Abstract
本发明涉及一种抗疲劳增强免疫力的蛹虫草复合酵素饮品制备方法,取人参、玛咖、黄精、枸杞、葛根加水浸泡、煎煮,煎煮液低温真空减压浓缩,灭菌、过滤,滤液为营养液;营养液置于提取罐中,加红糖混合均匀得培养液;培养液置发酵罐内冷却,加入蛹虫草粉,接种根霉菌、红曲米菌种,后密封发酵3‑6个月,发酵温度为33‑35℃,即得抗疲劳增强免疫力的蛹虫草复合酵素饮品。本发明采用人参、玛咖、黄精、枸杞、葛根为营养液培养基,培养液冷却后加入蛹虫草粉,以根霉菌和红曲米菌复合发酵为转化工具,采用传统液态发酵工艺,能降解原料中的有毒有害物,保留原有活性物质,提高了原有植物的抗疲劳、增强免疫力、益气健脾、强壮身体之功效。

技术领域
本发明涉及食品生物技术领域,尤其涉及一种抗疲劳增强免疫力的蛹虫草复合酵素饮品制备方法。
背景技术
目前市场上存在的饮料品种很多,但涉及蛹虫草的饮料品种不多、质量不高、营养结构不合理,已不能满足人们对于口味多样化、功能性和营养保健的需求。蛹虫草为子囊菌门,肉座目,虫草菌科、虫草属的模式种,又名北蛹虫草,有地区亦称为踊虫草。蛹虫草较之冬虫夏草,具有几个无可比拟的优点:一是蛹虫草为虫草属的模式种,分布广泛,为世界各国学者所认识和接受;二是蛹虫草已在人工条件下育成了完整子座;三是蛹虫草含有虫草菌素和虫草多糖,其独特药理作用已日益引起药学界的高度重视,由于蛹虫草具有以上优点,成为虫草属中药用虫草菌中的佼佼者。蛹虫草含有丰富的虫草素、虫草酸、腺苷、虫草多糖、麦角甾醇、超氧化物岐化酶、硒等,具有①抗病毒、抗菌、明显抵制肿瘤生长,干扰人体RNA及DNA合成;②预防治疗脑血栓、脑溢血、肾功能衰竭、利尿;③消除面斑、抗衰防皱;④提高免疫力、延缓衰老,扶正固体,保护心脏、肝脏、抗痉等功效。而中国古典医药文献和民间也记载多种抗疲劳增强免疫力的传统中草药。《神农本草经》记载着中国4000年前就已经形成的人参药用的精髓:“人参,味甘微寒,主补五脏,安精神,定魂魄,止惊悸,除邪气,明目,开心益智。久服,轻身延年。”《本草便读》“黄精味甘而厚腻,颇类熟地黄……按其功力,亦大类熟地,补血补阴,而养脾胃是其专长。”《本草汇言》:“葛根,清风寒,净表邪,解肌热,止烦渴。泻胃火之药也。”枸杞子,用于肝肾阴虚证,甘平质润,平补肝肾,有滋补强壮作用,凡肝肾阴虚诸证均可应用。玛咖含较高量的铁,蛋白质、氨基酸、矿物质锌、牛磺酸等成分,能明显对抗疲劳,增强肌肉耐力,抵抗运动性疲劳,帮助坚固免疫系统,提升机体抗病力,对抗疲劳,增强精力、体力。
现有《一种可以提高机体免疫力的蛹虫草饮料及其制备方法》(中国专利申请号CN201610097996.1),本发明公开了一种可以提高机体免疫力的蛹虫草饮料,包括以下重量份组分:鲜观音柴叶、蛹虫草、月季花瓣粉、月季花粉、红参、枸杞子、色氨酸、谷氨酰胺、牛乳低聚糖、花生四烯酸、酵母菌、蛋白酶、大豆卵磷脂、柠檬酸钾、食用草木灰浸泡液、纳米食用沸石等。本发明的蛹虫草发酵饮料,利用观音柴的凝胶特性进行发酵,优化了最终制品的口感和风味;再者,将鲜观音柴叶、蛹虫草、月季花瓣粉、月季花粉、红参、枸杞子、色氨酸、谷氨酰胺、牛乳低聚糖、花生四烯酸配伍具有提高免疫力、抗疲劳、润肠通便、改善睡眠的功效,本发明的蛹虫草含有丰富的营养成分,能够有效提高机体免疫力,本产品清澈透亮,营养丰富,口感独特。《一种包含人工培植虫草黄芪枸杞子的植物饮料及配方和制造方法》(中国专利申请号CN201510228216.8),本发明的目的在于选用以药食同源(药性中性)的原料品种,一种包含:人工培植虫草(蛹虫草)、黄芪、枸杞子组方的口味简单、纯正、清爽,同时又有提高免疫力、抗疲劳、润肺、健脾补气、护眼、固表、利水、止汗、益肝肾、延缓哀老、保护心脏、抗癌等作用,不寒不热、中性,适合大众饮用,消费者更易接受,能提高国民身体素质的植物饮料及制造方法。《一种航天饮料组合物及其制备方法》(中国专利申请号CN201710054645.7),本发明所述航天饮料组合物包括以下重量百分比的组分:蛹虫草提取液15-25%、枸杞提取液2-7%、玛卡提取液3-8%、黄精提取液4-10%和菊苣提取液50-76%;本发明公开的饮料组合物可改善身体亚健康,增强机体耐缺氧性,起到抗疲劳功效。《一种功能饮料、固体饮料及制备方法》(中国专利申请号CN201710332065.X),本发明公开了一种功能饮料、固体饮料及其制备方法,所述的功能饮料每1000重量份饮料的原料包括:人参,0.1-30份;枸杞子,0.1-30份;玛咖,0.1-30份;黄精,0.1-30份;决明子,0.1-30份;菊花,0.1-30份;蛹虫草,0.01-30份;以及水,余量。本发明所述的功能饮料及其固体饮料,通过对人参、枸杞子、玛咖、黄精、决明子、菊花、蛹虫草的合理调配,各成分之间能够相互协同促进,同时发挥缓解体力疲劳和视力疲劳的双重功效,而且配方成分均为天然植物材料,不会产生不良的副作用,适合长期饮用。《一种男士滋补的保健组合物、饮料及其制备方法》(中国专利申请号CN201710157347.0),其活性成分由以下重量份的原料制备而成:玉竹1~10份、蛹虫草1~5份、红枣1~10份、桂圆肉1~8份、桑椹1~7份、枸杞子1~6份、酸梅10~30份以及山楂1~8份。本发明的男士滋补的保健组合物及饮料,通过大量创造性实验筛选各成分的配方量,诸味原料以特定比例科学配伍,能够协同实现滋阴养血、生津解渴、润燥,提高免疫力,延缓衰老,抗脂肪肝、调节血脂和血糖,扶正固本,提高精子活力,可用于男士阳痿、早泄、遗精、遗尿等,改善男性生殖亚健康。
发明内容
本发明的目的是针对上述现状,旨在提供一种通过根霉菌、红曲米菌复合发酵后,能提高原有植物的抗疲劳、增强免疫力、益气健脾、强壮身体之功效,且可长期服用的一种抗疲劳增强免疫力的蛹虫草复合酵素饮品制备方法。
本发明目的的实施方式为,一种抗疲劳增强免疫力的蛹虫草复合酵素饮品制备方法,具体步骤如下:
1)净选原料;
2)原料提取,将净选、处理后的人参20-30克、玛咖15-25克、黄精15-25克、枸杞10-20克、葛根10-20克置于提取罐中,加水至原料重量的10倍量以上,使原料全部浸没在水中,加热水温至60℃,浸泡6小时,再加热至100℃以上,煎煮30-50分钟后,将煎煮液过滤出来,按1∶10比例再加水煎煮一次,两次煎煮液合并;加水至原料重量的15-20倍,水温升至55℃-60℃,浸泡10-15h,再加热至100℃以上,提取50-60min;
3)将步骤2)的提取液置于带盖陶瓷缸内,加其质量10-25%的红糖混合105℃高温灭菌40分钟,过滤,滤液即为营养液;
4)将步骤3)所得的培养液置发酵罐内冷却至30-32℃,加入蛹虫草粉20-30克,接种3-5g根霉菌、8-10g红曲米菌种,后密封发酵3-5个月,发酵温度为33-35℃,即得抗疲劳增强免疫力的蛹虫草复合酵素饮品。
本发明采用人参、玛咖、黄精、枸杞、葛根为营养液培养基,以根霉菌和红曲米菌复合发酵为转化工具,采用传统深层液态发酵工艺,能降解原料中的有毒有害物,形成新的活性成分,保留原有活性物质,提高了原有植物的抗疲劳、增强免疫力、益气健脾、强壮身体之功效,安全无毒,所得饮品为纯天然发酵后的代谢产物。
具体实施方式
本发明采用人参、玛咖、黄精、枸杞、葛根为原料,加水浸泡、煎煮,煎煮液低温真空减压浓缩,灭菌、过滤,滤液为营养液;营养液置于提取罐中,加红糖混合均匀得培养液;培养液置发酵罐内冷却,加入蛹虫草粉,接种根霉菌、红曲米菌种,后密封发酵3-5个月,发酵温度为33-35℃,即得抗疲劳增强免疫力的蛹虫草复合酵素饮品。
本发明采用根霉菌和红曲米菌种复合发酵,根霉菌、红曲米菌为市售产品。红曲米能产生红色素,是各种无毒染色食物及饮料加色剂,是我国传统的对人体身心有益而无害的健康食品。根霉在糖化过程中还能产生少量的有机酸(如乳酸)。人参、玛咖、黄精、枸杞、葛根、蛹虫草粉经根霉菌和红曲米菌复合发酵,在厌氧环境条件下,能产生糖化酶;所得饮品为纯天然发酵后的代谢产物,不含任何防腐剂,安全无毒,能达到抗疲劳、增强免疫力、益气健脾、强壮身体的效果。
下面用具体实施例详述本发明。
实施例1:
1)净选原料,剔除次品、劣品、不地道品种;为了确保产品质量,将净选的合格优质原料,根据产品的不同用途,按照中药炮制规范,采用不同方法进行精制。
2)原料提取,称取人参30克、玛咖25克、黄精25克、枸杞20克、葛根20克置于提取罐中,加水至原料重量的10倍量以上,使原料全部浸没在水中,加热水温至60℃,浸泡6小时,再加热至100℃以上,煎煮30-50分钟后,将煎煮液过滤出来,按1∶10比例再加水煎煮一次,两次煎煮液合并;加水至原料重量的15-20倍,水温升至55℃-60℃,浸泡10-15h,再加热至100℃以上,提取50-60min;
3)将步骤2)的提取液置于带盖陶瓷缸内,加其质量25%的红糖混合105℃高温灭菌40分钟,过滤,滤液即为营养液;
4)将步骤3)所得的培养液置发酵罐内冷却至30-32℃,加入蛹虫草粉30克,接种3-5g根霉菌、8-10g红曲米菌种,后密封发酵3-5个月,发酵温度为33-35℃,即得抗疲劳增强免疫力的蛹虫草复合酵素饮品。
实施例2:同实施例1,不同的是,
2)原料提取,称取人参28克、玛咖23克、黄精23克、枸杞18克、葛根18克置于提取罐中,加水至原料重量的10倍量以上,使原料全部浸没在水中,加热水温至60℃,浸泡6小时,再加热至100℃以上,煎煮30-50分钟后,将煎煮液过滤出来,按1∶10比例再加水煎煮一次,两次煎煮液合并;加水至原料重量的15-20倍,水温升至55℃-60℃,浸泡10-15h,再加热至100℃以上,提取50-60min;
3)将步骤2)的提取液置于带盖陶瓷缸内,加其质量20%的红糖混合105℃高温灭菌40分钟,过滤,滤液即为营养液;
4)将步骤3)所得的培养液置发酵罐内冷却至30-32℃,加入蛹虫草粉28克,接种3-5g根霉菌、8-10g红曲米菌种,后密封发酵3-5个月,发酵温度为33-35℃,即得抗疲劳增强免疫力的蛹虫草复合酵素饮品。
实施例3:同实施例1,不同的是,
2)原料提取,称取人参26克、玛咖21克、黄精21克、枸杞16克、葛根16克置于提取罐中,加水至原料重量的10倍量以上,使原料全部浸没在水中,加热水温至60℃,浸泡6小时,再加热至100℃以上,煎煮30-50分钟后,将煎煮液过滤出来,按1∶10比例再加水煎煮一次,两次煎煮液合并;加水至原料重量的15-20倍,水温升至55℃-60℃,浸泡10-15h,再加热至100℃以上,提取50-60min;
3)将步骤2)的提取液置于带盖陶瓷缸内,加其质量15%的红糖混合105℃高温灭菌40分钟,过滤,滤液即为营养液;
4)将步骤3)所得的培养液置发酵罐内冷却至30-32℃,加入蛹虫草粉26克,接种3-5g根霉菌、8-10g红曲米菌种,后密封发酵3-5个月,发酵温度为33-35℃,即得抗疲劳增强免疫力的蛹虫草复合酵素饮品。
实施例4:同实施例1,不同的是,
2)原料提取,称取人参24克、玛咖19克、黄精19克、枸杞14克、葛根14克置于提取罐中,加水至原料重量的10倍量以上,使原料全部浸没在水中,加热水温至60℃,浸泡6小时,再加热至100℃以上,煎煮30-50分钟后,将煎煮液过滤出来,按1∶10比例再加水煎煮一次,两次煎煮液合并;加水至原料重量的15-20倍,水温升至55℃-60℃,浸泡10-15h,再加热至100℃以上,提取50-60min;
3)将步骤2)的提取液置于带盖陶瓷缸内,加其质量10%的红糖混合105℃高温灭菌40分钟,过滤,滤液即为营养液;
4)将步骤3)所得的培养液置发酵罐内冷却至30-32℃,加入蛹虫草粉24克,接种3-5g根霉菌、8-10g红曲米菌种,后密封发酵3-5个月,发酵温度为33-35℃,即得抗疲劳增强免疫力的蛹虫草复合酵素饮品。
实施例5:同实施例1,不同的是,

Claims (2)
1.一种抗疲劳增强免疫力的蛹虫草复合酵素饮品制备方法,其特征在于具体步骤如下:
1)净选原料;
2)原料提取,将净选、处理后的原料人参、玛咖、黄精、枸杞、葛根置于提取罐中,加水至原料重量的10倍量以上,使原料全部浸没在水中,加热水温至60℃,浸泡6小时,再加热至100℃以上,煎煮30-50分钟后,将煎煮液过滤出来,按1∶10比例再加水煎煮一次,两次煎煮液合并;加水至原料重量的15-20倍,水温升至55℃-60℃,浸泡10-15h,再加热至100℃以上,提取50-60min;
3)将步骤2)的提取液置于带盖陶瓷缸内,加其质量10-25%的红糖混合105℃高温灭菌40分钟,过滤,滤液即为营养液;
4)将步骤3)所得的培养液置发酵罐内冷却至30-32℃,加入蛹虫草粉,接种根霉菌、红曲米菌种,后密封发酵3-5个月,发酵温度为33-35℃,即得抗疲劳增强免疫力的蛹虫草复合酵素饮品。
2.根据权利要求1所述的一种抗疲劳增强免疫力的蛹虫草复合酵素饮品制备方法,其特征在于:步骤1)净选原料是将人参、玛咖、黄精、枸杞、葛根筛选、除杂后全部浸没在水中,加热水温至60℃,浸泡6小时。
