一种抗炎消肿败火沙棘风味果醋及其制备方法
技术领域
本发明涉及果醋技术领域,尤其涉及一种抗炎消肿败火沙棘风味果醋及其制备方法。
背景技术
沙棘果为胡颓子科沙棘属植物沙棘的果实,又名醋柳果,酸刺果,是一种小型浆果,沙棘果的营养价值很高,含有脂肪、蛋白质、糖类和维生素等多种营养素,其中维生素C含量极其丰富、远远高于鲜枣和猕猴桃,被誉为天然维生素的宝库,除此之外,沙棘果还含有大量的维生素E、维生素A、黄酮、SOD 等成分。常食沙棘果可降低胆固醇,缓解心绞痛的发作,还可以防治冠状动脉粥样硬化性心脏病,另外,沙棘果还有祛痰、止咳、平喘和治疗慢性气管炎的作用,还能治疗胃和十二指肠溃疡以及消化不良等症,对慢性浅表性胃炎、萎缩性胃炎、结肠炎等病症疗效也十分显著。沙棘果具有突出的食用和药用价值,近年来其越来越受到广大消费者的青睐,但是沙棘果采摘期较短,其果实不易贮存,上市受季节限制,人们很难一年四季都能品尝到新鲜的沙棘果。
食醋,性苦温味酸,入肝,胃经;功效“散瘀消肿,下气消胀,敛疮之功”。《本草纲目》则述:“消痈肿,散水气,杀邪毒,理诸药,消毒,消食,杀恶毒,破结气”,《元亨疗马集》有“米醋消胀”之说。现代研究认为食醋含有丰富的蛋白质,8种有机酸,18种游离氨基酸和VB1、VB2、VC 等维生素,以及多种人体必需的微量元素可以增加Ca、Fe、P 等微量元素的溶解吸收,刺激皮肤,扩张血管,降低血压,改善血液循环,防止动脉硬化;且有杀菌消炎,收敛固涩,散瘀止痛;增进食欲,帮助消化,降低胆固醇作用。保健醋的醋酸度较低,一般为3%左右,口味较好,每天早晚或饭后服1匙(10毫升)为佳。但是,由于保健醋的酿制工艺复杂,目前并没有为市场所普遍接受的保健的果醋。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种抗炎消肿败火沙棘风味果醋。
本发明是通过以下技术方案实现的:
一种抗炎消肿败火沙棘风味果醋,是由下列重量份原料组成:
沙棘果1000-1100、豆浆200-230、蔓越莓60-70、睡莲花10-12、龙胆草13-15、红油5-6、银杏果15-18、茜草7-8、南瓜粉50-55、白酒300-350、米糠肽120-130、柴胡7-8、麦冬8-9、石斛5-6、焦糖20-23。
所述的一种抗炎消肿败火沙棘风味果醋,是由下列步骤制成的:
1)、将沙棘果洗净、榨汁后得果汁和果渣两部分,在果汁中加入1-2倍质量的清水进行稀释,加入占总质量0.05-0.1%葡萄酒活性干酵母,在24-26℃条件下厌氧发酵5-6天;
2)、将睡莲花、龙胆草、银杏果、茜草、柴胡、麦冬混合加入10-13倍量水,文火慢煮1.5-2小时,加入红油、石斛、南瓜粉、蔓越莓、豆浆搅拌均匀,煮至沸腾,搅拌榨汁后高压过滤,收集滤液;
3)、将步骤1所得果汁高温高压灭菌15-20分钟,冷却至室温后加入占自身质量0.5-0.6%的果胶酶,和原料重量的0.5-0.6%的纤维素酶,于28-30℃下保持5-7小时,进行酶处理;
4)、将步骤3经过酶处理液高温高压灭酶15-20分钟,冷却至室温后加入原料重量的1-1.2%壳聚糖充分搅匀,然后在室温下静置10-12小时至澄清,离心,去渣,收集滤液;
5)、将果渣加入30-40%的白酒进行浸泡,浸泡时间为5-6天,浸泡结束后过滤,滤液加清水将酒精度降至4-5%,离心,去渣,收集滤液;
6)、将步骤2、4、5收集的滤液和米糠肽混合接种醋酸菌发酵,采用深层液体发酵法,接种量是原料重量的1-1.2%,发酵温度在30-32℃,当酸度达到3-5%时,发酵停止;
7)、常温放置15-20天,将发酵液过滤,收取过滤清液,高温灭菌15-20分钟,自然沉降10-12天,将过滤清液超滤,调入焦糖既得。
本发明的优点是:
1、本发明的一种抗炎消肿败火沙棘风味果醋,其有效成分具有抗炎、消肿、败火、降压、助消化等保健作用,焦糖口味独特,营养成分多样。
2、本发明以沙棘果为原料,将沙棘果汁和沙棘果渣都进行了有效地利用,不仅提高产量、降低成本,还最大限度地增加了成 品中的营养成分。
3、本发明将沙棘汁经酶解处理后,澄清透明,不易发生沉淀,口感柔和,与豆浆、中药提取液、白酒等物料混合后酒体浑厚深沉,具有沙棘的果香和醇厚谐调的酒香,并通过发酵、调加甜味品来减少药汁的苦涩感。
4、本发明的一种抗炎消肿败火沙棘风味果醋,可取适量用热开水冲泡稀释,饮用方便快捷,饭前饮用有助于刺激味觉,饭后饮用有利于肠胃消化,平时饮用有利于增强机体免疫力。
具体实施方式
一种抗炎消肿败火沙棘风味果醋,是由下列重量份原料组成:
沙棘果1000、豆浆200、蔓越莓60、睡莲花10、龙胆草13、红油5、银杏果15、茜草7、南瓜粉50、白酒300、米糠肽120、柴胡7、麦冬8、石斛5、焦糖20。
所述的一种抗炎消肿败火沙棘风味果醋,是由下列步骤制成的:
1)、将沙棘果洗净、榨汁后得果汁和果渣两部分,在果汁中加入1倍质量的清水进行稀释,加入占总质量0.05%葡萄酒活性干酵母,在24℃条件下厌氧发酵5天;
2)、将睡莲花、龙胆草、银杏果、茜草、柴胡、麦冬混合加入10倍量水,文火慢煮1.5小时,加入红油、石斛、南瓜粉、蔓越莓、豆浆搅拌均匀,煮至沸腾,搅拌榨汁后高压过滤,收集滤液;
3)、将步骤1所得果汁高温高压灭菌15分钟,冷却至室温后加入占自身质量0.5%的果胶酶,和原料重量的0.5%的纤维素酶,于28℃下保持5小时,进行酶处理;
4)、将步骤3经过酶处理液高温高压灭酶15分钟,冷却至室温后加入原料重量的1%壳聚糖充分搅匀,然后在室温下静置10小时至澄清,离心,去渣,收集滤液;
5)、将果渣加入30%的白酒进行浸泡,浸泡时间为5天,浸泡结束后过滤,滤液加清水将酒精度降至4%,离心,去渣,收集滤液;
6)、将步骤2、4、5收集的滤液和米糠肽混合接种醋酸菌发酵,采用深层液体发酵法,接种量是原料重量的1%,发酵温度在30℃,当酸度达到3%时,发酵停止;
7)、常温放置15天,将发酵液过滤,收取过滤清液,高温灭菌15分钟,自然沉降10天,将过滤清液超滤,调入焦糖既得。

1.一种抗炎消肿败火沙棘风味果醋,其特征在于是由下列重量份原料组成:
沙棘果1000-1100、豆浆200-230、蔓越莓60-70、睡莲花10-12、龙胆草13-15、红油5-6、银杏果15-18、茜草7-8、南瓜粉50-55、白酒300-350、米糠肽120-130、柴胡7-8、麦冬8-9、石斛5-6、焦糖20-23。
2.根据权利要求1所述的一种抗炎消肿败火沙棘风味果醋,其特征在于是由下列步骤制成的:
1)、将沙棘果洗净、榨汁后得果汁和果渣两部分,在果汁中加入1-2倍质量的清水进行稀释,加入占总质量0.05-0.1%葡萄酒活性干酵母,在24-26℃条件下厌氧发酵5-6天;
