Abstract
本发明提供一种三高患者的营养食品,由以下重量份原料精制而成:花生碎20‑60份,甜杏仁碎10‑30份,柚子皮5‑50份,南瓜粉10‑30份,阿拉伯糖1‑10份,食用明胶1‑10份,洋葱粉0.5‑5份,食用盐0.3‑5份,水50‑200份。本发明在具有降血糖作用的南瓜粉、阿拉伯糖中添加具有降血脂、降固醇作用的花生、甜杏仁等坚果以及具有降血脂作用的柚子皮、洋葱等,使其具有显著的保健作用;满足特殊人群的食用需求。
Description
技术领域
本发明属于保健休闲食品加工领域,具体涉及一种三高患者的营养食品。
背景技术
三高是高血脂、高血压、高血糖等总称,1988年美国著名内分泌专家Reaven将高血糖中的胰岛素抵抗、高胰岛素血症、糖耐量异常,高血脂中的高甘油三脂血症和高血压统称为“X综合征”,即现在医学界一般说的代谢综合征。高血压是指循环系统内血压高于正常而言,通常指体循环动脉血压增高,是一种常见的临床综合征;通常是以低于140/90毫米汞柱为正常,而大于等于140/90毫米汞柱为高血压。因它是在不知不觉中发生,故称“悄悄的杀手”。高血脂是指血中胆固醇或甘油三酯过高或高密度脂蛋白胆固醇过低,现代医学称之为血脂异常;它是导致动脉粥样硬化的主要因素,是心脑血管病发生发展的危险因素;它发病隐匿,大多没有临床症状,故称为“隐形杀手”。高血糖是机体血液中葡萄糖含量高于正常值,是机体内一个独立存在的病理改变,病变部位在血液,病变性质是血糖代谢紊乱;高血糖的临床表现,可以有显性的症状,如口干渴、饮水多、尿多、消瘦;也可以是隐性的症状,无明显主观不适。
随着我国现代社会工作、学习压力的增大和老年化社会的进程,“三高”人群不断增高,“三高”引起的心脑血管等全身并发症严重影响人们的寿命和生活质量。而市场是适合三高人群食用的营养食品种类甚少,因此开发一种适合于三高患者使用的健康休闲食品至关重要。
发明内容
本发明提供一种三高患者的营养食品,尤其适合高血脂、高血压、高血糖的“三高”患者食用。
为实现上述目的,本发明采用如下技术方案:
一种三高患者的营养食品,包括以下重量份原料:花生碎20-60份,甜杏仁碎10-30份,柚子皮5-50份,南瓜粉10-30份,阿拉伯糖1-10份,食用明胶1-10份,洋葱粉0.5-5份,食用盐0.3-5份,水50-200份。
优选的,包括以下重量份原料:花生碎40份,甜杏仁碎15份,柚子皮10份,南瓜粉20份,阿拉伯糖4份,食用明胶6份,洋葱粉3份,食用盐2份,水80份。
一种三高患者的营养食品,其制备步骤如下:
1、柚子皮的制备:将柚子皮切成0.2-10mm见方粒状,将切好的柚子皮放入沸水焯5-30s后捞出,放于阴凉通风处使其自然冷却至室温,控制其含水量为5-20wt%。
2、洋葱粉的制备:取新鲜洋葱,洗净,去皮、去除腐烂部位,将其切成0.3mm见方粒状,使用微切机进行微切后进行浓缩,待洋葱变成粘稠状后取出进行喷雾干燥得洋葱粉。
3、将花生仁翻炒至表面呈深色,花生仁呈淡黄色,并将花生衣除去,撵成0.3-0.8mm见方粒状即成花生碎,备用;
4、取上述重量份的南瓜粉、洋葱粉、阿拉伯糖、食用明胶、食用盐、水充分混合;
5、取上述重量份的花生碎、杏仁碎和柚子皮,混匀后倒入步骤4所得混合物中,充分搅拌均匀后铺于烤盘中,烤箱烘烤至两面金黄,取出,切成所需的形状,充氮包装即可。
花生(降胆固醇、降血脂):花生是一种高能、高蛋白和高脂类的植物性食物,不含胆固醇和反式脂肪酸,而且富含微量营养素,植物固醇、白藜芦醇、异黄酮、抗氧化剂等物质,有重要的保健作用,更是乳、肉食物的优秀替代品,对平衡膳食、改善中国居民的营养与健康状况具有重要作用。花生含有不饱和脂肪酸,故有降脂作用。此外,花生中所含的亚油酸,可使人体内胆固醇分解为胆汁酸排出体外,避免胆固醇在体内沉积,减少高胆固醇发病机会,能够防止冠心病和动脉硬化。另外,花生中含有一种生物活性很强的天然多酚类物质—白藜芦醇,可预防癌症的发生及发展,具有抗动脉粥样硬化和冠心病,缺血性心脏病,高血脂的防治作用。
甜杏仁(降胆固醇):甜杏仁是一种健康食品,适量食用不仅可以有效控制人体内胆固醇的含量,还能显著降低心脏病和多种慢性病的发病危险。素食者食用甜杏仁可以及时补充蛋白质、微量元素和维生素,例如铁、锌及维生素E。甜杏仁中所含的脂肪是健康人士所必需的,是一种对心脏有益的高不饱和脂肪。甜杏仁中不仅蛋白质含量高,其中的大量纤维有益肠道组织并且可降低肠癌发病率、胆固醇含量和心脏病的危险。
柚子皮(降血糖、降血压):柚子皮富含枳实、新橙皮、胡萝卜素、B族维生素、维生素C、矿物质、糖类及挥发油等成分;此外,柚子皮还含有许多对人体有益的非营养性生理活性成分,例如黄酮类化合物、类柠檬苦素、香精油、天然色素、膳食纤维等。食用适量的柚子皮具有降血糖、降血压、预防动脉粥样硬化的作用。
南瓜粉(降血糖):南瓜中的环丙基氨基酸CTY能促进胰脏分泌胰岛素,增加Glut-2的含量,同时锌、铬是胰岛素的重要组成部分,对胰岛素细胞起有保护作用。南瓜粉可使70%的糖尿病患者血压下降,60%胰岛素释放量上升,80%血糖下降。因此南瓜粉对人体有预防和治疗糖尿病的明显效果。南瓜含有丰富的钴,其对蛋白质、脂肪、糖类代谢、血红蛋白的合成都具有重要的作用,并可扩张血管,降低血压。此外,钴能活跃人体的新陈代谢,促进造血功能,并参与人体内维生素B12的合成,是人体胰岛细胞所必须的微量元素,对防治糖尿病,降低血糖具有特殊的疗效。
阿拉伯糖(抑制血糖升高):L-阿拉伯糖在食品和药品方面的使用功能主要有两项,一是能抑制水解双糖的酶,因此抑制因摄入蔗糖(在小肠蔗糖酶的作用下分解成葡萄糖和果糖而被吸收)而导致的血糖升高;简称抑制双糖水解的降糖作用。二是因L-阿拉伯糖对双糖水解酶的抑制作用,使在小肠里没被分解的蔗糖在大肠里被微生物分解产生出大量的有机酸,这种有机酸对肝脏合成脂肪有抑制作用,再加上L-阿拉伯糖在小肠里对吸收蔗糖的抑制作用,从而减少体内新脂肪的产生。因此,L-阿拉伯糖能够通过抑制人体对蔗糖的吸收而达到降低血糖的作用。
洋葱(降血脂作用):洋葱含有硫化物、类黄酮、苯丙素酚类、甾体皂苷类、含氯化合物、前列腺素类和多糖等多种成分,具有消炎抑菌、防癌抗癌、利尿止泻及降血糖、降血脂、降胆固醇、将血压、抗血小板凝聚、预防心脑血管病等多种生理功效。洋葱作为一种具有较佳保健效果的食品已日益为人们所接受。
本发明的优点在于:
首先,本发明填补了市场上坚果类产品多为甜味,不适合三高人群食用的空白。本发明在坚果类营养休闲食品中加入柚子皮、洋葱、南瓜粉等具有保健作用的蔬果粗粮类原材料,开发出了一种特殊口味的坚果类食品;不同于传统的坚果类休闲食品,可通过添加不同的调味料制成不同的口味。更加适合中老年人中的三高人群食用。
其次,本发明在具有降血糖作用的南瓜粉、阿拉伯糖中添加具有降血脂、降固醇作用的花生、甜杏仁等坚果以及具有降血脂作用的柚子皮、洋葱等,使其具有显著的保健作用;满足特殊人群的食用需求。
具体实施方式
实施例1
一种三高患者的营养食品,包括以下重量份原料:花生碎40份,甜杏仁碎15份,柚子皮10份,南瓜粉20份,阿拉伯糖4份,食用明胶6份,洋葱粉3份,食用盐2份,水80份。
其制备步骤如下:
1、柚子皮的制备:将柚子皮切成0.5mm见方粒状,将切好的柚子皮放入沸水焯20s后捞出,放于阴凉通风处使其自然冷却至室温,控制其含水量为15wt%。
2、洋葱粉的制备:取新鲜洋葱,洗净,去皮、去除腐烂部位,将其切成0.3mm见方粒状,使用微切机进行微切后进行浓缩,待洋葱变成粘稠状后取出进行喷雾干燥得洋葱粉。
3、将花生仁翻炒至表面呈深色,花生仁呈淡黄色,并将花生衣除去,撵成0.5mm见方粒状即成花生碎,备用;
4、取上述重量份的南瓜粉、洋葱粉、阿拉伯糖、食用明胶、食用盐、水充分混合;
5、取上述重量份的花生碎、杏仁碎和柚子皮,混匀后倒入步骤4所得混合物中,充分搅拌均匀后铺于烤盘中,烤箱烘烤至两面金黄,取出,切成所需的形状,充氮包装即可。
实施例2
一种三高患者的营养食品,包括以下重量份原料:花生碎20份,甜杏仁碎10份,柚子皮5份,南瓜粉10份,阿拉伯糖1份,食用明胶1份,洋葱粉0.5份,食用盐0.3份,水50份。
其制备步骤如下:

1、柚子皮的制备:将柚子皮切成10mm见方粒状,将切好的柚子皮放入沸水焯30s后捞出,放于阴凉通风处使其自然冷却至室温,控制其含水量为20wt%。
2、洋葱粉的制备:取新鲜洋葱,洗净,去皮、去除腐烂部位,将其切成0.3mm见方粒状,使用微切机进行微切后进行浓缩,待洋葱变成粘稠状后取出进行喷雾干燥得洋葱粉。
3、将花生仁翻炒至表面呈深色,花生仁呈淡黄色,并将花生衣除去,撵成0.8mm见方粒状即成花生碎,备用;
4、取上述重量份的南瓜粉、洋葱粉、阿拉伯糖、食用明胶、食用盐、水充分混合;
5、取上述重量份的花生碎、杏仁碎和柚子皮,混匀后倒入步骤4所得混合物中,充分搅拌均匀后铺于烤盘中,烤箱烘烤至两面金黄,取出,切成所需的形状,充氮包装即可。

1.一种三高患者的营养食品,其特征在于:包括以下重量份原料:花生碎20-60份,甜杏仁碎10-30份,柚子皮5-50份,南瓜粉10-30份,阿拉伯糖1-10份,食用明胶1-10份,洋葱粉0.5-5份,食用盐0.3-5份,水50-200份。
2.如权利要求1所述的一种三高患者的营养食品,其特征在于:包括以下重量份原料:花生碎40份,甜杏仁碎15份,柚子皮10份,南瓜粉20份,阿拉伯糖4份,食用明胶6份,洋葱粉3份,食用盐2份,水80份。
3.如权利要求1或2所述的一种三高患者的营养食品,其特征在于:所述柚子皮的制备方法如下:将柚子皮切成0.2-10mm见方粒状,将切好的柚子皮放入沸水焯5-30s后捞出,放于阴凉通风处使其自然冷却至室温,控制其含水量为5-20wt%。
4.如权利要求1或2所述的一种三高患者的营养食品,其特征在于:所述洋葱粉的制备方法如下:取新鲜洋葱,洗净,去皮、去除腐烂部位,将其切成0.3mm见方粒状,使用微切机进行微切后进行浓缩,待洋葱变成粘稠状后取出进行喷雾干燥得洋葱粉。
5.如权利要求1或2所述的一种三高患者的营养食品,其特征在于:其制备方法如下:
(1)将花生仁翻炒至表面呈深色,花生仁呈淡黄色,并将花生衣除去,撵成0.3-0.8mm见方粒状即成花生碎,备用;
(2)取上述重量份的南瓜粉、洋葱粉、阿拉伯糖、食用明胶、食用盐、水充分混合;
(3)取上述重量份的花生碎、杏仁碎和柚子皮,混匀后倒入步骤(2)所得混合物中,充分搅拌均匀后铺于烤盘中,烤箱烘烤至两面金黄,取出,切成所需的形状,充氮包装即可。
