本发明公开了一种树上干杏杏干晾晒方法,包括如下步骤:将采收来的树上干杏进行清理分级,去除杂质、残品,并用清水完成清洗;将树上干杏自然晒干至杏干中水分的质量分数为25%‑5%后,将其按每2‑20kg倒入含有1‑20g食盐的2‑30kg沸水中的比例浸泡在盐水中,迅速搅匀,10s‑50s后捞出;将捞出后的树上干杏继续自然晒干水分至杏干中水分的质量分数为25%‑5%;将完成第二次晾晒后的树上干杏启封整形,去除杂质、残品,再次分级后包装储藏。本发明改善了树上干杏在晾晒过程中出现颜色加深现象,使其色泽诱人亮透;同时去除了杏干出现的苦味,提升口感,并减少了在整个干燥过程中微量元素、糖分和营养成分的丢失。

背景技术
现有的树上干杏加工方法中,多采用自然堆晒的方式对树上干杏进行干燥处理,这一方面容易造成杏干的污染,造成微量元素、糖分和营养成分的丢失,另一方面树上干杏在晾晒过程中容易出现颜色加深现象;且在干燥加工后杏干出现苦味。
发明内容
为解决上述问题,本发明提供了一种树上干杏杏干晾晒方法,具有工艺流程简单、工艺配方保密、制成品风味独特的特点。
为实现上述目的,本发明采取的技术方案为:
一种树上干杏(小金果、吊干杏)杏干晾晒方法,包括如下步骤:
S1、采收:将采收来的树上干杏进行清理分级,并去除杂质、残品;
S2、清洗:采用清水完成对树上干杏的清洗;
S3、晾晒并浸泡处理:将树上干杏自然晒干至杏干中水分的质量分数为25%-5%后,将其按每2-20kg倒入含有1-20g食盐的2-30kg沸水中的比例浸泡在盐水中,迅速搅匀,10s-50s后捞出;
S4、第二次晾晒:将捞出后的树上干杏继续自然晒干水分至杏干中水分的质量分数为25%-5%;
S5、将完成第二次晾晒后的树上干杏启封整形,去除杂质、残品,再次分级后采用真空包装,按100-200克/袋包装,储藏在阴凉避光处。
本发明具有以下有益效果:
可改善树上干杏在晾晒过程中出现颜色加深的现象,使其色泽诱人亮透;同时去除了杏干出现的苦味,提升口感,并减少了在整个干燥过程中微量元素、糖分和营养成分的丢失。

本发明实施例提供了一种树上干杏杏干晾晒方法,包括如下步骤:
S1、采收:将采收来的树上千杏进行清理分级,并去除杂质、残品;
S2、清洗:采用清水完成对树上干杏的清洗;
S3、晾晒并浸泡处理:将树上干杏自然晒干,干燥后采用GB/T5009.3食品中水分的测定方法测得杏干中水分的质量分数为25%-5%后,将其按每2-20kg倒入含有1-20g食盐的2-30kg沸水中的比例浸泡在盐水中,迅速搅匀,10s-50s后捞出;
S4、第二次晾晒:将捞出后的树上干杏继续自然晒干水分,干燥后采用GB/T5009.3食品中水分的测定方法测得杏干中水分的质量分数为25%-5%;
S5、将完成第二次晾晒后的树上千杏启封整形,去除杂质、残品,再次分级后采用真空包装,按100-200克/袋包装,储藏在阴凉避光处。
经验证,新疆伊犁察布查尔县、特克斯县等农户采用了该工艺对树上杏干进行干燥处理后,大大提高了产品的合格率,且延长了产品储藏周期。

S3、晾晒并浸泡处理:将树上干杏自然晒干至杏干中水分的质量分数为25%-5%后,将其按每2-20kg倒入含有1-20g食盐的2-30kg沸水中的比例浸泡在盐水中,迅速搅匀,10s-50s后捞出;
S4、第二次晾晒:将捞出后的树上干杏继续自然晒干水分至杏干中水分的质量分数为25%-5%;
