本发明属于保健食品领域,公开了一种调理肠胃的紫薯面条及其制备方法,由以下重量份组成:小麦粉50‑60份、玉米粉20‑30份、黑芝麻粉15‑25份、复合杂豆粉10‑20份、紫薯30‑40份、白术挥发油‑环糊精包合物0.5‑1份、枳实黄酮0.5‑1份、决明子提取液1‑2份、低聚果糖2‑4份、卡拉胶0.1‑0.5份、柠檬酸0.2‑0.4份、D‑异抗坏血酸0.15‑0.2份、食盐1‑2份。本发明添加了白术挥发油‑环糊精包合物、枳实黄酮、决明子提取液复配作为功效成分制作面条,使制得的面条能够针对老年人肠道功能的变化特点,改善老年便秘症状,并帮助增加胃肠道动力,提高老年人的消化功能,减少因胃肠道功能下降导致的胃肠道疾病的发病率。

本发明涉及保健食品技术领域,具体涉及一种调理肠胃的紫薯面条及其制备方法。
背景技术
老年人消化机能减退,主要表现在胃肠、肝脏、胰腺的老化。胃黏膜萎缩,胃液分泌减少,40岁起,胃蛋白酶原分泌明显减少,胃的消化作用减弱。60岁以上的老年人约有35%为盐酸偏低或缺乏,对进入胃细菌的杀灭作用减弱或丧失,促胰液素的释放也降低,胃平滑肌层随年龄增长变薄或萎缩,收缩力降低,使胃蠕动减弱,胃排空延迟,故老年人不仅消化不良,而且常伴有便秘。小肠黏膜上皮细胞减少,小肠腺萎缩,小肠液分泌也相应减少,各种消化酶活性和含量显著降低,消化和吸收功能均大大减退。大肠黏膜萎缩,对水分吸收能力下降,同时黏液分泌减少,平滑肌层萎缩,肠蠕动缓慢,是引起便秘的主要原因。老年消化系统常见疾病包括萎缩性胃炎、消化道出血、老年便秘,如果不注意调理,还可能发展成胃癌、结肠癌等严重的消化道癌,给老年人的晚年生活带来巨大的不便与痛苦。
传统的面条是以小麦粉为主要原料制成的食品,它是我国的传统主食之一。随着食品工业发展和生活节奏的加快以及对高品质食品的需求,对营养健康、干净卫生、方便快捷的食品需求日益增加,传统的面条渐渐不能满足现代饮食的多样化需求,因而,市面上渐渐出现越来越多不同口味、具有一定营养价值和保健功能的面条,而人们也渐渐投入到保健食疗面条的研发中去,现如今也已有不少针对胃肠道健康的面条的发明专利申请。如中国专利《调理胃肠的药食同膳药膳面条》(专利申请号:CN201310335007.4)、中国专利《一种具有改善胃肠道功能的保健面条及其制备方法》(专利申请号:CN201410144695.0)、中国专利《中草药面条及制备方法》(专利申请号:CN200810051497.4)、中国专利《一种荷叶面条及其加工方法》(专利申请号:CN201310383429.9),这些发明所制备的面条都具有一定的养胃润肠的效果,但是其原料成分搭配简单,且功效笼统,缺乏对老年人胃肠功能变化特点的针对性,只具有对消化功能的普遍改善作用,缺乏对老年人胃肠道疾病的显著防治效果。
发明内容
为了解决上述问题,本发明提供了一种调理肠胃的紫薯面条及其制备方法,添加了白术挥发油-环糊精包合物、枳实黄酮、决明子提取液复配作为功效成分制作面条,使制得的面条能够针对老年人肠道功能的变化特点,温和有效地改善肠道环境,调节肠道菌群,增强肠道免疫力同时刺激结肠扩张和收缩,改善老年便秘症状,并帮助增加胃肠道动力,提高老年人的消化功能,减少因胃肠道功能下降导致的胃肠道疾病的发病率。
本发明可以通过以下技术方案来实现:
一种调理肠胃的紫薯面条,由以下重量份组成:小麦粉50-60份、玉米粉20-30份、黑芝麻粉15-25份、复合杂豆粉10-20份、紫薯30-40份、白术挥发油-环糊精包合物0.5-1份、枳实黄酮0.5-1份、决明子提取液1-2份、低聚果糖2-4份、卡拉胶0.1-0.5份、柠檬酸0.2-0.4份、D-异抗坏血酸0.15-0.2份、食盐1-2份。
优选地,一种调理肠胃的紫薯面条,由以下重量份组成:小麦粉55份、玉米粉25份、黑芝麻粉20份、复合杂豆粉15份、紫薯35份、白术挥发油-环糊精包合物0.75份、枳实黄酮0.75份、决明子提取液1.5份、低聚果糖3份、卡拉胶0.3份、柠檬酸0.3份、D-异抗坏血酸0.18份、食盐1.5份。
优选地,所述复合杂豆粉由以下重量份组成:黄豌豆10-20份、白扁豆10-15份、黑豆10-20份、腰豆5-10份、蚕豆5-10份、赤小豆10-20份。
优选地,所述复合杂豆粉由以下重量份组成:黄豌豆15份、白扁豆12.5份、黑豆15份、腰豆7.5份、蚕豆7.5份、赤小豆15份。
优选地,所述白术挥发油-环糊精包合物的制备方法为:a.取白术药材粉碎成粗颗粒,过10目筛,置于圆底烧瓶中,加入10倍量蒸馏水浸泡1h,加热回流6h,收集挥发油用无水硫酸钠干燥,得到白术挥发油;b.取6gβ-CD置于研钵中,加入80ml蒸馏水,充分研磨,然后缓慢滴加1ml白术挥发油,研磨40min,再将研磨液置于40kHz超声波下超声提取60min,取提取液放入冰箱中冷藏24h,取出,抽滤,取滤液用石油醚洗涤3次,然后于40℃真空干燥4h,得到白术挥发油-环糊精包合物。
优选地,所述枳实黄酮的制备方法为:取枳实药材粉碎过20目筛,加入6倍量70%乙醇回流提取3次,每次1h,过滤,合并滤液,减压回收乙醇,加水调节上样浓度为0.25g/ml,用盐酸调节pH至4,以流速为1ml/min通过LSA-40大孔树脂后,用8BV的蒸馏水水洗,再用3BV的60%乙醇,以1ml/min流速洗脱,收集洗脱液,减压回收乙醇,于65℃烘箱中烘干,即得枳实黄酮。
优选地,所述决明子提取液的制备方法为:取决明子清洗干净后,于50℃烘箱中烘干,粉碎过60目筛,取决明子粉50g,加入8倍量水煎煮1h,过滤,取滤渣加入6倍量水煎煮1h,过滤,取滤渣加入4倍量水煎煮1h,过滤,合并3次滤液,将滤液浓缩至100ml,得到决明子提取液。
本发明还提供一种调理肠胃的紫薯面条的制备方法,包括如下步骤:
(1)取新鲜紫薯用清水洗净后,切成小块,放入蒸锅中煮熟,取出,冷却至室温后,捣碎成紫薯泥;
(2)取低聚果糖、卡拉胶、柠檬酸、D-异抗坏血酸和食盐混合,加水溶解,再加入白术挥发油-环糊精包合物、枳实黄酮和决明子提取液搅拌均匀,得到混合液;
(3)将小麦粉、玉米粉、黑芝麻粉和复合杂豆粉混合搅拌均匀,放入和面机中,加入步骤(1)的紫薯泥和步骤(2)的混合液,缓慢搅拌15-20min,得到光滑面团;
(4)将步骤(3)和好的面团取出放入熟化机内,保持温度20-30℃,以转速8-10r/min熟化20-30min;
(5)将步骤(4)熟化好的面条锟轧成2块面带,再通过一组轧锟将其合成一块面带,连续通过2-3次轧锟,逐步压薄至0.8-1mm,再切成宽1.8-2mm的湿面条;
(6)将步骤(5)的湿面条放入烘房中烘干后,切成长200-220mm的面条,冷却至室温,包装,即得本发明调理肠胃的紫薯面条。
本发明所述各主要功效成分作用机理如下:
白术能促进胃肠运动,具有明显促进胃排空及小肠推进功能的作用,白术挥发油中所含白术内酯I能够使唾液淀粉酶活性增强,对肠管功能进行调节,促进对肠管吸收作用,对胃肠功能具有调节作用。
决明子具有较好的润肠通便作用,其含有的多种成分对肠道均有滋润的作用,决明子中的蒽醌类能够起到泻下的作用,大黄素、大黄酚等均具有通便作用,决明子提取液中还含有少量的水溶性多糖,能够对通便产生一定的效果,决明子提取液可以减少肠壁对固醇类物质的吸收,从而增强了肠道的排泄功能。
枳实具有促进胃排空及小肠推进的作用,其重要成分枳实黄酮中所含的橙皮苷、新橙皮苷和柚皮苷可改善功能性消化不良的胃排空,增加胃动素的分泌从而促进小肠推进,对治疗便秘有一定的作用,还能够通过胃环氧合酶-2和胃DNA碎片的表达来改善胃溃疡的症状,具有一定抗溃疡活性;枳实黄酮还能通过增加GR系统抗氧化酶活性,即降低超氧化物歧化酶,增加谷胱甘肽过氧化物酶、和谷胱甘肽还原酶的含量,来降低胃和十二指肠的损伤,增加胃粘液,从而对胃具有一定的保健作用。
紫薯中纤维素含量较高,能够增加粪便体积,促进肠胃蠕动,清理肠腔内滞留的粘液、积气和腐败物,排出粪便中的有毒物质和致癌物质,保持大便畅通,改善消化道环境,防止胃肠道疾病的发生。紫薯中还能含有锌、铁、铜、锰、钙、硒等天然微量元素,具有良好的保健功能,且紫薯的硒易被人体吸收,能有效地留在血清中,修补心肌,增强机体免疫力,清除体内产生癌症的自由基,抑制癌细胞中DNA的合成和癌细胞的分裂与生长,预防胃癌、肝癌等疾病的发生。
复合杂豆粉是由黄豌豆、白扁豆、黑豆、腰豆、蚕豆、赤小豆等杂豆组成,其含有丰富膳食纤维,膳食纤维具有预防肥胖、润肠通便、预防结肠癌、调节肠道菌群、调节血糖水平、预防糖尿病等功能,能改变肠道内微生物群的构成与代谢,诱导有益的好气菌的大量繁殖,并能促进并增加唾液和消化液的分泌,促进胃消化吸收,并由于对胃的填充作用而产生饱腹感,同时减少了小肠对脂肪的吸收率。

本发明提供的一种调理肠胃的紫薯面条及其制备方法,针对老年肠道功能变化特点,弥补了面条制作技术相关现有技术中原料成分笼统,缺乏针对性的缺陷,添加了白术挥发油-环糊精包合物、枳实黄酮、决明子提取液复配后精准地添加至面条中,使制得的面条能够针对老年人肠道功能的变化特点,温和有效地改善肠道环境,调节肠道菌群,增强肠道免疫力同时刺激结肠扩张和收缩,改善老年便秘症状,并帮助增加胃肠道动力,提高老年人的消化功能,减少因胃肠道功能下降导致的胃肠道疾病的发病率。另外,本发明还针对老年人的体质特征和消化特性,精准地添加将黄豌豆、白扁豆、黑豆、腰豆、蚕豆、赤小豆等经过合理配比形成复合杂豆粉作为制作面条的原料,并与紫薯复配制作面条,使制得的面条不仅色泽鲜亮诱人、口感层次分明、营养全面丰富,为老年人提供更易吸收的矿物质和膳食纤维,有针对性地改善老年人胃肠道功能,提高老年人的生活质量与生存质量,具有广阔的市场前景。
具体实施方式
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种调理肠胃的紫薯面条,由以下重量份组成:小麦粉50份、玉米粉30份、黑芝麻粉15份、复合杂豆粉20份、紫薯30份、白术挥发油-环糊精包合物1份、枳实黄酮0.5份、决明子提取液2份、低聚果糖2份、卡拉胶0.5份、柠檬酸0.2份、D-异抗坏血酸0.2份、食盐1份。
所述复合杂豆粉由以下重量份组成:黄豌豆20份、白扁豆10份、黑豆20份、腰豆5份、蚕豆10份、赤小豆10份。
所述白术挥发油-环糊精包合物的制备方法为:a.取白术药材粉碎成粗颗粒,过10目筛,置于圆底烧瓶中,加入10倍量蒸馏水浸泡1h,加热回流6h,收集挥发油用无水硫酸钠干燥,得到白术挥发油;b.取6gβ-CD置于研钵中,加入80ml蒸馏水,充分研磨,然后缓慢滴加1ml白术挥发油,研磨40min,再将研磨液置于40kHz超声波下超声提取60min,取提取液放入冰箱中冷藏24h,取出,抽滤,取滤液用石油醚洗涤3次,然后于40℃真空干燥4h,得到白术挥发油-环糊精包合物。
所述枳实黄酮的制备方法为:取枳实药材粉碎过20目筛,加入6倍量70%乙醇回流提取3次,每次1h,过滤,合并滤液,减压回收乙醇,加水调节上样浓度为0.25g/ml,用盐酸调节pH至4,以流速为1ml/min通过LSA-40大孔树脂后,用8BV的蒸馏水水洗,再用3BV的60%乙醇,以1ml/min流速洗脱,收集洗脱液,减压回收乙醇,于65℃烘箱中烘干,即得枳实黄酮。
所述决明子提取液的制备方法为:取决明子清洗干净后,于50℃烘箱中烘干,粉碎过60目筛,取决明子粉50g,加入8倍量水煎煮1h,过滤,取滤渣加入6倍量水煎煮1h,过滤,取滤渣加入4倍量水煎煮1h,过滤,合并3次滤液,将滤液浓缩至100ml,得到决明子提取液。
上述一种调理肠胃的紫薯面条的制备方法,包括以下步骤:
(1)取新鲜紫薯用清水洗净后,切成小块,放入蒸锅中煮熟,取出,冷却至室温后,捣碎成紫薯泥;
(2)取低聚果糖、卡拉胶、柠檬酸、D-异抗坏血酸和食盐混合,加水溶解,再加入白术挥发油-环糊精包合物、枳实黄酮和决明子提取液搅拌均匀,得到混合液;
(3)将小麦粉、玉米粉、黑芝麻粉和复合杂豆粉混合搅拌均匀,放入和面机中,加入步骤(1)的紫薯泥和步骤(2)的混合液,缓慢搅拌15-20min,得到光滑面团;
(4)将步骤(3)和好的面团取出放入熟化机内,保持温度20-30℃,以转速8-10r/min熟化20-30min;
(5)将步骤(4)熟化好的面条锟轧成2块面带,再通过一组轧锟将其合成一块面带,连续通过2-3次轧锟,逐步压薄至0.8-1mm,再切成宽1.8-2mm的湿面条;
(6)将步骤(5)的湿面条放入烘房中烘干后,切成长200-220mm的面条,冷却至室温,包装,即得本发明调理肠胃的紫薯面条。
实施例2
一种调理肠胃的紫薯面条,由以下重量份组成:小麦粉60份、玉米粉20份、黑芝麻粉25份、复合杂豆粉10份、紫薯40份、白术挥发油-环糊精包合物0.5份、枳实黄酮1份、决明子提取液1份、低聚果糖4份、卡拉胶0.1份、柠檬酸0.4份、D-异抗坏血酸0.15份、食盐2份。
所述复合杂豆粉由以下重量份组成:黄豌豆10份、白扁豆15份、黑豆10份、腰豆10份、蚕豆5份、赤小豆20份。
实施例3
一种调理肠胃的紫薯面条,由以下重量份组成:小麦粉55份、玉米粉25份、黑芝麻粉20份、复合杂豆粉15份、紫薯35份、白术挥发油-环糊精包合物0.75份、枳实黄酮0.75份、决明子提取液1.5份、低聚果糖3份、卡拉胶0.3份、柠檬酸0.3份、D-异抗坏血酸0.18份、食盐1.5份。
所述复合杂豆粉由以下重量份组成:黄豌豆15份、白扁豆12.5份、黑豆15份、腰豆7.5份、蚕豆7.5份、赤小豆15份。
对比例1
与实施例1的区别在于,原料配方中没有添加白术挥发油-环糊精包合物,具体为:小麦粉50份、玉米粉30份、黑芝麻粉15份、复合杂豆粉20份、紫薯30份、枳实黄酮0.5份、决明子提取液2份、低聚果糖2份、卡拉胶0.5份、柠檬酸0.2份、D-异抗坏血酸0.2份、食盐1份。
对比例2
与实施例1的区别在于,原料配方中没有添加枳实黄酮,具体为:小麦粉50份、玉米粉30份、黑芝麻粉15份、复合杂豆粉20份、紫薯30份、白术挥发油-环糊精包合物1份、决明子提取液2份、低聚果糖2份、卡拉胶0.5份、柠檬酸0.2份、D-异抗坏血酸0.2份、食盐1份。
对比例3
与实施例1的区别在于,原料配方中没有添加决明子提取液,具体为:小麦粉50份、玉米粉30份、黑芝麻粉15份、复合杂豆粉20份、紫薯30份、白术挥发油-环糊精包合物1份、枳实黄酮0.5份、低聚果糖2份、卡拉胶0.5份、柠檬酸0.2份、D-异抗坏血酸0.2份、食盐1份。
功效验证
试验例
选择80只体重18-22g的小鼠进行实验,随机分成8组,每组10只,分别为正常对照组1组、衰老对照组1组、衰老实验组6组,除正常对照组外,每组小鼠采用D-半乳糖100mg/kg颈背部注射30d形成衰老模型。实验组每组小鼠每天灌胃本发明实施例1-3和对比例1-3制备的面条煮熟面糊20g/kg(每100g面糊加入1g活性炭),对照组每组小鼠每天灌胃基础饲料20g/kg(每100g基础饲料加入1g活性炭),共4周,各组的其他培养条件相同。实验结束后,分别对小鼠进行如下试验,并记录实验结果:
试验1本发明对衰老小鼠肠道菌群的影响
各组小鼠在末次灌胃24h后,无菌方法取小鼠粪便3g,检测小鼠肠道双歧杆菌、乳酸杆菌、肠杆菌、肠球菌的含量。测定结果如下表1所示:

如上表1所示,通过实施例1与对比例1的对比可知,在本发明制备的面条中添加白术挥发油-环糊精包合物,可将衰老小鼠肠道中双歧杆菌、乳酸杆菌含量分别提高27.9%和29.6%,并将肠杆菌、肠球菌的含量分别减少21.1%和22.0%;通过实施例1与对比例2的对比可知,在本发明制备的面条中添加枳实黄酮,可将衰老小鼠肠道中双歧杆菌、乳酸杆菌含量分别提高24.8%和30.0%,并将肠杆菌、肠球菌的含量分别减少19.8%和19.4%;通过实施例1与对比例3的对比可知,在本发明制备的面条中添加决明子提取液,可将衰老小鼠肠道中双歧杆菌、乳酸杆菌含量分别提高25.5%和33.9%,并将肠杆菌、肠球菌的含量分别减少17.9%和18.9%。
试验2本发明对衰老小鼠胃肠动力和血浆胃动素的影响
各组在末次灌胃后24h后,剖腹,结扎胃贲门和幽门。测定各组小鼠胃内残留率、小肠推进比和血浆胃动素。胃内残留率检测方法:取胃,称干重1,沿胃大弯剪开为题,洗去胃内容物后,称干重2,则胃内残留率(%)=(干重1-干重2)/干重1×100%。小肠推进比检测方法:自阑尾处取小鼠的肠,不加牵引平铺于白纸上,分别量取自幽门括约肌至炭糊最前端和阑尾的距离,小肠推进比(%)=(炭糊移动距离/幽门-阑尾全长)×100%。小鼠血浆胃动素(MTL)检测方法:眼球取血2mL,注入0.1g/L依地酸二钠(EDTA2Na)30μL和抑酞酶10μL(酶活力大于100U/mL)后,于试管中混匀,4℃下4000r/min离心5min,测定MTL含量。测定结果如下表2所示:

如上表2所示,通过实施例1与对比例1的对比可知,在本发明制备的面条中添加白术挥发油-环糊精包合物,可将衰老小鼠胃内残留率减少29.2%、小肠推进比提高26.2%,并将衰老小鼠血浆胃动素含量提高44.6%;通过实施例1与对比例2的对比可知,在本发明制备的面条中添加枳实黄酮,可将衰老小鼠胃内残留率减少27.2%、小肠推进比提高25.5%,并将衰老小鼠血浆胃动素含量提高61.5%;通过实施例1与对比例3的对比可知,在本发明制备的面条中添加决明子提取液,可将衰老小鼠胃内残留率减少32.0%、小肠推进比提高47.3%,并将衰老小鼠血浆胃动素含量提高48.7%。
综上所述,在本发明制备的面条中添加白术挥发油-环糊精包合物、枳实黄酮、决明子提取液进行复配,制得的面条可显著增加衰老小鼠肠道双歧杆菌、乳酸杆菌含量,并有效降低肠杆菌、肠球菌含量,能够显著促进胃排空和肠推进功能,帮助提高机体胃动素的含量,改善胃肠道菌群失调状况,提高胃肠免疫功能,促进消化吸收,建立完善的肠道黏膜免疫系统,达到防治老年胃肠道疾病的显著效果。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。
Claims (8)
1.一种调理肠胃的紫薯面条,其特征在于,由以下重量份组成:小麦粉50-60份、玉米粉20-30份、黑芝麻粉15-25份、复合杂豆粉10-20份、紫薯30-40份、白术挥发油-环糊精包合物0.5-1份、枳实黄酮0.5-1份、决明子提取液1-2份、低聚果糖2-4份、卡拉胶0.1-0.5份、柠檬酸0.2-0.4份、D-异抗坏血酸0.15-0.2份、食盐1-2份。
2.根据权利要求1所述的一种调理肠胃的紫薯面条,其特征在于,由以下重量份组成:小麦粉55份、玉米粉25份、黑芝麻粉20份、复合杂豆粉15份、紫薯35份、白术挥发油-环糊精包合物0.75份、枳实黄酮0.75份、决明子提取液1.5份、低聚果糖3份、卡拉胶0.3份、柠檬酸0.3份、D-异抗坏血酸0.18份、食盐1.5份。
3.根据权利要求1或2所述的一种调理肠胃的紫薯面条,其特征在于,所述复合杂豆粉由以下重量份组成:黄豌豆10-20份、白扁豆10-15份、黑豆10-20份、腰豆5-10份、蚕豆5-10份、赤小豆10-20份。
4.根据权利要求1或2所述的一种调理肠胃的紫薯面条,其特征在于,所述复合杂豆粉由以下重量份组成:黄豌豆15份、白扁豆12.5份、黑豆15份、腰豆7.5份、蚕豆7.5份、赤小豆15份。
5.根据权利要求1或2所述的一种调理肠胃的紫薯面条,其特征在于,所述白术挥发油-环糊精包合物的制备方法为:
a.取白术药材粉碎成粗颗粒,过10目筛,置于圆底烧瓶中,加入10倍量蒸馏水浸泡1h,加热回流6h,收集挥发油用无水硫酸钠干燥,得到白术挥发油;
b.取6gβ-CD置于研钵中,加入80ml蒸馏水,充分研磨,然后缓慢滴加1ml白术挥发油,研磨40min,再将研磨液置于40kHz超声波下超声提取60min,取提取液放入冰箱中冷藏24h,取出,抽滤,取滤液用石油醚洗涤3次,然后于40℃真空干燥4h,得到白术挥发油-环糊精包合物。
6.根据权利要求1或2所述的一种调理肠胃的紫薯面条,其特征在于,所述枳实黄酮的制备方法为:取枳实药材粉碎过20目筛,加入6倍量70%乙醇回流提取3次,每次1h,过滤,合并滤液,减压回收乙醇,加水调节上样浓度为0.25g/ml,用盐酸调节pH至4,以流速为1ml/min通过LSA-40大孔树脂后,用8BV的蒸馏水水洗,再用3BV的60%乙醇,以1ml/min流速洗脱,收集洗脱液,减压回收乙醇,于65℃烘箱中烘干,即得枳实黄酮。
7.根据权利要求1或2所述的一种调理肠胃的紫薯面条,其特征在于,所述决明子提取液的制备方法为:取决明子清洗干净后,于50℃烘箱中烘干,粉碎过60目筛,取决明子粉50g,加入8倍量水煎煮1h,过滤,取滤渣加入6倍量水煎煮1h,过滤,取滤渣加入4倍量水煎煮1h,过滤,合并3次滤液,将滤液浓缩至100ml,得到决明子提取液。
8.一种制备如权利要求1-7任一项所述的一种调理肠胃的紫薯面条的方法,其特征在于,包括以下步骤:
(1)取新鲜紫薯用清水洗净后,切成小块,放入蒸锅中煮熟,取出,冷却至室温后,捣碎成紫薯泥;
(2)取低聚果糖、卡拉胶、柠檬酸、D-异抗坏血酸和食盐混合,加水溶解,再加入白术挥发油-环糊精包合物、枳实黄酮和决明子提取液搅拌均匀,得到混合液;
(3)将小麦粉、玉米粉、黑芝麻粉和复合杂豆粉混合搅拌均匀,放入和面机中,加入步骤(1)的紫薯泥和步骤(2)的混合液,缓慢搅拌15-20min,得到光滑面团;
(4)将步骤(3)和好的面团取出放入熟化机内,保持温度20-30℃,以转速8-10r/min熟化20-30min;
(5)将步骤(4)熟化好的面条锟轧成2块面带,再通过一组轧锟将其合成一块面带,连续通过2-3次轧锟,逐步压薄至0.8-1mm,再切成宽1.8-2mm的湿面条;
(6)将步骤(5)的湿面条放入烘房中烘干后,切成长200-220mm的面条,冷却至室温,包装,即得本发明调理肠胃的紫薯面条。
