背景技术
火龙果(拉丁文名:Hylocereus undulatus Britt),又称红龙果、龙珠果、仙蜜果、玉龙果,因其外表肉质鳞片似蛟龙外鳞而得名,为仙人掌科的三角柱属植物,量天尺属植物。火龙果果实呈椭圆形,直径10-12厘米,外观为红色或黄色,有绿色圆角三角形的叶状体,白色、红色或黄色果肉,具有黑色种子的水果。火龙果树原产于巴西、墨西哥等中美洲热带沙漠地区,属典型的热带植物。火龙果是由南洋引入中国台湾,再由中国台湾改良引进海南省及大陆南部广西、广东等地栽培的。火龙果中含糖量较高,还有丰富的蛋白质、维生素B2、维生素B3、维生素C、铁、磷、镁、钾、胡萝卜素、果糖、葡萄糖、水溶性膳食纤维,含有特有的植物性蛋白和花青素等,含铁元素量比一般水果要高,是一种低能量、高纤维的水果。火龙果属于凉性水果,在自然状态下,果实于夏秋成熟,味甜,多汁。
由于火龙果营养成分丰富,因此将火龙果加工制备成果汁,再加入具有一定功效的中药成分,一方面,有利于保留火龙果的营养价值成分和风味;另一方面,使火龙果果汁兼具一定的药用功效,丰富了火龙果果汁产品的种类,具有巨大的市场潜力。

现代人对美白养颜需求越来越强烈。想让皮肤变得白皙细腻,除了外敷面膜和擦保养品以外,内服修养也重要。薏米富含蛋白质、碳水化合物和人体所必需的8种氨基酸,具有利水消肿、健脾去湿、美白功效;《本草品汇精要》载:“白茯苓为末,合蜜和,敷面上疗面疮及产妇黑疱如雀卵。”白茯苓既能去黑白面,又牢牙乌发,延年益寿。茯苓,味甘、淡,性平,能美容增白、润泽皮肤,还可以增强免疫功能,扩张血管。
果蔬本身所含有的果胶、纤维素、淀粉和蛋白质等是引起果蔬汁混浊和褐变等不良现象的主要因素,以传统的提取、澄清等工艺难以分解上述因素,并且营养成分大量损失。将酶技术用于果蔬汁提取、澄清,不仅克服了传统工艺的缺点,更可有效地分解去除大分子,且大幅度增加了果蔬汁的品质。

S5:将步骤S4所得混合液经过滤网过滤,取滤液,进行脱酶处理;
S6:将步骤S5所得滤液超滤,取滤液;
S7:将步骤S6所得滤液加入果糖、异VC钠、步骤S2所得浸提液,加热搅拌均匀,至可溶性固形物为15~20%;
S8:将步骤S7所得浓缩汁在130℃下灭菌3~5s,冷却至室温后包装。
优选地,步骤S2中护色剂为抗坏血酸、柠檬酸的一种;
优选地,步骤S2中生物酶为果胶酶、纤维素酶、半纤维素酶。
优选地,步骤S4中滤网孔径为100~200目;
优选地,步骤S5中采用50KD~150KD的聚丙烯腈膜超滤;
优选地,步骤S7中加热温度为50~60℃,转速为400~600r/min,搅拌时间为15~20min。
本发明具有以下有益效果:
(1)本发明采用加入生物酶的方式促进火龙果细胞壁的破坏和采用带式榨汁机榨汁的方式,提高了果汁的出汁率;
(2)本发明采用超滤的方式过滤,效率高,渣汁分离效果好;
(3)本发明所述的火龙果汁生产步骤简明,果汁出汁率高、储存期长,极大保留了火龙果的风味,更兼具所含薏米、白茯苓的美白养颜功效,具有良好的市场前景。
具体实施方式
下面结合具体实施方式对本发明作进一步详细说明。应该强调的是,下述说明仅仅是示例性的,而不是为了限制本发明的范围及其应用。
实施例1
一种美白养颜的火龙果果汁,以重量份为单位,包含以下原料:火龙果鲜果300份、薏米及白茯苓浸提液80份、异VC钠25份、护色剂15份、果糖160份、纯净水700份。
本发明还提供一种美白养颜的火龙果果汁的制备方法,包括以下步骤:
S1:将火龙果清洗、人工去皮后,置于粉碎机中切块、破碎;
S2:将100份薏米、60份白茯苓混合粉碎后,过200目筛子,置于300份 水中采用煎煮法浸提1h,滤去渣后,得到浸提液;
S3:将果胶酶、纤维素酶、半纤维素酶、抗坏血酸加入步骤S1所得物料中,加热至40℃保持30min,充分搅拌均匀;
S4:将步骤S3所得混合液打浆,经过带式榨汁机榨汁30min;
S5:将步骤S4所得混合液经过100目滤网过滤,取滤液,进行脱酶处理;
S6:将步骤S5所得滤液通过50KD聚丙烯腈膜超滤,取滤液;
S7:将步骤S6所得滤液加入果糖、异VC钠、步骤S2所得浸提液,加热至60℃,在600r/min下搅拌15min,至可溶性固形物为15%;
S8:将步骤S7所得混合液汁在130℃下灭菌3s,冷却至室温后包装。
实施例2
一种美白养颜的火龙果果汁,以重量份为单位,包含以下原料:火龙果鲜果1200份、薏米及白茯苓浸提液160份、异VC钠75份、护色剂75份、果糖300份、纯净水1600份。
本发明还提供一种美白养颜的火龙果果汁的制备方法,包括以下步骤:
S1:将火龙果清洗、人工去皮后,置于粉碎机中切块、破碎;
S2:将300份薏米、180份白茯苓混合粉碎后,过200目筛子,置于300份水中采用煎煮法浸提1h,滤去渣后,得到浸提液;
S3:将果胶酶、纤维素酶、半纤维素酶、柠檬酸加入步骤S1所得物料中,加热至45℃保持30min,充分搅拌均匀;
S4:将步骤S3所得混合液打浆,经过带式榨汁机榨汁40min;
S5:将步骤S4所得混合液经过200目滤网过滤,取滤液,进行脱酶处理;
S6:将步骤S5所得滤液通过150KD聚丙烯腈膜超滤,取滤液;
S7:将步骤S6所得滤液加入果糖、异VC钠、步骤S2所得浸提液,加热至50℃,在400r/min下搅拌20min,至可溶性固形物为20%;
S8:将步骤S7所得混合液汁在130℃下灭菌5s,冷却至室温后包装。
实施例3
一种美白养颜的火龙果果汁,以重量份为单位,包含以下原料:火龙果鲜果500份、薏米及白茯苓浸提液100份、异VC钠30份、抗坏血酸25份、果糖200份、纯净水900份。
本发明还提供一种美白养颜的火龙果果汁的制备方法,包括以下步骤:
S1:将火龙果清洗、人工去皮后,置于粉碎机中切块、破碎;
S2:将120份薏米、80份白茯苓混合粉碎后,过200目筛子,置于300份水中采用煎煮法浸提1h,滤去渣后,得到浸提液;
S3:将果胶酶、纤维素酶、半纤维素酶、抗坏血酸加入步骤S1所得物料中,加热至40℃保持30min,充分搅拌均匀;
S4:将步骤S3所得混合液打浆,经过带式榨汁机榨汁32min;
S5:将步骤S4所得混合液经过100目滤网过滤,取滤液,进行脱酶处理;
S6:将步骤S5所得滤液通过50KD聚丙烯腈膜超滤,取滤液;
S7:将步骤S6所得滤液加入果糖、异VC钠、步骤S2所得浸提液,加热至60℃,在450r/min下搅拌20min,至可溶性固形物为15%;
S8:将步骤S7所得混合液汁在130℃下灭菌3s,冷却至室温后包装。
实施例4
一种美白养颜的火龙果果汁,以重量份为单位,包含以下原料:火龙果鲜果750份、薏米及白茯苓浸提液110份、异VC钠45份、柠檬酸30份、果糖2200份、纯净水1100份。
本发明还提供一种美白养颜的火龙果果汁的制备方法,包括以下步骤:
S1:将火龙果清洗、人工去皮后,置于粉碎机中切块、破碎;
S2:将150份薏米、100份白茯苓混合粉碎后,过200目筛子,置于300份水中采用煎煮法浸提1h,滤去渣后,得到浸提液;
S3:将果胶酶、纤维素酶、半纤维素酶、柠檬酸加入步骤S1所得物料中,加热至45℃保持30min,充分搅拌均匀;
S4:将步骤S3所得混合液打浆,经过带式榨汁机榨汁35min;
S5:将步骤S4所得混合液经过200目滤网过滤,取滤液,进行脱酶处理;
S6:将步骤S5所得滤液通过100KD聚丙烯腈膜超滤,取滤液;
S7:将步骤S6所得滤液加入果糖、异VC钠、步骤S2所得浸提液,加热至60℃,在500r/min下搅拌15min,至可溶性固形物为20%;
S8:将步骤S7所得混合液汁在130℃下灭菌5s,冷却至室温后包装。
实施例5
一种美白养颜的火龙果果汁,以重量份为单位,包含以下原料:火龙果鲜果1000份、薏米及白茯苓浸提液250份、异VC钠60份、抗坏血酸45份、果糖270份、纯净水1300份。
本发明还提供一种美白养颜的火龙果果汁的制备方法,包括以下步骤:
S1:将火龙果清洗、人工去皮后,置于粉碎机中切块、破碎;
S2:将100份薏米、60份白茯苓混合粉碎后,过200目筛子,置于300份水中采用煎煮法浸提1h,滤去渣后,得到浸提液;
S3:将果胶酶、纤维素酶、半纤维素酶、抗坏血酸加入步骤S1所得物料中,加热至40℃保持30min,充分搅拌均匀;
S4:将步骤S3所得混合液打浆,经过带式榨汁机榨汁37min;
S5:将步骤S4所得混合液经过100目滤网过滤,取滤液,进行脱酶处理;
S6:将步骤S5所得滤液通过120KD聚丙烯腈膜超滤,取滤液;
S7:将步骤S6所得滤液加入果糖、异VC钠、步骤S2所得浸提液,加热至50℃,在5500r/min下搅拌20min,至可溶性固形物为20%;
S8:将步骤S7所得混合液汁在130℃下灭菌4s,冷却至室温后包装。

1.一种美白养颜的火龙果果汁,其特征在于,以重量份为单位,包含以下原料:火龙果鲜果300~1200份、薏米及白茯苓浸提液80~160份、异VC钠25~75份、护色剂15~75份、果糖160~300份、纯净水700~1600份。
2.一种根据权利要求1所述的美白养颜的火龙果果汁的制备方法,其特征在于,包括以下步骤:
S1:将火龙果清洗、人工去皮后,置于粉碎机中切块、破碎;
S2:将薏米、白茯苓混合粉碎后,过200目筛子,置于300份水中采用煎煮法浸提1h,滤去渣后,得到浸提液;
S3:将生物酶、护色剂加入步骤S1所得物料中,加热至40~45℃保持30min,充分搅拌均匀;
S4:将步骤S3所得混合液打浆,经过带式榨汁机榨汁30~40min;
S5:将步骤S4所得混合液经过滤网过滤,取滤液,进行脱酶处理;
S6:将步骤S5所得滤液超滤,取滤液;
S7:将步骤S6所得滤液加入果糖、异VC钠、步骤S2所得浸提液,加热搅拌均匀,至可溶性固形物为15~20%;
S8:将步骤S7所得浓缩汁在130℃下灭菌3~5s,冷却至室温后包装。
3.根据权利要求2所述的火龙果浓缩果汁的制备方法,其特征在于,步骤S2中护色剂为抗坏血酸、柠檬酸的一种。
4.根据权利要求2所述火龙果浓缩果汁的制备方法,其特征在于,步骤S2中生物酶为果胶酶、纤维素酶、半纤维素酶。
5.根据权利要求2所述的火龙果浓缩果汁的制备方法,其特征在于,步骤S4中滤网孔径为100~200目。
6.根据权利要求2所述的火龙果浓缩果汁的制备方法,其特征在于,步骤S5中采用50KD~150KD的聚丙烯腈膜超滤。
7.根据权利要求2所述火龙果浓缩果汁的制备方法,其特征在于,步骤S7中加热温度为50~60℃,转速为400~600r/min,搅拌时间为15~20min。
