Abstract
本发明提供了一种辣根辅食及其加工方法,由辣根,淀粉、食盐、糖、鲜味剂、肉制品、豆类制品、坚果制品等按一定配比制得,主要用于食用,可作为休闲食品或调味品及配菜之用,也可用于拌面、夹馍、小菜食用,辣度适中,是色、香、味俱全,营养丰富并且南北老少皆宜的辣根辅食。

发明涉及食品加工领域,具体是一种辣根辅食及其加工方法,具有营养价值高,尤其能代表地方特色的食品。
【背景技术】
辣根富含各种维生素和铁、钙、磷、钴、锌等矿物质。药用内服作兴奋剂,外用引赤;辣根具有利尿、兴奋神经的功效。目前,现有技术中关于辣根的加工方法和产品有很少,比如现在市场上的一些以辣根为原料制作的小菜、零食,均是把辣根加上调味品混合而成,营养成分单调、产品结构单一、口感单一、不酥脆、不成型、不美观、香味差。本发明意在克服上述的缺陷,开拓一条新的辣根深加工途径。
【发明内容】
本发明的目的是提供一种色、香、味俱全,营养丰富并且南北老少皆宜的辣根辅食。本发明的另一目的是拓展辣根的食用领域和范围,让怕辣的消费者也能享受到辣根的美味。
本发明通过以下技术方案来实现:一种辣根辅食,其特征在于其组成和重量配比为.辣根5%--90%,粉状粮食作物1%---90%,肉制品0.1%---90%,果蔬类辅料1%---90%,调味料根据实际用量配备。其中辣根可以是新鲜辣根精选、漂洗后的块状、丝状或整个辣根。。其中的粉状粮食作物可以是各种淀粉、汤元粉、面粉的一种或多种。其中的肉制品可以是粉碎的水产品、家禽肉、家畜肉的一种或多种。其中的果蔬类辅料可以是粉碎的菌类、豆类、芝麻或坚果仁制品的一种或多种。其中的调味料为食盐、糖、五香粉、姜、葱、蒜、花椒、茴香、孜然、芥末粉、咖喱粉、味精、耐高温鲜味物质的一种或多种。
所述辣根辅食的加工方法,具体如下.(1)选择新鲜的辣根,取一定分量,用水清洗,浸泡。(2)把所需的水产品、家禽肉或家畜肉一种或多种经过粉碎成肉制品备用。(3)把所需的菌类、豆类、芝麻或坚果仁制品的一种或多种粉碎成果蔬类辅料制品备用。(4)把清洗,浸泡后的辣根与备用的肉制品、果蔬类辅料制品与粉状粮食作物,调味料按一定比例均匀混合至原料粘接在辣根上。(5)把混合好的辣根放入热油中进行油炸至辣根不变糊时取出,冷却包装后即得辣根辅食。其中的可以把辣根先与淀粉、汤元粉、面粉或粉状粮食作物上浆后再与其它料混合。其中的辣根与粉状粮食作物、肉制品或粉碎后的果蔬类辅料、调味料混合油炸之后再添加未经过粉碎油炸后的果蔬类辅料。其中的辣根与粉状粮食作物、肉制品或粉碎后的果蔬类辅料、调味料混合油炸之后不再添加果蔬类辅料。其中的辣根与粉状粮食作物、肉制品或果蔬类辅料混合油炸之后添加调味料。
本发明采用上述技术方案,提供了一种辣根辅食,具有营养成分多样、酥脆口感好、成型美观、香味独特,可作为小菜或休闲零食食用,拓展了辣根的食用领域和范围,让怕辣的消费者也能享受到辣根的美味。
【具体实施方式】
实施例1.本实例选用新鲜辣根重量为40%,切成丝状后用水清洗,浸泡,鱼肉重量为40%经过粉碎,再把40%的辣根和38%的鱼肉与20%的淀粉和2%的调味料混合至原料与辣根完全粘接在一起后放入热油中进行油炸,炸至酥脆而辣根又不变糊时取出,冷却,根据需要还可以添加其他调味料即得本辣根辅食。
实施例2.本实例选用鲜辣根重量为60%,切成块状后用水清洗,浸泡,取23%的鸡肉经过粉碎,再把60%的辣根和23%的鸡肉与15%的淀粉和2%的调味料混合至原料与辣根完全粘接在一起后放入热油中进行油炸,炸至酥脆而辣根又不变糊时取出,冷却,根据需要还可以添加其他调味料即得本辣根辅食。

1.一种辣根辅食及其加工方法,其特征在于其组成和重量配比为.辣根5%--90%,粉状粮食作物1%---90%,肉制品0.1%---90%,果蔬类辅料1%---90%,调味料根据实际用量配备。
2.根据权利要求1所述的辣根辅食及其加工方法,其特征是所述辣根可以是新鲜辣根精选、漂洗后的块状、丝状或整个辣根。
3.根据权利要求1所述的辣根辅食及其加工方法,其特征是所述粉状粮食作物可以是各种淀粉、汤元粉、面粉的一种或多种。
4.根据权利要求1所述的辣根辅食及其加工方法,其特征是所述肉制品可以是粉碎的水产品、家禽肉、家畜肉的一种或多种。
5.根据权利要求1所述的辣根辅食及其加工方法,其特征是所述果蔬类辅料可以是菌类、豆类、芝麻或坚果仁制品的一种或多种。
6.根据权利要求1所述的辣根辅食及其加工方法,其特征是所述调味料为食盐、糖、五香粉、姜、葱、蒜、花椒、茴香、孜然、芥末粉、咖喱粉、味精、耐高温鲜味物质等的一种或多种。
7.根据权利要求1所述的辣根辅食加工方法,其特征是可以把辣根先与淀粉或汤元粉或面粉或粉状粮食作物上浆后再与其它料混合。
8.根据权利要求1所述的辣根辅食加工方法,其特征是辣根与粉状粮食作物、肉制品或粉碎后的果蔬类辅料混合油炸之后再添加未经过粉碎油炸后的果蔬类辅料。
