本发明公开了一种水果罐头的高效杀菌工艺,它是将密封好的水果罐头置于微波隧道中低温微波杀菌,之后将罐头倒置旋转5‑10圈;转入杀菌槽中低温杀菌,然后迅速将水果罐头冷却。本发明的有益效果在于:杀菌温度低、可翻转水果罐,使罐内加快热传导,杀菌效果均匀,水果的营养成分损失少,确保到达更高的杀菌效率。

技术领域
本发明涉及食品加工技术,具体是一种水果罐头的高效杀菌方法。
背景技术
在罐头包装前通常需要进行杀菌处理,现有的杀菌工艺大多为煮沸杀菌或微波杀菌。煮沸杀菌是将封罐后的罐头浸入水冲然后进行高温煮沸,由于温度过高,使水果中维生素C等营养成分受到破坏,而微波杀菌多采用间歇式和连续式,前者通过转盘可以旋转,而后者只能向前;达不到杀菌效果;同时,现有传统的水果杀菌工艺普遍适合小包装罐头,即使烫坏靠近灌壁部分的水果,而在灌中心部分没有接受到杀菌处理。
发明内容
针对上述现有技术中存在的不足,本发明提供了一种水果罐头的高效杀菌方法。
为实现本发明的目的,本发明采用的技术方案是:
一种水果罐头的高效杀菌工艺,包括如下步骤:
(1)将密封好的水果罐头置于微波隧道中低温微波杀菌,之后将罐头倒置旋转5-10圈;
(2)转入杀菌槽中低温杀菌,然后迅速将水果罐头冷却。
步骤(1)所述微波杀菌,是利用波长为100-250nm的紫外线杀菌60-90分钟。
步骤(2)所述杀菌槽的水温为80-85℃,杀菌时间为15-20分钟,冷却温度为40℃以下。
本发明的有益效果在于:杀菌温度低、可翻转水果罐,使罐内加快热传导,杀菌效果均匀,水果的营养成分损失少,确保到达更高的杀菌效率。
具体实施方式
实施例:
一种水果罐头的高效杀菌工艺,包括如下步骤:
(1)将密封好的水果罐头置于微波隧道中低温微波杀菌,利用波长为100-250nm的紫外线杀菌60-90分钟,之后将罐头倒置旋转5-10圈;
(2)转入杀菌槽中低温杀菌,杀菌槽的水温为80-85℃,杀菌时间为15-20分钟,然后迅速将水果罐头冷却,冷却温度为40℃以下。

1.一种水果罐头的高效杀菌工艺,其特征是:包括如下步骤:
(1)将密封好的水果罐头置于微波隧道中低温微波杀菌,之后将罐头倒置旋转5-10圈;
(2)转入杀菌槽中低温杀菌,然后迅速将水果罐头冷却。
2.根据权利要求1所述的水果罐头的高效杀菌工艺,其特征是:步骤(1)所述微波杀菌,是利用波长为100-250nm的紫外线杀菌60-90分钟。
3.根据权利要求1所述的水果罐头的高效杀菌工艺,其特征是:步骤(2)所述杀菌槽的水温为80-85℃,杀菌时间为15-20分钟,冷却温度为40℃以下。
