Abstract

技术领域
本发明涉及稳定化的碳酸氢钾并涉及用于烘焙的包含碳酸氢钾的低钠膨松组合物。
背景技术
碳酸氢钠传统上在烘焙行业中被用作膨松剂。然而对食物中高含量钠的健康问题的担忧已经开始推动开发碳酸氢钾作为替代选择。普通的未研磨的市售碳酸氢钾具有约500μ的平均粒度(以D50表示,即能截留50%重量样品的筛孔尺寸)。这对于用于面团来说过粗,会引起最终烘焙产品中的局部变色(discolouration),即熟知的起斑。
起斑是由面团制备的产品所特有的问题,其原因在于面团相对于面糊的较低流动性。面团可被限定为膏状物,其固体重量超过液体重量,而面糊为流体,其液体重量超过固体重量。面团产品中可见的起斑在碳酸氢盐包含显著比例的大于约200μ的粒子时发生。然而我们发现即使是小到不足以导致可见起斑的粒子也能引起面团中局部碱度浓集,这对最终产品的贮藏性质产生不利影响。为避免这些问题,我们认为碳酸氢盐应优选具有非常精细的粒度,理想情况下基本上全部小于250μ。
精细研磨的碳酸氢钾的一个主要问题是贮藏稳定性。不同于正常温度下相对稳定的碳酸氢钠,碳酸氢钾具有吸湿性,会在贮藏时发生结块。粒度越小结块越严重,而非常精细研磨的产品可能在大气湿气中暴露仅仅几小时后就由于结块变得不可用。这个问题在托盘运送的产品中特别严重,所述托盘运送的产品中的一部分承受显著的压力。此外非常精细研磨的产品还会导致粉尘问题。
进一步的问题是当与酸化剂混合时产品的化学不稳定性,例如当被结合入烘焙粉共混物或自膨发面粉时。这导致在环境温度下静置的二氧化碳的提前释放。这个问题在用于特殊饮食需求人群的无谷蛋白产品中特别严重。我们认为存在于小麦面粉中的碳水化合物倾向于抑制碳酸氢盐的分解。
目前有两种方法用于在工业上减轻这些问题中的第一个。根据这些方法中在US 5552 084中描述的一个,将用于烘焙的碳酸氢钾与氧化镁混合。氧化镁与该碳酸氢盐反应在粒子表面形成碳酸镁,这保持了碳酸氢盐粒子的隔离。然而这种方法有多种缺点。它没有完全克服所有前述的问题。特别是它没有克服在烘焙粉中的稳定性问题。此外,当对具有足够精细粒度的碳酸氢盐实施处理以防止起斑时,产品具有较低的堆密度,这增加了贮藏、运输和包装的成本。
已有的备选方法是加入例如二氧化硅的干燥剂,该干燥剂抑制结块并优先吸收湿气。然而二氧化硅不能防止烘焙粉中的碳酸氢盐的降解,且对共混物的物理性质具有不利影响。为了将结块控制至可接受程度,精细分散的碳酸氢钾需要超过正常用量的二氧化硅水平。当将这样的产品加入烘焙粉时,烘焙粉的流动会过于自由。
除用于烘焙之外,还有许多其它需要精细粒度的碳酸氢钾的应用,例如,为改善可分散性、提供更大的表面积和增强的催化活性。因此本发明与这些应用有关。所述应用包括干化学灭火器、杀真菌剂、动物饲料补充物、聚合与脱氢反应催化剂、泡腾剂、用于例如食物或土壤的pH调节剂、用于从烟气中除去酸性气体的香烟过滤嘴和用于速干水泥的加速剂。
通常已知使用惰性密封剂包覆可以稳定粒子以对抗降解和结块,但这项技术有显著缺陷,妨碍了生产碳酸氢钾膨松剂的技术人员考虑将其作为解决上述问题的可行方案。特别是,有效的保护作用通常需要相对大量的密封剂,这增加了粒度。封装常常会抑制被封装产品的活性。此外,它常常需要专门的成套设备,且实施起来常常较昂贵。
本领域中反对包覆或封装的偏见在US 5 225 225(托马斯等)得到反映,其描述了混合碱金属碳酸氢盐和设计成在烘焙期间为二氧化碳释放提供成核位点的多种添加剂。托马斯提到,她的混合物不涉及包覆碳酸氢盐,且强调非剪切混合方法的使用,该方法将任何包覆底物的倾向减至最小。
发明内容
我们现已发现阴离子或两性表面活性剂(特别是金属皂)为精细研磨的碳酸氢钾提供有效的抗结块包覆层,这比氧化镁更具成本有效性且在粒度足够小以防止起斑的情况下使产品具有可接受的堆密度。
特别是,我们已发现在酸化剂的存在下,被包覆的碳酸氢盐提供的膨松组合物具有改善的稳定性(甚至是在无谷蛋白的产品中),且同时相较于包含高含量二氧化硅的组合物具有更好的流动性质。
全文中提及的“被包覆的碳酸氢盐”是指碳酸氢钾,所述碳酸氢钾被施用了阴离子或两性表面活性剂的至少部分包覆层,所述包覆层足以抑制碳酸氢盐在贮藏时的结块和/或碳酸氢盐/酸化剂共混物的降解。这通常无需完全封装即可实现。
出乎意料的是,和大多数可能的保护性包覆材料不同,所述表面活性剂包覆层可提供有效的保护作用而不会对该碳酸氢盐在最终使用中的活性产生显著程度的负面影响。此外该表面活性剂不会显著增加粒度,不需要高比例的包覆材料且可低成本地使用常用于精细粒度碳酸氢钾生产的成套设备进行施用。其所需的用量不足以影响最终产品的口味。
我们还发现当阴离子或两性表面活性剂与例如二氧化硅的干燥剂结合使用时,将获得协同作用,提供了特别有效的对抗结块的保护作用,使用低水平的干燥剂,这在粉末制剂中不会产生不可接受的流动性质。
我们发现所述粒子可被有效地包覆,做法是,在研磨碳酸氢盐之前、期间或之后混合精细研磨的阴离子或两性表面活性剂与该碳酸氢盐,且在需要的情况下在掺混机中继续混合足够的时间。
我们进一步发现所述碳酸氢盐/酸化剂混合物的稳定性可通过对酸化剂也施用表面活性剂的包覆层来增强,或者可通过以对酸化剂施用表面活性剂的包覆层来替代对碳酸氢盐施用该包覆层来增强。
我们还发现具有优异稳定性的碳酸氢钾具有最小的粒度,所述粒度大于使粉尘成为严重问题的粒度,但不包含大到足以产生起斑问题的粒子。这可通过研磨至恰好大到足以避免细屑的D50并通过筛选除去粗至足以导致起斑问题的剩余粒子而最方便地实现。
因此,我们的发明提供包含碳酸氢钾和任选的酸化剂的组合物,所述组合物具有基本上全部小于500μ的粒度且所述碳酸氢盐和所述酸化剂中的至少一种被包覆以包含阴离子或两性表面活性剂的防结块剂。
根据一个优选的实施方案,所述防结块剂包含:至少一种分子式为(RCO2)nX的化合物,其中:X为碱土金属、水合碱土金属、锌、铝或碱金属离子,各个R可相同或不同,为具有6至30个碳原子的直链或支链烷基或烯基基团,其中n为X的化合价。
根据第三个实施方案,所述被包覆的碳酸氢钾具有介于35至200μ之间的D50且基本上不含大于400μ的粒子。
根据第四个实施方案,本发明提供如前文所述的被包覆的碳酸氢钾,额外地包含无机防结块剂或干燥剂例如,二氧化硅、磷酸三钙或碱土金属的硅酸盐或碳酸盐。
根据第五个实施方案,本发明提供如前文所述的制备被包覆的碳酸氢钾的方法,所述方法包括研磨碳酸氢钾至粒度小于500μ,混合所述碳酸氢盐与粒度小于50μ的阴离子或两性表面活性剂或成表面活性剂的酸或酸衍生物,其中所述混合在研磨之前或研磨期间发生和/或在研磨之后在掺混机中通过搅拌混合物发生。
根据第六个实施方案,本发明提供制备碳酸氢钾的方法,所述方法包括研磨所述碳酸氢盐至D50介于50至200μ之间和筛选以至少除去较400μ粗的粒子。
根据第七个实施方案,本发明提供如前文所述任一实施方案所限定的碳酸氢钾在烘焙中的应用。

具体实施方式
在本发明的下文讨论中,除非有相反表述,对于参数允许范围的上限或下限的备选值的公开,以及所述值之一较另一值更高度优选的指出,应被解释为隐含地阐明了所述参数的介于所述备选值的更优选和次优选之间的各个中间值本身优于所述次优选值且也优于介于所述次优选值和所述中间值之间的各个值。
所述包覆剂(coating agent)应为基本上干燥的,也就是说湿气含量应小于1.5%,优选小于1%,更优选小于0.5%,最优选小于0.25% w/w。
对于非食品应用来说,可使用宽范围的阴离子表面活性剂。例如所述表面活性剂可包含烷基醚硫酸盐(alkyl ether sulphate),其优选为通过以下步骤得到的产物:用环氧乙烷乙氧基化天然脂肪醇或合成醇,任选地汽提任何未反应的醇,使乙氧基化产物与硫酸化试剂反应并使用碱中和所得的烷基醚硫酸。所述醇具有平均多于8,优选多于10,更优选多于12,但小于30,优选少于25,更优选少于20,最优选少于15个碳原子。所述醇与平均至少0.5,优选多于1但少于60,优选少于50,更优选少于25,甚至更优选少于15,更优选还要少于10,最优选少于5个氧化乙烯基团反应。烷基醚硫酸盐还可包含烷基甘油基硫酸盐,以及无规或嵌段共聚的烷基乙氧基硫酸盐/烷基丙氧基硫酸盐。
所述阴离子催化剂可还包括或作为另一选择包括例如烷基硫酸盐、烷基苯磺酸盐、烯基磺酸盐、链烷烃磺酸盐、氨基乙磺酸盐、羟乙磺酸盐、醚磺酸盐、醚羧酸盐、固醇乳酰酸(sterol lactylates)、肌氨酸盐、脂肪族酯磺酸盐例如烷基甘油基磺酸盐、磺基琥珀酸盐或磺基琥珀酰胺酸盐。
本文所用的术语“两性表面活性剂”包括两性离子表面活性剂。它们可包括所谓的咪唑啉甜菜碱,所述咪唑啉甜菜碱又称为两性乙酸盐(amphoacetate),并且传统上被归于以下两性离子型式子:

R优选具有至少8个,更优选至少10个碳原子但少于25个碳原子,更优选少于22个,甚至更优选少于20个,最优选少于18个碳原子。通常R代表烷基和烯基的混合,从例如椰子或棕榈油中获得,且具有从8至18个碳原子范围的大小,其中例如月桂基(>90%C12)的12个碳原子为这类给料中的主要部分或一部分。
所述两性离子表面活性剂可为甜菜碱、磷酸盐型甜菜碱(phosphobetaine)或磺酸盐型甜菜碱(sulphobetaine),例如具有式R”R’2NCH2XOH,其中X为CO、PO或SO2,R’为具有1至4个碳原子的脂族基团且R”为具有从8至25个碳原子的脂族基团,优选直链或支链烷基或烯基基团,或具有式RCONR’(CH2)n的基团,其中R和R’具有前述相同的意义,且n为2至4的整数。
我们优选R’为甲基、羧甲基、乙基、羟乙基、羧乙基、丙基、异丙基、羟丙基、羧丙基、丁基、异丁基或羟丁基基团。
对于食品用途,表面活性剂的选择显然局限于允许以所需量用于食品用途的那些。所述包覆层优选具有前述分子式的金属皂。前述分子式中的烷基或烯基基团R优选烷基,最优选直链烷基基团。R具有平均多于5个,优选多于7个,还更优选多于9个,甚至更优选多于11个,最优选多于13个碳原子,但少于22个,最优选少于20个碳原子。
所述防结块剂优选包含碱土金属皂,最优选钙皂和/或镁皂,例如山梨酸盐、辛酸盐、癸酸盐、十二烷酸盐、月桂酸盐、豆蔻酸盐、硬脂酸盐、异硬脂酸盐、油酸盐、亚油酸盐、亚麻酸盐、蓖麻醇酸盐、山嵛酸盐、芥酸盐、棕榈酸盐、二十碳五烯酸盐、二十二碳六烯酸盐以及衍生自椰子油、棕榈油、橄榄油或其它植物油、鱼油、鲸脂、牛脂和/或其它动物脂肪的皂化的混合物。备选地或附加地,所述防结块剂可包含任意前述物质的锂、钠和/或钾皂。可使用的其它皂包括锌皂和铝皂。钾皂可原位形成,例如通过在高剪切下研磨碳酸氢钾与脂肪酸或其成皂衍生物,例如酸酐、酰卤或铵皂。
防结块剂的比例优选为基于碳酸氢盐重量的大于0.1%重量,更优选大于0.4%,最优选大于0.6%,但小于5%,更优选小于3%,最优选小于2%,最优选小于1.5%。对于较小粒度的材料,最佳的包覆剂比例将较高,原因是较小粒度的材料具有更大的表面积。
已发现包覆有表面活性剂的碳酸氢盐当被压实时(例如使用托盘运送时)可能出现结块。为改善这类结块,所述抗结块剂优选与无机辅助抗结块剂或增效剂例如碱土金属氧化物、磷酸盐、碳酸盐或硅酸盐、碱金属硅酸盐或优选例如二氧化硅的干燥剂组合使用。其它辅助剂包括磷酸三钙、碳酸钙或碳酸镁、硅酸钙或硅酸镁或氧化镁。优选的增效剂为二氧化硅。特别优选热解法二氧化硅。
所述辅助剂优选以有增效作用的比例(a synergistic proportion)使用。优选所述辅助剂的比例为基于所述抗结块剂重量的至少50%重量,更优选至少100%,甚至更优选至少200%,最优选至少250%,但少于500%,更优选少于400%,最优选少于350%。所述辅助剂的量优选少于基于所述碳酸氢盐重量的5%,更优选少于3%,甚至更优选少于2%,最优选少于1.75%,但多于0.25%,更优选多于0.5%,甚至更优选多于1%,最优选多于1.25%。
所述碳酸氢盐可通过将其在抗结块剂存在下研磨至所需大小而方便地包覆,例如使用空气分级器磨机(air classifier mill)或更优选万能磨机(universal mill)例如涡轮磨机和筛磨。如果磨机的剪切量不足以提供所需程度的包覆,可在掺混机(优选高剪切力掺混机)中继续所述混合直至获得可接受水平的包覆。
作为在防结块剂存在下研磨碳酸氢盐的备选,可在前述掺混机中将防结块剂与新磨的碳酸氢盐混合。这通常需要至少1、优选至少2、更优选至少3、甚至更优选至少4、最优选5分钟。多于40分钟的共混时间通常不成本有效,而通常我们优选少于30分钟,更优选少于25分钟。“新磨的”在上下文中的意思是:经历的时间不足以允许结块发生。显然,这将取决于贮藏条件。通常,较低比例的包覆材料需要较高的剪切以提供足够的包覆。剪切力越高,所需时间越少。
足量例如钙皂或镁皂包覆层的指示可通过测量所述碳酸氢盐在水中的溶解速度获得。例如可将浸渍器中的5g样品浸没于900ml轻缓搅拌的20℃的水中。在给定浸没时间后的溶解比例可通过滴定测定。未溶解的量指示包覆层的有效性。未包覆的碳酸氢钾在30秒内溶解。对于碱土金属皂来说,我们优选该包覆层足以在10分钟后留下不溶解的碳酸氢盐。优选10分钟后不溶解的碳酸氢盐的比例为大于20%重量,更优选大于30%重量,甚至更优选大于50%重量,最优选大于70%重量。
以上方法不适合用于碱金属皂,原因是碱金属皂的水溶性。一种测定包覆层有效性的备选方法涉及测量接触角。此方法可适合用于碱金属皂,做法是,采用摄影方式记录一滴水至被包覆粉末的加入,并测定在包覆层溶解前达到的最大角度。优选所述接触角大于90°,更优选大于100°,最优选大于130°。
将碳酸氢盐研磨至粒度基本上全部小于500μ。为了避免基于面糊的产品中的可见起斑,优选粒度全部小于400μ。为了避免基于面团的产品中的起斑,我们特别优选粒度全部小于250μ,但为避免损害最终产品的保存期,所述粒度更优选全部小于200μ,最优选小于150μ。
所述D50优选小于200μ,更优选小于150μ,甚至更优选小于100μ。然而,为了将结块减至最小并避免过多的粉尘,我们优选D50大于35μ,更优选大于40μ,甚至更优选大于50μ。最优选大于60μ。
我们发现为了将D50减小至足以避免面团中局部不均一性而进行的研磨通常导致结块问题和过多的碎屑。所述产品可研磨至大于减少所有粗粒子所需的D50并通过筛选除去粗粒子。被筛余的粒子可被回收。我们特别优选研磨至D50介于50和300μ之间,且筛选以至少除去大于400μ的粒子。优选筛选前的经研磨产品的D50小于200μ,更优选小于150μ,最优选小于120μ,但大于70μ,最优选大于90μ。优选所述产品经筛选以除去大于300μ、更优选大于250μ的粒子。我们不排除通过选用具有非常窄的粒径分布的磨机以直接获得所需粒度的可能性,所述磨粉机例如万能磨机,例如涡轮磨机或筛磨。
可将被包覆的碳酸氢盐结合至烘焙粉共混物中。所述烘焙粉共混物额外地包含酸化剂且优选还包含填料,所述填料例如碳酸钙、硫酸钙、面粉或淀粉。所述碳酸氢盐优选以多于基于共混物总重量的10%重量,更优选多于20%重量,最优选多于30%重量,但优选小于70%重量,更优选小于50%重量,最优选小于45%重量的比例存在。
所述酸化剂为与碳酸氢盐反应以释放二氧化碳的化合物。它应符合与包覆材料(v.s.)相同的湿气含量标准。所述酸化剂优选具有基本上全部小于400μ,更优选小于250μ且最优选至少90%重量小于100μ的粒度。它可包含例如酸式焦磷酸钠、磷酸钠铝、磷酸单钙和/或磷酸二钙、δ-葡萄糖酸内酯、柠檬酸、酒石酸、钠和/或钾的柠檬酸盐和/或酒石酸盐和/或硫酸钠铝。
所述酸化剂优选以基于共混物总重量的至少10%重量,更优选至少20%重量,甚至更优选至少30%重量,最优选至少40%重量,但优选少于75%重量,更优选少于60%重量,最优选少于50%重量的比例存在。
为了最佳稳定性,可通过和如本文所述包覆碳酸氢盐相同的比例和相同的方法将酸化剂包覆以金属皂。优选在掺混机中将所述酸化剂与该皂搅拌至多40分钟。包覆所述酸化剂提供与包覆碳酸氢盐基本上类似的烘焙粉稳定性的改善,但明显地不避免在烘焙粉贮藏时遇到的结块问题。如果将皂包覆层仅施用于酸化剂,则所述碳酸氢盐的粒度和相对高含量无机干燥剂的存在对于获得最佳稳定性来说因此将特别关键。
所述填料可包含例如淀粉、小麦面粉、纤维素、糊精、碳酸钙和/或硫酸钙,且优选以基于共混物总重量的至少2%重量,更优选至少5%重量,甚至更优选至少10%重量,最优选至少15%重量,但优选少于50%重量,更优选少于30%重量,最优选少于20%重量的比例存在。
所述共混物可额外地包含其它常规成分,所述其它常规成分包括:
油,例如植物油,如橄榄油或玉米油、矿物油、硅油、甘油和/或聚蓖麻醇酸甘油酯,比例为至多5%重量,优选至多2%重量,更优选至多1%重量;
防腐剂,例如有效比例的丙酸钙或山梨酸钾,优选多于2%重量,更优选多于5%重量,但优选少于15%重量,更优选少于10%重量;
盐,例如氯化钠和/或氯化钾,比例为通常至多35%重量,优选至多30%重量,更优选至多20%重量,最优选至多15%重量,且通常至少2%,优选多于5%,最优选多于10%重量的;
酸度调节剂例如卵磷脂;乳酸、柠檬酸、乙酸、酒石酸、己二酸、抗坏血酸、苹果酸和/或乳糖酸的钠、钾、镁和/或钙盐;羟基硬脂酸甘油酯和/或卵磷脂,所述酸度调节剂比例为至多10%重量,优选大于1%重量,更优选大于2%重量,最优选大于3%重量,但优选少于8%重量,更优选少于7%重量,最优选少于6%重量;
防结块剂例如二氧化硅;碱金属和/或碱土金属的硅酸盐和/或任何可如前文所述用于形成根据本发明的包覆层的防结块剂,所述防结块剂的比例至多为5%重量;和/或根据需要的例如蔗糖或葡萄糖的甜料、调味料、香味剂和/或着色剂。
本发明的被包覆的碳酸氢盐也可结合入自膨发面粉中。所述自膨发面粉包含例如至少0.5%重量,优选至少1%重量,更优选至少2%重量,最优选至少5%重量,但少于15%重量,更优选10%重量,最优选少于8%重量的烘焙粉。
本发明通过以下实施例示出,其中除非另有陈述,所有比例均为基于组合物总重量的重量百分比,所述钙皂为“LIGA”®硬脂酸钙CPR-2-V且所述镁皂为“LIGA”硬脂酸镁MF-3-V,各自包含3:2重量的由皂化植物油得到的硬脂酸盐和棕榈酸盐的混合物。除非有相反陈述,二氧化硅为无定形的。
实施例I
在空气分级器磨机(air classifier mill)中将D50为500μ的碳酸氢钾研磨为D50分别为150μ和35μ的两种粒度,并在高剪切掺混机中继续混合5分钟。与0.5%食品级钙皂的混合物重复所述制备。在20℃和70%的受控相对湿度下使产品经受加速老化测试。经过96小时后两种未包覆的样品均凝聚为干块。所述两种被包覆的样品均为自由流动粉末。
实施例II
通过混合36%的实施例I的35μ被包覆的碳酸氢钾、42%焦磷酸二钠和22%淀粉制备烘焙粉。相比含有混合有基于碳酸氢盐重量3%的二氧化硅的未包覆的碳酸氢盐的粉末,该烘焙粉更加稳定,并具有优异的流动性。
实施例III
将实施例II的烘焙粉用于以下配方:
100g – 普通面粉(10至15%湿气)
5.5g – 烘焙面粉
1.55g – 氯化钠
5.5g – 酪乳粉
19.3g – 小粒结晶砂糖
25.0g – 黄油
7.8g – 蛋
42g – 水
将所有干燥成分称重并筛入混合碗中并共混一分钟。将黄油缓慢以小块加入并打5分钟。历时15秒加入液体并将混合物打15秒,然后用搅面钩(dough hook)混合1分钟。将该撒上粉的面团置于撒上面粉的表面,擀开并切成2英寸的圆,在220℃下烘焙16分钟。烤饼没有可见起斑且形状尺寸符合规格。对风味没有可感知的影响。
实施例IV
将碳酸氢钾以110kg/hr的速率进料到以1000rpm运转的空气分级器磨机(ACM40),销型刳刨机的一半销子在外部(with half of the pins of the pin router out)的。同时钙皂以14.4kg/hr的速率进料。从试验中回收的来自三个袋中第二个顶部的样品具有86μ的D50和0.3%的皂含量。
从该材料中取用三份15g的样品,将第二份和第三份分别与0.5%和1.5%的二氧化硅混合。第四份为对照样品,由D50为35μ的未包覆碳酸氢钾和3%二氧化硅组成。
将每份样品筛入皮氏培养皿并暴露25℃和相对湿度为62%的受控环境下历时3天。观察结块程度并记录于表I。

实施例V
三份D50各自为90µ的样品在研磨后保存于密封罐中两小时,然后进行检查。第一份样品为未包覆的并可见非常严重的团块。其它两份样品已通过在掺混机中分别与0.5%和1%重量的D50为43µ的十二烷基苯磺酸钠混合包覆。被包覆的样品均可自由流动,并均未显示任何结块迹象。
实施例VI
在以下实施例中,在各种情况中的对照物均为通过研磨颗粒状碳酸氢盐而制得的D50介于35和40µ之间的碳酸氢钾,并包含3%无定形二氧化硅。改性的碳酸氢盐具有介于95和120µ之间的D50且通过在榨汁机中混合颗粒状碳酸氢盐与添加剂1分钟、筛选除去大于250µ的粒子并在掺混机中混合30分钟来制备。使用的添加剂为1%钙皂,2%钙皂,1%镁皂,2%镁皂和3%二氧化硅。然后将所述碳酸氢盐与酸式焦磷酸钠和填料以重量比2:2:1混合。填料为低湿气小麦粉,或对于无谷蛋白配方来说为碳酸钙。然后分析所得烘焙粉在25℃和相对湿度62%的湿度箱中贮藏至多7小时前后的二氧化碳。
还与通过在掺混机中将所述焦磷酸盐与钙皂或镁皂混合30分钟制备的包含改性的酸式焦磷酸钠的制剂进行了比较。结果总结于表II。

实施例VII
进行实时测试以测定通过用硬脂酸钙包覆无谷蛋白烘焙粉的各种组分对保存期的影响。本测试涉及将在用缆夹(cable clip)密封的蜡内衬纸袋中的1kg样品保存在贮藏室中。产品规格要求二氧化碳至少为23%重量。烘焙粉包含碳酸氢钾(已预混有基于该碳酸氢盐重量的3%重量的SiO2)、酸式焦磷酸钠和碳酸钙,其中各自以与实施例VI中相同的比例存在。对照物的所有组分均未包覆,并具有约1周的保存期。仅该碳酸氢盐被包覆以0.6%硬脂酸盐的产品具有约4周的保存期。具有相同包覆的碳酸氢盐且具有各自被包覆以1%的硬脂酸盐的酸化剂和碳酸钙的产品具有约6周的保存期。
实施例VIII
比较包含3%SiO2且D50为35μ的碳酸氢钾的溶解速度与包覆以各种比例的通过在空气分级器磨机中研磨的硬脂酸钙或硬脂酸镁的类似材料的溶解速度。将5g样品各自在浸渍器中浸没于900ml搅拌的8℃的水中10分钟并通过滴定测定溶解的物质。通过差减法测定包覆的相对程度。结果在表III中示出。

实施例IX
通过在空气分级器磨机中研磨粗碳酸氢盐与各种比例的硬脂酸镁或硬脂酸钙来制备被包覆的碳酸氢钾。使用实施例VIII的程序,比较在11℃下的溶解速率与单独地经受5分钟的额外后共混(通过振摇)或经受该额外后共混+1.5%的二氧化硅的类似样品的溶解速率。结果在表IV中示出。

使用实施例VIII的程序,在20℃水温下,比较包覆以1%硬脂酸钙的酸式磷酸钠与未包覆材料的溶解速率。未包覆材料在30秒内溶解。经过5分钟后61%被包覆材料保持未溶解。
实施例XI
将D50为35-40µ的包含3%二氧化硅的碳酸氢钾在蜡内衬袋中保存4个月,然后在1.7吨压力下压紧4个月。产品严重结块。类似贮藏和压紧的通过在犁铧型掺混器(ploughshareblender)中共混15分钟而包覆以1.5%硬脂酸镁的样品(D50=103µ)为硬块,但包覆以1.5%碳酸镁且包含1.5%二氧化硅的样品可非常自由地流动并仅有少量易碎的结块。
实施例XII
两份分别具有102µ和62µ的D50的碳酸氢钾样品(A和B),各自包覆以1%硬脂酸钙,和一份具有90µ的D50的包覆以1%硬脂酸钠的样品(C),各自置于载玻片上并使用另一片载玻片轻压以形成平坦表面。使用Kruss DSA 10仪器和蒸馏水测量接触角(基于ASTM D7334)。
基于1秒后和1分钟后记录的图像的结果为:

因此,包括水溶性硬脂酸钠的所有硬脂酸盐都预料不到地初始提供疏水包覆层。在所有的情况下,接触角在液态水的存在下随时间减小。硬脂酸钠在15秒后变为亲水。
实施例XIII
将碳酸氢钾样品(D50=500µ)与2.5%重量的各种抗结块剂中的每一种混合,所述各种抗结块剂包括硬脂酸钙、无定形二氧化硅、热解法二氧化硅、以及硬脂酸钙与无定形或热解法二氧化硅的混合物。然后将所述样品研磨成D50大约为100µ并倒入量筒以测定充气堆密度(aerated bulk density)。然后通过轻敲量筒将样品压实,并将轻敲后的堆密度记录于表VI。

Claims (13)
1.在烘焙中使用的碳酸氢钾,所述碳酸氢钾具有基本上全部小于500μm的粒度且具有阴离子表面活性剂的包覆层,其中所述表面活性剂选自碱金属和碱土金属皂,所述碳酸氢钾的湿气含量小于1.5%,所述包覆层的接触角为至少900。
2.权利要求1的碳酸氢钾,其中所述表面活性剂的含量少于5%重量,基于所述包覆颗粒的总重量计算。
3.权利要求1或2的碳酸氢钾,其中所述表面活性剂与二氧化硅一起存在,所述二氧化硅的含量为0.25至5%重量,基于碳酸氢钾的重量计算。
4.权利要求3的碳酸氢钾,其中所述二氧化硅的含量为50%重量至500%重量,基于所述表面活性剂的重量计算。
5.权利要求1的碳酸氢钾,其中所述表面活性剂包含选自钠和钾的金属皂。
6.权利要求1的碳酸氢钾,其中所述表面活性剂包含至少一种分子式为(RCO2)nX的化合物,其中X选自碱土金属、水合碱土金属、锌、铝和碱金属离子,各个R各自独立选自具有6至25个碳原子的直链或支链烷基和烯基基团,并且n为X的化合价。
7.权利要求1的碳酸氢钾,所述碳酸氢钾具有介于35至200μm之间的D50且基本不含大于400μm的粒子。
8.权利要求1的碳酸氢钾,所述碳酸氢钾具有大于50μm的D50。
9.权利要求1的碳酸氢钾,其中所述接触角大于1000。
10.制备权利要求1的碳酸氢钾的方法,所述方法包括研磨碳酸氢钾至粒度小于500μm,混合所述碳酸氢盐与基本干燥的包覆剂或其前体,其中所述包覆剂或其前体选自碱金属和碱土金属皂、脂肪酸、脂肪酸氯化物、脂肪酸酸酐和脂肪酸铵盐,所述包覆剂粒度小于50μm,其中所述混合在研磨之前、研磨期间或研磨后进行,并且在研磨过程中施加了充分的剪切,以形成具有大于900的接触角,和/或在掺混机搅拌混合物,随后进行研磨。
11.一种发酵组合物,所述组合物包含权利要求1、2和5中任一项的碳酸氢钾以及酸化剂。
12.权利要求11的组合物,其中所述酸化剂包括选自以下成员中的至少一种:酸式焦磷酸钠、磷酸钠铝、磷酸单钙或磷酸二钙、δ-葡萄糖酸内酯、柠檬酸、酒石酸、钠和钾的柠檬酸盐和酒石酸盐以及硫酸钠铝。
13.权利要求11或12的组合物,其中所述酸化剂的比例为基于混合物总重量的10至75%重量。
