Abstract
本发明公开了一种添加山茶籽粕制备营养粉的方法,以脱脂山茶籽粕为基料,复配添加海参肽、洋甘菊提取物、菊粉、植物酵素、燕麦蛋白、葡萄籽油、蜂蜜加工制备营养粉。以山茶籽粕加工提取营养功能成分,提高山茶籽粕利用率及市场价值,同时加工提取消除不适口感,富集功能活性成分,提高抗氧活性,促进机体有效吸收;此外还添加洋甘菊提取物、植物酵素等成分,营养更加均衡,进一步提高机体代谢功能及免疫功能,协同作用,提高保健价值;还以葡萄籽油、蜂蜜均匀包涂基料组分,隔绝空气氧化,且形成团粒结构,提高易调性。

技术领域
本发明涉及食品技术领域,尤其涉及一种添加山茶籽粕制备营养粉的方法。
背景技术
油茶系山茶科山茶属植物,是我国特有的木本食用油料,与油棕、橄榄和椰子共同称为世界四大木本食用油源,主要分布在我国南方,如湖南、江西、广西、浙江、福建、安徽、贵州等省区。油茶籽粕是油茶籽经提油后的副产物,含有丰富的营养物质。油茶籽粕中包括丰富的蛋白质、糖类、粗纤维、矿物质等。
油茶籽粕中蛋白质的氨基酸组成比较全面,富含17 种氨基酸,其中苏氨酸、苯丙氨酸、亮氨酸、赖氨酸、色氨酸、缬氨酸、异亮氨酸和蛋氨酸 8 种氨基酸是人体必需氨基酸,而且氨基酸的组成和含量均符合联合国粮食组织(FAO)与世界卫生组织(WHO)的推荐值,是一种优质的蛋白质资源。油茶籽粕中的粗多糖是一种水溶性多糖,主要由鼠李糖、海藻糖、阿拉伯糖、甘露糖、半乳糖和葡萄糖五种单糖组成。据科学文献报道,植物多糖在免疫调节、抗肿瘤、抗衰老和降血糖等方面有明显效果,具有很好的药用价值和保健功能。另外,茶籽粕中含有很多无机微量元素,特别符合动物生长发育过程中所必需元素,Mg、Fe、Ca、Mn 、Zn、Cu 的含量较为丰富,而不利于动物生长发育的有害元素 Cd、Pb 含量却很低或近于零。
目前,我国的油茶籽粕主要用作动物的饲料,造成资源的极大浪费,通过提取有效成分用于开发食品或保健食品等高附加值产品生产,提高利用率、及市场价值。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种添加山茶籽粕制备营养粉的方法。
本发明是通过以下技术方案实现的:
一种添加山茶籽粕制备营养粉的方法,以脱脂山茶籽粕为基料,复配添加海参肽、洋甘菊提取物、菊粉、植物酵素、燕麦蛋白、葡萄籽油、蜂蜜加工制备营养粉。
所述的添加山茶籽粕制备营养粉的方法,所述的脱脂山茶籽粕是由下列步骤加工处理:将山茶籽粕经粉碎过80-100目筛,喷润含有0.01-0.02%柠檬酸的雾化溶液,调节山茶籽粕含水率为18-25%,送人挤压膨化机,控制加热温度为80-150℃,经挤压、膨化、烘干后,采用振动式低温超微粉碎机,在-15±5℃条件下粉碎20-30分钟,过80-200目筛,得到山茶籽粕微粉,加入温度为40-60℃的软水至微粉质量百分比浓度为10-18%,搅拌溶解,加热煮沸5-8分钟,搅拌打制成乳液,冷却至45-70℃,添加纤维素酶、淀粉酶、蛋白酶、糖化酶、木聚糖酶五种复合酶酶解处理1-2小时,煮沸灭酶,经真空冷冻干燥,精磨过100-200目筛,得到山茶籽粕功能粉;
所述的复合酶添加量为乳液重量的0.2-1%,其重量组分为20-30纤维素酶、25-30淀粉酶、35-55蛋白酶、20-30糖化酶、25-30木聚糖酶。
所述的添加山茶籽粕制备营养粉的方法,所述的洋甘菊提取物的制备方法包括下列步骤:将洋甘菊加入10-12%的米酒浸润均匀,隔水加热蒸制酒液收干,放入微波烘箱在40-60℃下烘制干燥,超微研磨成粉,加入40-50倍蒸馏水混拌均匀,在60-75℃下用超声波提取20-30分钟,冷却后过滤,滤液喷雾干燥,得洋甘菊提取物。
所述的添加山茶籽粕制备营养粉的方法,所述的植物酵素选自蓝莓酵素、葛根酵素、人参酵素、青蒿酵素的一种或两种以上混合物。
所述的添加山茶籽粕制备营养粉的方法,包括下列步骤:
(1)、配备下列重量份原料:山茶籽粕功能粉40-60、海参肽1-3、洋甘菊提取物1-3、菊粉5-10、植物酵素5-10、燕麦蛋白20-30、麦芽糊精20-40、葡萄籽油2-4、蜂蜜6-8;
(2)、将山茶籽粕功能粉、海参肽、洋甘菊提取物、菊粉、植物酵素、燕麦蛋白、麦芽糊精混合均匀,将葡萄籽油、蜂蜜混合搅拌均匀,加入10-12%含有0.02-0.04%柠檬酸、0.2-0.3%维生素E的软水,快速搅拌均匀,雾化喷淋混合均匀粉体,不断搅拌均匀,真空冷冻干燥,精磨至80-200目,经灭菌、分袋包装即得。
本发明的优点是:

具体实施方式
一种添加山茶籽粕制备营养粉的方法,以脱脂山茶籽粕为基料,复配添加海参肽、洋甘菊提取物、菊粉、植物酵素、燕麦蛋白、葡萄籽油、蜂蜜加工制备营养粉。
所述的添加山茶籽粕制备营养粉的方法,所述的脱脂山茶籽粕是由下列步骤加工处理:将山茶籽粕经粉碎过100目筛,喷润含有0.02%柠檬酸的雾化溶液,调节山茶籽粕含水率为25%,送人挤压膨化机,控制加热温度150℃,经挤压、膨化、烘干后,采用振动式低温超微粉碎机,在-15℃条件下粉碎30分钟,过200目筛,得到山茶籽粕微粉,加入温度为40℃的软水至微粉质量百分比浓度为18%,搅拌溶解,加热煮沸5-8分钟,搅拌打制成乳液,冷却至70℃,添加纤维素酶、淀粉酶、蛋白酶、糖化酶、木聚糖酶五种复合酶酶解处理2小时,煮沸灭酶,经真空冷冻干燥,精磨过200目筛,得到山茶籽粕功能粉;
所述的复合酶添加量为乳液重量的0.5%,其重量组分为30纤维素酶、30淀粉酶、55蛋白酶、30糖化酶、30木聚糖酶。
所述的添加山茶籽粕制备营养粉的方法,所述的洋甘菊提取物的制备方法包括下列步骤:将洋甘菊加入12%的米酒浸润均匀,隔水加热蒸制酒液收干,放入微波烘箱在60℃下烘制干燥,超微研磨成粉,加入50倍蒸馏水混拌均匀,在75℃下用超声波提取30分钟,冷却后过滤,滤液喷雾干燥,得洋甘菊提取物。
所述的添加山茶籽粕制备营养粉的方法,所述的植物酵素选自蓝莓酵素、葛根酵素、人参酵素、青蒿酵素的一种或两种以上混合物。
所述的添加山茶籽粕制备营养粉的方法,包括下列步骤:
(1)、配备下列重量份原料:山茶籽粕功能粉60、海参肽3、洋甘菊提取物3、菊粉10、植物酵素10、燕麦蛋白30、麦芽糊精40、葡萄籽油4、蜂蜜8;
(2)、将山茶籽粕功能粉、海参肽、洋甘菊提取物、菊粉、植物酵素、燕麦蛋白、麦芽糊精混合均匀,将葡萄籽油、蜂蜜混合搅拌均匀,加入10%含有0.03%柠檬酸、0.3%维生素E的软水,快速搅拌均匀,雾化喷淋混合均匀粉体,不断搅拌均匀,真空冷冻干燥,精磨至200目,经灭菌、分袋包装即得。
Claims (5)
1.一种添加山茶籽粕制备营养粉的方法,其特征在于,以脱脂山茶籽粕为基料,复配添加海参肽、洋甘菊提取物、菊粉、植物酵素、燕麦蛋白、葡萄籽油、蜂蜜加工制备营养粉。
2.根据权利要求1所述的添加山茶籽粕制备营养粉的方法,其特征在于所述的脱脂山茶籽粕是由下列步骤加工处理:将山茶籽粕经粉碎过80-100目筛,喷润含有0.01-0.02%柠檬酸的雾化溶液,调节山茶籽粕含水率为18-25%,送人挤压膨化机,控制加热温度为80-150℃,经挤压、膨化、烘干后,采用振动式低温超微粉碎机,在-15±5℃条件下粉碎20-30分钟,过80-200目筛,得到山茶籽粕微粉,加入温度为40-60℃的软水至微粉质量百分比浓度为10-18%,搅拌溶解,加热煮沸5-8分钟,搅拌打制成乳液,冷却至45-70℃,添加纤维素酶、淀粉酶、蛋白酶、糖化酶、木聚糖酶五种复合酶酶解处理1-2小时,煮沸灭酶,经真空冷冻干燥,精磨过100-200目筛,得到山茶籽粕功能粉;
所述的复合酶添加量为乳液重量的0.2-1%,其重量组分为20-30纤维素酶、25-30淀粉酶、35-55蛋白酶、20-30糖化酶、25-30木聚糖酶。
3.根据权利要求1所述的添加山茶籽粕制备营养粉的方法,其特征在于所述的洋甘菊提取物的制备方法包括下列步骤:将洋甘菊加入10-12%的米酒浸润均匀,隔水加热蒸制酒液收干,放入微波烘箱在40-60℃下烘制干燥,超微研磨成粉,加入40-50倍蒸馏水混拌均匀,在60-75℃下用超声波提取20-30分钟,冷却后过滤,滤液喷雾干燥,得洋甘菊提取物。
4.根据权利要求1所述的添加山茶籽粕制备营养粉的方法,其特征在于所述的植物酵素选自蓝莓酵素、葛根酵素、人参酵素、青蒿酵素的一种或两种以上混合物。
5.根据权利要求1所述的添加山茶籽粕制备营养粉的方法,其特征在于包括下列步骤:
(1)、配备下列重量份原料:山茶籽粕功能粉40-60、海参肽1-3、洋甘菊提取物1-3、菊粉5-10、植物酵素5-10、燕麦蛋白20-30、麦芽糊精20-40、葡萄籽油2-4、蜂蜜6-8;
(2)、将山茶籽粕功能粉、海参肽、洋甘菊提取物、菊粉、植物酵素、燕麦蛋白、麦芽糊精混合均匀,将葡萄籽油、蜂蜜混合搅拌均匀,加入10-12%含有0.02-0.04%柠檬酸、0.2-0.3%维生素E的软水,快速搅拌均匀,雾化喷淋混合均匀粉体,不断搅拌均匀,真空冷冻干燥,精磨至80-200目,经灭菌、分袋包装即得。
