Abstract
本发明提供了天然增甜复合调味品及其制备方法和应用以及包含其的制品。本发明复合调味品原料均为天然物质,甜味纯正,无任人工甜味剂的异味;同时,通过各组分的相互作用以及甜味相乘作用,能够提高人体味蕾对甜味的敏感度,并降低天然增甜复合调味品甜味的阈值,既能提供充足的甜度,又能够有效降低热量的摄入,同时还不会升高血糖水平,并能够进一步用于制备调味剂或其他制品。同时,本发明方法具有操作方法便捷,适于大规模批量化生产等优点。

技术领域
本发明涉及调味品领域,具体而言,涉及天然增甜复合调味品及其制备方法和应用以及包含其的制品。
背景技术
糖是生活的必需品之一,不仅能够起到调味的作用,更重要的其能够为人们的日常活动提供能量。
在进化过程中,为了要摄取到足够的热量生存下来,甜味的食物是我们祖先最好的选择,所以我们天生就嗜甜。吃了甜味的食品或者喝了甜味饮料,我们的大脑会释放血清素,产生良好的感觉,而我们大部分的脑细胞都会受到血清素的影响,因此我们的心情、性功能、睡眠、记忆、学习能力和胃口也都会受到血清素的影响。食用甜品能够使人感觉更为快乐,因而含有大量糖分的食物也广受人们欢迎。
然而,在享受糖分给我们所带来的美好感官的同时,我们也必须意识到背后的危机。过多的糖分会在体内转化为脂肪、导致肥胖、高血压,同时也会影响正常其他食物的摄取,反而导致体内营养物质的匮乏。
控制糖的直接摄入看似较为简单,然而,实际上很多饮料和糕点中糖分的含量都很高。例如,一罐汽水中就含有约10茶勺的糖,这已远超建议摄入量,如果每天喝1-2杯含糖饮料,患II型糖尿病的几率就会增加26%。即使按照美国心脏协会比较宽松的标准,女性每日的白砂糖摄入量应该不超过6茶勺,男性不超过9茶勺。因而,如果想要严格控制糖分的摄入,则几乎需要戒除所有含糖饮料、糕点和糖果等。
代糖是指有甜度但是没有热量或者热量很低的甜味剂,可以代替高热量的白砂糖或者糖浆。然而,代糖也存在着一些健康隐患,例如:糖精可能导致膀胱癌,而且由于人体对糖精的耐受性较差,食用超过5g糖精就都会导致出现恶心、呕吐、腹胀、头晕等症状,因而每天的食用量必须保持在人体耐受量之内,使用限制条件较多。
而阿斯巴甜、三氯蔗糖以及纽甜等人工合成甜味剂也或多或少会对人体健康带来一定的威胁,例如:苯丙酮尿症患者就不适合食用含有阿斯巴甜的食品,同时阿斯巴甜对于酸、热的稳定性较差,容易在强酸强碱或高温加热条件下水解成苦味的苯丙氨酸或二嗦呱酮,不适于制作烘焙或者高酸食品。而且,人工合成的甜味剂大多不具有还原性,因而不会发生美拉德反应,不具备上色增香的特点。同时,三氯蔗糖可能导致消化道内的有益细菌减少,削弱免疫系统,并可能引起体重增加。
以天然成分为主、且更为健康的甜味剂就成了人们的新选择,例如现有技术(CN103766841A)就公开了一种固态复合调味料,其成分主要为麦芽糊精、小麦淀粉、食盐、味精、酸味剂、复合甜味剂、三氯蔗糖和罗汉果浆。然而,这种甜味剂中还是有三氯蔗糖、阿斯巴甜等人工合成甜味剂成分,长期食用也会对人体带来的一定的健康威胁。同时,这种调味料中还添加有大量的麦芽糊精作为填充物质,其本身并无甜度,所以在实际使用中,还是需要增加调味料的使用量,才能够达到应有的甜度;进一步的,由于麦芽糊精的血糖生成指数和蔗糖不相上下,在食用后对血糖峰值的影响巨大。
因而,提供一种具有高甜度、低热量摄入,且以真正以天然成分为原料的新型甜味剂就成了目前亟待解决的技术问题。
有鉴于此,特提出本发明。
发明内容
本发明的第一目的在于提供一种天然增甜复合调味品,所述复合调味品以天然产物为原料,具有甜度高、口感自然,且热量低等优点。
本发明的第二目的在于提供一种所述的天然增甜复合调味品的制备方法,本发明方法中,通过将各组分混合以制备天然增甜复合调味品,具有操作方法便捷,适于大规模批量化生产等优点。
本发明的第三目的在于提供一种所述的天然增甜复合调味品的应用,本发明天然增甜复合调味品甜度高,且成分天然,因而能够用于调味剂的制备。
为了实现本发明的上述目的,特采用以下技术方案:
一种天然增甜复合调味品,所述复合调味品主要由以下组分制成:海藻糖、木糖、大麦苗酶解物、钝顶螺旋藻酶解物、明胶、甘草、罗汉果、陈皮、菊花以及香料。
可选的,本发明中,按照重量百分数计,所述合调味品主要由以下组分制成:海藻糖50~90%,木糖0.5~10%,大麦苗酶解物0.5~10%,钝顶螺旋藻酶解物0.5~10%,明胶1~10%,香料0.01~3%,以及甘草、罗汉果、陈皮、菊花混合物0.5~10%。
可选的,本发明中,按照重量百分数计,所述合调味品主要由以下组分制成:海藻糖60~90%,木糖1~10%,大麦苗酶解物1~10%,钝顶螺旋藻酶解物1~10%,明胶1~5%,香料0.01~1%,以及甘草、罗汉果、陈皮、菊花混合物1~10%。
可选的,本发明中,所述甘草、罗汉果、陈皮,以及菊花的质量比例为(1~8):(1~5):(1~5):(1~10)。
同时,本发明还提供了所述天然增甜复合调味品的制备方法,所述方法包括如下步骤:将大麦苗酶解物、钝顶螺旋藻酶解物混合后,加入海藻糖、木糖、明胶、香料、甘草、罗汉果、陈皮、以及菊花,并混合后制粒,即得天然增甜复合调味品。
可选的,本发明中,所述方法还包括将大麦苗粉酶解以制备大麦苗酶解物的步骤。
可选的,本发明中,所述方法还包括将钝顶螺旋藻酶解以制备大麦苗酶解物的步骤。
可选的,本发明中,所述方法还包括将甘草、罗汉果、陈皮,以及菊花粉碎后,再与其他原料进行混合的步骤。
进一步的,本发明还提供了所述天然增甜复合调味品在制备调味剂中的应用。
同时,本发明也提供了包含本发明天然增甜复合调味品的食品、营养品、药物组合物、牙科卫生组合物或者化妆品。
与现有技术相比,本发明的有益效果为:
(1)本发明所用原料均为天然物质,甜味纯正,无任人工甜味剂的异味;同时,通过各组分的相互作用以及甜味相乘作用,能够提高人体味蕾对甜味的敏感度,并降低本发明天然增甜复合调味品甜味的阈值,既能提供充足的甜度,还能够有效降低热量的摄入,同时也不会升高血糖水平;
(2)本发明天然增甜复合调味品具有良好的耐高温性能,可以在烘焙食品和菜肴制作中使用;同时,天然增甜复合调味品的风味与蔗糖近似,同时还具有良好增色增香性能,红烧菜肴制作中,可以代替蔗糖使用,并具有一定的拔丝功能;在获得与蔗糖接近的甜度情况下,人体摄入的热量仅为蔗糖的1/6~1/12。
具体实施方式
下面将结合实施例对本发明的实施方案进行详细描述,但是本领域技术人员将会理解,下列实施例仅用于说明本发明,而不应视为限制本发明的范围。实施例中未注明具体条件者,按照常规条件或制造商建议的条件进行。所用试剂或仪器未注明生产厂商者,均为可以通过市售购买获得的常规产品。
为了更好的兼顾甜度与热量的摄入,我们必须首先研究一下味觉产生的原理:首先,呈味物质刺激口腔内的味觉感受体,然后通过一个收集和传递信息的神经感觉系统传导到大脑的味觉中枢,最后通过大脑的综合神经中枢系统的分析,从而产生味觉。口腔内感受味觉的主要是味蕾,婴儿有10000个左右的味蕾,成人几千个,味蕾数量随年龄的增大而减少,对呈味物质的敏感性也降低。到60岁时只剩下65%左右,这就是老人味觉退化的原因。
在四种基本味觉中,人对咸味的感觉最快,对苦味的感觉最慢,但就人对味觉的敏感性来讲,苦味比其他味觉都敏感,更容易被觉察。
阈值:感受到某中成为物质的味觉所需要的该物质的最低浓度。
绝对阈值:是指人从感觉某种物质的味觉从无到有的刺激量。
常温下蔗糖(甜)为0.1%,氯化钠(咸)0.05%,柠檬酸(酸)0.0025%,硫酸奎宁(苦)0.0001%。
两种相同或不同的呈味物质进入口腔时,会使二者呈味味觉都有所改变的现象,称为味觉的相互作用。
A味的对比现象:
指两种或两种以上的呈味物质,适当调配,可使某中呈味物质的味觉更加突出的现象。例如,在10%的蔗糖中添加0.15%氯化钠,会使蔗糖的甜味更加突出,在醋酸中添加一定量的氯化钠可以使酸味更加突出,在味精中添加氯化钠会使鲜味更加突出。
B味的相乘作用:
指两种具有相同味感的物质进入口腔时,其味觉强度超过两者单独使用的味觉强度之和,又称为味的协同效应。例如,甘草铵本身的甜度是蔗糖的50倍,但与蔗糖共同使用时末期甜度可达到蔗糖的100倍。
而本发明中,正是利用酶解物中所含混合氨基酸通过呈味的对比和相乘作用,从而提高人体味蕾对于甜味的敏感度,并见底了甜味的阈值,在相同甜度感受下,热量的摄入大大降低。
具体的,本发明天然增甜复合调味品原料如下:海藻糖、木糖、大麦苗酶解物、钝顶螺旋藻酶解物、明胶、甘草、罗汉果、陈皮、菊花以及香料;
其中,所述海藻糖是一种功能性低聚糖,甜度约为蔗糖的一半,并具有防止人体骨质疏松,促进人体双歧杆菌增殖以及清除体内自由基等功能。在海藻糖酶的作用下,海藻糖能够小肠中被消化吸收,并作为营养源在人体内缓慢释放。由于海藻糖酶的含量在人体中含量非常低,所以海藻糖在人体内的分解特别缓慢,不会产生类似食用淀粉、麦芽糊精、蔗糖和葡萄糖之类的碳水化合物后所产生血糖峰值而导致人体血糖值的剧烈波动。同时,初步研究表明,添加了海藻糖的运动饮料,比含葡萄糖的饮料有着更低的胰岛素和血糖反映水平,几乎可以适合所有人群的食用。
所述大麦苗酶解物,是一种将大麦苗粉(大麦若叶粉)通过酶解得到的产物,大麦苗粉含有丰富的钾、钙、镁、叶绿素、胡萝卜素、维生素B1、维生素B2及超氧化物歧化酶等数十种酶。同时,大麦苗粉还能够降低血清甘油三脂以及总胆固醇含量,提高人体SOD活力;而且,大麦苗粉还具有抗氧化和清除自由基的功效,大麦苗份中的SOD酶能够促进肠道内有益菌群繁殖,促进人体代谢,起到排毒、保肝和护肝的作用,其所富含的膳食纤维也能够增强肠道动力,预防便秘,减少糖类在肠道内的吸收,降低餐后血糖。进一步的,大麦苗粉还能够起到防辐射、护细胞的作用,同时还具有舒缓压力、脱离亚健康的作用。
所述钝顶螺旋藻酶解物是由钝顶螺旋藻酶解得到,其中,钝顶螺旋藻是螺旋藻中的一种,具有蛋白含量高(蛋白质含量高达60%-70%),脂肪、纤维素含量低,富含维生素和矿物质元素等特点。同时,钝顶螺旋藻酶解物还含有大量具有提高机体免疫力的生物活性物质,并具有抗辐射损伤和抗菌抗癌作用,同时还能够提高免疫系统功能,降低胆固醇,对胃也有良好的保护作用。
优选的,本发明中,所述明胶为天然植物或动物明胶。
优选的,本发明中,所述甘草、罗汉果、陈皮、菊花,为甘草、罗汉果、陈皮和菊花的混合物;
优选的,本发明中,所述香料为柠檬草油、柠檬油、圆柚油、肉豆蔻油、柚皮油、香柠檬油、罗汉果酊、桂花酊、甜橙油、橘子油、橘叶油、柠檬提取物、香叶提取物,或者柠檬草油中的一种或几种的混合物。
本发明中,使用富含游离氨基酸的大麦苗粉酶解物和钝顶螺旋藻酶解物作为原料,通过酶解物中所含有的大量不同氨基酸混合作用,以提高人体味蕾对于甜度的敏感度,同时降低甜味的阈值;同时,将大麦苗粉酶解物、钝顶螺旋藻酶解物、海藻糖、木糖、香料、甘草、罗汉果、陈皮和菊花等组分复配后,使得本发明天然增甜复合调味品具有接近蔗糖的天然甜味,味道更为自然、适口性好。
在本发明一个优选的方案中,按照重量百分数计,所述合调味品由以下组分制成:海藻糖50~90%,木糖0.5~10%,大麦苗酶解物0.5~10%,钝顶螺旋藻酶解物0.5~10%,明胶1~10%,香料0.01~3%,以及甘草、罗汉果、陈皮、菊花混合物0.5~10%(即,甘草、罗汉果、陈皮、菊花四者的混合物的质量占比为0.5~10%);
更优选的,按照重量百分数计,所述合调味品由以下组分制成:海藻糖60~90%,木糖1~10%,大麦苗酶解物1~10%,钝顶螺旋藻酶解物1~10%,明胶1~5%,香料0.01~3%,以及甘草、罗汉果、陈皮、菊花混合物1~10%;
优选的,所述甘草、罗汉果、陈皮和菊花混合物为甘草粉、罗汉果粉、陈皮粉和菊花粉的混合物;更优选的,四者的质量比为(1~8):(1~5):(1~5):(1~10);
本发明天然增甜复合调味品的制备方法,包括如下步骤:将大麦苗酶解物、钝顶螺旋藻酶解物混合后,加入海藻糖、木糖、明胶、香料、甘草、罗汉果、陈皮以及菊花,并混合后制粒,即得天然增甜复合调味品;
优选的,所述大麦苗酶解物由大麦苗粉经酶解制备得到;
优选的,所述钝顶螺旋藻酶解物由钝顶螺旋藻经酶解制备得到;
优选的,所述本发明方法中,是先将甘草、罗汉果、陈皮和菊花经烘干或冻干后磨粉,然后作为原料与其他组分混合制粒。
本发明天然增甜复合调味品能够进一步用于制备调味剂,并作为调味剂中功能组分。
进一步的,本发明所提供的制品为食品、营养品、药物组合物、牙科卫生组合物或者化妆品,这些制品中含有作为甜味剂的本发明天然增甜复合调味品;
具体的,本发明天然增甜复合调味品可以作为甜点、糖果、口香糖、饮料、粉末化饮料中的甜味剂;或者是作为营养食品或者营养饮品中的甜味剂;或者是作为药物组合物,例如中药或西药散剂、片剂、颗粒剂、胶囊剂、溶液剂、乳剂或者混悬剂等经肠道给药剂型中的甜味剂;或者是作为洁牙牙膏、凝胶、牙粉或者漱口水等形式的牙科卫生组合物中的甜味剂。
实施例1
(1)将适量大麦苗粉酶解,得到大麦苗酶解物;将钝顶螺旋藻酶解,得到钝顶螺旋藻酶解物;
将适量甘草、罗汉果、陈皮以及菊花分别烘干后磨粉,得到甘草粉、罗汉果粉、陈皮粉以及菊花粉;并按照甘草粉、罗汉果粉、陈皮粉以及菊花粉质量比为1:1:1:1的比例进行混合,得到甘草、罗汉果、陈皮和菊花混合物;
(2)按照重量百分数,海藻糖70%,木糖10%,大麦苗酶解物5%,钝顶螺旋藻酶解物5%,明胶4%,香料1%,以及甘草、罗汉果、陈皮和菊花混合物5%,分别称取适量各原料;
将大麦苗酶解物、钝顶螺旋藻酶解物混合后,加入海藻糖、木糖、明胶、香料,以及甘草、罗汉果、陈皮和菊花混合物,并混合制粒,即得到实施例1的天然增甜复合调味品。
实施例2
(1)将适量大麦苗粉酶解,得到大麦苗酶解物;将钝顶螺旋藻酶解,得到钝顶螺旋藻酶解物;
将适量甘草、罗汉果、陈皮以及菊花分别烘干后磨粉,得到甘草粉、罗汉果粉、陈皮粉以及菊花粉;并按照甘草粉、罗汉果粉、陈皮粉以及菊花粉质量比为1:2:3:2的比例进行混合,得到甘草、罗汉果、陈皮和菊花混合物;
(2)按照重量百分数,海藻糖83%,木糖5%,大麦苗酶解物4%,钝顶螺旋藻酶解物4%,明胶1%,香料0.5%,以及甘草、罗汉果、陈皮和菊花混合物2.5%,分别称取适量各原料;
然后,按照实施例1的方法得到实施例2的天然增甜复合调味品。
对比例1
按照实施例1所述方法制备甘草、罗汉果、陈皮和菊花混合物;然后,按照海藻糖90%,木糖10%,明胶4%,香料1%,以及甘草、罗汉果、陈皮和菊花混合物5%,分别称取适量各原料;
将各原料混合后制粒,得到对比例1的复合调味品。
对比例2
按照实施例1所述方法制备大麦苗酶解物和钝顶螺旋藻酶解物,然后,按照重量百分数,海藻糖75%,木糖10%,大麦苗酶解物5%,钝顶螺旋藻酶解物5%,明胶4%,香料1%,分别称取适量各原料;
然后,参照实施例1方法,制得对比例2的复合调味品。
对比例3
按照实施例1所述方法制备大麦苗酶解物;然后,按照重量百分数,海藻糖75%,木糖10%,大麦苗酶解物10%,明胶4%,香料1%,分别称取适量各原料;
然后,参照实施例1方法,制得对比例3的复合调味品。
对比例4
按照实施例1所述方法制备钝顶螺旋藻酶解物;然后,按照重量百分数,海藻糖75%,木糖10%,钝顶螺旋藻酶解物10%,明胶4%,香料1%,分别称取适量各原料;
然后,参照实施例1方法,制得对比例4的复合调味品。
实验例1
40名普通消费者(男20名,女20名,年纪18-50岁)参加实验,参见实验人员均未经过任何味道品鉴方面的训练;然后分别对实施例1-2以及对比例1-4的复合调味品进行测试,测试方法如下:
在常温条件下,将0.1g、0.2g、0.3g、0.4g、0.5g、0.6g、0.7g、0.8g、0.9g、1.0g、1.1g、1.2g、1.3g、1.4g、1.5g、1.6g、1.7g、1.8g、1.9g、2.0g、2.1g、2.2g、2.3g、2.4g、2.5g、2.6g、2.7g、2.8g、2.9g以及3.0g实施例1的天然增甜复合调味品分别溶于1000g水中,作为得到梯度测试液;
然后,先让测试者用相同温度的清水漱口后,然后,再由实验人员用滴管向测试者的舌头上快速滴加测试液5滴,要求测试者在30s内做出味觉判断,如果测试者感到没有味道,则令测试者用等温清水漱口后,增大一级测试液浓度,并在5min后重新进行测试,直至测试者感觉到有甜味(每人每天测试的次数控制在30次以内),此浓度即为甜味的绝对阈值,并记录统计,然后计算所有测试者的绝对阈值的平均值;
然后,分别按照上述方法对实施例2以及对比例1-4的调味品进行测试,结果如下表1所示:

绝对阈值测试实验后,分别配置浓度为5%(wt/wt)的测试液,并请实验人员对各组测试液进行风味评测,并分别在评测前和评测1h后对实验组进行血糖测试,风味结果如下表所示:
同时,血糖测试结果显示,各组实验者在评测前和评测后的血糖浓度波动在±0.1mmol/L范围内,并未出现明显血糖变化。
进一步的,将实施例1的天然增甜复合调味品和等量蔗糖分别用于红烧肉烹饪,实验结果表明,实施例1的天然增甜复合调味品能够实现与蔗糖同样的上色效果;而以现有技术(CN103766841A)中的固态复合调味料在同样条件下进行烹饪,则无法实现红烧肉的上色。
尽管已用具体实施例来说明和描述了本发明,然而应意识到,在不背离本发明的精神和范围的情况下可以作出许多其它的更改和修改。因此,这意味着在所附权利要求中包括属于本发明范围内的所有这些变化和修改。
Claims (10)
1.一种天然增甜复合调味品,其特征在于,所述复合调味品主要由以下组分制成:
海藻糖、木糖、大麦苗酶解物、钝顶螺旋藻酶解物、明胶、甘草、罗汉果、陈皮、菊花以及香料。
2.根据权利要求1所述的天然增甜复合调味品,其特征在于,按照重量百分数计,所述合调味品主要由以下组分制成:
海藻糖50~90%,木糖0.5~10%,大麦苗酶解物0.5~10%,钝顶螺旋藻酶解物0.5~10%,明胶1~10%,香料0.01~3%,以及甘草、罗汉果、陈皮、菊花混合物0.5~10%。
3.根据权利要求2所述的天然增甜复合调味品,其特征在于,按照重量百分数计,所述合调味品主要由以下组分制成:
海藻糖60~90%,木糖1~10%,大麦苗酶解物1~10%,钝顶螺旋藻酶解物1~10%,明胶1~5%,香料0.01~1%,以及甘草、罗汉果、陈皮、菊花混合物1~10%。
4.根据权利要求2或3所述的天然增甜复合调味品,其特征在于,所述甘草、罗汉果、陈皮,以及菊花的质量比例为(1~8):(1~5):(1~5):(1~10)。
5.权利要求1-4中任一项所述天然增甜复合调味品的制备方法,其特征在于,所述方法包括如下步骤:将大麦苗酶解物、钝顶螺旋藻酶解物混合后,加入海藻糖、木糖、明胶、香料,以及甘草、罗汉果、陈皮和菊花,并混合后制粒,即得天然增甜复合调味品。
6.根据权利要求5所述的制备方法,其特征在于,所述方法还包括将大麦苗粉酶解以制备大麦苗酶解物的步骤。
7.根据权利要求5所述的制备方法,其特征在于,所述方法还包括将钝顶螺旋藻酶解以制备大麦苗酶解物的步骤。
8.根据权利要求5所述的制备方法,其特征在于,所述方法还包括将甘草、罗汉果、陈皮以及菊花粉碎后,再与其他原料进行混合的步骤。
9.权利要求1-4中任一项所述天然增甜复合调味品在制备调味剂中的应用。
10.包含权利要求1-4中任一项所述天然增甜复合调味品的食品、营养品、药物组合物、牙科卫生组合物或者化妆品。
