Abstract
本发明公开了一种降脂螺旋藻面条及其制备方法。该降脂螺旋藻面条的配方包括如下质量份组分:小麦粉40‑50份、苦荞麦粉30‑40份、螺旋藻粉1‑5份、蓝莓花色苷0.1‑0.5份、山楂提取液2‑3份、乳酸钙2‑3份、乳酸锌0.02‑0.03份、乳酸亚铁0.1‑0.2份、β‑环状糊精0.5‑0.8份、食盐2‑3份。针对普通面条营养单调、复合面条不好吃或者没营养,而提供了一种降脂螺旋藻面条及其制备方法,该方法赋予了成品面丰富的营养组成,同时能进一步疏通血管,降低过氧物含量,最终防止亚健康和疾病产生。

技术领域
本发明涉及保健食品技术领域,具体涉及一种降脂螺旋藻面条及其制备方法。
背景技术
随着现代生活水平的提高,吃得多吃的杂,不能很好的消化吸收,大量营养物质特别是油脂淤积在血管,导致新陈代谢和物质运输不畅,进而产生各种亚健康甚至疾病。
中国专利《富含微量元素的营养面条》(公开号CN106509625A)中提到一种功能性面条,其目的在于提供一种消化好易吸收的面条,对于全面性的提供营养效果有限,中国专利《一种以螺旋藻提取物为原料的面条及其加工方法》(公开号CN106376838A)中提到了一种主要用螺旋藻为原料辅以红石榴制成的面条,其原料营养较多,但整体营养较为单一,虽然往其中添加了部分其他原料作为营养添加剂,但均为珍贵的材料,不利于推广量产,中国专利《一种富含微量元素的调料》(公开号CN105285895A)中提到了一种改良面食的口感与口味所用的调料,但其中使用大量的添加剂,成分过于复杂,对营养吸收不利。因此需要研发一种既能改善口感口味,也含有丰富且易吸收营养的面条。
发明内容
为了解决上述问题,本发明针对普通面条营养单调、复合面条不好吃或者没营养,而提供了一种降脂螺旋藻面条及其制备方法,该方法赋予了成品面丰富的营养组成,同时能进一步疏通血管,降低过氧物含量,最终防止亚健康和疾病产生。
本发明可以通过以下技术方案来实现:
一种降脂螺旋藻面条,由以下重量份组成:
小麦粉40-50份、苦荞麦粉30-40份、螺旋藻粉1-5份、蓝莓花色苷0.1-0.5份、山楂提取液2-3份、乳酸钙2-3份、乳酸锌0.02-0.03份、乳酸亚铁0.1-0.2份、β-环状糊精0.5-0.8份、食盐2-3份。
进一步的,一种降脂螺旋藻面条,由以下重量份组成:
小麦粉45份、苦荞麦粉35份、螺旋藻粉3份、蓝莓花色苷0.3份、山楂提取液2.5份、乳酸钙2.5份、乳酸锌0.025份、乳酸亚铁0.15份、β-环状糊精0.65份、食盐2.5份。
其中,螺旋藻粉的制备方法为:
按接种量为10%将螺旋藻接入装有有机培养液的三角瓶中,然后在温度为35℃,pH为9,光照强度为4000lx,光照时间为24h/d,转速为150r/min的条件下培养8天,每天加蒸馏水调整蒸发损耗,培养结束后,取培养液过300目筛,然后在4℃下经6000r/min离心10min,取下层藻泥用蒸馏水洗涤3次,然后真空冷冻干燥,得到螺旋藻粉。
其中,有机培养液由以下重量份组成:
硝酸钠0.75g,磷酸氢二钾0.02g、硫酸镁0.038g、氯化钙0.018g、柠檬铁0.003g、硫酸亚铁0.002g、乙二胺四乙酸钠0.0005g、碳酸钠0.02g、微量元素混合液1ml,自来水1000ml;所述微量元素混合液包括:硼酸2.86mg/ml、氯化锰1.81mg/ml、硫酸锌0.222mg/ml、钼酸钠0.39mg/ml、硫酸铜0.079mg/ml、硝酸钴0.049mg/ml、亚硒酸钠0.219mg/ml、碘酸钾0.132mg/ml。
其中,蓝莓花色苷的制备方法为:
取蓝莓用清水清洗干净后破碎,按料液比为1:15加入60%乙醇溶液,加入浓盐酸调节pH为3,在40℃下浸提2h,抽滤,取滤液于40℃下减压回收乙醇,旋转蒸发浓缩成浓缩液,将浓缩液用柠檬酸-柠檬酸钠缓冲液调节稀释至浓度为3mg/ml,以1ml/min的流速通过AB-8大孔树脂柱,用5倍体积的60%乙醇溶液,以1ml/min的流速洗脱,收集乙醇洗脱液,减压回收乙醇,于40℃真空干燥得到蓝莓花色苷。
本发明还提供一种制备该降脂螺旋藻面条的方法:
(1)将苦荞麦粉放入蒸拌机中,边搅拌边通入蒸汽,使苦荞麦粉完全糊化,得到预糊化苦荞麦粉;
(2)将螺旋藻粉、蓝莓花色苷、乳酸钙、乳酸锌、乳酸亚铁混合,加水溶解搅拌均匀后,加入β-环状糊精搅拌均匀,放入密闭容器中置于冰箱静置24h,得到包合物;
(3)将30%的小麦粉、食盐、山楂提取液和步骤(2)的包合物混合,翻入搅拌机中高速搅拌10min,再加入剩余的小麦粉搅拌8min,得到预混合粉;
(4)将步骤(1)预糊化的苦荞麦粉与步骤(3)的预混合粉混合,搅拌均匀,加水和成面团;
(5)将步骤(4)和好的面团放入熟化机中,在25℃下以8r/min的转速搅拌10-15min,然后经轧片切条,得到湿面条;
(6)将步骤(5)得到的使面条经过干燥阶段,得到本发明的降脂螺旋藻面条。
上述干燥阶段具体操作为:①预干燥:温度为20-30℃,相对湿度80%,②主干燥:温度为45-50℃,相对湿度65%,③最后干燥阶段开始降温,温度为25℃,相对湿度60%,降温速度为每2-3min降低1℃。
本发明所述各主要功效成分作用机理如下:
螺旋藻具有生长速度快、培养简单等优点,且其工业化生产技术成熟,能将无机元素转化为有机元素,本发明通过藻类天然合成有机物的技术方法,在螺旋藻的培养基中添加硒、碘、锌、铁等有机元素,利用螺旋藻的生物转化,将无机元素转化成有机元素,生产出富含有机元素的螺旋藻,并将其用于制作面条,使该面条不仅保留了螺旋藻本身的营养成分,消除了螺旋藻的腥味,还提高和丰富了面条本身的营养价值,尤其是增加了蛋白质和矿物质硒、点、铁、锌的含量,且使该面条具有高效的抗氧化,调节血脂的作用,能有效清除体内脂质过氧化物,调节体内胆固醇及甘油三酯含量,从而能降低高血脂的发生率,具有预防高血脂的作用。
蓝莓果实营养丰富,含蛋白质、脂肪碳水化合物、维生素A、维生素E、超氧化物歧化酶等及维生素、微量元素等,除此之外,蓝莓果实中还含有尼克酸、黄酮、花色苷等功效成分,蓝莓中的花色苷能通过提高机体抗氧化酶类活性降低体内自由基水平,减少自由基的毒副作用,降低自由基造成的损伤,从而起到调节血脂,预防高血脂的作用。
山楂营养物质丰富,其所含黄酮类物质、果胶、植物甾醇及三萜酸等活性成分均有降血脂作用,能通过多种途径、多种脂肪代谢相关酶的调节作用,来减少甘油三酯和胆固醇的合成,升高高密度脂蛋白胆固醇水平,从而起到降血脂的作用,具有降低血脂、预防高血脂的作用。
本发明具备以下有益效果:
本发明将螺旋藻粉、蓝莓花色苷、山楂提取液复配制成面条,不仅营养丰富,平衡合理,蛋白质含量较高,且富含螺旋藻自身含有的多种营养成分及多种有机元素,还赋予该面条螺旋藻、蓝莓花色苷、山楂提取液中的生理活性成分,使其具有较强的抗氧化及调节血脂作用,能降低血清中MDA含量,提高SON、GSH-Px活性,从而具有降低血脂、预防高血脂的的作用,最终达到预防亚健康和疾病的作用。
具体实施方式
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1~5为本发明一种降脂螺旋藻面条的配方。

其中,螺旋藻粉的制备方法为:
按接种量为10%将螺旋藻接入装有有机培养液的三角瓶中,然后在温度为35℃,pH为9,光照强度为4000lx,光照时间为24h/d,转速为150r/min的条件下培养8天,每天加蒸馏水调整蒸发损耗,培养结束后,取培养液过300目筛,然后在4℃下经6000r/min离心10min,取下层藻泥用蒸馏水洗涤3次,然后真空冷冻干燥,得到螺旋藻粉。
其中,有机培养液由以下重量份组成:

其中,山楂提取液的制备方法为:
取山楂洗净,沥干,加10倍量水加热至85-90℃,保持20min,取出冷却,除去山楂核后,放入榨汁机中榨汁,过滤,取滤液加入0.05%果胶酶,在45℃下酶解4h,取酶解液在100℃下灭酶5min,然后经4000r/min离心15min,取上清液即为山楂提取液。
上述一种降脂螺旋藻面条的制备方法,包括以下步骤:
(1)将苦荞麦粉放入蒸拌机中,边搅拌边通入蒸汽,使苦荞麦粉完全糊化,得到预糊化苦荞麦粉;
(2)将螺旋藻粉、蓝莓花色苷、乳酸钙、乳酸锌、乳酸亚铁混合,加水溶解搅拌均匀后,加入β-环状糊精搅拌均匀,放入密闭容器中置于冰箱静置24h,得到包合物;
(3)将30%的小麦粉、食盐、山楂提取液和步骤(2)的包合物混合,翻入搅拌机中高速搅拌10min,再加入剩余的小麦粉搅拌8min,得到预混合粉;
(4)将步骤(1)预糊化的苦荞麦粉与步骤(3)的预混合粉混合,搅拌均匀,加水和成面团;
(5)将步骤(4)和好的面团放入熟化机中,在25℃下以8r/min的转速搅拌10-15min,然后经轧片切条,得到湿面条;
(6)将步骤(5)得到的使面条经过干燥阶段,得到本发明的降脂螺旋藻面条。
其中,干燥阶段为:
①预干燥:温度为20-30℃,相对湿度80%,②主干燥:温度为45-50℃,相对湿度65%,③最后干燥阶段开始降温,温度为25℃,相对湿度60%,降温速度为每2-3min降低1℃。
产品验证:
按实施例1~5、对比例1~4配方,用上述方法制备成的面条样品,分别放在单独的锅中用沸水煮5分钟,然后记录面条外观、口感以及面汤的样子,随后进行烹调性与口感的检测,得到下表。

从上表可以看出,实施例各组制成的样品,其断条情况较好,且烹调后的面质量较好,面汤清亮面劲道;而完全不添加螺旋藻、蓝莓果和山楂成分的对比例4则完全相反,无论是自然断条,人为弯折还是烹煮过程,均能产生出大量断条,且烹调后呈现出一片糊状,品相较差;往对比例4中添加螺旋藻、蓝莓果和山楂三种成分中的任意2种,则得到对比例1~3组,可以发现这几组的表现介乎于对比例4与实施例各组之间,说明螺旋藻、蓝莓果和山楂三种成分均能有效提高该面条的品质,提高口感。
于流感季节,统一招募90个志愿者,随机分配到实施例1~5和对比例1~4九个组中,三餐分别以各组样品作为三餐,持续三周后询问并记录各人患感冒次数,将各组各人的患病次数总和后得出表3中的患病次数。

从表3可以看出,一段时间内保持服用实施例各组的实验者,其免疫力正常,并没有经常患病,说明身体状态良好;而仅添加螺旋藻、蓝莓果和山楂三种中任意2种的对比例1~3各组,患病次数较多,大部分实验者均有患病记录,说明其身体状态略有下降,处于亚健康状态;而对比例4组中不含螺旋藻、蓝莓果和山楂三种成分,对应实验者的患病次数较多,每人几乎都患病1~2次,说明身体素质严重下降。
从表3的表现中可以知道,不含螺旋藻、蓝莓果和山楂组分的对比例4不能很好的调理人体内部状态,容易患病,而通过将具有各种功能的螺旋藻、蓝莓果和山楂经过复配后添加进面条配方中,能帮助人体调理,进而达到减少患病,改善亚健康的作用。
统一招募90个血脂血糖偏高的成年志愿者,随机分配到实施例1~5和对比例1~4九个组中,每组10个人,分别以各组样品作为三餐,持续两周后抽血检测各自血脂血糖含量,确认其血脂血糖的高低情况,得到表4。(其中,这里以甘油三酯0.5~1.5mmol/L为正常血脂,1.5~2mmol/L为血脂偏高,2~2.5mmol/L为高血脂;同样的,空腹血糖以4~5.5mmol/L为正常血糖,5.5~6为血糖偏高,6~6.5为高血糖)

从表4可以看出实施例各组人员的血脂血糖得到有效控制,说明该组配方制得的面食具有良好的降糖降脂作用;而不含螺旋藻、蓝莓果和山楂组分的对比例5其血脂血糖数值开始上升,说明该组面食样品不能控制血脂血糖,甚至会有增高的风险;而通过往对比例4中添加螺旋藻、蓝莓果和山楂组分中任意2种成分,得到对比例1~3组的样品,对应各组血脂血糖得到控制,但并没有好转,说明各成分均具有一定的调节血脂血糖的功效,但对于改善血脂血糖过高并没有太大的作用,只有将其复配得到实施例各组才能有效控制血脂血糖。
综上所述,本发明制备的一种降脂螺旋藻面条,能帮助调理人体,疏通血管,帮助降糖降脂,对于营养不良或者饮食过杂而导致的亚健康问题有一定的缓解,最终达到减少患病的作用。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。

1.一种螺旋藻保健面条,其特征在于,由以下重量份组成:小麦粉40-50份、苦荞麦粉30-40份、螺旋藻粉1-5份、蓝莓花色苷0.1-0.5份、山楂提取液2-3份、乳酸钙2-3份、乳酸锌0.02-0.03份、乳酸亚铁0.1-0.2份、β-环状糊精0.5-0.8份、食盐2-3份。
2.根据权利要求1所述的一种螺旋藻保健面条,其特征在于,由以下重量份组成:小麦粉45份、苦荞麦粉35份、螺旋藻粉3份、蓝莓花色苷0.3份、山楂提取液2.5份、乳酸钙2.5份、乳酸锌0.025份、乳酸亚铁0.15份、β-环状糊精0.65份、食盐2.5份。

6.根据权利要求1或2所述的一种螺旋藻保健面条,其特征在于,所述山楂提取液的制备方法为:取山楂洗净,沥干,加10倍量水加热至85-90℃,保持20min,取出冷却,除去山楂核后,放入榨汁机中榨汁,过滤,取滤液加入0.05%果胶酶,在45℃下酶解4h,取酶解液在100℃下灭酶5min,然后经4000r/min离心15min,取上清液即为山楂提取液。
7.一种制备如权利要求1-6任一项所述的一种螺旋藻保健面条的方法,其特征在于,包括以下步骤:
(1)将苦荞麦粉放入蒸拌机中,边搅拌边通入蒸汽,使苦荞麦粉完全糊化,得到预糊化苦荞麦粉;
(2)将螺旋藻粉、蓝莓花色苷、乳酸钙、乳酸锌、乳酸亚铁混合,加水溶解搅拌均匀后,加入β-环状糊精搅拌均匀,放入密闭容器中置于冰箱静置24h,得到包合物;
(3)将30%的小麦粉、食盐、山楂提取液和步骤(2)的包合物混合,翻入搅拌机中高速搅拌10min,再加入剩余的小麦粉搅拌8min,得到预混合粉;
(4)将步骤(1)预糊化的苦荞麦粉与步骤(3)的预混合粉混合,搅拌均匀,加水和成面团;
(5)将步骤(4)和好的面团放入熟化机中,在25℃下以8r/min的转速搅拌10-15min,然后经轧片切条,得到湿面条;
(6)将步骤(5)得到的使面条经过干燥阶段,得到本发明的螺旋藻保健面条。
8.权利要求要求7所述的一种螺旋藻保健面条的制备方法,其特征在于,所述干燥阶段为:①预干燥:温度为20-30℃,相对湿度80%,②主干燥:温度为45-50℃,相对湿度65%,③最后干燥阶段开始降温,温度为25℃,相对湿度60%,降温速度为每2-3min降低1℃。
