Abstract

La presente invención se refiere a bicarbonato de potasio es revestido con un tensioactivo aniónico o amfotérico, que es preferiblemente un jabón metálico, tal como estereato de calcio, para inhibir apelmazamiento en almacenamiento, y pérdida prematura de dióxido de carbono cuando es mezclado con un acidulante, por ejemplo en un polvo para hornear o mezcla de harina fermentante. La pérdida de dióxido de carbono en la mezcla puede ser además inhibida mediante revestimiento del acidulante con tensioactivo. Combinación de revestimiento de tensioactivo con un agente antiapelmazante inorgánico tal como dióxido de silicio da protección sinérgica contra apelmazamiento del bicarbonato de potasio. Preferiblemente el bicarbonato tiene D50 de entre 35 y 200 µ y está libre de partículas mayores que 400 µ.
