Abstract
本发明公开了一种液态鲜乳包材内膜,将原料组分包括改性大豆分离蛋白、谷朊粉、改性糯米淀粉、壳聚糖、复合增塑剂、成核剂、润滑剂与增强剂混合后加入至双螺杆挤出机,喷入30~60%质量分数的雾化后的乙醇溶液,在适当的温度和螺杆转速下,自双螺杆挤出机,口模共混熔融后造粒,然后再采用挤出吹塑的方法生产液态鲜乳包材内膜;其有益效果主要是:工艺简单,便于操作,生产的液态鲜乳包材内膜阻隔性优异,较好的保证乳品不氧化变质,无毒无害、安全环保。

本发明属于食品包装材料及其制备方法技术领域,特别是涉及一种液态鲜乳包材内膜。
背景技术
包装是指在流通过程中保护产品,方便储存,促进销售,按一定技术方法而采用的容器、材料及辅助物等的总体名称。乳制品包装,就是采用适当的包装材料、容器和包装技术,把乳制品罐装或包裹起来,以使乳制品在运输和储藏过程中保持其价值和原有状态。乳品包装作为乳品生产的最后工序,是乳品流通销售的保障,直接影响着乳品业的发展。
中国乳制品产业在过去10年中逐渐发展起来,但发展的速度一年胜于一年,消费者对健康的日益关注推动了乳业的发展。早期由于冷藏手段的不完善,需要保存期长的包装形式,如无菌砖或无菌枕等,但随着主要城市的零售市场快速发展,保鲜奶日益受到人们的关注,包装形式也向巴氏塑袋、奶杯以及屋顶包过渡。
传统的乳制品包装膜有三层,色母粒放在内层,材质多为PE或PP,直接与食品接触,无法包装食品的安全。
发明内容
本发明的目的在于为解决现有技术的不足,而提供一种液态鲜乳包材内膜。
本发明的技术方案是:一种液态鲜乳包材内膜,该包装膜的原料组分包括改性大豆分离蛋白、谷朊粉、改性糯米淀粉、壳聚糖、复合增塑剂、成核剂、润滑剂、抗氧剂、增强剂,其中各种原料组分的重量份数分别为10-15、30-85、1-10、1-5、30-35、0.2-5、0.5-3、0.2-0.8、0.6-5。
所述的改性大豆分离蛋白的制备方法为,将大豆分离蛋白加入3-5倍量水中,使用食品级液体氢氧化钠调节pH6-8,再加入谷氨酰胺转氨酶,然后在50-55℃30-60min、120-130℃8-20s的条件下交联,最后60-70℃真空喷雾干燥,谷氨酰胺转氨酶用量为每克大豆分离蛋白使用3000-4000U。
所述的改性糯米淀粉的制备方法,添加去离子水调整糯米淀粉含水量20%(湿重),添加柠檬酸、甘油、糯米淀粉,三者的重量比例为3:4:10,高速搅拌10-15min,密封反应釜放置24h,开启加热套管加热120℃60min,去离子水调整料水比1:4,水洗分离机分离2次,分离机转速2500-3200r/min,分离时间0.5-3min,洗涤分离后的淀粉60-70℃真空喷雾干燥。
所述的谷朊粉、改性大豆分离蛋白、改性糯米淀粉三者重量比约为30:10:10-85:15:1。
所述的壳聚糖可为O-羧甲基壳聚糖或N,O-羧甲基壳聚糖。
所述的复合增塑剂为甘油和柠檬酸共混而成,两者的重量比例为15∶15-15∶20;共混在搅拌机内完成,共混时间为15-25min。

其中,步骤A中所述的双螺杆挤出机,挤出后的物质为条状,挤出步骤的操作温度为1号腔室60-80℃,2号腔室90-120℃,3号腔室110-160℃,4号腔室130-150℃,5号腔室130-150℃,6号腔室60-90℃,螺杆转速300r/min-700r/min,螺杆的长径比25∶1-45∶1;步骤B中所述的挤出吹塑生产液态鲜乳包材内膜的单螺杆挤出步骤的操作温度为110-160℃,螺杆转速为300r/min-700r/min,螺杆的长径比为25∶1-40∶1,单螺杆挤出机的模头口与泡管直径之比选择为4∶1-6∶1。
一种液态鲜乳包材内膜的应用,其特征在于:液态鲜乳包材内膜用做液态鲜牛乳、液态鲜羊乳包材内膜。
下面结合表中的实施例对本发明做进一步说明:
实施例一至实施例七的生产液态鲜乳包材内膜的方法,其步骤与本发明技术方案中公开的步骤A和步骤B相同。
由上述实施例可知,本发明提供的一种液态鲜乳包材内膜,因液态鲜乳包材内膜无毒无害、水溶性低、拉伸强度高、阻气保香效果优异,可满足液态鲜牛乳和液态鲜羊乳包材内膜的要求,较好的保证乳品不氧化变质。
上述实施例仅用于对本发明进行说明,并不构成对权利要求范围的限制,本领域技术人员可以想到的其他替代手段,均在本发明权利要求范围内。
Claims (9)
1.一种液态鲜乳包材内膜,其特征在于:该包装膜的原料组分包括改性大豆分离蛋白、谷朊粉、改性糯米淀粉、壳聚糖、复合增塑剂、成核剂、润滑剂、抗氧剂、增强剂,其中各种原料组分的重量份数分别为10-15、30-85、1-10、1-5、30-35、0.2-5、0.5-3、0.2-0.8、0.6-5。
2.根据权利要求1所述的一种液态鲜乳包材内膜,其特征在于:所述的改性大豆分离蛋白的制备方法为,将大豆分离蛋白加入3-5倍量水中,使用食品级液体氢氧化钠调节pH6-8,再加入谷氨酰胺转氨酶,然后在50-55℃30-60min、120-130℃8-20s的条件下交联,最后60-70℃真空喷雾干燥,谷氨酰胺转氨酶用量为每克大豆分离蛋白使用3000-4000U。
3.根据权利要求1所述的一种液态鲜乳包材内膜,其特征在于:所述的改性糯米淀粉的制备方法,添加去离子水调整糯米淀粉含水量20%(湿重),添加柠檬酸、甘油、糯米淀粉,三者的重量比例为3:4:10,高速搅拌10-15min,密封反应釜放置24h,开启加热套管加热120℃60min,去离子水调整料水比1:4,水洗分离机分离2次,分离机转速2500-3200r/min,分离时间0.5-3min,洗涤分离后的淀粉60-70℃真空喷雾干燥。
4.根据权利要求1所述的一种液态鲜乳包材内膜,其特征在于:所述的谷朊粉、改性大豆分离蛋白、改性糯米淀粉三者重量比约为30:10:10-85:15:1。
5.根据权利要求1所述的一种液态鲜乳包材内膜,其特征在于:所述的壳聚糖可为O-羧甲基壳聚糖或N,O-羧甲基壳聚糖。
6.根据权利要求1所述的一种液态鲜乳包材内膜,其特征在于:所述的复合增塑剂为甘油和柠檬酸共混而成,两者的重量比例为15∶15-15∶20;共混在搅拌机内完成,共混时间为15-25min。
7.根据权利要求1所述的一种液态鲜乳包材内膜,其特征在于:所述的成核剂包括乳酸钙、碳酸钙;所述的润滑剂为大豆磷脂;所述的抗氧剂为维生素E或迷迭香的1种或2种混合物;所述的增强剂为明胶或半纤维素中的1种或2种混合物。
8.一种液态鲜乳包材内膜的方法,其特征在于:该方法的步骤是:
A、混合改性大豆分离蛋白、壳聚糖、谷朊粉、改性糯米淀粉、复合增塑剂、成核剂、润滑剂、增强剂,将该混合物加入至双螺杆挤出机,喷入30~60%质量分数的雾化乙醇溶液,共混熔融后拉条、切粒,以获得液态鲜乳包材内膜粒状材料;
B、将步骤A获得的材料经单螺杆挤出机挤出、吹塑,喷涂抗氧化剂后获得液态鲜乳包材内膜。
9.一种液态鲜乳包材内膜的应用,其特征在于:液态鲜乳包材内膜用做液态鲜牛乳、液态鲜羊乳包材内膜。
