0.016kg、姜粉0.01—0.03kg、淀粉0.07—0.05kg、鸟
苷酸钠0.002—0.004kg、肌苷酸钠0.001—0.003kg。
Description
本发明涉及一种调味品-炒菜鲜及其配方。
现有各类调味品很多,但炒菜时多为单项逐样加入,不仅麻烦,而且不太容易做到适量,近年来,虽然亦有复合调味品问世,但其成分都为已知调料组合而成,鲜味不够。
本发明针对上述不足,提供一种增加鲜味强度的高级复合调味品。
本发明的配方按如下比例配制:每千克炒菜鲜中含
精盐 0.747-0.685kg
谷氨酸钠 0.1-0.106kg
海鲜粉 0.04-0.06kg
肉桂 0.01-0.03kg
花椒粉 0.01-0.016kg
八角粉 0.01-0.016kg
姜粉 0.01-0.03kg
淀粉 0.07-0.05kg
鸟苷酸钠 0.002-0.004kg
肌苷酸钠 0.001-0.003kg。
本发明中所述的鸟苷酸钠、肌苷酸钠系呈味核苷酸,鲜味超过味精42倍,与上述调料按比例制成的炒菜鲜味道纯正、芳香浓郁,适用于宾馆、饭店、家庭炒菜用,即方便又省工省时,一次成型。

谷氨酸钠 0.105kg
海鲜粉 0.05kg
肉桂 0.02kg
花椒粉 0.015kg
八角粉 0.015kg
姜粉 0.02kg
淀粉 0.05kg
鸟苷酸钠 0.003kg
肌苷酸钠 0.002kg

1、一种调味品-炒菜鲜,其特征在于:配制比例为每千克炒菜鲜中含:精盐0.747-0.685kg谷氨酸钠0.1-0.106kg、海鲜粉0.04-0.06kg、肉桂0.01-0.03kg、花椒粉0.01-0.016kg、八角粉0.01-0.016kg、姜粉0.01-0.03kg、淀粉0.07-0.05kg、鸟苷酸钠0.002-0.004kg、肌苷酸钠0.001-0.003kg。
2、如权利要求1所述的炒菜鲜,其特征在于:每千克炒菜鲜中含:精盐0.72kg、谷氨酸钠0.105kg、海鲜粉0.05kg、肉桂0.02kg、花椒粉0.015kg、八角粉0.015kg、姜粉0.02kg、淀粉0.05kg、鸟苷酸钠0.003kg、肌苷酸钠0.002kg。
