本发明公开了一种石缝鱼药膳的制备方法,包括如下步骤:将党参、山药、黄精、桑葚、延胡索、甘草、石斛、黄芪、大枣清洗,干燥,研磨过筛,装袋,加入水煮制,分离得到预制料液和煮后料包;将石缝鱼去除内脏,静置于水中,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入猪油、预制料液,大火煮至沸腾,接着加入煮后料包和水,文火煨制得到石缝鱼药膳。本发明所得石缝鱼药膳味道鲜美,口感丰富,营养价值高,营养流失少,易于被人体吸收,能够有效促进提高机体免疫力。

技术领域
本发明涉及药膳技术领域,尤其涉及一种石缝鱼药膳的制备方法。
背景技术
中医学认为药食同源,饮食与健康两者密切相关。所以中医养生学千年不衰,尤其是在科学技术迅猛发展的今天,西药滥用所产生的人体对细菌病毒的抗药性不但无法控制病情,而且药物的残留也严重污染环境,民以食为天,食疗与食养是中医养生学的重要部分,所谓“三分疾病七分养”,“药补不如食补”,明确道出了药膳的重要性。
石缝鱼生活于多石流水溪河,底栖,以水生昆虫幼虫为食,其营养物质丰富,传统的食用制作方法是清蒸、水煮、红烧等,其营养物质流失严重,如何采用石缝鱼制作一种营养流失少、风味好的药膳,具有广大的市场前景。
发明内容
基于背景技术存在的技术问题,本发明提出了一种石缝鱼药膳的制备方法,所得石缝鱼药膳味道鲜美,口感丰富,营养价值高,营养流失少,易于被人体吸收,能够有效促进提高机体免疫力。
本发明提出的一种石缝鱼药膳的制备方法,包括如下步骤:
S1、将党参、山药、黄精、桑葚、延胡索、甘草、石斛、黄芪、大枣清洗,干燥,研磨过筛,装袋,加入水煮制,分离得到预制料液和煮后料包;
S2、将石缝鱼去除内脏,静置于水中,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入猪油、预制料液,大火煮至沸腾,接着加入煮后料包和水,文火煨制得到石缝鱼药膳。
优选地,S1中,干燥温度为60-70℃。
优选地,S1中,筛网目数为100-120目。
优选地,S1中,煮制时间为30-40min。
优选地,S1中,党参、山药、黄精、桑葚、延胡索、甘草、石斛、黄芪、大枣、水的重量比为2-8:1-8:1-6:5-15:4-10:2-8:1-4:2-5:5-15:150-200。
优选地,S2中,石缝鱼、猪油、预制料液、煮后料包和水的重量比为100:1-2:200-300:10-20:200-300。
优选地,S2中,将石缝鱼去除内脏,静置于温度为40-45℃的水中40-60min,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入猪油、预制料液,大火煮至沸腾,接着加入煮后料包和水,文火煨制3-4h得到石缝鱼药膳。
本发明采用党参、山药、黄精、桑葚、延胡索配合,具有保肝健脾、滋阴壮阳、补血益气、生津润燥的功能,与甘草、石斛、黄芪、大枣协同作用,能够有效促进人体产生抗体,提高免疫力。
本发明将石缝鱼去除内脏后,在一定温度的水中浸泡,可有效去除肉质中血水,采用热油煎至金黄色,不仅进一步高温杀菌,而且具有保鲜、维持内部肉质细嫩的效果,加入猪油、预制料液后大火煮至沸腾,可有效激发石缝鱼的鲜味,而且营养物质极为丰富,流失少,在不遮盖鱼鲜的基础上,口感极为丰富,再加入煮后料包文火煨制,进一步提高药膳中鲜味和营养物质,使料包和石缝鱼中的营养充分进入药膳中,更易于被人体吸收,从而提高药膳的营养价值。本发明适用范围广,具有广阔的市场应用前景和和较高的经济实用价值。
具体实施方式
下面,通过具体实施例对本发明的技术方案进行详细说明。
实施例1
一种石缝鱼药膳的制备方法,包括如下步骤:
S1、将2kg党参、8kg山药、1kg黄精、15kg桑葚、4kg延胡索、8kg甘草、1kg石斛、5kg黄芪、5kg大枣清洗,70℃干燥,研磨过100目筛,装袋,加入200kg水煮制30min,分离得到预制料液和煮后料包;
S2、将100kg石缝鱼去除内脏,静置于温度为45℃的水中40min,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入2kg猪油、200kg预制料液,大火煮至沸腾,接着加入20kg煮后料包和200kg水,文火煨制4h得到石缝鱼药膳。
实施例2
一种石缝鱼药膳的制备方法,包括如下步骤:
S1、将8kg党参、1kg山药、6kg黄精、5kg桑葚、10kg延胡索、2kg甘草、4kg石斛、2kg黄芪、15kg大枣清洗,60℃干燥,研磨过120目筛,装袋,加入150kg水煮制40min,分离得到预制料液和煮后料包;
S2、将100kg石缝鱼去除内脏,静置于温度为40℃的水中60min,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入1kg猪油、300kg预制料液,大火煮至沸腾,接着加入10kg煮后料包和300kg水,文火煨制3h得到石缝鱼药膳。
实施例3
一种石缝鱼药膳的制备方法,包括如下步骤:
S1、将4kg党参、6kg山药、2kg黄精、12kg桑葚、6kg延胡索、6kg甘草、2kg石斛、4kg黄芪、8kg大枣清洗,66℃干燥,研磨过105目筛,装袋,加入180kg水煮制33min,分离得到预制料液和煮后料包;
S2、将100kg石缝鱼去除内脏,静置于温度为44℃的水中45min,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入1.8kg猪油、220kg预制料液,大火煮至沸腾,接着加入18kg煮后料包和220kg水,文火煨制3.7h得到石缝鱼药膳。
实施例4
一种石缝鱼药膳的制备方法,包括如下步骤:
S1、将6kg党参、2kg山药、4kg黄精、8kg桑葚、8kg延胡索、4kg甘草、3kg石斛、3kg黄芪、12kg大枣清洗,64℃干燥,研磨过115目筛,装袋,加入160kg水煮制37min,分离得到预制料液和煮后料包;
S2、将100kg石缝鱼去除内脏,静置于温度为42℃的水中55min,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入1.2kg猪油、280kg预制料液,大火煮至沸腾,接着加入12kg煮后料包和280kg水,文火煨制3.3h得到石缝鱼药膳。

S2、将石缝鱼去除内脏,静置于水中,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入猪油、预制料液,大火煮至沸腾,接着加入煮后料包和水,文火煨制得到石缝鱼药膳。
2.根据权利要求1所述石缝鱼药膳的制备方法,其特征在于,S1中,干燥温度为60-70℃。
3.根据权利要求1或2所述石缝鱼药膳的制备方法,其特征在于,S1中,筛网目数为100-120目。
4.根据权利要求1-3任一项所述石缝鱼药膳的制备方法,其特征在于,S1中,煮制时间为30-40min。
5.根据权利要求1-4任一项所述石缝鱼药膳的制备方法,其特征在于,S1中,党参、山药、黄精、桑葚、延胡索、甘草、石斛、黄芪、大枣、水的重量比为2-8:1-8:1-6:5-15:4-10:2-8:1-4:2-5:5-15:150-200。
6.根据权利要求1-5任一项所述石缝鱼药膳的制备方法,其特征在于,S2中,石缝鱼、猪油、预制料液、煮后料包和水的重量比为100:1-2:200-300:10-20:200-300。
7.根据权利要求1-6任一项所述石缝鱼药膳的制备方法,其特征在于,S2中,将石缝鱼去除内脏,静置于温度为40-45℃的水中40-60min,清洗干净后,采用热油两面煎至金黄色后,置于砂锅中,再加入猪油、预制料液,大火煮至沸腾,接着加入煮后料包和水,文火煨制3-4h得到石缝鱼药膳。
