原料制成:
主料:高粱40kg,红曲米40kg,炒麦芽25kg,天然矿泉水200kg;
辅料:西红花5kg,人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg,丝瓜藓2kg。
一种药食同源的西红花酒的制备方法,按照如下步骤进行:
(1)按照重量份数,取西红花5kg,用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成西红花提取物;
(2)将西红花提取物与人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg,丝瓜藓2kg混合,加入红曲米40kg,天然矿泉水130kg,混合均匀,制备成混合料,自然发酵15天,制成酒曲;
(3)加入高粱40kg,炒麦芽25kg,天然矿泉水70kg,接入酵母菌制剂,制剂继续发酵15天;所述酵母菌制剂的接入量为物料质量的0.5%,酵母菌制剂中酵母菌的含量为2X108cfu/g;
(4)蒸馏发酵液制备原浆酒,制成西红花酒。
实施例7
一种药食同源的西红花酒,由如下重量份数的原料制成:
主料:高粱40kg,红曲米40kg,炒麦芽25kg,天然矿泉水200kg;
辅料:西红花5kg,人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg,大果马拉瓜(Marah macrocarpus(Greene)Greene)1kg。
一种药食同源的西红花酒的制备方法,按照如下步骤进行:
(1)按照重量份数,取西红花5kg,用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成西红花提取物;
(2)将西红花提取物与人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg,大果马拉瓜1kg混合,加入红曲米40kg,天然矿泉水130kg,混合均匀,制备成混合料,自然发酵15天,制成酒曲;
(3)加入高粱40kg,炒麦芽25kg,天然矿泉水70kg,接入酵母菌制剂,制剂继续发酵15天;所述酵母菌制剂的接入量为物料质量的0.5%,酵母菌制剂中酵母菌的含量为2X108cfu/g;
(4)蒸馏发酵液制备原浆酒,制成西红花酒。
实施例8
一种药食同源的西红花酒,由如下重量份数的原料制成:
主料:高粱40kg,红曲米40kg,炒麦芽25kg,天然矿泉水200kg;
辅料:西红花5kg,人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg,俄勒冈马拉瓜(Marah oregana(Torr.et.Gray)Greeue)1kg。
一种药食同源的西红花酒的制备方法,按照如下步骤进行:
(1)按照重量份数,取西红花5kg,用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成西红花提取物;
(2)将西红花提取物与人参4kg,大枣4kg,甘草2kg,覆盆子2kg,益智仁2kg,俄勒冈马拉瓜1kg混合,加入红曲米40kg,天然矿泉水130kg,混合均匀,制备成混合料,自然发酵15天,制成酒曲;
(3)加入高粱40kg,炒麦芽25kg,天然矿泉水70kg,接入酵母菌制剂,制剂继续发酵15天;所述酵母菌制剂的接入量为物料质量的0.5%,酵母菌制剂中酵母菌的含量为2X108cfu/g;
(4)蒸馏发酵液制备原浆酒,制成西红花酒。
实验例:药食同源的西红花酒活性成分对模型痴呆大鼠的治疗作用
实验过程如下:
(1)实验动物选择
选取健康Wistar大鼠,雄性,体重280-320g,清洁级。购自凯学生物科技(上海)有限公司。SPF级条件下饲养。实验期间控制实验室温度在22℃±1℃,12小时交替光照,大鼠自由取食、饮水。
(2)氢溴酸东莨菪碱诱导大鼠模型的建立
大鼠腹腔注射氢溴酸东莨菪碱,给药体积0.005mL/g,每天1次,连续7天。氢溴酸东莨菪碱每次注射后30min进行水迷宫实验,前6天为训练实验,记录动物的潜伏期(找到平台的时间)和游泳距离,第7天为空间探索实验,记录动物在原平台所在位置的游泳时间,穿过原平台的次数,及穿过原平台有效区的次数。第7天水迷宫实验后,迅速取血及动物脑组织,进行试剂盒检测。水迷宫实验的模型大鼠找到平台的潜伏期明显变长,游泳距离变长,游过平台的次数明显减少,含量明显增高,含量明显降低,则认为造模成功。
(3)实验分组
生理盐水组:10只Wistar大鼠,于每天早上8点及下午4点腹腔注射生理盐水,连续8天,每天2次。第9-15天时,每天上午10点腹腔注射生理盐水,每天1次。
模型组:10只Wistar大鼠,于每天早上8点及下午4点腹腔注射生理盐水,连续8天,每天2次。第9-15天时,每天上午10点腹腔注射氢溴酸东莨菪碱(1.5mg/kg),每天一次。
实验组:将实施例1-8制备的药食同源的西红花酒通过减压蒸馏除去酒精。每组取10只Wistar大鼠,于每天早上8点及下午4点腹腔注射生理盐水,连续8天,每天2次。第9-15天时,每天上午10点腹腔注射氢溴酸东莨菪碱(1.5mg/kg),每天一次;同时,灌胃给体重1g/kg的实施例1-8去除酒精的药食同源活性水溶液。
(4)水迷宫实验
所有大鼠处理第15天时检测,每只大鼠每天检测3次,每次从不同入水点入水。记录120s内大鼠从放入水中至爬上平台所需时间,即逃避潜伏期,使其在平台上停留10s,若120s内未找到平台,则由实验员将其引导至平台上同样停留10s,记录潜伏期为120s。大鼠从放入池中到找到平台所游过的距离,即为游泳距离。
(5)数据处理
对各组数据进行统计学处理,组间t检验比较,用均数±标准差(X±S)表示,P<0.05视为差异显著,P<0.01视为差异极显著。
各组大鼠的逃避潜伏期如表1-2所示:

由表1可以看出,实施例1-3组的大鼠逃避潜伏期与模型组相比,已经显著缩短(P<0.05),证明本发明的西红花酒中的活性成分能有效的改善大鼠老年痴呆状况。

由表2可以看出,实施例8组大鼠逃避潜伏期与实施例1组相当,没有显著差异,实施例4-7组大鼠逃避潜伏期显著低于实施例1。

由表3可以看出,实施例1组-实施例3组的游泳距离显著低于模型组,证明本发明的西红花酒中的活性成分能有效的改善大鼠老年痴呆状况。

由表4可以看出,实施例8组大鼠游泳距离与实施例1组相当,没有显著差异,实施例4-7组大鼠游泳距离显著低于实施例1。
Claims (9)
1.一种药食同源的西红花酒,其特征在于,由如下重量份数的原料制成:
主料:高粱30-50份,红曲米30-50份,炒麦芽20-30份,天然矿泉水100-300份;
辅料:西红花1-8份,人参1-8份,大枣1-8份,甘草1-3份,覆盆子1-3份,益智仁1-3份。
2.根据权利要求1所述药食同源的西红花酒,其特征在于,所述辅料还包括海参卵巢浸出液1-3份。
3.根据权利要求1所述药食同源的西红花酒,其特征在于,所述辅料还包括蜂王浆提取物1-3份。
4.根据权利要求1所述药食同源的西红花酒,其特征在于,所述辅料还包括丝瓜藓1-3份。
5.一种药食同源的西红花酒的制备方法,其特征在于,按照如下步骤进行:
(1)按照重量份数,取西红花1-8份,用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成西红花提取物;
(2)将西红花提取物与人参1-8份,大枣1-8份,甘草1-3份,覆盆子1-3份,益智仁1-3份混合,加入红曲米30-50份,天然矿泉水50-200份,混合均匀,制备成混合料,自然发酵10-20天,制成酒曲;
(3)加入高粱30-50份,炒麦芽20-30份,天然矿泉水50-100份,接入酵母菌制剂,制剂继续发酵10-20天;
(4)蒸馏发酵液制备原浆酒,制成西红花酒。
6.根据权利要求5所述药食同源的西红花酒的制备方法,其特征在于,所述步骤(4)中还加入海参卵巢浸出液1-3份,所述海参卵巢浸出液的制备方法为:将海参卵巢打碎成浆液,加入3-10倍重量的水,加热至50-80℃,浸提1-3小时,离心,取上清液,浓缩至上清液体积的1/5-1/10,制成。
7.根据权利要求5所述药食同源的西红花酒的制备方法,其特征在于,所述步骤(4)中还加入蜂王浆提取物1-3份,所述蜂王浆提取物的制备方法为:用10%乙醇浸出后进行离心分离,取上清液,然后冷冻干燥,制成蜂王浆提取物。
8.根据权利要求5所述药食同源的西红花酒的制备方法,其特征在于,所述步骤(2)中还加入丝瓜藓1-3份。
9.根据权利要求5所述药食同源的西红花酒的制备方法,其特征在于,所述酵母菌制剂的接入量为物料质量的0.5%,酵母菌制剂中酵母菌的含量为2X108cfu/g。
