Abstract
本发明属于保健品领域,涉及一种低钠调味盐及其制备方法。具体而言,本发明的低钠调味盐包括氯化钠、氯化钾、乳酸锌、碘酸钾、鸟氨酸、谷氨酸钠、B族维生素、β‑胡萝卜素、葡萄糖酸亚铁和磷酸钙。该低钠调味盐的制备方法简便易行,所得产品符合低钠调味盐相关标准中的要求,并且能够有效辅助降血压药物来控制高血压患者的血压水平,弥补了市场空白,极具经济价值。

技术领域
本发明属于调味品技术领域,涉及一种低钠调味盐及其相应的制备方法。
背景技术
高血压(hypertension)是一种复杂的临床综合征,以体循环动脉血压(收缩压和/或舒张压)增高作为主要特征(收缩压≥140mmHg,舒张压≥90mmHg),可伴有心、脑、肾等器官的功能性或器质性损害。高血压是目前最常见的慢性病,也是心脑血管病最主要的危险因素。
近百年来,人们围绕盐与血压的关系不断进行着动物试验、流行病学调查与临床研究,基本肯定了盐是高血压重要的易患因素。因此,世界各国、各组织推出的高血压防治指南均将限盐作为高血压防治的重要措施之一。
多项研究表明,盐的摄入量与血压水平呈正比,即人体摄盐量越多则血压水平越高,日均摄盐量每增加1克,平均血压上升2mmHg。我国高血压的发病率呈现出北高南低之势,这与南甜北咸的饮食习惯密切相关,也从侧面表明了盐与高血压的关系。
众所周知,食盐的主要成分是氯化钠(sodium chloride,NaCl),但人体对于钠的生理需要量实际上是很低的,成人每天大约需要3~5g氯化钠,若摄取过多可造成体内水潴留,血管内压力升高,阻力增大,使心脏负荷加重,久而久之会造成心脏肥大、心衰、肾功能异常等难以治愈的疾病。由此可见,限盐(尤其是限钠)绝对有益于高血压患者。
CN 1357256 A公开了一种低钠营养调味盐,其包括氯化钠、氨基酸、叶酸、氯化钾、碳酸钙、亚硒酸钠、碘酸钾、硫酸镁、核酸和茶色素,但实施例中具体公开的产品配方中氯化钠的含量仍然较高(质量百分比约为78%),不符合中华人民共和国轻工行业标准《QB/T2020-2016调味盐》中关于低钠调味盐的要求,CN 105410854 A中公开的低钠调味肽盐也存在同样的问题。CN 104222998 A公开了一种无钾低钠调味盐,其包括普通食盐、酵母提取物和粉末食材原料(白萝卜、洋葱、欧芹、菌菇、海鲜、牛羊肉等),该调味盐基于食盐和鲜味物质的咸鲜增效作用来保证咸度、降低钠含量,而不引入钾离子,但正因如此却忽视了钾离子的排钠作用。CN 104489609 A公开了一种调味盐,其包括盐和调味植物原料(葱、姜、蒜、香菜、茴香、青椒、红椒、韭菜花、蒜苔、鲜花椒、香椿芽等),但该调味盐经用于提供不同的风味,改善口感,而不具有低钠保健功效。CN105394705 A公开了一种速溶BCAA调味盐,其包括亮氨酸、异亮氨酸、缬氨酸、玉米粉、维生素B9(叶酸)、木糖醇、还原糖、氯化钠、甘草酸二钠、山梨糖醇、麦芽糊精、鸡肉精粉、水解植物蛋白粉、山梨酸钾和2-羟基丁二酸,该调味盐的主要活性物质为含量较高的氨基酸类成分,利用其来发挥快速补充人体机能的效果,氯化钠的含量反而较低,仅起到调味作用。WO 2009/028773 A1公开了一种颗粒状调味盐,其包括颗粒状盐、预胶化木薯淀粉溶液以及至少一种选自大蒜、绿茶、海带、蘑菇、洋葱、艾叶、松针、柠檬和药草的活性成分,该调味盐利用预胶化木薯淀粉溶液作为粘合剂和抗结剂,保证产品具有一定的粘合性和抗板结性,但未提及其具有低钠保健功效。
发明内容
本发明的目的在于提供一种氯化钠含量符合相关标准并且具有辅助调节血压功效的低钠调味盐及其制备方法,以弥补市场的空白。
为了实现上述目的,本发明采用如下技术方案:
一种低钠调味盐,其包括氯化钠、氯化钾、乳酸锌、碘酸钾、鸟氨酸、谷氨酸钠、B族维生素、β-胡萝卜素、葡萄糖酸亚铁和磷酸钙。
以重量百分比计,上述低钠调味盐包括40%~50%的氯化钠、10%~30%的氯化钾、2%~5%的乳酸锌、1%~2%的碘酸钾、4%~8%的鸟氨酸、5%~10%的谷氨酸钠、1%~2%的B族维生素、5%~8%的β-胡萝卜素、3%~5%的葡萄糖酸亚铁和1%~2%的磷酸钙,各组分的重量百分比之和为100%。
优选的,以重量百分比计,上述低钠调味盐包括50%的氯化钠、25%的氯化钾、5%的乳酸锌、1%的碘酸钾、4%的鸟氨酸、5%的谷氨酸钠、1%的B族维生素、5%的β-胡萝卜素、3%的葡萄糖酸亚铁和1%的磷酸钙。
氯化钾(potassium chloride,KCl)是临床常用的电解质平衡调节药,临床疗效确切,广泛用于临床各科,用于治疗和预防各种原因(进食不足、呕吐、严重腹泻、应用排钾利尿药、长期应用糖皮质刺激素和肾上腺皮质刺激素、失钾性肾病、巴特氏综合征等)引起的低钾血症,亦可用于心、肾性水肿以及洋地黄等强心苷中毒引起的频发性、多源性早搏或快速心律失常。通过向食盐中加入氯化钾可以降低氯化钠的相对含量,进而降低高血压的发生率,其原因在于:一方面,钾离子可以抑制肾对钠离子的二次吸收,促进尿钠的排泄;另一方面,钾离子可以对抗钠离子对血管的损伤作用。然而,仅靠限盐补钾并不能完全应对高血压,因为单一的补钾排钠并不能提高人体的自我调节能力,倘若血压控制不好,忽高忽低,反而会诱发冠心病、脑卒中等疾病,因此还需要搭配使用其他活性成分来提高人体自身的血压调控能力。
锌是维持细胞正常结构和生理功能的一个重要元素。细胞内的锌在氧化还原信号通路中具有至关重要的作用,如缺血和梗死等一些特定的触发因素可以引起蛋白质内锌释放,并通过氧化还原机制引起心肌损害。在这种情况下,补充锌可以改善心脏功能并防止心脏进一步受损。因此,在心血管疾病的研究中,锌的动态平衡备受关注。乳酸锌(zinclactate,ZnAc2),为常用的食品锌强化剂,锌元素含量占乳酸锌的22.2%。乳酸锌易溶于水,微溶于乙醇。乳酸锌的吸收效果优于无机锌,可用于补锌食品、营养口服液、补锌片剂及冲剂的生产。
碘是合成甲状腺激素的必需元素,若碘元素摄入不足,机体就不能合成足够的甲状腺激素,反馈刺激垂体TSH升高,升高的TSH促使甲状腺增生,引起碘缺乏病。碘缺乏病的主要病因是环境缺碘,进而使人体摄取不足。该病分布广泛,国内多省区均有分布,主要多见于远离沿海及海拔较高的地区,这些地区的土壤、水和食物中的含碘量极少。碘酸钾(potassium iodate),为常用的食品碘强化剂,被广泛应用于食盐加碘,稳定性大大优于同样作为碘强化剂的碘化钾。
鸟氨酸(ornithine)是一种碱性氨基酸,虽不属于构成蛋白质的20种常见氨基酸之一,但却存在于短杆菌酪肽(tyrocidin)、短杆菌肽S(gramicidin S)等抗菌性肽中。鸟氨酸易溶于水和乙醇,微溶于乙醚,其溶液呈碱性。作为尿素循环的一部分,鸟氨酸与尿素的生成相关,首先氨甲酰磷酸与鸟氨酸生成瓜氨酸和磷酸,其次瓜氨酸再转化成精氨酸,最后精氨酸再裂解成鸟氨酸和尿素,其在代谢上具有重要的作用。
谷氨酸钠(sodium glutamate)是一种由钠离子和谷氨酸根离子形成的盐,具有强烈的肉类鲜味,略有甜味或咸味,用于为食物增鲜提味。谷氨酸钠易溶于水,微溶于乙醇,不溶于乙醚。谷氨酸钠在盐酸酸性环境中会生成谷氨酸或谷氨酸盐酸盐,而在氢氧化钠碱性环境中则会生成谷氨酸二钠,因此谷氨酸钠还具有一定的缓冲作用,有利于对共存的pH敏感性组分产生稳定化作用。
B族维生素包括维生素B1(硫胺素)、维生素B2(核黄素)、维生素B3(烟酸)、维生素B5(泛酸)、维生素B6(吡哆素)、维生素B7(生物素)、维生素B9(叶酸)、维生素B12(钴胺素)、维生素B13(乳酸清)、维生素B14(甜菜碱)、维生素B15(潘氨酸)等,其中较为常见的是维生素B1、B2、B3、B5、B6、B7和B9。B族维生素是维持新陈代谢,参与能量转化所不可缺少的物质,如果缺少B族维生素,则细胞功能马上就会降低,进而引起代谢障碍,因此适量补充B族维生素有益于保持人体的自身调节功能。
β-胡萝卜素(β-carotene)是类胡萝卜素之一,也是橘黄色脂溶性化合物,它自然界中最普遍存在且最稳定的天然色素。作为一种抗氧化剂,β—胡萝卜素是,β-胡萝卜素具有解毒作用,是维护人体健康不可缺少的营养素,在抗癌、抗氧化、预防心血管疾病、白内障及多种退化性疾病方面具有非常显著的功效。
血红蛋白是脊椎动物红细胞中的一种含铁蛋白,由血红素和珠蛋白结合而成,其功能在于运输氧和二氧化碳,维持血液酸碱平衡。血红蛋白含有四条多肽链,每一条多肽链中含有一个血红素基团,血红素中铁的化合价为二价,与氧结合形成氧合血红蛋白时,其化学价不变。如果二价铁离子的摄入量不足,体内长期处于缺铁状态,则容易诱发缺铁性贫血症,出现呼吸急促、心跳加速、乏力、易疲劳、食欲减退以及嗜睡等症状。口服铁剂可以有效防治缺铁性贫血症,其中以葡萄糖酸亚铁为佳。葡萄糖酸亚铁(ferrous gluconate)生物利用率高,在水中溶解性好,风味平和无涩味,虽然有可能引起食品色泽和风味变化,但仍可通过组分的调配(如利用氨基酸增鲜和/或利用乳酸盐矫味)加以克服。
抗结剂(又称抗结块剂)是一类用于防止食盐颗粒或粉状聚集结块,保持其松散或自由流动的试剂,其化学性质独特、稳定,几无毒、无味,易溶于水,颗粒细微,松散多孔,对水分的吸附力强,进而持久且稳定地使食盐保持颗粒或粉末状态。亚铁氰化钾具有抗结性能,可用于防止细粉、结晶性食品发生板结。例如,食盐长久堆放易发生板结,加入亚铁氰化钾后,食盐的正六面体结晶转变为星状结晶,从而不易发生结块。虽然亚铁氰化钾自身毒性很低,但其水溶液与酸反应或者将其加热都会生成极毒的氰化物。相比而言,同样可以用作抗结剂的磷酸钙(calcium phosphate)则不会产生剧毒物质,同时还可以用作缓冲剂(磷酸缓冲盐)和营养增补剂(提供磷元素和钙元素),一举多得。
上述低钠调味盐的制备方法,其包括如下步骤:
1)平均分配溶剂:取适量的小分子团水,平均分成两份;
2)精制无机盐:将配方量的氯化钠、氯化钾、乳酸锌、碘酸钾和葡萄糖酸亚铁加入到其中一份小分子团水中,于室温混合均匀后进行真空冷冻干燥,得到无机盐精制品;
3)精制氨基酸:将配方量的鸟氨酸和谷氨酸钠加入到另一份小分子团水中,于室温混合均匀后进行真空冷冻干燥,得到氨基酸精制品;
4)混合物料:将配方量的B族维生素和β-胡萝卜素与步骤2)中得到的无机盐精制品、步骤3)中得到的氨基酸精制品于室温混合均匀,加入配方量的磷酸钙后再次于室温混合均匀,得到低钠调味盐。
由10个以上的水分子通过氢键缔结形成水团簇的水通常称为大分子团水,而上述制备方法中使用的小分子团水中的水团簇只包含5至6个水分子。通过包括去离子、超声、磁化等处理步骤的方法可以改变水分子的排列取向,切断部分氢键,进而得到团簇较小的小分子团水。
与现有技术相比,采用上述技术方案的本发明具有下列优点:
1)现有技术中缺乏符合调味盐相关要求的低钠调味盐产品,本发明恰恰弥补了上述空白;
2)综合利用乳酸锌、碘酸钾、葡萄糖酸亚铁、磷酸钙和B族维生素来补充人体所需的矿物质和微生素,在保证人体电解质平衡的基础上补充了必要的营养元素;
3)利用鸟氨酸、谷氨酸钠的增鲜作用,优化了调味盐的风味,改善了食品的口感;
4)加入作为抗结剂的磷酸钙,避免了亚铁氰化钾的使用,降低了产生有毒物质的风险;
5)实验证明,本发明的低钠调味盐能够有效缓解高血压症状,并且制法简便易行,极具市场前景。
具体实施方式
下面将结合具体实施例对本发明的技术方案做出进一步的阐述。下列实施例仅用于解释和说明本发明,并不应被视为限制了本发明的范围。除另有说明外,下列实施例中所使用的仪器、试剂、材料等均可通过常规商业手段获得。
实施例1:小分子团水的制备。
将自来水通入去离子设备中进行去离子化处理,直至电导率为15μs/cm,得到去离子水并量取1L备用。选用频率为30kHz的超声波功率仪,首先设定磁感应强度为0.5T的恒定磁场,超声加磁场作用5min,其次设定磁感应强度为1T的恒定磁场,超声加磁场作用10min,最后设定磁感应强度为0.75T的恒定磁场,超声加磁场作用15min,静置至室温后进行17O-NMR测定。经过上述处理,水的半峰宽从原来的122.74Hz降至50.47Hz,由此可知,所得产品中水分子的团簇数由11变为5;静置14天后,半峰宽变为52.74Hz,产品中水分子的团簇数仍为5,稳定性良好。
实施例2-实施例6:低钠调味盐的制备。
按照表1中的配方制备低钠调味盐,其制备工艺如下:取200mL小分子团水,平均分成两份;将氯化钠、氯化钾、乳酸锌、碘酸钾和葡萄糖酸亚铁加入到其中一份小分子团水中,利用机械搅拌装置将上述混合物于室温搅拌均匀,然后利用真空冷冻干燥装置进行冻干,得到无机盐精制品;将鸟氨酸和谷氨酸钠加入到另一份小分子团水中,同样利用机械搅拌装置将上述混合物于室温混合均匀,然后利用真空冷冻干燥装置进行冻干,得到氨基酸精制品;再利用机械搅拌装置将B族维生素和β-胡萝卜素与上述无机盐精制品、氨基酸精制品于室温混合均匀,加入磷酸钙后再次于室温混合均匀,得到低钠调味盐。

实施例7:低钠调味盐的质量检测。
按照《QB/T 2020-2016调味盐》中的检测项目及检测方法对实施例2~6中的低钠调味盐进行检测,其结果如表2所示。由表2可知,各项指标均符合标准要求。

实施例8:低钠调味盐的辅助降血压作用。
对实施例6中的低钠调味盐进行降血压作用考察。选取高血压患者90人(收缩压>180mmHg,脉压差>60mmHg),共分三组,每组30人,随机分组,男女各半(男性均为60岁以上,女性均为55岁以上)。第I组和第II组患者在服用降血压药物期间同时服用低钠调味盐,以替代普通食盐,每日于午餐及晚餐时各取低钠调味盐3g佐餐,第I组连续使用4周,第II组连续使用2周。第III组为对照组,患者在服用降血压药物期间同时服用普通食盐,连续使用4周。各组的治疗结果如表3所示。

由表3可知,与“普通食盐+降血压药物”的组合相比,使用本发明的低钠调味盐来配合降血压药物能够显著降低收缩压及脉压差,并且连续使用4周的效果要优于连续使用2周的效果,坚持使用本发明的低钠调味盐可以逐步降低人体对于钠离子的摄入量,同时保留食物鲜美的风味和口感,有益于配合降血压药物来控制高血压患者的血压水平。
Claims (7)
1.一种低钠调味盐,其包括氯化钠、氯化钾、乳酸锌、碘酸钾、鸟氨酸、谷氨酸钠、B族维生素、β-胡萝卜素、葡萄糖酸亚铁和磷酸钙。
2.根据权利要求1所述的低钠调味盐,其特征在于:
以重量百分比计,所述低钠调味盐包括40%~50%的氯化钠、10%~30%的氯化钾、2%~5%的乳酸锌、1%~2%的碘酸钾、4%~8%的鸟氨酸、5%~10%的谷氨酸钠、1%~2%的B族维生素、5%~8%的β-胡萝卜素、3%~5%的葡萄糖酸亚铁和1%~2%的磷酸钙,各组分的重量百分比之和为100%。
3.根据权利要求2所述的低钠调味盐,其特征在于:
以重量百分比计,所述低钠调味盐包括50%的氯化钠、25%的氯化钾、5%的乳酸锌、1%的碘酸钾、4%的鸟氨酸、5%的谷氨酸钠、1%的B族维生素、5%的β-胡萝卜素、3%的葡萄糖酸亚铁和1%的磷酸钙。
4.根据权利要求1至3中任一项所述的低钠调味盐,其特征在于:
所述B族维生素包括维生素B1、B2、B3、B5、B6和B9。
5.一种根据权利要求1至4中任一项所述的低钠调味盐的制备方法,其包括如下步骤:
1)平均分配溶剂:取适量的小分子团水,平均分成两份;
2)精制无机盐:将配方量的氯化钠、氯化钾、乳酸锌、碘酸钾和葡萄糖酸亚铁加入到其中一份小分子团水中,于室温混合均匀后进行真空冷冻干燥,得到无机盐精制品;
3)精制氨基酸:将配方量的鸟氨酸和谷氨酸钠加入到另一份小分子团水中,于室温混合均匀后进行真空冷冻干燥,得到氨基酸精制品;
4)混合物料:将配方量的B族维生素和β-胡萝卜素与步骤2)中得到的无机盐精制品、步骤3)中得到的氨基酸精制品于室温混合均匀,加入配方量的磷酸钙后再次于室温混合均匀,得到低钠调味盐。
6.根据权利要求5所述的制备方法,其特征在于:
