本发明属于保健食品加工领域,具体涉及一种虫草元宝枫酵素压片果糖的制备方法。
背景技术
元宝枫为槭树科槭树属落叶乔木,因翅果酷似古代元宝而得名,其为单叶、对生,纸质、常五裂,在我国分布较广。研究发现元宝枫叶中含有糖、氨基酸、蛋白质、黄酮、有机酸、单宁、萜烯等各类化学物质。其中,黄酮类、蛋白质、单宁、神经酸的应用价值较高,具有预防冠心病、心绞痛、血液循环障碍性疾病以及抗病毒、消炎利胆、消除人体自由基等功效。
蛹虫草由子座(即草部分,又称子实体)与菌核(即昆虫的尸体部分)两部分组成的复合体。多感染鳞翅目昆虫的蛹。蛹虫草不仅具有特殊的营养价值,而且有明显的药用价值,其中含有的虫草酸、虫草素、虫草多糖其独特药理作用已日益引起药学界的高度重视。
但是目前的化学提取方法,存在工艺复杂、使用的溶剂多,溶剂回收耗能大,提取效率低,提取过程中易破坏大分子结构的缺点,而且将二者有机结合,充分发挥其保健作用的保健营养品,还未出现。
发明内容
为克服上述技术问题,本发明提供了一种虫草元宝枫酵素压片果糖的制备方法。
为达到上述目的,本发明是通过以下的技术方案来实现的。
一种虫草元宝枫酵素压片果糖的制备方法,包括以下步骤:
(1)将元宝枫翅果洗净、沥干与蛹虫草混合后加入纯净水,经破壁机破壁,加入发酵罐中,加入蜂蜜、菌种和混合成发酵液发酵,所述菌种为乳酸菌或双歧杆菌;
(2)发酵结束,发酵液经过滤得发酵原液;
(3)将发酵原液经喷雾干燥,制得虫草元宝枫酵素粉,在其中加入异麦芽酮糖、微晶乳酸钙,压片制得虫草元宝枫酵素压片果糖。
进一步地所述步骤(1)中元宝枫翅果与蛹虫草的重量比为1~10:10~1,纯净水为固体物重量的3~5倍,蜂蜜体积为发酵液体积的2~4%。
进一步地所述步骤(1)中菌种经MRS培养基培养18~24h,得菌种液,菌种液的总菌落数达108cfu/ml以上,菌种液的体积为发酵液体积的1~5%。
进一步地所述步骤(1)中乳酸菌为混合菌种,由嗜酸乳杆菌、植物乳杆菌、干酪乳杆菌、鼠李糖乳杆菌按体积比3-4:1-2:1-2:3-4组成。
进一步地所述步骤(1)中双歧杆菌为混合菌种,由长双歧杆菌、短双歧杆菌、婴儿双歧杆菌按体积比3-4:1-2:3-4组成。
进一步地所述步骤(1)中发酵时间15~20日,温度36.5~39℃。
进一步地所述步骤(2)中过滤使用网眼0.5~1mm的筛网过滤。
进一步地所述步骤(3)中虫草元宝枫酵素粉与异麦芽酮糖、微晶乳酸钙的重量比为3~6:0.5~2:0.5~1。

2)消除了化学提取中加热过程,避免了有益物质因加热被破坏,使提取率更高;

具体实施方式
下面结合实例对本发明作进一步的详细说明。本发明所用的原料均为市售产品。
实施例1
一种虫草元宝枫酵素压片果糖的制备方法,包括以下步骤:
(1)将元宝枫翅果洗净、沥干与蛹虫草按重量比为1:10混合后加入纯净水,纯净水为固体物重量的3倍,经破壁机破壁,加入发酵罐中,加入发酵液体积2%的蜂蜜、发酵液体积1%的菌种混合成发酵液,发酵20日,温度36.5~39℃,所述菌种为乳酸菌;乳酸菌为混合菌种,由嗜酸乳杆菌、植物乳杆菌、干酪乳杆菌、鼠李糖乳杆菌组成,各菌种经MRS培养基培养18~24h,得菌种液,菌种液的总菌落数达108cfu/ml以上;混合菌种液由嗜酸乳杆菌、植物乳杆菌、干酪乳杆菌、鼠李糖乳杆菌液按体积比3:2:1:4组成;
(2)发酵结束,发酵液经网眼0.5mm的筛网过滤得发酵原液;
(3)将发酵原液经喷雾干燥,进风温度<120℃,出风温度<50℃,物料喷雾温度55~60℃,制得虫草元宝枫酵素粉,在其中加入异麦芽酮糖、微晶乳酸钙,虫草元宝枫酵素粉与异麦芽酮糖、微晶乳酸钙的重量比为3:0.5: 1,压片制得虫草元宝枫酵素压片果糖。
每克压片果糖中喊含有神经酸8mg、虫草素3mg。

(1)将元宝枫翅果洗净、沥干与蛹虫草按重量比为10: 1混合后加入纯净水,纯净水为固体物重量的4倍,经破壁机破壁,加入发酵罐中,加入发酵液体积3%的蜂蜜、发酵液体积3%的菌种混合成发酵液,发酵18日,温度36.5~39℃,所述菌种为双歧杆菌;双歧杆菌为混合菌种,由长双歧杆菌、短双歧杆菌、婴儿双歧杆菌组成,各菌种经MRS培养基培养18~24h,得菌种液,菌种液的总菌落数达108cfu/ml以上;混合菌种液由长双歧杆菌、短双歧杆菌、婴儿双歧杆菌液按体积比4:1:3组成;
(2)发酵结束,发酵液经网眼1mm的筛网过滤得发酵原液;
(3)将发酵原液经喷雾干燥,进风温度<120℃,出风温度<50℃,物料喷雾温度55~60℃,制得虫草元宝枫酵素粉,在其中加入异麦芽酮糖、微晶乳酸钙,虫草元宝枫酵素粉与异麦芽酮糖、微晶乳酸钙的重量比为6: 2: 1,压片制得虫草元宝枫酵素压片果糖。
每克压片果糖中喊含有神经酸13mg、虫草素1mg。
实施例3
一种虫草元宝枫酵素压片果糖的制备方法,包括以下步骤:
(1)将元宝枫翅果洗净、沥干与蛹虫草按重量比为8:3混合后加入纯净水,纯净水为固体物重量的5倍,经破壁机破壁,加入发酵罐中,加入发酵液体积4%的蜂蜜、发酵液体积5%的菌种混合成发酵液,发酵15日,温度36.5~39℃,所述菌种为乳酸菌;乳酸菌为混合菌种,由嗜酸乳杆菌、植物乳杆菌、干酪乳杆菌、鼠李糖乳杆菌组成,各菌种经MRS培养基培养18~24h,得菌种液,菌种液的总菌落数达108cfu/ml以上;混合菌种由嗜酸乳杆菌、植物乳杆菌、干酪乳杆菌、鼠李糖乳杆菌液按体积比4:1: 2:3组成;
(2)发酵结束,发酵液经网眼0.5mm的筛网过滤得发酵原液;
(3)将发酵原液经喷雾干燥,进风温度<120℃,出风温度<50℃,物料喷雾温度55~60℃,制得虫草元宝枫酵素粉,在其中加入异麦芽酮糖、微晶乳酸钙,虫草元宝枫酵素粉与异麦芽酮糖、微晶乳酸钙的重量比为4:1:1,压片制得虫草元宝枫酵素压片果糖。
每克压片果糖中喊含有神经酸7mg、虫草素4mg。
实施例4
一种虫草元宝枫酵素压片果糖的制备方法,包括以下步骤:
(1)将元宝枫翅果洗净、沥干与蛹虫草按重量比为2:9混合后加入纯净水,纯净水为固体物重量的4倍,经破壁机破壁,加入发酵罐中,加入发酵液体积4%的蜂蜜、发酵液体积5%的菌种混合成发酵液,发酵15日,温度36.5~39℃,所述菌种为双歧杆菌;双歧杆菌为混合菌种,由长双歧杆菌、短双歧杆菌、婴儿双歧杆菌组成,各菌种经MRS培养基培养18~24h,得菌种液,菌种液的总菌落数达108cfu/ml以上;混合菌种液由长双歧杆菌、短双歧杆菌、婴儿双歧杆菌液按体积比3: 2: 4组成;
(2)发酵结束,发酵液经网眼1mm的筛网过滤得发酵原液;
(3)将发酵原液经喷雾干燥,进风温度<120℃,出风温度<50℃,物料喷雾温度55~60℃,制得虫草元宝枫酵素粉,在其中加入异麦芽酮糖、微晶乳酸钙,虫草元宝枫酵素粉与异麦芽酮糖、微晶乳酸钙的重量比为5:1.5:0.5,压片制得虫草元宝枫酵素压片果糖。
每克压片果糖中喊含有神经酸4mg、虫草素14mg。

Claims (8)
1.一种虫草元宝枫酵素压片果糖的制备方法,其特征在于,包括以下步骤:
(1)将元宝枫翅果洗净、沥干与蛹虫草混合后加入纯净水,经破壁机破壁,加入发酵罐中,加入蜂蜜、菌种混合成发酵液发酵,所述菌种为乳酸菌或双歧杆菌;
(2)发酵结束,发酵液经过滤得发酵原液;
(3)将发酵原液经喷雾干燥,制得虫草元宝枫酵素粉,在其中加入异麦芽酮糖、微晶乳酸钙,压片制得虫草元宝枫酵素压片果糖。
2.根据权利要求1所述的一种虫草元宝枫酵素压片果糖的制备方法,其特征在于,所述步骤(1)中元宝枫翅果与蛹虫草的重量比为1~10:10~1,纯净水为固体物重量的3~5倍,蜂蜜体积为发酵液体积的2~4%。
3.根据权利要求1所述的一种虫草元宝枫酵素压片果糖的制备方法,其特征在于,所述步骤(1)中菌种经MRS培养基培养18~24h,得菌种液,菌种液的总菌落数达108cfu/ml以上,菌种液的体积为菌种液体积的1~5%。
4.根据权利要求3所述的一种虫草元宝枫酵素压片果糖的制备方法,其特征在于,所述步骤(1)中乳酸菌为混合菌种,由嗜酸乳杆菌、植物乳杆菌、干酪乳杆菌、鼠李糖乳杆菌按体积比3-4:1-2:1-2:3-4组成。
5.根据权利要求3所述的一种虫草元宝枫酵素压片果糖的制备方法,其特征在于,所述步骤(1)中双歧杆菌为混合菌种,由长双歧杆菌、短双歧杆菌、婴儿双歧杆菌按体积比3-4:1-2:3-4组成。
6.根据权利要求1所述的一种虫草元宝枫酵素压片果糖的制备方法,其特征在于,所述步骤(1)中发酵时间15~20日,温度36.5~39℃。
7.根据权利要求1所述的一种虫草元宝枫酵素压片果糖的制备方法,其特征在于,所述步骤(2)中过滤使用网眼0.5~1mm的筛网过滤。
8.根据权利要求1所述的一种虫草元宝枫酵素压片果糖的制备方法,其特征在于,所述步骤(3)中虫草元宝枫酵素粉与异麦芽酮糖、微晶乳酸钙的重量比为3~6:0.5~2:0.5~1。
