Abstract
本发明公开一种具有心脑血管保护作用的植物功能饮料及其制备方法,其由重量配比为:干姜片10‑30份、干蒜片10‑30份、干柠檬片5‑15份、甘草干片2‑6份、山楂干片2‑6份、大麦茶1‑3份、纳豆干1‑3份、水400‑800份和苹果醋100‑300份的原料制得。将固体原料分别于90‑100℃烘10‑20分钟,按比例混合并粉碎得30‑80目粉末,与水混匀后加热至沸并保持沸腾10‑30分钟,冷却后分离得到的提取液与苹果醋按重量比2‑4:1混合,分装灭菌得功能饮料成品。还可将混合粉末用水稀释的苹果醋直接加热提取制备功能饮料。本发明原料成本低,加工工艺简单,对于心脑血管疾病的预防和辅助治疗有良好的效果。

技术领域
本发明属营养保健食品领域,具体涉及一种具有心脑血管保护作用的植物功能饮料及其制备方法。
背景技术
心脑血管疾病是心血管疾病和脑血管疾病的统称,泛指由于高脂血症、高血压、血液黏稠、动脉粥样硬化等所导致的心脏、大脑及全身组织发生缺血性或出血性疾病的通称。发生在心脏动脉血管的病称为心血管病,主要有冠心病、心肌梗死等。发生在脑动脉血管的病变称为脑血管病,主要有脑溢血、脑血栓、脑栓塞等[1]。由于心脑血管疾病具有“发病率高、致残率高、死亡率高、复发率高,并发症多”的特点,最有效的方法是防患于未然[2,3]。
随着人民生活水平的提高和生活节奏的加快,由于高血压、血脂异常、糖尿病、不健康饮食、超重和肥胖、吸烟、过度饮酒、缺乏运动、生活及工作压力等危险因素在我国居民中普遍存在,心脑血管疾病的发病率和死亡率水平持续升高,严重影响广大民众的生活质量及生命安全,对心脑血管疾病的预防和控制越来越受到政府、医疗机构和广大民众的广泛关注。心脑血管疾病是一种严重威胁人类,特别是50岁以上中老年人健康的常见病,即使采用目前最先进和最完善的治疗手段,仍有50%以上的脑血管意外幸存者生活不能完全自理。全世界每年死于心脑血管疾病的人数高达1500万人,心脑血管疾病已成为危害人类健康的头号杀手[1]。目前,我国心脑血管疾病患者已经超过2.7亿人,每年死于心脑血管疾病近300万人,占我国每年总死亡病因的51%。幸存下来的患者中75%不同程度丧失劳动能力,其中有40%重残[1,2]。更为严峻的是近年来我国心脑血管疾病的发病出现年轻化的现象[3]。
心脑血管疾病主要起因于长时间饮食习惯问题,饮食中脂肪、胆固醇等物质过多。加上没有合理的运动促进其的代谢,导致其在体内逐渐积累,并掺杂在血液中,容易和体内游离的矿物质结合,附着在血管内表面,引起血管狭窄甚至形成血栓。心脏为了保持足够的供血量,就增加血压,造成高血压疾病。如果血压过高,可能导引起血管崩裂,导致出血性心脑血管疾病。如果由于堵塞供血不足,即为缺血性心脑血管疾病。
尽管近年来国内外制药企业开发了一系列治疗高血压、冠心病、脑梗塞、心肌梗死、高血压等心脑血管疾病的药物[4],但价格昂贵,服用后效果不明显。心脑血管疾病患者还常年服用药物控制血糖、血脂和血压,增加肝脏代谢负担,常伴随着诸多的副反应,并增加家庭的经济负担[5],故早预防、早发现和早治疗是防范心脑血管疾病的最重要和最有效的方法。在人们日常食用的水果、蔬菜和一些药食同源的植物中含有可以预防和治疗心脑血管疾病的有效成分,如果提取出来制成便于服用的功能饮料或者制剂,有针对性的长期服用,可以达到预防和治疗心脑血管疾病的目的,不仅价格低廉,而且毒副作用小。本发明提取份生姜、大蒜、柠檬、甘草、山楂、大麦茶和纳豆中有效成分,并与苹果醋复合制备具有心脑血管保护作用的植物功能性饮料,在心脑血管疾病患者中使用,取得了良好的效果。该功能饮料制备方法具有工艺简单、设备要求不高和原料成本低廉的优点。

发明内容
本发明的目的在于提出一种具有心脑血管保护作用的植物功能饮料及其制备方法。
本发明所提出的具有心脑血管保护作用的植物功能饮料,其组分重量份计为:
干姜片10-30份
干蒜片10-30份
干柠檬片5-15份
甘草干片2-6份
山楂干片2-6份
大麦茶1-3份
纳豆干1-3份
水400-800份
苹果醋100-300份。
本发明中,该具有心脑血管保护作用的植物功能饮料的制备方法,具体步骤如下:
(1)将干姜片、干蒜片、干柠檬片、甘草干片、山楂干片、大麦茶和纳豆干固体原料分别于90-100℃干燥10-20分钟,冷却;
(2)将固体原料混合,通过机械粉碎得30-80目的混合物粉末,分散在水中并搅拌混合均匀,得到液态混合物;
(3a)将该液态混合物加热至沸并保持沸腾10-30分钟,冷却到室温;通过压滤分离或离心分离得到的提取液;将提取液与苹果醋混合均匀,分装灭菌得植物功能饮料成品;或者:
(3b)将该液态混合物和苹果醋直接混合,并加热至沸并保持沸腾10-30分钟,冷却到室温,通过压滤分离或离心分离得到的提取液,经分装灭菌得植物功能饮料成品。
本发明中,步骤(3a)中,将提取液与苹果醋按重量比(2-4):1混合均匀。
本发明中,作为优选重量配比为:原料制备混合粉末选用干姜片20份、干蒜片20份、干柠檬片10份、甘草干片4份、山楂干片4份、大麦茶2份、纳豆干2份;该混合粉末用600份水提取,提取液与苹果醋按重量比3:1混合均匀,得植物功能饮料成品。
本发明中制备具有心脑血管保护作用的植物功能饮料所用的姜、蒜、柠檬、甘草、山楂、大麦茶等植物原料均为干片,不仅原料成本低廉,还降低了仓储和运输成本,简化了加工工艺。所用干姜片原料可为小黄姜或大姜,所用干蒜片原料可为紫皮蒜或白皮蒜,所用山楂干片需去核。
本发明中,所用干姜片、干蒜片、干柠檬片、甘草干片、山楂干片、大麦茶、纳豆干、苹果醋均需从正规厂家采购,具有生产资质和检测报告,产品质量符合有关标准,提取用水为纯化水,所用干姜片原料可为小黄姜或大姜,所用干蒜片原料可为紫皮蒜或白皮蒜。
本发明中,所用干姜片、干蒜片、干柠檬片、甘草干片、山楂干片需分拣除去杂质和质次的干片。干姜片要拣去有深色斑点和枯焦的干片,干蒜片需挑去混入的蒜衣和蒜梗,所用山楂干片需用去核品,并拣去有黑斑的干片和少量残留的山楂核。
本发明中,所用干姜片、干蒜片、干柠檬片、甘草干片、山楂干片、大麦茶、纳豆干粉碎前分别于90-100℃干燥10-20分钟,以降低原料的含水量,提高物料的脆性,便于后续机械粉碎。
本发明中,准确称取烘干并冷却的干姜片10-30份、干蒜片10-30份、干柠檬片5-15份、甘草干片2-6份、山楂干片2-6份、大麦茶1-3份、纳豆干1-3份于容器中混合,然后用磨盘式、锤式或刀片式304不锈钢粉碎机,一般粉碎2-3次,直至粉末细度达到30-80目,可用30-80目不锈钢筛子检测粉末细度。粉末过粗提取速度慢,提取率低,而粉末过细,不利于提取液和渣子分离。注意在粉碎过程中需控制粉碎机粉碎腔温度低于50-60℃,可通过调节加料量和粉碎机的工作时间加以调节,有条件的可使用水冷式粉碎机。值得注意的是,单独粉碎干蒜片时,当粉碎腔温度过高时,会出现物料软化现象,甚至引起粉碎机卡死现象。故本发明加工植物粉末采用固态原料混合粉碎的策略,可解决粉碎过程中物料软化造成闷机卡死的问题。
本发明中,将按上述步骤(4)重量配比制备的植物混合粉末置于304不锈钢材质的电热桶或提取罐中,加入400-800份纯化水,搅拌均匀,浸泡10-20分钟,然后通电或通高压蒸汽加热直至容器内的料液沸腾,耗时约30-60分钟,继续维持料液沸腾10-30分钟,停止加热。
本发明中,待步骤(5)中电热桶或提取罐中的料液冷却到室温,装入目数为60-200目的尼龙滤袋中,通过压滤机将提取液和渣子分离。还可将料液通过卧式螺旋沉降离心机进行提取液和渣子的分离。获得的含有姜、蒜、柠檬、甘草、山楂、大麦茶、纳豆成分的提取液与苹果醋按重量比2-4:1混合均匀,分装于玻璃瓶中,每瓶20-50毫升。然后用有橡胶内垫的铝盖密封,装瓶密封的饮料采用隧道式微波灭菌机(工作频率2450 MHz)灭菌,灭菌时间2-8分钟,得具有心脑血管保护作用的植物功能饮料成品。图1为本发明中生姜、大蒜、柠檬、甘草、山楂、大麦茶、纳豆混合粉末水提物复配苹果醋制备具有心脑血管保护作用的植物功能饮料流程图。
本发明中,还可将上述步骤(4)制备的植物混合粉末置于304不锈钢材质的电热桶或提取罐中,与400-800份水和100-300份苹果醋直接混合,搅拌均匀,浸泡10-20分钟,然后通电或通高压蒸汽加热直至容器内的料液沸腾,耗时约30-60分钟,继续维持料液沸腾10-30分钟,停止加热。待料液冷却到室温,装入目数为60-200目的尼龙滤袋中,通过压滤机将提取液和渣子分离,还可将料液通过卧式螺旋沉降离心机进行提取液和渣子的分离,获得的提取液采用与步骤(6)相同的分装和灭菌工艺得具有心脑血管保护作用的植物功能饮料成品。
本发明原料成本低廉,加工工艺简单,对设备要求低,适合工业化批量生产。本发明制备的具有心脑血管保护作用的植物功能饮料为黄褐色液体,无明显大蒜臭味,口感酸甜微辣,服用方便。由于采用多种蔬菜、水果和药食同源植物原料,毒性小,心脑血管疾病患者可长期饮用,可用于高血压、高脂血症、血液黏稠、动脉粥样硬化、高血压、冠心病、心肌梗死、脑溢血、脑血栓、脑栓塞等心脏心脑血管疾病的预防和辅助治疗。
本发明中各原料的功效如下:
生姜具有强壮血管的功能,富含姜辣素,对心脏和血管有一定的刺激作用,可使心跳加快,血管扩张,从而使脉络通畅和血液供给正常;
大蒜含大蒜素、烯丙基半胱氨酸等含硫化合物,可防止心脑血管中的脂肪沉积,增加纤维蛋白溶解活性,降低胆固醇,抑制血小板的聚集,增加微动脉的扩张度,促使血管舒张,调节血压,增加血管的通透性,从而抑制血栓的形成和预防动脉硬化;
柠檬含有丰富的柠檬酸、黄酮类、挥发油、橙皮甙等,能缓解钙离子促使血液凝固的作用,可预防和治疗高血压和心肌梗死,还能增强血管弹性和韧性,提高凝血功能及血小板数量的作用,可缩短凝血时间和出血时间,具有止血作用;
甘草被为“百药之王”,有效成分有甘草酸、甘草次酸、甘草黄酮类物质、甘草多糖等,具有较强的抗脑缺血、抗脑缺氧、抗血栓和动脉粥样硬化等心脑血管保护作用;
山楂药效成分是黄酮、有机酸等。具有扩张血管和持久的降压作用,能改善心肌活力、增强心肌收缩、增加冠状动脉的血流量、抗心律不齐,还能软化血管和降低血中的胆固醇;
大麦茶由大麦高温炒制,其最主要的功效便是降血脂以及降胆固醇。在本发明中,其独特的香味还赋予该功能饮料特殊的风味;
纳豆是由黄豆通过纳豆菌(枯草杆菌)发酵制成的豆制品,含有异黄酮、不饱和脂肪酸、卵磷脂、叶酸等,对脑梗塞、高血压、冠心病、高血脂、动脉硬化、中风有显著疗效;
苹果醋由苹果汁经发酵制成,能疏通软化血管苹果醋,其所含苹果酸还能保持心肌的能量代谢,对心肌梗塞患者的的缺血性心肌层起到保护作用。

具体实施方式
下面通过实施例和附图进一步描述本发明:
实施例1、混合粉末水提物复配苹果醋制备具有心脑血管保护作用的植物功能饮料(流程图见图1)
(1)所用干姜片、干蒜片、干柠檬片、甘草干片、山楂干片、大麦茶、纳豆干、苹果醋均从正规厂家采购,具有生产资质和检测报告,产品质量产品符合有关标准,提取用水为纯化水。所用干姜片原料为云南罗平小黄姜,所用干蒜片原料为山东金乡白皮蒜,所用山楂干片需用去核干,并除去少量残留的山楂核;
(2)本发明所用干姜片、干蒜片、干柠檬片、甘草干片、山楂干片、大麦茶、纳豆干粉碎前分别于95℃干燥15分钟,以降低原料的含水量,提高物料的脆性,便于后续机械粉碎;
(3)准确称取烘干并冷却的干姜片500克、干蒜片500克、干柠檬片250克、甘草干片100克、山楂干片100克、大麦茶50克、纳豆干50克,于容器中混合,然后用磨盘式304不锈钢粉碎机先粗粉碎一次,然后细粉碎两次,获得的粉末细度可达到60目;
(4)将按上述步骤(3)制备的植物混合粉末置于30升的304不锈钢材质的电热桶中,加入15000克纯化水,搅拌均匀后,浸泡15分钟,然后通电加热直至电热桶内的料液沸腾,耗时约40分钟,继续维持料液沸腾20分钟,停止加热;
(5)待步骤(4)中电热桶中的料液冷却到室温,装入目数为100目的尼龙滤袋中,通过压滤机使提取液和渣子分离。获得的含有姜、蒜、柠檬、甘草、山楂、大麦茶、纳豆成分的提取液与苹果醋按重量比3:1混合均匀。分装于玻璃瓶中,每瓶30毫升,用有橡胶内垫的铝盖密封,装瓶密封的饮料采用隧道式微波灭菌机(工作频率2450 MHz)灭菌,灭菌时间4分钟,得具有心脑血管保护作用的植物功能饮料成品。
实施例2、水稀释苹果醋直接提取混合粉末制备具有心脑血管保护作用的植物功能饮料
在30升的304不锈钢材质的电热桶中,加入15000克纯化水和5000克苹果醋,将实施例2中步骤(3)制备的植物混合粉末加入桶中,搅拌均匀,浸泡15分钟,然后通电加热直至容器内的料液沸腾,耗时约45分钟,继续维持料液沸腾20分钟,停止加热。待料液冷却到室温,装入目数为100目的尼龙滤袋中,通过压滤机将提取液和渣子分离,获得的提取液通过与实施例2中步骤(3)相同的分装和灭菌工艺得具有心脑血管保护作用的植物功能饮料成品。因植物粉末的吸附作用,采用该工艺制备的植物功能饮料酸度比采用实施例1中工艺制备的产品略低。
实施例3、具有心脑血管保护作用的淀粉增稠植物功能饮料
本发明制备的具有心脑血管保护作用的植物功能饮料为流动性好的低粘度液体,可用糊化淀粉增加其粘度,改善口感,并赋予产品多变的形态。称取25克淀粉,加入300毫升实施例1或实施例2制备的植物功能饮料,加热至沸腾并保持3分钟,淀粉发生糊化,然后加入700毫升植物功能饮料混匀,可得具有心脑血管保护作用的淀粉增稠植物功能饮料。本实施中淀粉可为小麦淀粉、土豆淀粉、玉米淀粉、葛根淀粉、藕粉和百合淀粉等,淀粉添加量为每1000毫升功能饮料添加10到50克,均可制出口感良好的淀粉增稠植物功能饮料。淀粉量少于10克,增稠效果不佳,粘度不高。淀粉量高于25克,饮料糊口,粘度过大,口感不佳。
实施例4、具有心脑血管保护作用的凝胶化植物功能饮料
本发明制备的具有心脑血管保护作用的植物功能饮料为液体,还可通过加入琼脂制备凝胶化饮料。称取10克食用琼脂粉末,用200毫升实施例1或实施例2制备的植物功能饮料浸泡3小时,使其溶胀,然后加热至琼脂全部溶解,与加热至约60℃的800毫升植物功能饮料混合,注入模具中室温冷却,可得果冻状的具有心脑血管保护作用的植物功能凝胶剂,可直接食用。本实施中琼脂添加量在5-20克均可制出口感良好的凝胶化植物功能饮料。琼脂少于5克,不易结胶,高于20克胶体硬度和脆性增大,口感不佳。
案例1:张女士,57岁,患高血压4年左右,血压最高时达到186/120毫米汞柱,常出现头晕、气虚和头疼等症状。服用本品前空腹验血,血清总胆固醇(TC)为6.75毫摩尔/升(正常参考值2.8-5.9毫摩尔/升)、甘油三酯(TG)为3.29毫摩尔/升(正常参考值<1.80毫摩尔/升)、高密度脂蛋白胆固醇(HDL-C)为1.42毫摩尔/升(正常参考值0.80-1.80毫摩尔/升)、低密度脂蛋白胆固醇(LDL-C)为3.80毫摩尔/升(正常参考值1.30-3.70毫摩尔/升),部分生化检测指标偏离正常参考值范围。连续服用本发明中实施例1制备的具有心脑血管保护作用的植物功能饮料三个月,每天清晨起床口服1次,每次30毫升,两周后,头晕、气虚和头疼的情况就减轻了,三个月后血压降到125-140/85-90毫米汞柱,服用本品三个月后空腹验血,血清总胆固醇(TC)为4.75毫摩尔/升、甘油三酯(TG)为1.52毫摩尔/升、高密度脂蛋白胆固醇(HDL-C)为1.76毫摩尔/升、低密度脂蛋白胆固醇(LDL-C)为2.64毫摩尔/升,不仅血压恢复正常,而且有关血液生化检测指标均恢复正常。
案例2:胡女士,64岁,患高血脂和高血压6年,血压最高时达到205/130毫米汞柱,常出现耳鸣、头晕、气虚和失眠等症状。服用本品前空腹验血,血清总胆固醇(TC)为7.10毫摩尔/升、甘油三酯(TG)为4.23毫摩尔/升、高密度脂蛋白胆固醇(HDL-C)为1.18毫摩尔/升、低密度脂蛋白胆固醇(LDL-C)为3.51毫摩尔/升,部分生化检测指标偏离正常参考值范围。连续服用本发明中实施例1制备的具有心脑血管保护作用的植物功能饮料三个月,每天清晨起床口服1次,每次30毫升,3个星期后,耳鸣、头晕、气虚和失眠的情况就减轻了。服用本品三个月后空腹验血,血清总胆固醇(TC)为3.90毫摩尔/升、甘油三酯(TG)为1.70毫摩尔/升、高密度脂蛋白胆固醇(HDL-C)为1.62毫摩尔/升、低密度脂蛋白胆固醇(LDL-C)为2.48毫摩尔/升。不仅血压显著降低,而且有关血液生化检测指标均基本恢复正常。
案例3:黄先生,56岁,患高血压、高血脂3年,血压最高时达到175/110毫米汞柱,常出现头疼、头晕、全身无力等症状,长期服用降压降血脂药物,血压血脂仍偏高。服用本品前空腹验血,血清总胆固醇(TC)为7.41毫摩尔/升、甘油三酯(TG)为6.03毫摩尔/升、高密度脂蛋白胆固醇(HDL-C)为1.04毫摩尔/升、低密度脂蛋白胆固醇(LDL-C)为4.13毫摩尔/升,部分生化检测指标偏离正常参考值范围。连续服用本发明中实施例2制备的具有心脑血管保护作用的植物功能饮料三个月,每天清晨起床口服一次,每次30毫升,一周后,头晕头疼的情况就减轻了,三个月后血压降到130-150/85-95毫米汞柱,服用本品三个月后空腹验血,血清总胆固醇(TC)为4.20毫摩尔/升、甘油三酯(TG)为2.01毫摩尔/升、高密度脂蛋白胆固醇(HDL-C)为1.40毫摩尔/升、低密度脂蛋白胆固醇(LDL-C)为2.14毫摩尔/升。不仅血压基本恢复正常,而且有关血液生化检测指标恢复正常或接近正常参考值范围。
案例4:王先生,54岁,患高血压和高血脂5年左右,血压最高时达到165/105毫米汞柱,常出现头晕乏力等症状,未治疗。服用本品前空腹验血,血清总胆固醇(TC)为6.94毫摩尔/升、甘油三酯(TG)为2.89毫摩尔/升、高密度脂蛋白胆固醇(HDL-C)为1.26毫摩尔/升、低密度脂蛋白胆固醇(LDL-C)为2.73毫摩尔/升,血清总胆固醇(TC)和甘油三酯(TG)偏离正常参考值范围。连续服用本发明中实施例2制备的具有心脑血管保护作用的植物功能饮料三个月,每天清晨起床口服一次,每次30毫升,两周后,头晕乏力的情况就减轻了,三个月后血压降到120-130/80-90毫米汞柱,服用本品三个月后空腹验血,血清总胆固醇(TC)为4.30毫摩尔/升、甘油三酯(TG)为1.72毫摩尔/升、高密度脂蛋白胆固醇(HDL-C)为1.50毫摩尔/升、低密度脂蛋白胆固醇(LDL-C)为2.40毫摩尔/升。不仅血压基本恢复正常,而且有关血液生化检测指标恢复正常或接近正常参考值范围。
案例5:尤女士,94岁,患有高血压和冠心病,2014年1月发生右侧脑梗塞,在医院给予抗血小板凝集治疗,三个月后出院,有左侧肢体麻木、半身不遂、语言障碍等后遗症。2014年3月至今一直服用本专利中实施例1制备的具有心脑血管保护作用的植物功能饮料,每天清晨起床口服一次,每次30毫升。服用3个月后左侧肢体麻木、半身不遂、语言障碍等后遗症明显改善,目前左侧肢体麻木消失,肢体行动自如,生活能自理,能做一些日常家务。
以上案例表明,本发明制备的功能饮料对于心脑血管疾病的预防和辅助治疗有良好的效果。
Claims (6)
1.一种具有心脑血管保护作用的植物功能饮料,其特征在于,成分重量份计为:
干姜片10-30份
干蒜片10-30份
干柠檬片5-15份
甘草干片2-6份
山楂干片2-6份
大麦茶1-3份
纳豆干1-3份
水400-800份
苹果醋100-300份。
2.如权利要求1所述的植物功能饮料,其特征在于,所用干姜片原料为小黄姜或大姜,所用干蒜片原料为紫皮蒜或白皮蒜,所用山楂干片去核。
3.如权利要求1所述的植物功能饮料,其特征在于,选用干姜片20份、干蒜片20份、干柠檬片10份、甘草干片4份、山楂干片4份、大麦茶2份、纳豆干2份、水600份。
4.一种制备如权利要求1所述的植物功能饮料的制备方法,其特征在于,具体步骤如下:
(1)将干姜片、干蒜片、干柠檬片、甘草干片、山楂干片、大麦茶和纳豆干固体原料分别于90-100℃干燥10-20分钟,冷却;
(2)将固体原料混合,通过机械粉碎得30-80目的混合物粉末,分散在水中并搅拌混合均匀,得到液态混合物;
(3a)将该液态混合物加热至沸并保持沸腾10-30分钟,冷却到室温;通过压滤分离或离心分离得到的提取液;将提取液与苹果醋混合均匀,分装灭菌得植物功能饮料成品;或者:
(3b)将该液态混合物和苹果醋直接混合,并加热至沸并保持沸腾10-30分钟,冷却到室温,通过压滤分离或离心分离得到的提取液,经分装灭菌得植物功能饮料成品。
5.如权利要求4所述的制备方法,其特征在于,步骤(3a)中,将提取液与苹果醋按重量比(2-4):1混合均匀。
6.如权利要求5所述的制备方法,其特征在于,所述混合粉末选用干姜片20份、干蒜片20份、干柠檬片10份、甘草干片4份、山楂干片4份、大麦茶2份、纳豆干2份;该混合粉末用600份水提取,提取液与苹果醋按重量比3:1混合均匀。
