技术领域
本发明涉及一种预消化的炎性肠病全营养配方食品及其制备工艺,属于特殊医学用途配方食品技术领域。
背景技术
炎性肠病(inflammatory bowel disease,IBD)是一种特殊的慢性肠道炎症性疾病,主要包括克罗恩病(crohn's disease,CD)和溃疡性结肠炎(ulcerativecolitis,UC)。临床上,炎性肠病患者会表现为反复的腹痛、腹泻、黏液血便,甚至出现各种全身并发症,如视物模糊、关节疼痛、皮疹等。
IBD是五种常见胃肠道疾病之一,会给病患带来终身的经济负担。它是一种多因素疾病,这些因素包括饮食、肠道菌群紊乱、遗传、异常的免疫反应、炎性介质等,其中,饮食、肠道微生物紊乱在疾病的致病过程中扮演着重要角色,流行病学调查显示,中国人的乳糖不耐受状态达到了80%以上,如果进食含乳糖的乳蛋白,则会加重炎性肠病的腹泻状态,不利于病人的身体恢复。研究显示,炎性肠病患者的肠道菌群结构、数量、种类、分布组成都发生了明显的改变,包括益生菌减少,致病菌数量和菌群移位的增加,这些都可导致一系列的代谢病理变化。肠道菌群失调在免疫和代谢紊乱相关疾病的发生、发展中起着重要作用,因此通过调节肠道菌群紊乱可改善免疫系统。益生元(Prebiotics)是一种膳食补充剂,通过选择性的刺激一种或数种菌落中细菌的生长与活性,从而对寄主产生有益的影响,它是一种可改善宿主健康但不能被消化的营养成分(Gibson and Roberfroid,1995)。益生元虽不能被人体消化,但可被肠道内的细菌分解利用,从而产生醋酸、丙酸、丁酸等有机酸,改善肠道pH值,并有效抑制致病菌。
无论是为了诱导或维持治疗,IBD患者需终身服药。目前的治疗药物有类固醇激素、免疫抑制剂、生物制剂,但无论是单一治疗或是联合治疗方案,都不是很令人满意。相关研究已显示,在轻中度IBD疾病的缓解中,专属的全营养物质可比得上类固醇激素。因此,胃肠病学家和患者逐渐意识到,除了标准治疗方式之外,特殊营养干预是一个安全、长期的疾病管理选择。这种特定的营养解决方案应该基于科学/临床证据,并特别设计来满足患者不同的营养需求。
在美国、欧盟等发达国家,对于特殊医学食品都已有相应的规定和开发应用;而我国GB 29922-2013《特殊医学用途配方食品通则》食品安全国家标准中明确规定,2.1.2特定全营养配方食品:可作为单一营养来源满足目标人群在特定疾病或医学状况下营养需求的特殊医学用途配方食品。但目前国内市场上的炎性肠病全营养配方食品正处于研发的初级阶段,相对科学的原料及配比并不明确。基于此,开发适于临床各种疾病的全营养配方食品及其制备工艺具有重要意义。
发明内容
针对现有技术的不足,本发明提供了一种预消化的炎性肠病全营养配方食品及其制备工艺。
本发明的技术方案如下:
一种炎性肠病全营养配方食品,所述全营养配方食品每100重量份中含有:水解乳清蛋白2-9份;浓缩乳清蛋白2-10份;大豆分离蛋白2-7份;其他蛋白2-7份;氨基酸预混料1.35-11.5份;核苷酸预混料1-5份;麦芽糊精30-53份;低聚果糖1-5份;低聚半乳糖1-5份;聚葡萄糖1-4份;植物油粉末7-20份;矿物质预混料4-18份;维生素预混料0.23-6.75份;
其中,所述的水解乳清蛋白、浓缩乳清蛋白为无乳糖型乳清蛋白;
所述氨基酸预混料,以1g计,原料组成如下:L-谷氨酰胺50-75mg、苏氨酸53-72mg、丝氨酸65-87mg、脯氨酸20-41mg、半胱氨酸2-10mg、牛磺酸0.001-0.006mg,余量为麦芽糊精;
所述核苷酸预混料,以1g计,原料组成如下:核苷酸15-35mg,余量为麦芽糊精;其中所述的核苷酸为5'-单磷酸胞苷(5'-CMP)、5'-单磷酸尿苷(5'-UMP)、5'-单磷酸腺苷(5'-AMP)、5'-肌苷酸二钠、5'-鸟苷酸二钠、5'-尿苷酸二钠、5'-胞苷酸二钠中的一种或多种以任一重量比例的混合;
所述矿物质预混料,以1g计,原料组成如下:一水柠檬酸钠128-176mg、氯化钾88-128mg、葡萄糖酸铜0.1-0.8mg、葡萄糖酸镁152-168mg、富马酸亚铁1.5-4mg、葡萄糖酸锌2-6mg、葡萄糖酸锰0.5-3mg、磷酸氢钙97-135mg、碘化钾0.004-0.009mg、亚硒酸钠0.002-0.009mg,氯化铬50-80ug、钼酸铵70-100ug、氟化钾0.3-0.7mg,余量为麦芽糊精;
所述维生素预混料,以1g计,原料组成如下:维生素A醋酸酯油0.1-1.5IU、维生素D3 0.01-0.1IU、维生素E醋酸酯0.1-1mg、维生素K1 0.01-0.1mg、盐酸硫胺素(B1)0.008-0.15mg、核黄素(B2)0.007-0.12mg、盐酸吡哆醇(B6)0.02-0.18mg、氰钴胺(B12)0.01-0.14mg、烟酰胺0.1-1mg、叶酸0.001-0.01mg、D-泛酸钙0.02-0.21mg、L-抗坏血酸1-3mg、生物素0.1-1.4mg、肌醇0.01-0.12mg、左旋肉碱酒石酸盐0.02-0.18mg,余量为麦芽糊精。
根据本发明优选的,所述其他蛋白为黑豆蛋白、玉米蛋白、小麦蛋白、豌豆蛋白、胶原蛋白、白蛋白、海参蛋白中的一种或多种以任意重量比例的混合。
根据本发明优选的,所述氨基酸预混料,以1g计,原料组成如下:L-谷氨酰胺53-70mg、苏氨酸58-65mg、丝氨酸70-81mg、脯氨酸22-35mg、半胱氨酸3-7mg、牛磺酸0.002-0.004mg,余量为麦芽糊精;进一步优选如下:L-谷氨酰胺60.124mg、苏氨酸62.751mg、丝氨酸72.142mg、脯氨酸25.457mg、半胱氨酸5.412mg、牛磺酸0.003mg,余量为麦芽糊精。
根据本发明优选的,所述核苷酸预混料,以1g计,原料组成如下:核苷酸20-30mg,余量为麦芽糊精;进一步优选如下:核苷酸24.514mg,余量为麦芽糊精。
根据本发明优选的,所述植物油粉末由植物油与可食用载体组成,二者的重量比为1:(1~1.5),将植物油与可食用载体混合,喷粉干燥制成粉剂。其中,优选的,所述植物油为花生油、大豆油、棕榈油、葵花籽油、亚麻油、菜子油、芝麻油、橄榄油、茶油、棉籽油、椰子油中的一种或多种以任意重量比例的混合;所述可食用载体为麦芽糊精。

上述炎性肠病全营养配方食品的制备工艺,步骤如下:原料预处理后按比例称取原料,采用干法多级混合,经包装后即得炎性肠病全营养配方食品。
根据本发明优选的,上述制备工艺中,所述预处理包括水解乳清蛋白和氨基酸的包埋以及原料的吸尘、扒皮、杀菌;其中,优选的,所述包埋,步骤如下:将水解乳清蛋白或氨基酸加入到环糊精的饱和溶液中,选择合适的超声强度,在设置温度下超声一定时间,放入冰箱中冷藏,抽滤得白色滤饼,用少量溶剂洗涤滤饼,置烘箱中干燥、粉碎即得包埋物;其中,超声功率为195W,超声包埋温度为35.5℃,超声包埋时间为25min,水解乳清蛋白或氨基酸与环糊精的质量比为1:6,包埋率为85.6%。
根据本发明优选的,所述混合为三维混合,选用三维运动混料机。
本发明中涉及原料均为食品级原料,可以在市场上购买或是根据现有食品级技术制备得到。
本发明中各有效成分及其作用:
本发明配方中富含优质蛋白、益生元、脂类、维生素、矿物质及微量元素等,均是人体生长发育及基本生理代谢所需的营养来源。
蛋白质:本发明中蛋白质为优质蛋白,包含乳清蛋白、大豆蛋白及其他植物蛋白。且蛋白质的类型包含适度水解状态的蛋白质,水解蛋白是使用蛋白酶将蛋白水解成短肽和氨基酸的混合物,水解蛋白可以用于特种营养流质食物或特殊膳食增补剂,且适度水解过的蛋白质失去了引发人体过敏的能力。水解状态蛋白是预消化的,可快速被利用,提高血清白蛋白水平,适用于胃肠道功能障碍的人群。
氨基酸:本配方中,除肽类蛋白质,还添加了必需氨基酸中的苏氨酸、非必需氨基酸分类中的谷氨酰胺、丝氨酸、脯氨酸。条件必需氨基酸分类中半胱氨酸。研究显示,饮食中增加苏氨酸、丝氨酸、脯氨酸、半胱氨酸含量,可促进结肠黏液蛋白的合成;谷氨酰胺可减轻炎性肠病的炎症反应。
脂肪:本配方中包含人体所必须的脂肪酸类,例如亚油酸、α-亚麻酸,脂肪酸,它们是炎症调节因子的前体物质,研究表明,过多的长链脂肪酸如亚麻酸、油酸会影响肠内营养的效果,因此应适当选择低脂营养制剂配方,也应严格按照GB29922-2013 3.4.2.3中描述的,亚油酸供能比不低于2.0%;α-亚麻酸供能比应不低于0.5%。
碳水化合物:本配方中的主要碳水化合物为麦芽糊精。绝大多数病人血糖都不会很稳定,因此配方设计尽量降低GI值。
益生元:本配方中的益生元包含低聚半乳糖、低聚果糖、聚葡萄糖。益生元在人体内,可被肠道微生物发酵,产生短链脂肪酸,如乙酸、丙酸、丁酸等。这些短链脂肪酸具有以下重要的生理功能:①提供机体能量;②促进细胞膜脂类物质合成;③可能预防和治疗溃疡性结肠炎;④可预防结肠肿瘤;⑤对内源性胆固醇的合成有抑制作用。
维生素:本配方中包含人体所需的13种必需维生素。其中,脂溶性维生素分别为维生素A、维生素D、维生素E、维生素K1;水溶性维生素分别为维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C、生物素。炎性肠病的患者由于腹泻等原因,会出现维生素缺乏现象,尤其是一些脂溶性维生素,如维生素A、维生素E、维生素D水平较正常人明显减低。研究显示,炎性肠病患者会有贫血的症状,这些种症状是因为叶酸或维生素B12丢失引起;且有的患者表现出骨质丢失的症状,原因是维生素D不足所导致。在维生素的化合物选择上,考虑其物理特性(溶解性、吸潮性)及生物特性。
矿物质:本配方的矿物质中包含人体所需的宏量元素和微量元素,宏量元素为钠、钾、镁、钙、磷、氯;微量元素为铜、铁、锌、锰、碘、硒、铬、钼、氟。一种好的矿物质强化剂应满足四个条件:一是生物利用率高;二是对其他营养素摄取的影响小;三是矿物质营养素含量高;四是滋味平和、无异味,从经济角度出发,要求其价格尽可能廉价。大部分无机矿物质优势是其各种元素含量高,生物利用率相对低,而有机矿物质其生物利用率高,但是含量低,除以上原则,我们还根据疾病的特殊生理需求,再量上按照患者疾病的特殊状态进行科学配比。
核苷酸:肠道最佳发育主要依赖于核苷酸的补充,核苷酸对胃肠道组织的正常发育、成熟和修补是非常重要的。供给含核苷酸的食物能够使因蛋白缺少而丧失的免疫功能得到全面恢复,而这种恢复是即使具有了充足的蛋白质和能量也不能完全达到的,核苷酸能提高人体免疫力,降低感染率和并发症的发生。
本发明的有益效果:
1、本发明将优质蛋白、脂类、碳水化合物、益生元、维生素、矿物质等进行科学配比研制而成,是一种能满足炎性肠病患者的营养需求,还对炎性肠病症状缓解及愈合有重要作用的全营养配方食品。
2、本发明的食品配方中含有水解乳清蛋白及氨基酸预混料,由于水解蛋白及氨基酸的口感偏苦,因此本发明中的水解乳清蛋白及氨基酸预混料采用了包埋技术,以改善配方中的不良口感。
3、本发明采用干法制备炎性肠病全营养配方食品,这种工艺的特点主要有两面:一是工艺中去掉了乳清重溶再喷雾干燥的过程,节省了能耗,降低了成本,同时也使生产速度加快;二是避免了对营养强化剂的加热,防止了对热敏感性维生素(如VB1、VB2、VC、叶酸、泛酸等)的破坏,从而保证了产品的全价营养效能。目前配方食品粉剂的制备大多采用湿法和半干法,这两种加工方法生产周期长,能耗大,成本高。而采用干法生产可完全克服以上缺点。

上述全营养配方食品的制备工艺,如图1所示,步骤如下:
I:原料预处理
将蛋白(水解乳清蛋白、浓缩乳清蛋白、大豆分离蛋白、其他蛋白)、麦芽糊精、益生元(低聚果糖、低聚半乳糖、聚葡萄糖)、植物油粉末分别经一次吸尘、一次扒皮、二次吸尘,隧道杀菌后进行二次扒皮,按比例称量后进行一级混合,得主要原料预混料;
将氨基酸和麦芽糊精分别经一次吸尘、一次扒皮、二次吸尘,隧道杀菌后进行二次扒皮,按比例称量后进行一级混合,得氨基酸预混料;
核苷酸预混料、维生素预混料和矿物质预混料的处理方法同氨基酸预混料;
II:原料混合
将步骤I制得的主要原料预混料分别与步骤I制得的维生素预混料、矿物质预混料、氨基酸预混料、核苷酸预混料进行二级混合,混匀后将所有原料混合进行三级混合,筛粉暂存;
其中,所述混合为干法三维混合,选用三维运动混合机;
III:包装入库
将包装材料经杀菌后送至包装车间,将步骤II混合后的粉剂经自动灌装包装、传输喷码、装箱喷码后检验,得炎性肠病全营养配方食品,入库保存。
其中,步骤I中,所述的水解乳清蛋白和氨基酸为经包埋预处理的水解乳清蛋白和氨基酸;所述包埋,步骤如下:将水解乳清蛋白或氨基酸加入到环糊精的饱和溶液中,选择合适的超声强度,在设置温度下超声一定时间,放入冰箱中冷藏,抽滤得白色滤饼,用少量溶剂洗涤滤饼,置烘箱中干燥、粉碎即得包埋物;其中,超声功率为195W,超声包埋温度为35.5℃,超声包埋时间为25min,水解乳清蛋白或氨基酸与环糊精的质量比为1:6,包埋率为85.6%。

氨基酸预混料8.6g;
核苷酸预混料3.2g;
麦芽糊精39.5g;
低聚果糖4g;
低聚半乳糖3g;
聚葡萄糖2g;
植物油粉末12g;
矿物质预混料8g;
维生素预混料4.3g;
其中,所述的水解乳清蛋白、浓缩乳清蛋白为无乳糖型乳清蛋白。
其中,所述的其他蛋白为豌豆蛋白、黑豆蛋白、小麦蛋白、白蛋白等重量比例的混合物;所述植物油粉末由芝麻油、橄榄油、茶油、棉籽油、椰子油和麦芽糊精等重量比例混合制备,植物油和麦芽糊精的质量比为1:1.45;

实施例4:
按照实施例1所述的炎性肠病全营养配方食品的原料配方及制备工艺,制备得到炎性肠病营养配方食品,所不同的是,在该食品配方中不含核苷酸预混料。
实验例:
本发明提供的预消化炎性肠病全营养配方食品对小鼠肠道功能的影响:
1)对小鼠体重的影响
SPF级Balb/c小鼠,雌性,体重为18-22g,给予0.1ml的20g/L三硝基苯磺酸500ml/L乙醇溶液灌胃,建立炎性肠病模型小鼠,建模成功后。将小鼠随机分到5个组,分别为实验组1、实验组2、实验组3、实验组4、对照组,每组15只炎性肠病小鼠。按照0.6g(干重粉剂)/10g(小鼠体重)进行灌胃,灌胃溶剂均为0.2ml生理盐水,连续14天,实验组1、2、3中的模型小鼠分别给予实施例1、2、3制备的炎性肠病全营养配方食品,实验组4中的模型小鼠给予实施例4制备的炎性肠病营养配方食品,对照组中的模型小鼠给予同体积生理盐水。
炎性肠病模型小鼠灌胃期间,单笼饲养,计算最终各组炎性肠病模型小鼠体重的改变,计算结果如表1所示:

由表1可知,与对照组比较,给予本发明制备的实验组1、2、3、4预消化炎性肠病全营养配方食品可以明显增加炎性肠病模型小鼠的体重(P<0.05),维持小鼠的正常生理功能。实验组4与对照组相比,炎性肠病模型小鼠的体重也有所增加,但仍不及实验组1小鼠体重的增加量(P<0.05),说明核苷酸辅助推进了炎性肠病全营养配方食品的配比优化,且实验组1灌胃后模型小鼠增重比实验组2、3显著(P<0.05),说明实验组1的配方优于实验组2、3,为本发明最为优选的原料配比。
2)对小鼠食物利用的影响
建模、实验分组及摄入量均与1)中一致。
炎性肠病模型小鼠灌胃期间,单笼饲养,测定其摄入食量及其体重变化,计算食物利用系数,计算结果如表2所示:
其中:食物利用系数=体重增长(g)÷食物重量(g)×100%。

由表2可知,与对照组相比,给予本发明制备的实验组1、2、3、4预消化的炎性肠病全营养配方食品可显著提高小鼠食物利用系数(P<0.05),有利于小鼠对食物的消化吸收;实验组4与对照组相比,炎性肠病模型小鼠的食物利用系数也有所增加,但仍不及实验组1食物利用系数的增加量(P<0.05),说明核苷酸辅助推进了炎性肠病全营养配方食品的配比优化;实验组1灌胃后模型小鼠食物利用系数比实验组2、3高(P<0.05),说明实验组1的配方优于实验组2、3,为本发明最为优选的原料配比。
3)对小鼠血细胞的影响
建模、实验分组及摄入量均与1)中一致。
灌胃前,取各组炎性肠病模型小鼠的血液,检测其血细胞数量;灌胃结束后,取各炎性肠病模型小鼠血液,再次检测其血细胞数量;并计算血液中血细胞数量的变化,计算结果如表3和表4所示:
其中,白细胞和红细胞的测定方法按《临床检验手册》方法测定。

由表3可知,与对照组相比,给予本发明制备的实验组1、2、3、4预消化的炎性肠病全营养配方食品可显著增加炎性肠病模型小鼠血液中红细胞的数量(P<0.05),血液中红细胞数增加,可减少炎性肠病小鼠贫血的并发症;实验组4与对照组相比,红细胞的数量也有所增加,但仍不及实验组1的红细胞增加量(P<0.05);说明核苷酸辅助推进了炎性肠病全营养配方食品的配比优化;实验组1灌胃后模型小鼠红细胞增加数比实验组2、3高(P<0.05),说明实验组1的配方优于实验组2、3,为本发明最为优选的原料配比。

由表4可知,与对照组相比,给予本发明制备的实验组1、2、3、4预消化的炎性肠病全营养配方食品可显著降低炎性肠病模型小鼠血液中白细胞的数量(P<0.05),血液中白细胞数降低,有利于缓解炎性肠病小鼠的炎症活动度;实验组4与对照组相比,白细胞的数量有所降低,但仍不及实验组1的白细胞降低量(P<0.05);说明核苷酸辅助推进了炎性肠病全营养配方食品的配比优化;实验组1灌胃后的模型小鼠白细胞降低程度比实验组2、3显著(P<0.05),说明实验组1的配方优于实验组2、3,为本发明最为优选的原料配比。
4)对小鼠肠道微生物的影响
建模与1)一致,建模成功后。将小鼠随机分到5个组,分别为实验组1、实验组2、实验组3、实验组4、对照组,每组30只炎性肠病小鼠。灌胃前,每小组取15只炎性肠病模型小鼠,处死后取盲肠内容物培养计数双歧杆菌;灌胃期间,单笼饲养;灌胃结束后,每小组取15只炎性肠病模型小鼠,处死后取盲肠内容物培养计数双歧杆菌;计算灌胃前后小鼠肠道双歧杆菌的数量变化,计算结果如表5所示。
双歧杆菌计数方法为,样品称重后10倍系列稀释,取一定稀释度的稀释液5ul涂布于事先配制好的培养基(西红柿汁400m l、多价蛋白胨15g、酵母浸膏6g、葡萄糖20g、淀粉0.5g、吐温80ml、琼脂粉20g,加热溶解后调pH为6.8~7.0,l15℃灭菌20min,冷至55~60℃,加入硫酸新霉索使其终浓度100mg/L),每个稀释度设置3组平行,按厌氧罐法于37℃厌氧培养72h后计数。

由表5可知,与对照组相比,给予本发明制备的实验组1、2、3、4预消化的炎性肠病全营养配方食品可显著增加炎性肠病模型小鼠肠道内的双歧杆菌数量(P<0.05),说明本发明制备的炎性肠病全营养配方食品有利于提高炎性肠病小鼠肠道有益菌的含量,进而改善其免疫力;实验组4与对照组相比,双歧杆菌数量有所增加,但仍不及实验组1双歧杆菌增加的量(P<0.05),说明核苷酸辅助推进了炎性肠病全营养配方食品的配比优化;实验组1灌胃后的模型小鼠双歧杆菌数增加程度比实验组2、3显著(P<0.05),说明实验组1的配方优于实验组2、3,为本发明最为优选的原料配比。
Claims (10)
1.一种炎性肠病全营养配方食品,其特征在于,所述全营养配方食品每100重量份中含有:水解乳清蛋白2-9份;浓缩乳清蛋白2-10份;大豆分离蛋白2-7份;其他蛋白2-7份;氨基酸预混料1.35-11.5份;核苷酸预混料1-5份;麦芽糊精30-53份;低聚果糖1-5份;低聚半乳糖1-5份;聚葡萄糖1-4份;植物油粉末7-20份;矿物质预混料4-18份;维生素预混料0.23-6.75份;
其中,所述的水解乳清蛋白、浓缩乳清蛋白为无乳糖型乳清蛋白;
所述氨基酸预混料,以1g计,原料组成如下:L-谷氨酰胺50-75mg、苏氨酸53-72mg、丝氨酸65-87mg、脯氨酸20-41mg、半胱氨酸2-10mg、牛磺酸0.001-0.006mg,余量为麦芽糊精;
所述核苷酸预混料,以1g计,原料组成如下:核苷酸15-35mg,余量为麦芽糊精;其中所述的核苷酸为5'-单磷酸胞苷(5'-CMP)、5'-单磷酸尿苷(5'-UMP)、5'-单磷酸腺苷(5'-AMP)、5'-肌苷酸二钠、5'-鸟苷酸二钠、5'-尿苷酸二钠、5'-胞苷酸二钠中的一种或多种以任一重量比例的混合;
所述矿物质预混料,以1g计,原料组成如下:一水柠檬酸钠128-176mg、氯化钾88-128mg、葡萄糖酸铜0.1-0.8mg、葡萄糖酸镁152-168mg、富马酸亚铁1.5-4mg、葡萄糖酸锌2-6mg、葡萄糖酸锰0.5-3mg、磷酸氢钙97-135mg、碘化钾0.004-0.009mg、亚硒酸钠0.002-0.009mg,氯化铬50-80ug、钼酸铵70-100ug、氟化钾0.3-0.7mg,余量为麦芽糊精;
所述维生素预混料,以1g计,原料组成如下:维生素A醋酸酯油0.1-1.5IU、维生素D30.01-0.1 IU、维生素E醋酸酯0.1-1mg、维生素K1 0.01-0.1mg、盐酸硫胺素(B1)0.008-0.15mg、核黄素(B2)0.007-0.12mg、盐酸吡哆醇(B6)0.02-0.18mg、氰钴胺(B12)0.01-0.14mg、烟酰胺0.1-1mg、叶酸0.001-0.01mg、D-泛酸钙0.02-0.21mg、L-抗坏血酸1-3mg、生物素0.1-1.4mg、肌醇0.01-0.12mg、左旋肉碱酒石酸盐0.02-0.18mg,余量为麦芽糊精。
2.如权利要求1所述的全营养配方食品,其特征在于,所述其他蛋白为黑豆蛋白、玉米蛋白、小麦蛋白、豌豆蛋白、胶原蛋白、白蛋白、海参蛋白中的一种或多种以任意重量比例的混合。
3.如权利要求1所述的全营养配方食品,其特征在于,所述氨基酸预混料,以1g计,原料组成如下:L-谷氨酰胺53-70mg、苏氨酸58-65mg、丝氨酸70-81mg、脯氨酸22-35mg、半胱氨酸3-7mg、牛磺酸0.002-0.004mg,余量为麦芽糊精。
4.如权利要求1所述的全营养配方食品,其特征在于,所述核苷酸预混料,以1g计,原料组成如下:核苷酸20-30mg,余量为麦芽糊精。
5.如权利要求1所述的全营养配方食品,其特征在于,所述植物油粉末由植物油与可食用载体组成,二者的重量比为1:(1~1.5),将植物油与可食用载体混合,喷粉干燥制成粉剂;
其中,所述植物油为花生油、大豆油、棕榈油、葵花籽油、亚麻油、菜子油、芝麻油、橄榄油、茶油、棉籽油、椰子油中的一种或多种以任意重量比例的混合;所述可食用载体为麦芽糊精。
6.如权利要求1所述的全营养配方食品,其特征在于,所述矿物质预混料,以1g计,原料组成如下:一水柠檬酸钠136-168mg、氯化钾93-113mg、葡萄糖酸铜0.2-0.7mg、葡萄糖酸镁154-165mg、富马酸亚铁1.8-3mg、葡萄糖酸锌2.5-5mg、葡萄糖酸锰0.8-2mg、磷酸氢钙108-128mg、碘化钾0.005-0.008mg、亚硒酸钠0.003-0.007mg,氯化铬65-76ug、钼酸铵82-91ug、氟化钾0.45-0.63mg,余量为麦芽糊精。
7.如权利要求1所述的全营养配方食品,其特征在于,所述维生素预混料,以1g计,原料组成如下:维生素A醋酸酯油0.521-0.945IU、维生素D3 0.0321-0.081IU、维生素E醋酸酯0.381-0.841mg、维生素K1 0.0421-0.089mg、盐酸硫胺素(B1)0.012-0.092mg、核黄素(B2)0.012-0.083mg、盐酸吡哆醇(B6)0.052-0.121mg、氰钴胺(B12)0.052-0.085mg、烟酰胺0.256-0.872mg、叶酸0.005-0.008mg、D-泛酸钙0.095-0.152mg、L-抗坏血酸1.215-2.424mg、生物素0.521-0.952mg、肌醇0.041-0.097mg、左旋肉碱酒石酸盐0.0452-0.125mg,余量为麦芽糊精。
8.一种如权利要求1-7任一项所述的炎性肠病全营养配方食品的制备工艺,步骤如下:原料预处理后按比例称取原料,采用干法多级混合,经包装后即得炎性肠病全营养配方食品。
9.如权利要求8所述的制备工艺,其特征在于,所述预处理包括水解乳清蛋白和氨基酸的包埋以及原料的吸尘、扒皮、杀菌;其中,所述包埋,步骤如下:将水解乳清蛋白或氨基酸加入到环糊精的饱和溶液中,选择合适的超声强度,在设置温度下超声一定时间,放入冰箱中冷藏,抽滤得白色滤饼,用少量溶剂洗涤滤饼,置烘箱中干燥、粉碎即得包埋物;其中,超声功率为195W,超声包埋温度为35.5℃,超声包埋时间为25min,水解乳清蛋白或氨基酸与环糊精的质量比为1:6,包埋率为85.6%。
10.如权利要求8所述的制备工艺,其特征在于,所述的混合为三维混合。
