Abstract

Description
背景技术
本公开整体涉及食物产品。更具体地讲,本公开涉及用于食物产品诸如咖啡和茶的奶精(creamer)。
奶精广泛用作例如咖啡、可可饮料、茶等冷热饮料的增白剂。它们常常用于替代奶和/或乳制奶油。奶精可具有各种不同风味,并提供增白效果、口感、稠度以及更顺滑的质地。
奶精可以呈液体或粉末形式。粉末形式的一个缺点是其通常不提供传统乳制奶精的印象。使用粉末奶精的另一个缺点可包括当添加到咖啡中时难以溶解,以及可能得到非均质饮料。
越来越多的消费者关注食物产品的天然性。常规咖啡奶精含有添加剂,以防止被称为“絮凝”的产品缺陷;絮凝分别发生在奶精-咖啡混合物在热水中重构时;奶精单独在热咖啡中重构时。絮凝是指乳蛋白失稳(结奶皮(feathering)、沉淀)过程,其可由两种主要机制引起:(i)酸性引起的絮凝和(2)热水和硬水引起的絮凝。加热乳蛋白会导致乳清蛋白的天然状态改变。如果温度为>70℃,则变性是不可逆的;并且变性的乳清蛋白相互作用,从而形成大的聚集体,成为可见的“奶皮”/“絮凝”,并在最终饮料中沉淀。乳清蛋白还对水中游离的Mg2+和Ca2+敏感。高浓度的这些游离离子(“硬水”)可导致与上述类似的变性过程,因为它们通过减少蛋白质表面的排斥电荷来促进聚集。常规咖啡奶精还经常含有乳化剂,添加该乳化剂是为了防止乳液失稳。这些添加剂是所谓的乳化剂、缓冲剂和稳定盐,在成分表中大多被标记为INS或E代码,这对于消费者感知和接受这些产品具有负面影响(暗示化学的/人工的)。
因此,对于市售的更天然的奶精(不含添加剂)存在需求。然而,如上所述,通常非乳制粉末咖啡奶精含有稳定剂诸如合成乳化剂、缓冲剂和稳定盐,还可含有消费者都认为不天然的增白剂。然而,通常需要这些被感知为人工的食物成分来保证咖啡奶精在产品保质期内以及在倒入咖啡中后的物理稳定性,以实现其在咖啡中所需的增白效果。在没有这些成分的情况下,咖啡奶精随时间推移的稳定性低得多,并且表现出减少的增白效果和不良的感觉效果。目前,存在基于乳制品或非乳制品的“仿天然奶精”,但其仍然含有乳化剂或缓冲盐、螯合剂诸如磷酸氢二钾、柠檬酸钠,有时还含有人工调味剂和天然调味剂的组合。虽然这些仿天然奶精被吹捧为天然的,但是它们通常仍含有添加剂。
各占一半(一半液体奶油一半液体奶)可被认为是天然乳制奶精,但其不会使咖啡变甜或为咖啡加味,并且只提供液体形式。因此,对于具有长期稳定性以及优异的增白和感官特性而不含有添加剂的被感知为天然的粉末奶精存在需求。
发明内容
本公开涉及用于食物产品的奶精以及制备粉末形式的奶精的方法。该奶精可在室温下储存或冷藏,并且较长时间保持稳定。该奶精可具有高增白能力和令人愉悦的口感,同时掩盖饮料的苦味和涩味。
本公开的实施方案提供了喷雾干燥的粉末奶精,该粉末奶精不需要包含任何稳定剂、合成乳化剂、缓冲盐或人工增白剂,但其可在室温下保持稳定6个月或更长时间,并且在饮料诸如咖啡中提供良好的增白效果。

本发明还涉及一种用于制备喷雾干燥的奶精的方法,其中该方法包括(ⅰ)将糖、奶和脂肪混合;(ⅱ)对该混合物进行巴氏灭菌;(ⅲ)将该混合物均质化;(ⅳ)将水蒸发以获得在50重量%至60重量%范围内的总固形物的浓缩物;以及(ⅴ)对该浓缩物进行喷雾干燥。
本公开的一个优点是提供具有高增白能力而不使用人工成分的天然奶精。
本公开的另一个优点是提供喷雾干燥的粉末奶精,该粉末奶精不含合成乳化剂、缓冲盐、稳定盐和人工增白剂。
本公开的又一个优点是提供长期稳定的奶精,该奶精具有优异的增白效果,其在约20℃至约30℃的温度下保持稳定至少4个月。

具体实施方式
本公开涉及奶精和制备奶精的方法。本发明的奶精涉及喷雾干燥的粉末,其可以足以对饮料提供增白效果或乳化效果(creaming effect)的量被添加到任何合适的饮料中。乳化效果赋予与奶油或乳制品相关的质量,诸如所需的风味、质地、稠度和/或颜色(例如,增亮或增白)。在另选的实施方案中,奶精是天然且基于乳制品的稳定奶精,其可包含奶(脱脂或全脂)、高脂稀奶油、糖和天然调味剂的组合。奶精中的脂肪、蛋白质和糖都可来自天然来源。奶精具有足够的保质期或冷藏稳定性,并且具有优异的热稳定性而不会(例如,在加入热饮料诸如咖啡或茶后)引起不利的现象,诸如结奶皮、出油、聚集或奶油分离。

在本发明的一个实施方案中,糖是在10重量%至20重量%范围内的乳糖。
在本发明的一个实施方案中,组合物还包含在25重量%至35重量%范围内的葡萄糖浆。
作为根据本公开的一个实施方案的该方法的示例,可通过混合奶油、奶(例如,脱脂或全脂奶)和糖制备乳制奶精。可使该乳制混合物暴露于约45℃至约85℃范围的温度下保持合适的时间(例如,约20、25、30、35、40、45、50、55、60或更多分钟),以引起蛋白质变性。然后,可以通过蒸汽注入或输注(例如,在最低约141℃下持续约5秒或任何其他合适的时间)对乳制混合物进行灭菌。
在本文所述方法的任何实施方案中,在奶精的加工和生产期间,可于水中在搅拌下对奶精的任何组分(例如,蛋白质/乳制品、脂肪/乳制品、糖、调味剂等)进行混合,同时或随后进行热处理、均质化、喷雾干燥和填充。直接热处理可通过在乳液中注入蒸汽水来进行。在这种情况下,可能有必要通过闪蒸去除过量的水。间接热处理可使用与乳液接触的传热界面进行。均质化可在热处理之前和/或之后进行。可能令人关注的是在热处理之前进行均质化,以便改善乳液中的传热,从而实现改进的热处理。在热处理后进行均质化通常可确保乳液中的油滴具有所需的尺寸。
在一个实施方案中,咖啡组分包括经包衣剂包覆的咖啡颗粒,该包衣剂降低了可溶性咖啡颗粒的水溶性。包衣剂优选为碳水化合物(例如,蔗糖、果糖、麦芽糖、右旋糖、麦芽糖糊精、乳糖、咖啡固形物、果胶、黄原胶和淀粉)、蛋白质(例如,乳固形物或明胶)或可食用脂肪(例如,卵磷脂或可食用植物脂肪诸如椰子脂肪)。特别优选碳水化合物及其混合物作为包衣剂。在一个特别优选的实施方案中,通过包糖衣工艺,将碳水化合物以糖浆和/或细粉的形式加入,接着干燥产品,从而包覆颗粒。优选地,饮料或食品粉末或成分在约85℃的水中约2秒或更长时间(使用100rpm的机械搅拌,浸渍至50%溶解后测得的时间)后溶解。具体地讲,优选的是50%的饮料或食品粉末或成分在约3秒至约10秒内溶解。
在另一个实施方案中,咖啡组分包括压实的咖啡,其中通过压实粉末以增加其密度来延缓咖啡组分的溶解。EP 0229920提供了许多生产压实咖啡的示例。生产压实咖啡需要两个要素:(i)水分,优选地在约3重量%至约6重量%的范围内,以及在约20.7MPa至约48.3MPa的压力下压实以形成内聚性片剂。还制备(烘焙、提取、喷雾干燥)了可溶咖啡,随后通过辊式压制机(对咖啡施加压力)压实可溶咖啡。
实施例
以下实施例以举例而非限制的方式说明了本公开的各个实施方案。
所有样品按以下实施例中所述的规定试验配方进行分析(混合物中奶精的试验配方;在水中重构前各成分的干混合物)。
将来自液体全脂奶的固形物与糖和水分预混合,在需要时调节pH,随后在线定量投入呈来自液体奶油的固形物的形式的脂肪。该过程之后,在最低102℃下进行5秒巴氏灭菌/UHT处理(混合物的总固形物为约17%-20%)。下一步是蒸发(浓缩物的总固形物为约53%-55%),随后在180-240巴下均质化浓缩物,并在适中的喷雾压力和干燥温度下对混合物进行喷雾干燥,并填充粉末。
通过与上述相似的方法获得实施例3a和3b中所述的奶精组合物,不同的是脂肪的在线定量投入为椰子油。进行进一步的实验,其中按照下表所示添加额外量的乳糖。

7.根据权利要求1至6中的任一项所述的组合物用于制备茶或咖啡饮料的用途。
8.一种咖啡奶精混合物,包含:
-根据权利要求1至6中的任一项所定义的奶精;以及
-经包覆或压实的咖啡,其中所述咖啡在所述奶精溶解后溶解。
9.一种用于制备根据权利要求1至6中的任一项所述的组合物的方法,其中
-将所述糖、所述奶和所述脂肪混合;
-对所得混合物进行巴氏灭菌;
-将所述混合物均质化;
-将水蒸发以获得在50重量%至60重量%范围内的总固形物的浓缩物;并且
-对所述浓缩物进行喷雾干燥。
