本发明提供一种黑玉米挂面及其生产方法,包括以下重量份数配比的原料:黑玉米粉6~10份、木薯淀粉2~6份、盐0.5~1.5份、碳酸钠0.05~0.15份、面粉85~89份,花生粉4‑6份,枸杞粉1‑3份。与现有技术相比,本发明提供的黑玉米挂面的各个原料重量份配比结构,既能够满足挂面中黑玉米粉的含量,又能够满足混合后的混合料还保留小麦粉的特性,不影响挂面的形成。

本发明涉及一种面食。更具体地说,本发明涉及一种黑玉米挂面。
背景技术
当今世界黑色食品日益走俏,继“黑五类”杂粮食品风靡市场后,黑玉米又因其味道鲜美,营养独特引起了广大消费者的极大关注。从营养价值上讲,黑玉米含有比普通玉米及其它谷物更为丰富的营养和有利于长寿的特殊成分,这也是黑玉米营养上的最大特点。据测定,黑玉米蛋白质含量比普通玉米高1.23倍,其脂肪含量比普通玉米高1.3倍,“生命元素”硒比普通玉米高8.5倍[1]。其赖氨酸、铜、锰、锌、钙的含量均高于其它谷物,但淀粉含量仅是普通玉米的70%;其维生素C含量可达4.831g,大大高于其它作物,被有关专家称为“水果粮”。另外各种黑玉米均含有抗癌物质尼古酸,这使其有独特的功能。挂面是我国城乡居民日常生活中不可缺少的粮食制品之一。随着生活水平和健康意识的不断提高,功能型、保健型的挂面越来越受人们的欢迎,而当前市场上的面条大都营养单调,不能满足消费者对营养的需求。由于黑玉米营养价值高,故其开发利用有更大的市场,更高的效益,从而更具魅力。目前,市场上已有多种黑玉米产品,但是,尚未见到有关黑玉米挂面的报导。
发明内容
本发明的一个目的是解决至少上述问题,并提供至少后面将说明的优点。
为了实现根据本发明的这些目的和其它优点,提供了一种黑玉米挂面,包括以下重量份数配比的原料:黑玉米粉6~10份、木薯淀粉2~6份、盐0.5~1.5份、碳酸钠0.05~0.15份、面粉85~89份,花生粉4-6份,枸杞粉1-3份。
优选的,对于所述的一种黑玉米挂面,包括以下重量份数配比的原料:黑玉米粉8份、木薯淀粉4份、盐1份、碳酸钠0.1份、面粉87份,花生粉5份,枸杞粉2份。
优选的,对于所述的一种黑玉米挂面,所述花生粉是将花生煮熟、晒干之后研磨所得,所述枸杞粉是由生枸杞研磨所得。
