本发明公开了一种青少年黑米糠营养运动饮料,由以下重量份的原材料组成:黑米糠浓缩液40~60份、灰树花子实体多糖8~14份、乳清蛋白肽15~30份、微量营养素3~12份、阿斯巴甜1~5份、安赛蜜1~6份、薄荷脑0.5~2份、β‑环状糊精0.05~0.25份、柠檬酸0.03~0.09份、椰子香精0.02~0.06份、水至250份。本发明饮料富含蛋白质,容易被青少年吸收,且具有脂肪、胆固醇含量低的特点,能够增强氧利用率,减少运动消耗,延长运动时间,提高青少年的运动能力。

本发明涉及功能饮料技术领域,具体涉及一种青少年黑米糠营养运动饮料及其制备方法。
背景技术
运动饮料是指营养素的成分和含量能适应运动员或参加体育锻炼的人群的生理特点、特殊营养需要,并能提高运动能力的饮料。在运动前饮用运动饮料,能调节青少年体内肌糖原及肝糖原的储备量,提高青少年的运动能力;青少年运动后,会损耗大量的能源物质,且产生大量的代谢产物堆积在体内,造成体内渗透压、酸碱平衡失调等现象出现,饮用运动饮料可补充青少年运动后丢失的能量、糖、矿物质和维生素。但运动饮料中大部分都是靠外源添加无机盐、维生素、矿物质等来达到相应电解质和营养素的要求,这些添加物质多为化学合成或无机盐,不易被人体吸收,甚至不利于人体健康,不仅不能满足青少年对氨基酸、蛋白质及多种维生素和微量元素的摄入要求,且不能促进代谢物的分解或排出体外,在延缓青少年疲劳发生,提高运动成绩和促进运动后的疲劳恢复方面的作用较弱,功能较为单一,针对性不强。因此,如何科学、合理地研制出一款能为青少年补充能量,减缓运动疲劳,提高青少年运动能力,且营养丰富,能够适应青少年生长发育的运动饮料,是目前亟需解决的问题。
发明内容
为了解决上述问题,本发明提供了一种青少年黑米糠营养运动饮料及其制备方法,该饮料富含蛋白质,易被青少年吸收,且具有脂肪、胆固醇含量低的特点。该饮料还能增强氧利用率,减少运动能量消耗,延长运动时间,从而提高青少年的运动能力。

一种青少年黑米糠营养运动饮料,由以下重量份的原材料组成:黑米糠浓缩液40~60份、灰树花子实体多糖8~14份、乳清蛋白肽15~30份、微量营养素3~12份、阿斯巴甜1~5份、安赛蜜1~6份、薄荷脑0.5~2份、β-环状糊精0.05~0.25份、柠檬酸0.03~0.09份、椰子香精0.02~0.06份、水至250份。

优选地,所述黑米糠浓缩液的制备方法为:取黑米糠洗净,于45℃下干燥,粉碎,过40目筛,将黑米糠粉放入索氏提取器中,于80~90℃水浴加热,用甲醇抽提8h,回收甲醇,按料液比为1:15加入80%乙醇,于50℃超声波功率为140~200W下提取80~85min,过滤,减压回收乙醇,取滤液减压浓缩至原体积1/4,得黑米糠浓缩液。
优选地,所述灰树花子实体多糖的制备方法为:取灰树花粉,按料液比为1:10加入12%氯化钠溶液,在95℃下水浴提取2h后,抽滤,取滤渣再提取1次,合并上清液,浓缩,TFA去除蛋白后,用6mol/L盐酸调节pH为2.5,在4℃下静置12h,离心,冷冻干燥,得灰树花子实体多糖。
优选地,所述乳清蛋白肽的制备方法为:
a.取新鲜牛乳,加入0.1mol/L盐酸至pH为4.6,经3000r/min离心5~8min,收集上清液,得乳清蛋白;
b.取乳清蛋白,按乳清蛋白:去离子水为1:25加入去离子水,混合均匀,置于50℃水浴30min,再加入0.1mol/LNaOH调节pH为9,添加8000U/g碱性蛋白酶酶解4h,于100℃下静置10min,然后于4℃,8000r/min下离心20min,过滤,收集上清液,于4℃保存,得乳清蛋白肽。
本发明还提供一种青少年黑米糠营养运动饮料的制备方法,包括以下步骤:
(1)将灰树花子实体多糖、乳清蛋白肽混合均匀后加入黑米糠浓缩液,再加热至40℃搅拌均匀,静置,得混合液A;
(2)将微量营养素、阿斯巴甜、安赛蜜、薄荷脑、β-环状糊精、柠檬酸、椰子香精加水搅拌均匀,得混合液B;
(3)将上述步骤的混合液A和混合液B混合均匀,置于胶体磨胶磨,过500目筛,在15~20MPa压力下均质2次,然后过600目筛,得滤液;
(4)取步骤(3)过滤后的滤液在真空度为0.064的条件下脱气10~15min,趁热灌装,在100℃下灭菌20min,冷却至室温,得青少年黑米糠营养运动饮料。
本发明所述各主要功效成分作用机理如下:
黑米糠为黑米的外壳,含有粗纤维、花青苷、锌、铁、维生素B1、维生素E和二十八烷醇等,其中的粗纤维、花青苷和二十八烷醇能有效抵抗疲劳,通过间接调理作用有助于维持肠道屏障的完整性及增加机体免疫力、缩短运动后机体功能恢复时间。
灰树花子实体多糖是天然的免疫调节剂,具有抗氧化、抗肿瘤作用,可提高青少年的免疫力,增强运动后身体对外界环境的适应能力。
乳清蛋白肽具有蛋白含量高,脂肪、胆固醇和乳糖含量低的特点,能起到青少年运动员多种生命运动的调节作用,且易消化吸收。
与现有技术相比,本发明的有益之处为:
1、本发明采用超声波提取法从黑米糠中提取有效成分,所得黑米糠浓缩液具有一定的抗疲劳作用,将其添加至饮料中,能提高青少年机体的免疫力,缩短运动后机体恢复时间;
2、本发明采用水浴浸提法从灰树花粉中提取灰树花子实体多糖并纯化,所得灰树花子实体多糖具有抗氧化、抗肿瘤作用,将其添加至饮料中,可提高青少年的免疫力,增强机体的应激能力和适应性;
3、本发明采用酶解法从新鲜牛乳中提取乳清蛋白肽,所得乳清蛋白肽富含蛋白质,将其添加至饮料中,能帮助调节青少年的身体活动;
4、本发明将黑米糠浓缩液、灰树花子实体多糖和乳清蛋白肽复配制成青少年黑米糠营养运动饮料,所含营养物质丰富,易于消化吸收,不仅能提高青少年的免疫力,还能减缓运动疲劳,帮助青少年快速恢复体能。

实施例1
一种青少年黑米糠营养运动饮料,由以下重量份的原材料组成:黑米糠浓缩液40份、灰树花子实体多糖14份、乳清蛋白肽15份、微量营养素12份、阿斯巴甜1份、安赛蜜6份、薄荷脑0.5份、β-环状糊精0.25份、柠檬酸0.03份、椰子香精0.06份、水至250份。
所述微量营养素由以下重量份的原材料组成:抗坏血酸0.04份、维生素E 0.04份、β-胡萝卜素0.01份、吡哆醇0.04份、CuSO40.0001份、MgO 0.0015份、Mn2SO40.0001份、Na2SeO30.00008份、ZnSO40.0001份。

一种青少年黑米糠营养运动饮料,由以下重量份的原材料组成:黑米糠浓缩液60份、灰树花子实体多糖8份、乳清蛋白肽30份、微量营养素3份、阿斯巴甜5份、安赛蜜1份、薄荷脑2份、β-环状糊精0.25份、柠檬酸0.03份、椰子香精0.06份、水至250份。
所述微量营养素由以下重量份的原材料组成:抗坏血酸0.28份、维生素E 0.032份、β-胡萝卜素0.04份、吡哆醇0.02份、CuSO40.0008份、MgO 0.0001份、Mn2SO40.0002份、Na2SeO30.00001份、ZnSO40.0015份。

功效验证
试验例1
取本发明实施例1-5和对比例1-3制备的饮料进行营养成分含量的测定,实验结果如下表1所示:

由上表可知,通过实施例1与对比例1的对比可知,本发明制备的饮料中添加黑米糠浓缩液,可将饮料中蛋白质、维生素、膳食纤维的含量分别提高91.6%、50.5%和59.4%,且将饮料中铁元素、锌元素的含量分别提高了82.5%和70.9%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加灰树花子实体多糖,可将饮料中蛋白质、维生素、膳食纤维的含量分别提高42.2%、27.2%和24.4%,且将饮料中铁元素、锌元素的含量分别提高了19.0%和36.5%;通过实施例1与对比例3的对比可知,在本发明制备的饮料中添加乳清蛋白肽,可将饮料中蛋白质、维生素、膳食纤维的含量分别提高76.7%、20.2%和24.4%,且将饮料中铁元素、锌元素的含量分别提高了39.3%和48.6%;。
综上可知,在本发明制备的饮料中加入黑米糠浓缩液、灰树花子实体多糖和乳清蛋白肽,可显著提高饮料中蛋白质、维生素、膳食纤维以及铁、锌等微量元素的含量,为青少年生长发育提供充足全面的营养物质。
试验例2
选择80只雄性小鼠进行实验,体重28-30g,体脂均超过正常值,随机分成8组,每组10只,每组小鼠每天进行45min游泳训练,训练周期2个月,在小鼠的每天训练后,分别灌喂本发明实施例1-5和对比例1-3制备的运动饮料50ml。试验结束后测试小鼠的血清总胆固醇(TC)和甘油三酯(TG)的含量。实验结果如下表2所示:

由上表可知,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加黑米糠浓缩液,可将小鼠的血清总胆固醇(TC)和甘油三酯(TG)的含量分别降低33.7%和19.3%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加灰树花子实体多糖,可将小鼠的血清总胆固醇(TC)和甘油三酯(TG)的含量分别降低35.2%和27.1%;通过实施例1与对比例3的对比可知,在本发明制备的饮料中添加乳清蛋白肽,可将小鼠的血清总胆固醇(TC)和甘油三酯(TG)的含量分别降低57.9%和60.3%。
综上可知,本发明制备的饮料,可有效降低小鼠血清总胆固醇(TC)和甘油三酯(TG)水平,有助于减少机体积累多余脂肪和胆固醇,保证机体脂质代谢平衡,帮助改善机体营养结构,维持机体健康。

1.一种青少年黑米糠营养运动饮料,其特征在于,由以下重量份的原材料组成:黑米糠浓缩液40~60份、灰树花子实体多糖8~14份、乳清蛋白肽15~30份、微量营养素3~12份、阿斯巴甜1~5份、安赛蜜1~6份、薄荷脑0.5~2份、β-环状糊精0.05~0.25份、柠檬酸0.03~0.09份、椰子香精0.02~0.06份、水至250份。
2.根据权利要求1所述的一种青少年黑米糠营养运动饮料,其特征在于,由以下重量份的原材料组成:黑米糠浓缩液45~55份、灰树花子实体多糖10~12份、乳清蛋白肽20~25份、微量营养素6~9份、阿斯巴甜2~4份、安赛蜜3~4份、薄荷脑1~1.5份、β-环状糊精0.12~0.2份、柠檬酸0.04~0.08份、椰子香精0.03~0.05份、水至250份。
3.根据权利要求2所述的一种青少年黑米糠营养运动饮料,其特征在于,由以下重量份的原材料组成:黑米糠浓缩液50份、灰树花子实体多糖11份、乳清蛋白肽22.5份、微量营养素7.5份、阿斯巴甜3份、安赛蜜3.5份、薄荷脑1.25份、β-环状糊精0.15份、柠檬酸0.06份、椰子香精0.04份、水至250份。
4.根据权利要求1~3任一项所述的一种青少年黑米糠营养运动饮料,其特征在于,所述微量营养素由以下重量份的原材料组成:抗坏血酸0.04~0.28份、维生素E 0.032~0.04份、β-胡萝卜素0.01~0.04份、吡哆醇0.02~0.04份、CuSO4 0.0001~0.0008份、MgO 0.0001~0.0015份、Mn2SO4 0.0001~0.0002份、Na2SeO3 0.00001~0.00008份、ZnSO4 0.0001~0.0015份。
5.根据权利要求4所述的一种青少年黑米糠营养运动饮料,其特征在于,所述微量营养素由以下重量份的原材料组成:抗坏血酸0.10~0.22份、维生素E 0.034~0.038份、β-胡萝卜素0.02~0.03份、吡哆醇0.025~0.035份、CuSO4 0.0003~0.0006份、MgO 0.0007~0.0014份、Mn2SO4 0.00012~0.00018份、Na2SeO3 0.00003~0.00006份、ZnSO4 0.0007~0.0014份。
6.根据权利要求5所述的一种青少年黑米糠营养运动饮料,其特征在于,所述微量营养素由以下重量份的原材料组成:抗坏血酸0.16份、维生素E 0.036份、β-胡萝卜素0.025份、吡哆醇0.03份、CuSO4 0.0004份、MgO 0.0013份、Mn2SO4 0.00015份、Na2SeO3 0.00005份、ZnSO40.0013份。
7.根据权利要求1~3任一项所述的一种青少年黑米糠营养运动饮料,其特征在于,所述黑米糠浓缩液的制备方法为:取黑米糠洗净,于45℃下干燥,粉碎,过40目筛,将黑米糠粉放入索氏提取器中,于80~90℃水浴加热,用甲醇抽提8h,回收甲醇,按料液比为1:15加入80%乙醇,于50℃超声波功率为140~200W下提取80~85min,过滤,减压回收乙醇,取滤液减压浓缩至原体积1/4,得黑米糠浓缩液。
8.根据权利要求1~3任一项所述的一种青少年黑米糠营养运动饮料,其特征在于,所述灰树花子实体多糖的制备方法为:取灰树花粉,按料液比为1:10加入12%氯化钠溶液,在95℃下水浴提取2h后,抽滤,取滤渣再提取1次,合并上清液,浓缩,TFA去除蛋白后,用6mol/L盐酸调节pH为2.5,在4℃下静置12h,离心,冷冻干燥,得灰树花子实体多糖。
9.根据权利要求1~3任一项所述的一种青少年黑米糠营养运动饮料,其特征在于,所述乳清蛋白肽的制备方法为:
a.取新鲜牛乳,加入0.1mol/L盐酸至pH为4.6,经3000r/min离心5~8min,收集上清液,得乳清蛋白;
b.取乳清蛋白,按乳清蛋白:去离子水为1:25加入去离子水,混合均匀,置于50℃水浴30min,再加入0.1mol/LNaOH调节pH为9,添加8000U/g碱性蛋白酶酶解4h,于100℃下静置10min,然后于4℃,8000r/min下离心20min,过滤,收集上清液,于4℃保存,得乳清蛋白肽。
10.一种制备如权利要求1~9任一项所述的一种青少年黑米糠营养运动饮料的方法,其特征在于,包括以下步骤:
(1)将灰树花子实体多糖、乳清蛋白肽混合均匀后加入黑米糠浓缩液,再加热至40℃搅拌均匀,静置,得混合液A;
(2)将微量营养素、阿斯巴甜、安赛蜜、薄荷脑、β-环状糊精、柠檬酸、椰子香精加水搅拌均匀,得混合液B;
(3)将上述步骤的混合液A和混合液B混合均匀,置于胶体磨胶磨,过500目筛,在15~20MPa压力下均质2次,然后过600目筛,得滤液;
(4)取步骤(3)过滤后的滤液在真空度为0.064的条件下脱气10~15min,趁热灌装,在100℃下灭菌20min,冷却至室温,得青少年黑米糠营养运动饮料。
