Abstract
本发明属于保健食品领域,具体涉及一种魔芋高纤保健粽及制备方法,包括以下原料制成:糯米、魔芋米粒、玫瑰花瓣、赤小豆、薏苡仁、芝麻、生地、铁皮石斛、白糖、蜂蜜。本发明采用的魔芋米粒由魔芋胶,经膨化、碱水精炼,成型等工艺制成。本发明制作的粽子通过添加高纤维的魔芋米粒,降低糯米的含量,可以降低热量的摄入,并且富含膳食纤维,同时将糯米、魔芋米粒、赤小豆和薏苡仁浸泡在中药提取液中,使其吸收中药的药用成分,具有降脂、消食、清热、生津、提高机体免疫力的保健功效。

背景技术
粽又称“角黍”,是端午节汉族的传统节日美食,传说是为纪念屈原而流传的,是中国历史上文化积淀最深厚的传统食品。但传统粽类食品都离不开糯米为主要原料,这高淀粉质基料决定了他的血糖生成指数比较高,随着人们生活水平的提高,人们的饮食趋于精细化,导致膳食结构失衡,由此而引发的心血管疾病,肥胖症等疾病日益增多,导致对高血糖指数的传统粽子想吃而又不敢吃,因此对于具有一定保健功能的低热量高纤维的粽子有着广阔的需求和市场前景,因此开发一种具有该保健功能的粽子,对于发扬传统美食、扩大粽类市场有重要的意义。
魔芋,天南星科多年生草本植物,其含有大量的葡甘露聚糖,葡甘露聚糖是一种优质的水溶性膳食纤维。膳食纤维主要是不能被人体利用的多糖,既不能被人体的胃肠道中消化酶所消化的,且不被人体吸收利用的多糖。由于魔芋葡甘露聚糖分子量大,吸水能力强,且不被人体消化吸收,因而魔芋具有饱腹润肠、低热量等特点。
发明内容
本发明的目的是提供一种低热量高纤维、风味优良的魔芋高纤保健粽及制备方法。
本发明的目的是通过下列的技术方案实现的。
一种魔芋高纤保健粽,其特征在于,由以下重量份原料制成:糯米40-80份、魔芋米粒30-60份、玫瑰花瓣8-15份、赤小豆20-30份、薏苡仁15-25份、生地8-15份、铁皮石斛8-15份、白糖5-10份、蜂蜜2-5份。
上述一种魔芋高纤保健粽的制备方法,包括以下步骤:
1)将生地、铁皮石斛用5-8倍质量的水提取1-2小时,趁热加入玫瑰花瓣,得提取浸泡液,备用;
2)将魔芋胶加入水中溶解膨化,膨化后的魔芋胶中加入氢氧化钙溶液,通过精炼,精炼后的魔芋胶挤压熟化成型,然后切成魔芋米粒,备用;
3)将糯米、赤小豆、薏苡仁、芝麻淘洗干净,浸泡15-20分钟,滤干水分备用;
4)将糯米、赤小豆、薏苡仁分别放入浸泡液中浸泡12-24小时,捞出后晾干备用;
5)按质量配比加入糯米、魔芋米粒、赤小豆、薏苡仁、芝麻、白糖、蜂蜜,搅拌均匀后用粽叶包装;
6)将包装好的魔芋高纤保健粽放入高压锅里,保持水能浸过粽子,水开后30-40分钟即成。
本发明的中药来源如下:
玫瑰花,为蔷薇科植物玫瑰的干燥花蕾,味甘、微苦、性温。归肝、脾经。行气解郁,和血,止痛;
生地,为玄参科地黄的新鲜或干燥块根,将地黄缓缓烘焙至约八成干。味甘,性寒。归心,肝,肾经。清热凉血,养阴,生津;
铁皮石斛,为兰科植物铁皮石斛的茎,滋阴清热,生津止渴,增强机体免疫力。
本发明的有益效果:本发明公开的一种魔芋高纤保健粽,富含膳食纤维,热量低,口感独特,采用糯米和魔芋米粒为主要原料,降低传统粽子的糯米摄入量,辅助以低热量高膳食纤维的魔芋米粒,使其更符合现代人对饮食的需求,同时将原料浸泡在中药提取液中,吸收了中药的药用成分,具有降脂、消食、清热、生津、提高机体免疫力的保健功效;加入了玫瑰花瓣的浸泡液中,使得原料与玫瑰花的香气融合,产生了独特的香味,并且还具有养颜美容的功效。

所述的魔芋高纤保健粽,其制备方法包括以下步骤:
将生地、铁皮石斛用5倍量的水提取2小时,趁热加入玫瑰花瓣,得提取浸泡液,备用;
将魔芋胶加入水中溶解膨化,膨化后的魔芋胶中加入碱液,通过精炼;精炼后的魔芋胶挤压熟化成型,然后切成米粒,备用;
将糯米、赤小豆、薏苡仁、芝麻淘洗干净,浸泡15分钟,滤干水分备用;
将糯米、赤小豆、薏苡仁分别放入浸泡液中浸泡12小时,捞出后晾干备用;
按质量配比加入糯米、魔芋米粒、赤小豆、薏苡仁、芝麻、白糖、蜂蜜,搅拌均匀后用粽叶包装;
将包装好的魔芋高纤保健粽放入高压锅里,保持水能浸过粽子,水开后40分钟即成。

一种魔芋高纤保健粽,是由以下原料制成:
糯米60份、魔芋米粒50份、玫瑰花瓣12份、赤小豆26份。薏苡仁20份、生地12份、铁皮石斛12份、白糖8份、蜂蜜3份;
所述的魔芋高纤保健粽,其制备方法包括以下步骤:
将生地、铁皮石斛用7倍量的水提取1.5小时,趁热加入玫瑰花瓣,得提取浸泡液,备用;
将魔芋胶加入水中溶解膨化,膨化后的魔芋胶中加入碱液,通过精炼。精炼后的魔芋胶挤压熟化成型,然后切成米粒,备用;
将糯米、赤小豆、薏苡仁、芝麻淘洗干净,浸泡18分钟,滤干水分备用;
将糯米、赤小豆、薏苡仁分别放入浸泡液中浸泡18小时,捞出后晾干备用;
按质量配比加入糯米、魔芋米粒、赤小豆、薏苡仁、芝麻、白糖、蜂蜜,搅拌均匀后用粽叶包装;
将包装好的魔芋高纤保健粽放入高压锅里,保持水能浸过粽子,水开后35分钟即成。
实施例3
一种魔芋高纤保健粽,是由以下原料制成:
糯米80份、魔芋米粒30份、玫瑰花瓣8份、赤小豆30份。薏苡仁15份、生地15份、铁皮石斛15份、白糖10份、蜂蜜2份;
所述的魔芋高纤保健粽,其制备方法包括以下步骤:
将生地、铁皮石斛用8倍量的水提取2小时,趁热加入玫瑰花瓣,得提取浸泡液,备用;
将魔芋胶加入水中溶解膨化,膨化后的魔芋胶中加入碱液,通过精炼。精炼后的魔芋胶挤压熟化成型,然后切成米粒,备用;
将糯米、赤小豆、薏苡仁、芝麻淘洗干净,浸泡20分钟,滤干水分备用;
将糯米、赤小豆、薏苡仁分别放入浸泡液中浸泡24小时,捞出后晾干备用;
按质量配比加入糯米、魔芋米粒、赤小豆、薏苡仁、芝麻、白糖、蜂蜜,搅拌均匀后用粽叶包装;
将包装好的魔芋高纤保健粽放入高压锅里,保持水能浸过粽子,水开后30分钟即成。
上述实施例中,所述魔芋米粒的制备包括如下步骤:
a.将质量分数为3.2%的魔芋胶加入32-33倍水中溶解膨化,膨化温度80±5℃,膨化时间为60-120分钟;
b.把膨化魔芋胶加入到精炼机中,并加入质量分数为0.15-2%的食品级氢氧化钙溶液精炼,质量分数为0.15-2%的食品级氢氧化钙溶液的加入量是膨化魔芋胶质量的0.25-0.9倍,以每分钟0.15-0.54升的送料量与膨化魔芋胶在精炼机中混合,膨化魔芋胶质量的精炼机的搅拌转速为400-600转/分钟,搅拌5-15分钟,使食品级氢氧化钙溶液与膨化魔芋胶混合均匀;
c.将精炼后的魔芋胶通过模具熟化成型;
d.将成型的魔芋丝切成长度为 2-4 毫米的魔芋米粒。
优选地,所述魔芋米粒的制备中,食品级氢氧化钙溶液的质量分数为2%,食品级氢氧化钙溶液的加入量是膨化魔芋胶质量的0.5-0.6倍。

2.如权利1所述的一种魔芋高纤保健粽的制备方法,其特征在于包括以下步骤:
1)将生地、铁皮石斛用5-8倍质量的水提取1-2小时,趁热加入玫瑰花瓣,得提取浸泡液,备用;
2)将魔芋胶加入水中溶解膨化,膨化后的魔芋胶中加入氢氧化钙溶液,通过精炼,精炼后的魔芋胶挤压熟化成型,然后切成魔芋米粒,备用;
3)将糯米、赤小豆、薏苡仁、芝麻淘洗干净,浸泡15-20分钟,滤干水分备用;
4)将糯米、赤小豆、薏苡仁分别放入浸泡液中浸泡12-24小时,捞出后晾干备用;
5)按质量配比加入糯米、魔芋米粒、赤小豆、薏苡仁、芝麻、白糖、蜂蜜,搅拌均匀后用粽叶包装;
6)将包装好的魔芋高纤保健粽放入高压锅里,保持水能浸过粽子,水开后计时30-40分钟即成。
3.根据权利要求2所述的一种魔芋高纤保健粽的制备方法,其特征在于步骤2)所述魔芋米粒的制备包括如下步骤:
a.将质量分数为3.2%的魔芋胶加入32-33倍水中溶解膨化,膨化温度80±5℃,膨化时间为60-120分钟;
b.把膨化魔芋胶加入到精炼机中,并加入质量分数为0.15-2%的食品级氢氧化钙溶液精炼,质量分数为0.15-2%的食品级氢氧化钙溶液的加入量是膨化魔芋胶质量的0.25-0.9倍,以每分钟0.15-0.54升的送料量与膨化魔芋胶在精炼机中混合,膨化魔芋胶质量的精炼机的搅拌转速为400-600转/分钟,搅拌5-15分钟,使食品级氢氧化钙溶液与膨化魔芋胶混合均匀;
c.将精炼后的魔芋胶通过模具熟化成型;
d.将成型的魔芋丝切成长度为 2-4 毫米的魔芋米粒。
