背景技术
婴幼儿营养米粉是一种常见的婴幼儿辅食。目前市场上的婴幼儿米粉并不少见,大部分添加有乳粉、蛋粉或大豆粉等作为蛋白质补充剂。但婴幼儿极易过敏,有报道表明与早期接触牛奶、鸡蛋、花生和其他主要致敏食物有关。24月龄以内婴儿以IgE介导的食物过敏发病率约为6%~8%,远高于成人食物过敏发病率1%~2%。

为了实现上述的目的,本发明采用了如下技术方案:
一种营养全面、低敏性的婴幼儿营养米粉,其特征在于,首先采用碱提法提取大米蛋白粉;然后以梗米、黑米、核桃仁、燕麦和玉米为原料,经清洗、浸泡、胶体磨磨浆,得到浆料;最后将浆料酶解,复配,均质,喷雾干燥,干混,包装,得到一种营养全面、低敏性的婴幼儿营养米粉。
所述的营养全面、低敏性的婴幼儿营养米粉,其特征在于,其由如下步骤制备而成:
(1)将籼米、糯米和梗米以1:0.2-0.25:0.35-0.4的质量比混合,粉碎后过80-100目筛;将其加入到8-10倍重量份的氢氧化钠水溶液中,35-40℃恒温浸提2-3次,每次浸提2-3h,合并滤液;将滤液的pH值调节至4.2-4.6,静置,离心分离,得到蛋白凝胶;将蛋白凝胶加入到5-6倍重量份的去离子水中,调节体系pH至中性,蒸汽灭菌,闪蒸脱水,喷雾干燥,得到大米蛋白粉;
(2)将梗米、黑米、核桃仁、燕麦和玉米混合后,通过洗米机洗米,将水和杂粮混合,经过高压旋流离心,将大米中混合的稻壳、杂草、泥沙、小石子等杂质,各自分流排除,得到干净的大米;
(3)将清洗过的杂粮以1:2-2.2的料液比加水混合,通过物料输送泵输送到浸泡罐内进行浸泡,浸泡水温22-25℃,搅拌速率25-35r/min,浸泡时间1.5-2h,采用胶体磨进行磨浆,得到浆料;
(4)向浆料中加入加0.0002-0.0003倍重量份的α-淀粉酶,酶解温度为55-60℃,酶解时间为20-25min,得酶解浆料;
(5)向酶解浆料中加入低聚果糖、鱼粉、胡萝卜粉、青菜粉和营养强化剂,混匀,然后进行高压均质,均质压力控制在140-150MPa,均质时间20-25min,得到均质浆料;将均质浆料喷雾干燥,干燥温度为140-150℃,干燥时间15-20s,得到米粉半成品;
(6)将米粉半成品、大米蛋白粉和双歧杆菌益生菌粉以1:0.05-0.06:0.02-0.03的质量比混合,包装,得到营养全面、低敏性的婴幼儿营养米粉。

具体实施方式
本实施例的营养全面、低敏性的婴幼儿营养米粉,其由如下步骤制备而成:
(1)将籼米、糯米和梗米以1:0.25:0.4的质量比混合,粉碎后过80目筛;将其加入到10倍重量份的氢氧化钠水溶液中,40℃恒温浸提3次,每次浸提2-3h,合并滤液;将滤液的pH值调节至4.5,静置,离心分离,得到蛋白凝胶;将蛋白凝胶加入到6倍重量份的去离子水中,调节体系pH至中性,蒸汽灭菌,闪蒸脱水,喷雾干燥,得到大米蛋白粉;
(2)将梗米、黑米、核桃仁、燕麦和玉米混合后,通过洗米机洗米,将水和杂粮混合,经过高压旋流离心,将大米中混合的稻壳、杂草、泥沙、小石子等杂质,各自分流排除,得到干净的大米;

本实施例的步骤(5)中营养强化剂由维生素B125份、维生素B230份、叶酸5份、铁0.5份、锌0.3份、钙0.4份、硒0.2份组成。
Claims (6)
1.一种营养全面、低敏性的婴幼儿营养米粉,其特征在于,首先采用碱提法提取大米蛋白粉;然后以梗米、黑米、核桃仁、燕麦和玉米为原料,经清洗、浸泡、胶体磨磨浆,得到浆料;最后将浆料酶解,复配,均质,喷雾干燥,干混,包装,得到一种营养全面、低敏性的婴幼儿营养米粉。
2.根据权利要求书1所述的营养全面、低敏性的婴幼儿营养米粉,其特征在于,其由如下步骤制备而成:
(1)将籼米、糯米和梗米以1:0.2-0.25:0.35-0.4的质量比混合,粉碎后过80-100目筛;将其加入到8-10倍重量份的氢氧化钠水溶液中,35-40℃恒温浸提2-3次,每次浸提2-3h,合并滤液;将滤液的pH值调节至4.2-4.6,静置,离心分离,得到蛋白凝胶;将蛋白凝胶加入到5-6倍重量份的去离子水中,调节体系pH至中性,蒸汽灭菌,闪蒸脱水,喷雾干燥,得到大米蛋白粉;
(2)将梗米、黑米、核桃仁、燕麦和玉米混合后,通过洗米机洗米,将水和杂粮混合,经过高压旋流离心,将大米中混合的稻壳、杂草、泥沙、小石子等杂质,各自分流排除,得到干净的大米;
(3)将清洗过的杂粮以1:2-2.2的料液比加水混合,通过物料输送泵输送到浸泡罐内进行浸泡,浸泡水温22-25℃,搅拌速率25-35r/min,浸泡时间1.5-2h,采用胶体磨进行磨浆,得到浆料;
(4)向浆料中加入加0.0002-0.0003倍重量份的α-淀粉酶,酶解温度为55-60℃,酶解时间为20-25min,得酶解浆料;
(5)向酶解浆料中加入低聚果糖、鱼粉、胡萝卜粉、青菜粉和营养强化剂,混匀,然后进行高压均质,均质压力控制在140-150MPa,均质时间20-25min,得到均质浆料;将均质浆料喷雾干燥,干燥温度为140-150℃,干燥时间15-20s,得到米粉半成品;
(6)将米粉半成品、大米蛋白粉和双歧杆菌益生菌粉以1:0.05-0.06:0.02-0.03的质量比混合,包装,得到营养全面、低敏性的婴幼儿营养米粉。
3.根据权利要求书2所述的营养全面、低敏性的婴幼儿营养米粉的生产方法,其特征在于,步骤(1)中氢氧化钠水溶液的浓度为0.04-0.05mol/L。
4.根据权利要求书2所述的营养全面、低敏性的婴幼儿营养米粉的生产方法,其特征在于,步骤(2)中梗米、黑米、核桃仁、燕麦和玉米的质量比为1:0.18-0.22:0.1-0.12:0.12-0.15:0.15-0.18。
5.根据权利要求书2所述的营养全面、低敏性的婴幼儿营养米粉的生产方法,其特征在于,步骤(5)中酶解浆料、低聚果糖、鱼粉、胡萝卜粉、青菜粉和营养强化剂的质量比为1:0.06-0.08:0.05-0.06:0.08-0.1:0.06-0.08:0.04-0.05。
6.根据权利要求书2所述的营养全面、低敏性的婴幼儿营养米粉的生产方法,其特征在于,步骤(5)中营养强化剂由维生素B120-25份、维生素B225-30份、叶酸4-5份、铁0.4-0.5份、锌0.2-0.3份、钙0.3-0.4份、硒0.1-0.2份组成。
