背景技术
榆黄菇(Pleurotus citrinopileatus)又名金顶侧耳、玉皇蘑、金顶蘑;属担子菌亚门,层菌纲,伞菌目,侧耳科,侧耳属。榆黄菇是一种美味的食药用真菌,含有丰富的蛋白质、氨基酸和维生素等多种营养成分。研究发现,榆黄蘑有降低血脂、提高人体免疫力、防治病毒性疾病等作用,是心血管疾病与肥胖症患者的理想保健食品。
汽水泛指碳酸饮料汽水,是充入二氧化碳气体的软饮料,其中包括七喜、可乐、苏打水等。汽水因其凉爽的口感和解渴效果而广受大家的喜爱,但汽水中几乎没有任何营养成分,还会刺激胃液分泌、影响牙齿健康、阻碍体内铁质的吸收等负面作用。
目前随着咖啡、茶饮料等饮品的快速发展,传统的碳酸饮料市场遭受巨大的冲击,因此,制作一种具有保健效果的碳酸饮料来满足现阶段人们对健康饮品的需求迫在眉睫。
发明内容
本发明的目的在于克服了上述问题,提供了一种具有保健效果的榆黄菇菌丝球柚子汽水及其制作方法。
榆黄菇菌丝球柚子汽水的制作方法如下:首先,以榆黄菇为出发菌株,液体发酵制备榆黄菇菌丝球;然后,制备碳酸水;再后,按一定比例将榆黄菇菌丝球、柚子原汁、蔗糖、柠檬酸、山梨酸钾混合均匀,灌入瓶中;最后,将碳酸水罐入瓶中,灌好后,立即封口压盖,得到榆黄菇菌丝球柚子汽水。
液体发酵制备榆黄菇菌丝球的过程如下:首先,将榆黄菇保存种接种到培养基中,于10-50℃恒温培养箱中培养5-20d,进行菌种活化;然后, 将活化后的榆黄菇菌株取1-5块接种到种子培养液中,于10-50℃,90-250r/min摇床上培养5-20d,生成发酵种子液;再后,将发酵种子液按2-20%的接种量接种到发酵罐中,接种后在10-50℃,90-250r/min,0.01-0.15MPa,1:0.1-1:5(V/V•min)通气量条件下培养3-10d。最后, 过滤发酵醪将榆黄菇菌丝球和发酵液分离, 用灭菌水反复清洗分离出的榆黄菇菌丝球,直至获得干净、新鲜的榆黄菇菌丝球;取直径为1-3mm榆黄菇菌丝球备用。
榆黄菇菌丝球制备过程中所用的培养基组成如下:液体培养基:阔叶树木屑25%-70%,麸皮5%-25%,葡萄糖0.5%-4%,0.02%-0.5%硫酸铵,其余为蒸馏水,pH自然;固体培养基:琼脂20g,其他成分同液体培养基。
碳酸水的制备过程如下:将冷却水经过汽水混合机,在一定压力下冷却水形成雾状,之后与二氧化碳气体混合形成碳酸水。
制作榆黄菇菌丝球柚子汽水时,首先,将1-20%蔗糖用无菌水加热溶解,0.05%-0.2%柠檬酸、0.005%-0.08%山梨酸钾分别用无菌开水溶化;然后,将2%-15%杏鲍菇菌丝球、2%-15%柚子原汁、糖液、溶化后的柠檬酸和山梨酸钾以及适量无菌冷却水在配料罐中混合均匀;再后,将配料罐中的混合液输入灌浆机中,开动灌浆机,将混合液灌入瓶内;最后,将碳酸水罐入瓶中,灌好后,立即封口压盖,得到榆黄菇菌丝球柚子汽水。

具体实施方式
实施例一:首先,以榆黄菇为出发菌株,液体发酵制备榆黄菇菌丝球;然后,制备碳酸水;再后,按一定比例将榆黄菇菌丝球、柚子原汁、蔗糖、柠檬酸、山梨酸钾混合均匀,灌入瓶中;最后,将碳酸水罐入瓶中,灌好后,立即封口压盖,得到榆黄菇菌丝球柚子汽水。
液体发酵制备榆黄菇菌丝球的过程如下:首先,将榆黄菇保存种接种到培养基中,于25℃恒温培养箱中培养8d,进行菌种活化;然后, 将活化后的榆黄菇菌株取2块接种到种子培养液中,于25℃,160r/min摇床上培养7d,生成发酵种子液;再后,将发酵种子液按5%的接种量接种到发酵罐中,接种后在25℃,160r/min,0.08MPa,1:0.8(V/V•min)通气量条件下培养5d。最后, 过滤发酵醪将榆黄菇菌丝球和发酵液分离, 用灭菌水反复清洗分离出的榆黄菇菌丝球,直至获得干净、新鲜的榆黄菇菌丝球;取直径为1-3mm榆黄菇菌丝球备用。
榆黄菇菌丝球制备过程中所用的培养基组成如下:液体培养基:500g阔叶树木屑,加蒸馏水800ml,煮沸30min,弃去滤渣、收集滤液;100g麸皮加蒸馏水200ml,煮沸30min,弃去滤渣、收集滤液;混合滤液,向滤液中加入20g葡萄糖,1g硫酸铵并加蒸馏水定容至1L,pH自然。固体培养基:琼脂20g,其他成分同液体培养基。
碳酸水的制备过程如下:将无菌冷却水经过汽水混合机,在一定压力下冷却水形成雾状,之后与二氧化碳气体混合形成碳酸水。
制作榆黄菇菌丝球柚子汽水时,首先,将7%蔗糖用无菌水加热溶解,0.12%柠檬酸、0.02%山梨酸钾分别用无菌开水溶化;然后,将5%杏鲍菇菌丝球、5%柚子原汁、糖液、溶化后的柠檬酸和山梨酸钾以及适量无菌冷却水在配料罐中混合均匀;再后,将配料罐中的混合液输入灌浆机中,开动灌浆机,将混合液灌入瓶内;最后,将碳酸水罐入瓶中,灌好后,立即封口压盖,得到榆黄菇菌丝球柚子汽水。
实施例二:首先,以榆黄菇为出发菌株,液体发酵制备榆黄菇菌丝球;然后,制备碳酸水;再后,按一定比例将榆黄菇菌丝球、柚子原汁、蔗糖、柠檬酸、山梨酸钾混合均匀,灌入瓶中;最后,将碳酸水罐入瓶中,灌好后,立即封口压盖,得到榆黄菇菌丝球柚子汽水。

制作榆黄菇菌丝球柚子汽水时,首先,将9%蔗糖用无菌水加热溶解,0.13%柠檬酸、0.03%山梨酸钾分别用无菌开水溶化;然后,将8%杏鲍菇菌丝球、7%柚子原汁、糖液、溶化后的柠檬酸和山梨酸钾以及适量无菌冷却水在配料罐中混合均匀;再后,将配料罐中的混合液输入灌浆机中,开动灌浆机,将混合液灌入瓶内;最后,将碳酸水罐入瓶中,灌好后,立即封口压盖,得到榆黄菇菌丝球柚子汽水。

1.一种榆黄菇菌丝球柚子汽水,其特征在于榆黄菇菌丝球柚子汽水的制作方法如下:首先,以榆黄菇为出发菌株,液体发酵制备榆黄菇菌丝球;然后,制备碳酸水;再后,按一定比例将榆黄菇菌丝球、柚子原汁、蔗糖、柠檬酸、山梨酸钾混合均匀,灌入瓶中;最后,将碳酸水罐入瓶中,灌好后,立即封口压盖,得到榆黄菇菌丝球柚子汽水。
