Abstract
本发明提供了一种玉米幼儿冲调粉,包括以下成分:玉米、蔬菜、食盐、坚果、脱脂乳、凝乳酶、香菇多糖、山茶油、果胶粉和莲藕粉。本发明的玉米幼儿冲调粉,以玉米作为主要原料,玉米里面可以提出异麦芽低聚糖,从而对肠道菌群达到平衡状态,使得肠道健康;坚果含有非常多的适合幼儿发育的有益成分,但是坚果不容易消化,尤其是对幼儿,更难消化,故本发明中先将其粉碎成微米级小颗粒,加入了果胶粉和山茶油制成微乳液,对其进行软化处理;为了增加幼儿对本发明产品的适应性,加入了脱脂乳和凝乳酶,改善口味;由于莲藕粉颜色较淡,加入不同的蔬菜具有不同额改色效果,鲜艳的色彩更容易增加幼儿的兴趣,提升他们的食欲。

本发明涉及食品技术领域,特别地,涉及一种玉米幼儿冲调粉及其制备方法。
背景技术
五谷杂粮是公认的无公害绿色食品,其所含自然蛋白质脂肪,碳水化合物,维生素,矿物质和膳食纤维等多种营养成分, 符合人体摄入的合理比例,具有极高的利用价值,同时杂粮所含的多种不饱和脂肪酸,如油酸、亚油酸、亚麻酸,以磷脂、低聚糖、多太和黄酮等生活性、 物质具有防病、抗病、增强免疫力,延缓衰老的作用。杂粮在营养方面虽然具有众多的优点,但由于各地人们的口感不一样,对于人们长期食用杂粮造成了一定的障碍。如何真正的做到粗粮细吃,同时又不改变人们长期以来形成的生活习惯,真正做到方便、营养一直以来是人们研究的课题。我国是杂粮生产大国,杂粮的营养价值已普遍被人们接受。目前杂粮的加工方法不多,大多停留在简单的加工,将杂粮粉碎后混合到一起,制成杂粮粉,或者将多种杂粮粉混合直来,采用一般的造粒机进行造粒,这种加工方法虽然保留了杂粮的营养成分,但由于加工简单,并没有对杂粮的组织结构带来大的变化,没有真正意义上对杂粮的口感、营养成份的消化吸收有所改善,同时现有的加工方法后续工艺比较复杂,由于造粒机所造颗粒表面粗糙,后工艺中还需要进行抛光处理, 在抛光、造粒的过程中还需要加入粘结材料,如淀粉等。为杂粮米的食用带来了安全隐患。农户出售原粮,价格偏低,如果进行合理的深加工,将会大大提升杂粮的价格,让种粮农民真正得到实惠。
玉米是世界上最重要的食粮之一,现今全世界约有三分之一人口以玉米作为主要食粮,其中亚洲人的食物组成中玉米占50%,多者达90%以上,非洲占25%,拉丁美洲占40%。玉米的蛋白质含量高于大米,脂肪含量高于面粉、大米和小米,含热量高于面粉、大米及高粱,但缺点是颗粒大、食味差、粘性校在生活水平较低地区,玉米是重要的食粮。在城市及较发达地区,玉米是调剂口味不可缺少的食品。随着玉米加工工业的发展,玉米的食用品质不断改善,新的玉米食品如玉米片、玉米面、玉米渣、特制玉米粉、速食玉米等随之产生,并可进一步制成面条、面包、饼干等。玉米还可加工成为玉米蛋白、玉米油、味精、酱油、白酒等,这些产品在国内外市场上很受欢迎。
幼儿,通常是指1岁至3岁的幼儿,与1岁以内婴儿相比,身长和体重的增长速度有所减慢。生后第一年身长共增长25厘米左右,1岁后身长增长速度逐渐减慢,1~2岁内全年身长增长约10厘米。2岁以后更慢,平均每年增长5厘米左右。1岁以后直到学龄期,小儿体重每年平均增加2公斤左右。通常3岁以前的小儿体重增长较多,3-7岁身高的增加较体重为快。1-3岁小儿的体型仍为躯干部较长,下肢相对短。由于活动量增加,从外表看,不象婴儿期那么胖,这是正常现象。
幼儿时期,小儿的活动量大量增加,为了满足幼儿发育需要,右必要研究一种适合幼儿服用的全营养冲调粉,以取代母乳的地位。
发明内容
本发明目的在于提供一种玉米幼儿冲调粉及其制备方法,以解决技术问题。
一种玉米幼儿冲调粉,包括以下成分:玉米、蔬菜、食盐、坚果、脱脂乳、凝乳酶、香菇多糖、山茶油、果胶粉和莲藕粉。
一种玉米幼儿冲调粉,包括以下重量百分比的成分:玉米 25-40%、蔬菜 15-25%、食盐 1-3%、坚果 2-8%、脱脂乳 1-3%、凝乳酶 0.1-0.5%、香菇多糖 0.5-1%、山茶油 2-4%、果胶粉 0.3-0.8%和莲藕粉 余量。
优选的,所述的玉米幼儿冲调粉,包括以下重量百分比的成分:玉米 35%、蔬菜22%、食盐 2%、坚果 4%、脱脂乳 2%、凝乳酶 0.3%、香菇多糖 0.7%、山茶油 3%、果胶粉 0.5%和莲藕粉 余量。
一种玉米幼儿冲调粉的制备方法,包括以下步骤:
A、将坚果反复机械粉碎并过325目筛;
B、将坚果、果胶粉、山茶油加水混合后,均质,得到微乳液;
C、将玉米、蔬菜、食盐、香菇多糖和莲藕粉混合并粉碎后,过80目筛,与微乳液搅拌均匀;
D、使用单螺杆挤压机进行粗加工:通过加料系统加料,进入挤压系统,在螺杆挤压下进行膨化;所得膨化物料进入切割系统,依次经过成型压辊压制、切割辊切割,得到粗制杂粮食品;
E、将步骤D中的粗制杂粮食品进行粉碎,微粒匀化加工,加水分散均质得到料液;
F、将脱脂乳、凝乳酶与料液混匀,恒温水浴加热至出现小颗粒后,继续保持8-15min,对准不同形状的出料口进行喷雾干燥即可。
所述的不同形状的出料口,可以是雪花状、星星状、三角状等不同的几何形状。
优选的,所述的步骤F中,恒温水浴加热的温度低于40℃。
出现颗粒后,继续保持8-15min,就会出现大量的颗粒凝结核,后续喷雾干燥后,形成的冲调粉可以根据不同形状的出料口调节形状。
坚果,是闭果的一个分类,果皮坚硬,内含1粒或者多粒种子。如板栗,杏仁等的果实。坚果是植物的精华部分,一般都营养丰富,含蛋白质、油脂、矿物质、维生素较高,对人体生长发育、增强体质、预防疾病有极好的功效。
坚果中分别含有蛋白质36.0%、脂肪58.8%、碳水化合物72.6%,还含有维生素(维生素B、维生素E等)、微量元素(磷、钙、锌、铁)、膳食纤维等。另外,其中还含有单不饱和脂肪酸、多不饱和脂肪酸,包括亚麻酸、亚油酸等人体的必需脂肪酸。坚果对人体健康的好处主要表现在以下几个方面:
1、降低妇女发生2型糖尿病的危险。美国哈佛大学公共卫生学院营养系的研究人员曾对11个国家的8.4万名34~59岁的妇女进行了16年的跟踪调查,结果显示,多食坚果将能显著降低2型糖尿病的发生危险。他们认为,坚果中富含不饱和脂肪及其他营养物,这些营养物质均有助于改善血糖和胰岛素的平衡。
2、降低心脏性猝死率。由于坚果中的某些成分具有抗心率失常的作用,因而,在控制了已知的心脏危险因素并做到合理饮食后,吃坚果与降低心源性猝死明显相关。与很少或从不吃坚果的人相比,每周吃2次或2次以上坚果者,发生心源性猝死和因冠心病死亡的危险性均较低。2002年以85名高脂血症患者为受试者,每天予其服用75克美国大杏仁,连续服用4周,对其血脂进行观察。结果表明,受试者在服用大杏仁后血清总胆固醇和载脂蛋白B明显下降,载脂蛋白A1明显升高。说明富含单不饱和脂肪酸的美国大杏仁对高脂血症患者的血脂和载脂蛋白水平有良好的调节作用。
3、清除自由基。自由基非常活泼,会与人体内的细胞组织以及DNA发生反应,从而产生毒性和损坏作用。研究表明,一些坚果类食物如葵花子具有较强的清除自由基的能力,其作用可与草莓、菠菜清除自由基的能力相比。
4、补脑益智。脑细胞由60%的不饱和脂肪酸和35%的蛋白质构成。因此,对于大脑的发育来说,需要的第一营养成分是不饱和脂肪酸。坚果类食物中含有大量的不饱和脂肪酸,还含有15%~20%的优质蛋白质和十几种重要的氨基酸,这些氨基酸都是构成脑神经细胞的主要成分。坚果中对脑神经细胞有益的维生素B1、维生素B2、维生素B6,维生素E及钙、磷、铁、锌 等的含量也较高。因此,吃坚果对改善脑部营养很有益处,特别适合孕妇和儿童食用。
5、提高视力。研究发现,咀嚼强度对提高视力起着一定的作用,多吃坚果可以提高视力。眼睛的睫状肌对眼球晶状体具有调节作用,而睫状肌的调节功能有赖于面部的肌力,面部肌力的增强则得益于咀嚼强度。现代人的食物日趋软化,进食时咀嚼很少或根本不需要咀嚼,致使面部肌肉力量变弱,睫状肌对眼球晶状体调节功能降低,视力也就容易随之下降。所以,要提高视力,就要多吃较硬的食物,并长期坚持对食物进行充分咀嚼。
凝乳酶是一种最早在未断奶的小牛胃中发现的天门冬氨酸蛋白酶,可专一地切割乳中κ-酪蛋白的Phe105-Met106之间的肽键,破坏酪蛋白胶束使牛奶凝结,凝乳酶的凝乳能力及蛋白水解能力使其成为干酪生产中形成质构和特殊风味的关键性酶,被广泛地应用于奶酪和酸奶的制作。
本发明具有以下有益效果:本发明的玉米幼儿冲调粉,以玉米作为主要原料,玉米虽然营养价值低于其他谷物,但是玉米里面可以提出异麦芽低聚糖,异麦芽低聚糖是益生元里最优异的,益生元是益生菌的粮食,对人体的益生菌繁殖有着密切的关系,从而对肠道菌群达到平衡状态,使得肠道健康;坚果含有非常多的适合幼儿发育的有益成分,但是坚果不容易消化,尤其是对幼儿,更难消化,故本发明中先将其粉碎成微米级小颗粒,加入了果胶粉和山茶油制成微乳液,对其进行软化处理;同时幼儿刚脱离母乳喂养,为了增加幼儿对本发明产品的适应性,加入了脱脂乳和凝乳酶,改善口味;由于莲藕粉颜色较淡,加入不同的蔬菜具有不同额改色效果,鲜艳的色彩更容易增加幼儿的兴趣,提升他们的食欲。

一种玉米幼儿冲调粉,包括以下重量百分比的成分:玉米 35%、蔬菜 22%、食盐 2%、坚果 4%、脱脂乳 2%、凝乳酶 0.3%、香菇多糖 0.7%、山茶油 3%、果胶粉 0.5%和莲藕粉 余量。
一种玉米幼儿冲调粉的制备方法,包括以下步骤:
A、将坚果反复机械粉碎并过325目筛;
B、将坚果、果胶粉、山茶油加水混合后,均质,得到微乳液;
C、将玉米、蔬菜、食盐、香菇多糖和莲藕粉混合并粉碎后,过80目筛,与微乳液搅拌均匀;
D、使用单螺杆挤压机进行粗加工:通过加料系统加料,进入挤压系统,在螺杆挤压下进行膨化;所得膨化物料进入切割系统,依次经过成型压辊压制、切割辊切割,得到粗制杂粮食品;

一种玉米幼儿冲调粉的制备方法,包括以下步骤:
A、将坚果反复机械粉碎并过325目筛;
B、将坚果、果胶粉、山茶油加水混合后,均质,得到微乳液;
C、将玉米、蔬菜、食盐、香菇多糖和莲藕粉混合并粉碎后,过80目筛,与微乳液搅拌均匀;

3.如权利要求1所述的玉米幼儿冲调粉,其特征在于,包括以下重量百分比的成分:玉米 35%、蔬菜 22%、食盐 2%、坚果 4%、脱脂乳 2%、凝乳酶 0.3%、香菇多糖 0.7%、山茶油3%、果胶粉 0.5%和莲藕粉 余量。
4.一种玉米幼儿冲调粉的制备方法,其特征在于,包括以下步骤:
A、将坚果反复机械粉碎并过325目筛;
B、将坚果、果胶粉、山茶油加水混合后,均质,得到微乳液;
C、将玉米、蔬菜、食盐、香菇多糖和莲藕粉混合并粉碎后,过80目筛,与微乳液搅拌均匀;
D、使用单螺杆挤压机进行粗加工:通过加料系统加料,进入挤压系统,在螺杆挤压下进行膨化;所得膨化物料进入切割系统,依次经过成型压辊压制、切割辊切割,得到粗制杂粮食品;
E、将步骤D中的粗制杂粮食品进行粉碎,微粒匀化加工,加水分散均质得到料液;
F、将脱脂乳、凝乳酶与料液混匀,恒温水浴加热至出现小颗粒后,继续保持8-15min,对准不同形状的出料口进行喷雾干燥即可。
5.如权利要求4所述的玉米幼儿冲调粉的制备方法,其特征在于,所述的步骤F中,恒温水浴加热的温度低于40℃。
6.如权利要求4所述的玉米幼儿冲调粉的制备方法,其特征在于,所述的步骤F中,所述的不同形状的出料口,可以是雪花状、星星状、三角状等不同的几何形状。
