①原料预处理:原料选用无霉烂、无病虫害、整花率高,杂质少的一级品,要求金银花黄白、花蕊整齐、花瓣肥大,要求红花片长、色鲜红、质柔软、香气浓郁;将选用的原料用清水进行冲洗,洗净所黏附的泥土、虫卵、细菌等杂质。
②破碎:将清洗干净的金银花、红花原料用齿辊式粉碎机进行粗粉碎,以充分破坏花的组织结构,但不得粉碎太细,否则会增加后续分离工序的难度。
③浸提:将破碎的金银花、红花投入到10倍的沸水中,快速煮制30min,以钝化金银花、红花中的过氧化物酶和多酚氧化酶,然后停止加热,盖上夹层锅锅盖,闷煮20-30min,用60目以上的滤布过滤得可溶性固形物为3.0%左右的浸提液I,在过滤后的残渣中再加入5倍重量的净化水,并加热至70-80℃,浸提10-20min后,再次过滤除渣即浸提液II,将两次浸提液合并。
④澄清与稳定:在浸提液中加入0.01%的果胶酶和0.02%的纤维素酶,并迅速加热至45℃进行2h的酶处理,以分解浸提液中的果胶质和纤维素,避免产品中出现絮状物;酶处理完毕后,要求迅速升温至70-80℃,进行5min的灭酶处理,之后用硅藻土过滤得清明透亮的金银花汁、红花汁。
⑤调配:按配方比例称取果葡萄糖浆、蛋白糖、柠檬酸、乙基麦芽酚、稳定剂等,加入适量水使其充分溶解,并用双联过滤器过滤,所得混合糖液与上述所得金银花红花汁混合调匀。
⑥加热、装罐、杀菌、冷却、贴标、成品:调配均匀的混合汁液经板式热交换器加热至80℃左右,并保温30s,之后趁热装入消毒的容器中杀菌,并及时加盖密封,然后采用冷水喷淋法冷却至室温,擦干罐外水分后贴标即得金银花红花饮料成品。
产品质量指标
①感官指标:产品为浅橙色清亮透明的液体饮料,无沉淀、无分层现象;口感酸甜适中,清凉可口,具有金银花和红花特有的芬芳香味,无不良异味。
②理化指标:可溶性固形物≥7.5%,总酸0.12-0.15%,忍冬皂苷80-100mg/100mL,黄色素5-10mg/100mL,铅≤1.0mg/kg,砷≤0.5mg/kg,铜≤10.0mg/kg。
③微生物指标:细菌总数≤100个/ml,大肠菌群≤6个/100ml,不得检出致病菌。
本发明的有益效果:金银花红花饮料香气清新,滋味醇和,回味清凉,营养丰富,具有降低血清胆固醇水平、预防动脉粥样硬化和冠心病之功效;此外,还能清热解毒、抗菌消炎、增强免疫力等作用,是夏季高脂血症、冠心病患者的理想保健饮品。

一种金银花红花饮料的工艺与配方,配方:金银花、红花、果葡萄浆、蛋白糖、柠檬酸、乙基麦芽酚、缓冲剂、稳定剂、乳化剂、水组成。
工艺流程
操作要点

1.一种金银花红花饮料的工艺与配方,包括金银花、红花、果葡萄浆、蛋白糖、柠檬酸、乙基麦芽酚、缓冲剂、稳定剂、乳化剂、水,其特征在于:配方、工艺流程、操作要点、产品质量指标,具体操作要求如下:
