Abstract
本发明公开了一种杂粮营养面粉及其制备方法,所述的面粉包括大麦粉、小麦粉、黄豆粉、红豆粉、小米粉和荞麦粉。本发明的杂粮营养面粉能够提供人体日常所需的所有热量,控制杂粮成分的添加,使所得杂粮面粉的营养价值高,且营养均衡,本发明的原料均为非转基因,能够有效的修复人体的肠胃功能,有利于保障消化系统正常运转;本发明的杂粮营养面粉进行真空冷冻干燥能够使原料在低温真空的环境下迅速冷冻干燥,避免了营养成分的流失;将各原料在白酒中熬制,可以将原料的营养元素充分的释放出来,增加了风味,口感更香浓,面粉吃起来更松软,这样使得研磨的时候更加轻松,更加省时省力,打磨的更细。

技术领域
本发明属于食品原料加工技术领域,具体地说,涉及一种杂粮营养面粉及其制备方法。
背景技术
我国是粮食生产大国,同样也是粮食消耗大国,面粉作为粮食的主要种类之一,是我国北方大部分地区的主食,也是我国人民喜爱的传统美食,以面粉制成的食物品种繁多,花样百出,风味迥异。面粉是一种由小麦磨成的粉末,其虽能提供大部分的热量,但缺乏膳食纤维等营养成分,在营养价值方面不能完全满足人体需要,其营养单一,且无保健功能,长期食用会影响人体的胃肠功能并造成营养不良。
随着现代社会生活质量的提高,健康保健知识的普及,人们在与各种疾病的抗争中认识到生活好了精米细面久吃不一定能吃出健康,相反到吃出各种难以根除的慢性病,人们在不断的调整日常饮食结构,改善不良生活习惯,一个吃粗粮、吃五谷全面平衡营养,健康养生的新时尚逐步形成。
鉴于以上原因,特提出本发明。
发明内容
为了解决现有技术存在的以上问题,本发明提供了一种杂粮营养面粉及其制备方法,该发明的杂粮营养面粉能够提供人体日常所需的所有热量,控制杂粮成分的添加,使所得杂粮面粉的营养价值高,且营养均衡,本发明的原料均为非转基因,能够有效的修复人体的肠胃功能,有利于保障消化系统正常运转。
本发明的第一目的提供了一种杂粮营养面粉,所述的面粉包括大麦粉、小麦粉、黄豆粉、红豆粉、小米粉和荞麦粉。
小麦的主要成分是碳水化合物、脂肪、蛋白质、粗纤维、钙、磷、钾、维生素B1、维生素B2及烟酸等成分,还有一种尿囊素的成分。此外,小麦胚芽里还富含食物纤维和维生素E,心脏少量的精氨酸、淀粉酶、谷甾醇、卵磷脂和蛋白分解酶。
大麦与小麦的营养成分近似,但纤维素含量略高,具有坚果香味,碳水化合物含量较高,蛋白质、钙、磷含量中等,含少量B族维生素。
黄豆营养全面,含量丰富,其中蛋白质的含量比猪肉高2倍,是鸡蛋含量的2.5倍,蛋白质的含量不仅高,而且质量好,黄豆中蛋白质的氨基酸组成和动物蛋白质近似,其中氨基酸比较接近人体需要的比值,很容易被消化吸收,还含有很多不饱和脂肪酸,容易被人体消化吸收。
红豆中的色氨酸有调节、改善情绪的作用,也可帮助高血压病患者调节血压,另外,红豆中还含有丰富的膳食纤维,可减少肠道对胆固醇的吸收,并且红豆还含有蛋白质、钙、磷、铁、维生素B1、维生素B2、皂苷、烟酸、膳食纤维、胡萝卜素、植物甾醣、三萜皂苷等。红豆的营养价值很高,其中蛋白质占25%,钾、赖氨酸及B族维生素的含量,亦为豆类中的翘楚。
小米的营养价值很高,含蛋白质、脂肪及维生素,小米蛋白质含量比大米高。脂肪、碳水化合物含量都不低于稻、麦,还含有一般粮食中不含有的胡萝卜素,维生素B1的含量位居所有粮食之首。
荞麦粉的蛋白质含量明显高于大米、小米、小麦、高粱和玉米面,荞麦面粉含18种氨基酸,氨基酸的组分与豆类作物蛋白质氨基酸的组分相似,脂肪含量也高于大米、小麦面粉。荞麦脂肪含9种脂肪酸,其中油酸和亚油酸含量最多,占脂肪酸总量的75%,还含有棕榈酸19%、亚麻酸4.8%等,此外,还含有柠檬酸、草酸和苹果酸等有机酸。荞麦还含有微量的钙、磷、铁、铜、锌和微量元素硒、硼、碘、镍、钴等及多种维生素,叶绿素是其它谷类作为所不含有的,荞麦籽粒的营养成分因品种和栽培条件不同而存在差异,这些物质在人体生理代谢中起着重要的作用。
进一步的,按照重量份,所述的面粉包括大麦粉10-20重量份、小麦粉12-18重量份、黄豆粉10-20重量份、红豆粉12-18重量份、小米粉10-20重量份和荞麦粉10-20重量份。
进一步的,按照重量份,所述的面粉包括大麦粉16.67重量份、小麦粉16.67重量份、黄豆粉16.67重量份、红豆粉16.67重量份、小米粉16.67重量份和荞麦粉16.67重量份。
本发明的第二目的提供了一种上面所述的杂粮营养面粉的制备方法,所述的制备方法包括如下步骤:
(1)分别将大麦、小麦、黄豆、红豆、小米和荞麦洗净,在温水中浸泡;
(2)将浸泡好的上述各材料分别放入白酒中进行熬制,然后真空冷冻干燥;
(3)将干燥后的各材料分别放入烤箱进行低温烘烤;
(4)分别将烘烤干的各材料研磨粉碎,按照上述的重量份混合均匀,得到所述的杂粮营养面粉。
进一步的,步骤(1)中温水的温度为45-55℃,浸泡时间为5-7小时。
进一步的,步骤(2)中熬制的温度为70-80℃,熬制时间为80-90分钟。
进一步的,步骤(2)中真空冷冻干燥的温度为-15℃~-10℃。
进一步的,步骤(3)中烘烤温度为110-120℃。
进一步的,步骤(4)中研磨时间为2-3小时,过170-190目筛。
进一步的,步骤(4)中所得杂粮营养面粉的含水率为7%-9%。
本发明的杂粮营养面粉可以做出面包、面条、饼干等,不需要添加其他的任何添加剂,对人身体健康,具有较高的营养成分。
与现有技术相比,本发明的有益效果如下:
(1)本发明的杂粮营养面粉能够提供人体日常所需的所有热量,控制杂粮成分的添加,使所得杂粮面粉的营养价值高,且营养均衡,本发明的原料均为非转基因,能够有效的修复人体的肠胃功能,有利于保障消化系统正常运转;
(2)本发明的杂粮营养面粉进行真空冷冻干燥能够使原料在低温真空的环境下迅速冷冻干燥,避免了营养成分的流失;
(3)将各原料在白酒中熬制,可以将原料的营养元素充分的释放出来,增加了风味,口感更香浓,面粉吃起来更松软,这样使得研磨的时候更加轻松,更加省时省力,打磨的更细。

为使本发明的目的、技术方案和优点更加清楚,下面将对本发明的技术方案进行详细的描述。显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动的前提下所得到的所有其它实施方式,都属于本发明所保护的范围。
实施例1
本实施例的杂粮营养面粉,按照重量份,包括大麦粉10重量份、小麦粉12重量份、黄豆粉10重量份、红豆粉12重量份、小米粉10重量份和荞麦粉10重量份。
本实施例的杂粮营养面粉的制备方法,包括如下步骤:
(1)分别将大麦、小麦、黄豆、红豆、小米和荞麦洗净,在温水中浸泡,温度为45℃,浸泡时间为5小时;
(2)将浸泡好的上述各材料分别放入白酒中进行熬制,熬制的温度为70℃,熬制时间为80分钟,然后真空冷冻干燥,真空冷冻干燥的温度为-15℃;
(3)将干燥后的各材料分别放入烤箱进行低温烘烤,烘烤温度为110℃;
(4)分别将烘烤干的各材料研磨粉碎,研磨时间为2小时,过170目筛,按照上述的重量份混合均匀,得到所述的杂粮营养面粉,所得杂粮营养面粉的含水率为7%。
实施例2
本实施例的杂粮营养面粉,按照重量份,包括大麦粉16.67重量份、小麦粉16.67重量份、黄豆粉16.67重量份、红豆粉16.67重量份、小米粉16.67重量份和荞麦粉16.67重量份。
本实施例的杂粮营养面粉的制备方法,包括如下步骤:
(1)分别将大麦、小麦、黄豆、红豆、小米和荞麦洗净,在温水中浸泡,温度为50℃,浸泡时间为6小时;
(2)将浸泡好的上述各材料分别放入白酒中进行熬制,熬制的温度为75℃,熬制时间为85分钟,然后真空冷冻干燥,真空冷冻干燥的温度为-12℃;
(3)将干燥后的各材料分别放入烤箱进行低温烘烤,烘烤温度为115℃;
(4)分别将烘烤干的各材料研磨粉碎,研磨时间为2.5小时,过180目筛,按照上述的重量份混合均匀,得到所述的杂粮营养面粉,所得杂粮营养面粉的含水率为8%。
实施例3
本实施例的杂粮营养面粉,按照重量份,包括大麦粉20重量份、小麦粉18重量份、黄豆粉20重量份、红豆粉18重量份、小米粉20重量份和荞麦粉20重量份。
本实施例的杂粮营养面粉的制备方法,包括如下步骤:
(1)分别将大麦、小麦、黄豆、红豆、小米和荞麦洗净,在温水中浸泡,温度为55℃,浸泡时间为7小时;
(2)将浸泡好的上述各材料分别放入白酒中进行熬制,熬制的温度为80℃,熬制时间为90分钟,然后真空冷冻干燥,真空冷冻干燥的温度为-15℃;
(3)将干燥后的各材料分别放入烤箱进行低温烘烤,烘烤温度为120℃;
(4)分别将烘烤干的各材料研磨粉碎,研磨时间为3小时,过190目筛,按照上述的重量份混合均匀,得到所述的杂粮营养面粉,所得杂粮营养面粉的含水率为9%。
实施例4
本实施例的杂粮营养面粉,按照重量份,包括大麦粉16重量份、小麦粉14重量份、黄豆粉18重量份、红豆粉15重量份、小米粉16重量份和荞麦粉15重量份。
本实施例的杂粮营养面粉的制备方法,包括如下步骤:
(1)分别将大麦、小麦、黄豆、红豆、小米和荞麦洗净,在温水中浸泡,温度为51℃,浸泡时间为5.5小时;
(2)将浸泡好的上述各材料分别放入白酒中进行熬制,熬制的温度为73℃,熬制时间为86分钟,然后真空冷冻干燥,真空冷冻干燥的温度为-14℃;
(3)将干燥后的各材料分别放入烤箱进行低温烘烤,烘烤温度为113℃;
(4)分别将烘烤干的各材料研磨粉碎,研磨时间为2.7小时,过175目筛,按照上述的重量份混合均匀,得到所述的杂粮营养面粉,所得杂粮营养面粉的含水率为7.7%。

Claims (10)
1.一种杂粮营养面粉,其特征在于,所述的面粉包括大麦粉、小麦粉、黄豆粉、红豆粉、小米粉和荞麦粉。
2.根据权利要求1所述的一种杂粮营养面粉,其特征在于,按照重量份,所述的面粉包括大麦粉10-20重量份、小麦粉12-18重量份、黄豆粉10-20重量份、红豆粉12-18重量份、小米粉10-20重量份和荞麦粉10-20重量份。
3.根据权利要求1所述的一种杂粮营养面粉,其特征在于,按照重量份,所述的面粉包括大麦粉16.67重量份、小麦粉16.67重量份、黄豆粉16.67重量份、红豆粉16.67重量份、小米粉16.67重量份和荞麦粉16.67重量份。
4.一种权利要求1-3任意一项所述的杂粮营养面粉的制备方法,其特征在于,所述的制备方法包括如下步骤:
(1)分别将大麦、小麦、黄豆、红豆、小米和荞麦洗净,在温水中浸泡;
(2)将浸泡好的上述各材料分别放入白酒中进行熬制,然后真空冷冻干燥;
(3)将干燥后的各材料分别放入烤箱进行低温烘烤;
(4)分别将烘烤干的各材料研磨粉碎,按照所述的重量份混合均匀,得到所述的杂粮营养面粉。
5.根据权利要求4所述的一种杂粮营养面粉的制备方法,其特征在于,步骤(1)中温水的温度为45-55℃,浸泡时间为5-7小时。
6.根据权利要求4或5所述的一种杂粮营养面粉的制备方法,其特征在于,步骤(2)中熬制的温度为70-80℃,熬制时间为80-90分钟。
7.根据权利要求4所述的一种杂粮营养面粉的制备方法,其特征在于,步骤(2)中真空冷冻干燥的温度为-15℃~-10℃。
8.根据权利要求4所述的一种杂粮营养面粉的制备方法,其特征在于,步骤(3)中烘烤温度为110-120℃。
9.根据权利要求4所述的一种杂粮营养面粉的制备方法,其特征在于,步骤(4)中研磨时间为2-3小时,过170-190目筛。
10.根据权利要求4所述的一种杂粮营养面粉的制备方法,其特征在于,步骤(4)中所得杂粮营养面粉的含水率为7%-9%。
