Abstract

COMPOSIÇÕES DE BICARBONATO DE POTÁSSIO ESTÁVEL E LEVEDANTE COM BAIXO TEOR DE SÓDIO. O bicarbonato de potássio é revestido com um agente tensioativo aniônico ou anfotérico, que é de preferência um sabão de metal, tais como estearato de cálcio, para inibir a aglutinação de armazenamento, e uma perda prematura de dióxido de carbono quando misturada com acidulante, por exemplo, na forma de um pó de preparo ou da mistura da própria moagem. A perda de dióxido de carbono na mistura pode ser adicionalmente inibida por revestimento do acidulante com agente tensioativo. Combinação do revestimento de agente tensioativo com um agente antiaglomerante inorgânicos tais como dióxido de silício conferindo uma proteção sinergética contra a aglutinação do bicarbonato de potássio. De preferência o bicarbonato tem o D50 entre 35 e 200<109> e está livre de partículas maiores do que 400<109>.
