本发明涉及一种茶晶的制作方法,尤其是涉及一种金铃子夏枯草保健茶晶的制作方法。
背景技术
金铃子,也叫癞葡萄、金癞瓜等,为葫芦科苦瓜属一年生攀援草本苦瓜的果实。经现代科学研究证实,癞葡萄含蛋白质15.03%,小分子多肽高达15%(以N计为2.2%),小分子多糖3.98%,皂甙3.1%,脂肪0.46%,粗纤维9.2%,维生素C0.56g/kg,钙1.0%,磷2.7g/kg,铁56mg/kg 及17种氨基酸,氨基酸含量高达6.99(g/100g),多种维生素和矿物质等成份。《滇南本草》记载:"治丹火毒气,疔恶疮结毒,或遍身已成芝麻疔疮疼难忍。具有泻六经实火、清暑、益气、止渴等功效。"
夏枯草,又称铁色草、大头花,营养较为丰富,嫩茎叶中含有蛋白质、脂肪、碳水化合物、胡萝卜素、维生素B2、尼克酸和维生素C等成分。此外,还含有皂甙、芦丁、夏枯草甙、金丝桃甙及挥发油等。夏枯草性寒,味甘、辛、微苦,具有清泄肝火、散结消肿、清热解毒、祛痰止咳、凉血止血的功效,适用于淋巴结核、甲状腺肿、乳痈、头目眩晕、口眼歪斜、筋骨疼痛、肺结核、血崩、带下、急性传染性黄疸型肝炎及细菌性痢疾等。现代药理研究表明,夏枯草有降低血压的作用,并能扩张血管,其所含芦丁有抗炎作用,并能降低血管通透性,减少脆性,降低肝脂。夏枯草还有抵制癌细胞的作用。
现有的金铃子大多作为水果食用,存在深加工产品较少的问题,本发明采用金铃子、夏枯草为原料,加工成金铃子夏枯草保健茶晶,可实现对原料的综合利用,提高其营养价值和经济价值,同时也为金铃子的深加工开辟了一条新的途径。
发明内容
本发明的目的是针对现有金铃子加工过程中存在的深加工产品较少的问题,提供一种绿色保健、口感上乘、香气浓郁的金铃子夏枯草保健茶晶的制作方法。
本发明解决其技术问题所采取的技术方案是:
一种金铃子夏枯草保健茶晶的制作方法,其特征在于,所述的制作方法采用以下步骤:
①金铃子预处理:称取新鲜优质、无病虫害的金铃子5kg、2kg的龙葵果和1kg的拐枣,洗净后放入煮沸的浓度为0.35%的柠檬酸溶液中热烫10s,捞出,再用凉水浸泡1小时,沥干水后,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.5%的果胶酶、0.35%的纤维素酶、0.01%的蛋白酶,搅拌均匀后加热至35℃,联合水解55分钟,制得金铃子果浆;
②夏枯草预处理:称取2kg的夏枯草、1kg的荷蕊和0.85kg的绿茶,混合均匀后,送入蒸屉用蒸汽灭酶 35s,取出后立即浸入 0.15%质量浓度的碳酸氢钠水溶液中冷却,25分钟后捞出沥水,冷冻干燥后破壁粉碎,制得夏枯草粉;
③中药粉制备:称取适量的五味子、枸杞、陈皮、紫苏和丁香,洗净去杂后,研磨成细粉,制得中药粉;
④逆流提取:将金铃子果浆、夏枯草粉和中药粉按5:4:1的比例混合均匀后,制得混合原料,采用多级连续逆流提取机,一端加入35℃软化水,另一端加入混合原料,实现多级连续逆流提取,初提取阶段设置温度为45℃,时间为 10min;深提取阶段设置温度为50℃,时间为8min;渗洗阶段提取温度为55℃,时间为 3min,制得提取液;
⑤分离浓缩:采用氮气浮选法,将提取液放入浮选设备中,进行分离浓缩,设置气液的体积流量百分比为68%,时间为10min,制得浓缩液;
⑥固化:采用离心喷雾干燥,设置进口热风温度120℃、流量10ml/min、雾化器转速12000r/min、液料中干物质量15%、进料温度40℃,制得金铃子夏枯草保健茶晶;
⑦包装:将金铃子夏枯草保健茶晶整理后,用食品级包装材料包装,入通风干燥环境中储存。
有益效果:本发明采用金铃子、夏枯草为原料,辅以中药粉,分别预处理后采用逆流提取、分离浓缩、固化的技术,有效提取原料所含的营养成分,提高原料的利用效率,使成品茶晶不仅具有益气止渴、清热解暑等保健功效,香气浓郁,营养价值高。
具体实施方式
实施例一:
一种金铃子夏枯草保健茶晶的制作方法,其特征在于,所述的制作方法采用以下步骤:
①金铃子预处理:称取新鲜优质、无病虫害的金铃子5kg、2kg的胡颓子和1kg的栝楼,洗净后放入煮沸的浓度为0.35%的柠檬酸溶液中热烫10s,捞出,再用凉水浸泡1小时,沥干水后,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.5%的果胶酶、0.35%的纤维素酶、0.01%的蛋白酶,搅拌均匀后加热至35℃,联合水解55分钟,制得金铃子果浆;
②夏枯草预处理:称取2kg的夏枯草、1kg的嫩荷叶和0.85kg的白茶,混合均匀后,送入蒸屉用蒸汽灭酶 35s,取出后立即浸入 0.15%质量浓度的碳酸氢钠水溶液中冷却,25分钟后捞出沥水,冷冻干燥后破壁粉碎,制得夏枯草粉;
③中药粉制备:称取适量的决明子、紫菀、麦冬、苦荞和丁香,洗净去杂后,研磨成细粉,制得中药粉;
④逆流提取:将金铃子果浆、夏枯草粉和中药粉按6:2:2的比例混合均匀后,制得混合原料,采用多级连续逆流提取机,一端加入35℃软化水,另一端加入混合原料,实现多级连续逆流提取,初提取阶段设置温度为38℃,时间为 15min;深提取阶段设置温度为46℃,时间为8min;渗洗阶段提取温度为52℃,时间为 4min,制得提取液;
⑤分离浓缩:采用氮气浮选法,将提取液放入浮选设备中,进行分离浓缩,设置气液的体积流量百分比为68%,时间为3min,制得浓缩液;
⑥固化:采用离心喷雾干燥,设置进口热风温度190℃、流量12ml/min、雾化器转速23000r/min、液料中干物质量30%、进料温度55℃,制得金铃子夏枯草保健茶晶;
⑦包装:将金铃子夏枯草保健茶晶整理后,用食品级包装材料包装,入通风干燥环境中储存。
实施例二:
一种金铃子夏枯草保健茶晶的制作方法,其特征在于,所述的制作方法采用以下步骤:
①金铃子预处理:称取新鲜优质、无病虫害的金铃子6kg、2kg的桑椹和1kg的胡柚皮,洗净后放入煮沸的浓度为0.5%的柠檬酸溶液中热烫10s,捞出,再用凉水浸泡2小时,沥干水后,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.55%的果胶酶、0.35%的纤维素酶、0.2%的蛋白酶,搅拌均匀后加热至35℃,联合水解45分钟,制得金铃子果浆;
②夏枯草预处理:称取3kg的夏枯草、1kg的鱼腥草和0.35kg的苦丁茶,混合均匀后,送入蒸屉用蒸汽灭酶 35s,取出后立即浸入 0.15%质量浓度的碳酸氢钠水溶液中冷却,25分钟后捞出沥水,冷冻干燥后破壁粉碎,制得夏枯草粉;
③中药粉制备:称取适量的五味子、三七、桔梗、白芍和牡丹皮,洗净去杂后,研磨成细粉,制得中药粉;
④逆流提取:将金铃子果浆、夏枯草粉和中药粉按5:3:2的比例混合均匀后,制得混合原料,采用多级连续逆流提取机,一端加入42℃软化水,另一端加入混合原料,实现多级连续逆流提取,初提取阶段设置温度为45℃,时间为 12min;深提取阶段设置温度为48℃,时间为8min;渗洗阶段提取温度为55℃,时间为 6min,制得提取液;
⑤分离浓缩:采用氮气浮选法,将提取液放入浮选设备中,进行分离浓缩,设置气液的体积流量百分比为78%,时间为2min,制得浓缩液;
⑥固化:采用离心喷雾干燥,设置进口热风温度200℃、流量5ml/min、雾化器转速18000r/min、液料中干物质量16%、进料温度45℃,制得金铃子夏枯草保健茶晶;
⑦包装:将金铃子夏枯草保健茶晶整理后,用食品级包装材料包装,入通风干燥环境中储存。
实施例三:
一种金铃子夏枯草保健茶晶的制作方法,其特征在于,所述的制作方法采用以下步骤:
①金铃子预处理:称取新鲜优质、无病虫害的金铃子5kg、2kg的刺玫果和1kg的海棠果,洗净后放入煮沸的浓度为0.35%的柠檬酸溶液中热烫10s,捞出,再用凉水浸泡1小时,沥干水后,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.5%的果胶酶、0.35%的纤维素酶、0.01%的蛋白酶,搅拌均匀后加热至35℃,联合水解55分钟,制得金铃子果浆;
②夏枯草预处理:称取2kg的夏枯草、1kg的苦菊和0.85kg的薄荷叶,混合均匀后,送入蒸屉用蒸汽灭酶 35s,取出后立即浸入 0.15%质量浓度的碳酸氢钠水溶液中冷却,25分钟后捞出沥水,冷冻干燥后破壁粉碎,制得夏枯草粉;
③中药粉制备:称取适量的白首乌、赤芍、远志、麦门冬和白豆蔻,洗净去杂后,研磨成细粉,制得中药粉;
④逆流提取:将金铃子果浆、夏枯草粉和中药粉按7:2:1的比例混合均匀后,制得混合原料,采用多级连续逆流提取机,一端加入35℃软化水,另一端加入混合原料,实现多级连续逆流提取,初提取阶段设置温度为42℃,时间为 15min;深提取阶段设置温度为48℃,时间为7min;渗洗阶段提取温度为53℃,时间为 5min,制得提取液;
⑤分离浓缩:采用氮气浮选法,将提取液放入浮选设备中,进行分离浓缩,设置气液的体积流量百分比为80%,时间为4min,制得浓缩液;
⑥固化:采用离心喷雾干燥,设置进口热风温度120℃、流量7ml/min、雾化器转速15000r/min、液料中干物质量12%、进料温度55℃,制得金铃子夏枯草保健茶晶;
⑦包装:将金铃子夏枯草保健茶晶整理后,用食品级包装材料包装,入通风干燥环境中储存。
实施例四:
一种金铃子夏枯草保健茶晶的制作方法,其特征在于,所述的制作方法采用以下步骤:
①金铃子预处理:称取新鲜优质、无病虫害的金铃子8kg、4kg的寒莓和2kg的醋栗,洗净后放入煮沸的浓度为0.35%的柠檬酸溶液中热烫5s,捞出,再用凉水浸泡1小时,沥干水后,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.65%的果胶酶、0.35%的纤维素酶、0.01%的蛋白酶,搅拌均匀后加热至35℃,联合水解25分钟,制得金铃子果浆;
②夏枯草预处理:称取4kg的夏枯草、2kg的甘草和1kg的矮地茶,混合均匀后,送入蒸屉用蒸汽灭酶 25s,取出后立即浸入 0.15%质量浓度的碳酸氢钠水溶液中冷却,20分钟后捞出沥水,冷冻干燥后破壁粉碎,制得夏枯草粉;
③中药粉制备:称取适量的金荞麦、金樱子、青皮、厚朴和竹茹,洗净去杂后,研磨成细粉,制得中药粉;
④逆流提取:将金铃子果浆、夏枯草粉和中药粉按6:2:2的比例混合均匀后,制得混合原料,采用多级连续逆流提取机,一端加入32℃软化水,另一端加入混合原料,实现多级连续逆流提取,初提取阶段设置温度为38℃,时间为 20min;深提取阶段设置温度为45℃,时间为10min;渗洗阶段提取温度为50℃,时间为 5min,制得提取液;
⑤分离浓缩:采用氮气浮选法,将提取液放入浮选设备中,进行分离浓缩,设置气液的体积流量百分比为76%,时间为8min,制得浓缩液;
⑥固化:采用离心喷雾干燥,设置进口热风温度150℃、流量10ml/min、雾化器转速18000r/min、液料中干物质量10%、进料温度45℃,制得金铃子夏枯草保健茶晶;
⑦包装:将金铃子夏枯草保健茶晶整理后,用食品级包装材料包装,入通风干燥环境中储存。
实施例五:
一种金铃子夏枯草保健茶晶的制作方法,其特征在于,所述的制作方法采用以下步骤:
①金铃子预处理:称取新鲜优质、无病虫害的金铃子5kg、2kg的黑树莓和1kg的酸枣,洗净后放入煮沸的浓度为0.35%的柠檬酸溶液中热烫10s,捞出,再用凉水浸泡1小时,沥干水后,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.5%的果胶酶、0.35%的纤维素酶、0.01%的蛋白酶,搅拌均匀后加热至35℃,联合水解55分钟,制得金铃子果浆;
②夏枯草预处理:称取3kg的夏枯草、2kg的菊花脑嫩叶和1.85kg的红茶,混合均匀后,送入蒸屉用蒸汽灭酶 35s,取出后立即浸入 0.15%质量浓度的碳酸氢钠水溶液中冷却,25分钟后捞出沥水,冷冻干燥后破壁粉碎,制得夏枯草粉;
③中药粉制备:称取适量的五加皮、五味子、升麻、天门冬、天麻和金银花,洗净去杂后,研磨成细粉,制得中药粉;
④逆流提取:将金铃子果浆、夏枯草粉和中药粉按6:2:2的比例混合均匀后,制得混合原料,采用多级连续逆流提取机,一端加入42℃软化水,另一端加入混合原料,实现多级连续逆流提取,初提取阶段设置温度为48℃,时间为 9min;深提取阶段设置温度为52℃,时间为6min;渗洗阶段提取温度为60℃,时间为 2min,制得提取液;
⑤分离浓缩:采用氮气浮选法,将提取液放入浮选设备中,进行分离浓缩,设置气液的体积流量百分比为76%,时间为2min,制得浓缩液;
⑥固化:采用离心喷雾干燥,设置进口热风温度230℃、流量11ml/min、雾化器转速26000r/min、液料中干物质量25%、进料温度50℃,制得金铃子夏枯草保健茶晶;
⑦包装:将金铃子夏枯草保健茶晶整理后,用食品级包装材料包装,入通风干燥环境中储存。

1.一种金铃子夏枯草保健茶晶的制作方法,其特征在于,所述的制作方法采用以下步骤:
①金铃子预处理:称取新鲜优质、无病虫害的金铃子5kg、2kg的龙葵果和1kg的拐枣,洗净后放入煮沸的浓度为0.35%的柠檬酸溶液中热烫10s,捞出,再用凉水浸泡1小时,沥干水后,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.5%的果胶酶、0.35%的纤维素酶、0.01%的蛋白酶,搅拌均匀后加热至35℃,联合水解55分钟,制得金铃子果浆;
②夏枯草预处理:称取2kg的夏枯草、1kg的荷蕊和0.85kg的绿茶,混合均匀后,送入蒸屉用蒸汽灭酶 35s,取出后立即浸入 0.15%质量浓度的碳酸氢钠水溶液中冷却,25分钟后捞出沥水,冷冻干燥后破壁粉碎,制得夏枯草粉;
