本发明涉及一种阿胶八宝布袋鸡,属食品技术领域。
背景技术
布袋鸡又名“海味什锦鸡”,源于元初,盛于乾隆,后为《满汉全席》主菜之一。因其状如布袋,故名“布袋鸡”。布袋鸡选料精良,制作别致,选用散养笨鸡,宰杀煺毛后,于咽下切寸许小口,剔除颈骨、翅骨、身骨、腿骨及内脏,使其成为“鸡布袋”。然后按其比例装入海参、鲍鱼、瑶柱、火腿、笋菇等十六种佐料,将口封住,入油炸至金黄色,上笼蒸制,并配以青、红、黄等色蔬菜拼成图案,放入盘上宛如整鸡伏于锦囊之中,上席后,划开背部,内陷露出,肉鲜馅美,香而不腻,清香四溢,营养均衡,独具风味,远近闻名,被国家列入《中国菜谱》。
但是,海参、鲍鱼价格高贵,不容易走进平常百姓的生活中来,经过原材料消减后的普通布袋鸡,又失去了原有的营养价值。
发明内容
本发明就是为了解决上述问题而设计提供的一种阿胶八宝布袋鸡,为实现上述目的,本发明采取了以下方案:
本发明包括下述重量份的原料组成:整鸡一只、阿胶1-10克、鲜虾仁5-15克、鲜鱿鱼10-20克、海参20-40克、野香菇5-15克、鹌鹑蛋1-5个、火腿20-40克、鲜肉丸15-30克、里脊片15-30克。
在本发明的材料中:
鸡,从营养价值来分析,每一百克去皮鸡肉含有水分74%、蛋白质22%、脂肪0.7%、钙13mg、磷190mg、铁1.5mg等,并且富含维生素B12、维生素B6、维生素A、维生素D、维生素K等。鸡肉和牛肉、猪肉相比,其蛋白质的质量较高,脂肪含量较低。是小儿、中老年人、心血管疾病患者、病中、病后虚弱者理想的食品。
阿胶,始于秦汉,至今已有2000多年的历史,是以驴皮为主要原料,放阿井之水而制成(不放阿井水熬煮的胶为驴皮胶、驴胶)。阿胶原产山东省古东阿县(今天的阳谷县阿城镇古阿井),佳者带琥珀色,透明,无臭味。亦称驴皮胶。具有补血、滋阴、润燥、止血的功效。主治心腹内崩、血虚萎黄、眩晕心悸、心烦不眠、肺燥咳嗽、四肢酸痛、女子下血、安胎等,为四季滋补之佳品。
虾仁,含有20%的蛋白质,是鱼、蛋、奶的几倍甚至十几倍,是蛋白质含量很高的食品之一,同时含有丰富的能降低人体血清胆固醇的牛磺酸,虾含有丰富的钾、碘、镁、磷等微量元素和维生素A等成分。对身体虚弱以及病后需要调养的人们来说是极好的食物,同时具有保护心血管、通乳汁、消除“时差症”的作用。
鱿鱼,营养价值毫不逊色于牛肉和金枪鱼,每百克干品含有蛋白质66.7克、脂肪7.4克,并含有大量的碳水化合物和钙、磷、磺等无机盐。鲜活鱿鱼中蛋白质含量也高达16%-20%,脂肪含量极低,只有不到1%,因此热量亦低,对怕胖的人来说,吃鱿鱼是一种好的选择。而鱿鱼的脂肪里含有大量的高度不饱和脂肪酸如EPA、DHA,加上肉中所含的高量牛磺酸,都可有效减少血管壁内所累积的胆固醇,对于预防血管硬化、胆结石的形成都颇具效力。同时能补充脑力、预防老年痴呆症等。因此对容易罹患心血管方面疾病的中、老年人来说,鱿鱼更是有益健康的食物。
海参,一种名贵海产动物,因补益作用类似人参而得名,肉质软嫩,营养丰富,是典型的高蛋白、低脂肪食物,富含蛋白质、矿物质、维生素等50多种天然珍贵活性物质,具有延缓衰老、固本培元、补肾益精、治伤抗炎、护肝保血管、益智健脑、助产催乳、消除肿瘤、抗癌护心脏的作用。其滋味腴美,风味高雅,与燕窝、鲍鱼、鱼翅齐名,是海味“八珍”之一,在大雅之堂上往往扮演着“压台轴”的角色。
野香菇,不但含有丰富的碳水化合物、粗纤维、灰分B族维生素和钙、磷、铁等有利于疗愈小儿佝偻病及贫血症的微量元素,还含有双链核糖核酸,能诱导产生干扰素,具有抗病毒的能力。香菇中丰富的多糖,可调节人体内免疫T细胞活性,可降低肿瘤的复制和扩散,因此常用于癌症患者放疗、化疗后的食疗。香菇中所含的成份可预防血管硬化,降胆固醇,降血压,因此特别适合患有三高病的中老年人食疗食用。
鹌鹑蛋,与鸡蛋相比,蛋白质含量高30%,维生素B1高20%,维生素B2高83%,铁高46.1%,卵磷脂高5.6倍,并含有维生素P等成分,不仅是营养滋补佳品,而且是治疗许多疾病的良药。由于其含有维生素P等成分,常食有防治高血压及动脉硬化之功效。
火腿、鲜肉丸、里脊片也是味道鲜美、营养丰富的滋补佳品。
采用以上原料做成的阿胶八宝布袋鸡,和传统布袋鸡相比,保健效果明显,营养更加丰富,口感软嫩香醇,口味唇齿留香,物美价廉,经济实惠,是人们宴席、餐桌与馈赠亲朋好友之佳品。
具体实施方式
本发明包括下述重量份的原料组成:整鸡一只、阿胶1-10克、鲜虾仁5-15克、鲜鱿鱼10-20克、海参20-40克、野香菇5-15克、鹌鹑蛋1-5个、火腿20-40克、鲜肉丸15-30克、里脊片15-30克。
下面结合本发明的药物组分对制备方法做详细说明:
(1)整鸡宰杀,煺毛、洗净,经整鸡出骨后,剔除爪骨,剁去鸡嘴尖、膀尖和鸡爪的1/3,加工成布袋鸡;
(2)取阿胶1-10克,加适量热水化开待用;
(3)填料:将1-10克阿胶化开后和鲜虾仁5-15克、鲜鱿鱼10-20克、海参20-40克、野香菇5-15克、鹌鹑蛋1-5个、火腿20-40克、鲜肉丸15-30克、里脊片15-30克从鸡布袋的开刀口处装入鸡肚内,用竹签将刀口别住;
(4)油炸蒸制:将布袋鸡使用蜜水刷过然后放入油锅中炸,待皮面呈淡红色时,用小铲翻转拨动,炸两分钟后捞出,然后放入蒸锅中进行蒸制;
(5)真空灭菌包装:蒸制好的阿胶八宝布袋鸡取出晾干,然后真空包装,灭菌处理,入库。

Claims (2)

1.阿胶八宝布袋鸡,其特征在于包括下述重量份的原料组成:整鸡一只、阿胶1-10克、鲜虾仁5-15克、鲜鱿鱼10-20克、海参20-40克、野香菇5-15克、鹌鹑蛋1-5个、火腿20-40克、鲜肉丸15-30克、里脊片15-30克。
2.如权利要求1所述的阿胶八宝布袋鸡,其特征在于:制备本发明的方法,包括以下步骤:
(1)整鸡宰杀,煺毛、洗净,经整鸡出骨后,剔除爪骨,剁去鸡嘴尖、膀尖和鸡爪的1/3,加工成布袋鸡;
(2)取阿胶1-10克,加适量热水化开待用;
(3)填料:将1-10克阿胶化开后和鲜虾仁5-15克、鲜鱿鱼10-20克、海参20-40克、野香菇5-15克、鹌鹑蛋1-5个、火腿20-40克、鲜肉丸15-30克、里脊片15-30克从鸡布袋的开刀口处装入鸡肚内,用竹签将刀口别住;
(4)油炸蒸制:将布袋鸡使用蜜水刷过然后放入油锅中炸,待皮面呈淡红色时,用小铲翻转拨动,炸两分钟后捞出,然后放入蒸锅中进行蒸制;
(5)真空灭菌包装:蒸制好的阿胶八宝布袋鸡取出晾干,然后真空包装,灭菌处理,入库。
