Abstract

一种捻果果酒及其制备方法,由以下重量份的原料制成:50度以上白酒500~800份、捻果干200~250份、百香果干50~80份、冰糖20~30份、山茱萸5~8份、玉竹5~8份、桃仁5~8份以及白术5~8份。制备方法如下:捻果洗净后干燥得到捻果干备用;百香果洗净后,去掉最外层硬壳,保留海绵层以及内腔果肉和籽,干燥得到百香果干备用;将冰糖捣碎,在白酒中溶解,然后倒入洗净切碎后盛放山茱萸、玉竹、桃仁、白术、百香果干和捻果干的容器中,在20~25℃的阴暗处密封浸泡30~40天,即得。本发明原料配制精细,口感清甜醇厚,绵柔顺口回味悠长,除了同时具有捻果和百香果的感官品质还含有独特的营养成分和药用成分。

技术领域
本发明涉及食品加工领域,具体是一种捻果果酒及其制备方法。
背景技术
捻果也称桃金娘,还有以下别名金丝桃、山稔子、山菍、多莲、豆稔干、多奶、山多奶、苏园子、石榴子、白碾子、岗稔、水刀莲、乌肚子、当梨子、哆哞仔等等。桃金娘为桃金娘科植物桃金娘的果实,又名桃娘、棯子、山棯、仲尼。桃金娘果是产于亚热带的野生水果,生于丘陵、旷野及路旁,亦可大面积人工种植,是一种具有广泛开发利用价值的野生植物资源。。据《中药大辞典》记载,桃金娘果实以养血、滋补养颜、明目著称,可用于治疗各类贫血、体虚、遗精、神经衰弱等疾病,至今已有千余年历史。
桃金娘果实含有较为全面的营养成分,其中含粗脂肪7.97%、粗蛋白6.21%、粗纤维34.97%、木质素31.76%、还原糖15.52%、维生素C28.8%、维生素H10.19mg/100g、胡萝卜素0.388mg/100g,更有丰富的氨基酸,其中天门氡氨酸含量高达124.7mg/L、缬氨酸71.7mg/L、色氨酸44.2mg/L、丙氨酸43.9mg/L、谷氨酸42.7mg/L,而多种人体所需的矿物质中,钙、镁更高达56.10μg/g,果实的构成糖中大量的为中性单糖,尤其在鲜果中含有更高的果胶多糖。桃金娘是一种具有广泛开发利用价值的野生植物资源,目前主要是作为水果食用,用于其它用途的情况较少,对其的研究和利用还不是很充分。
发明内容
本发明针对现有技术的不足,提供一种捻果果酒及其制备方法。
为了实现上述目的,本发明采用了以下技术方案:
一种捻果果酒及其制备方法,由以下重量份的原料制成:
50度以上白酒500~800份、捻果干200~250份、百香果干50~80份、冰糖20~30份、山茱萸5~8份、玉竹5~8份、桃仁5~8份以及白术5~8份。
所述捻果果酒的制备方法,包括如下步骤:
(1)选取新鲜、成熟、无病害的捻果,洗净后,于60~70℃的烘箱中干燥至分水含量低于百分之五,得到捻果干备用;
(2)选取新鲜、成熟、无病害的百香果,洗净后,去掉最外层硬壳,保留海绵层以及内腔果肉和籽,于60~70℃的烘箱中干燥至分水含量低于百分之五,得到百香果干备用;
(3)将冰糖捣碎,在50度以上白酒中溶解,然后倒入洗净切碎后盛放山茱萸、玉竹、桃仁、白术、百香果干和捻果干的容器中,在20~25℃的阴暗处密封浸泡30~40天,即得。
与现有技术相比较,本发明具备的有益效果:
本发明所述捻果果酒原料配制精细,酒质澄清透明,口感清甜醇厚,绵柔顺口,回味悠长,除了同时具有捻果和百香果的感官品质,还含有独特的营养成分和药用成分;而且高产质优、简捷切实、制作成本低易推广,绿色安全环保,能够提高捻果的经济效益。
具体实施方式
下面通过实施例对本发明的技术方案作进一步阐述。
实施例1
一种捻果果酒及其制备方法,由以下重量份的原料制成:
50度以上白酒650份、捻果干225份、百香果干65份、冰糖25份、山茱萸6份、玉竹6份、桃仁7份以及白术7份。
所述捻果果酒的制备方法,包括如下步骤:
(1)选取新鲜、成熟、无病害的捻果,洗净后,于65℃的烘箱中干燥至分水含量低于百分之五,得到捻果干备用;
(2)选取新鲜、成熟、无病害的百香果,洗净后,去掉最外层硬壳,保留海绵层以及内腔果肉和籽,于65℃的烘箱中干燥至分水含量低于百分之五,得到百香果干备用;
(3)将冰糖捣碎,在50度以上白酒中溶解,然后倒入洗净切碎后盛放山茱萸、玉竹、桃仁、白术、百香果干和捻果干的容器中,在22℃的阴暗处密封浸泡35天,即得。
实施例2
一种捻果果酒及其制备方法,由以下重量份的原料制成:
50度以上白酒500份、捻果干200份、百香果干50份、冰糖20份、山茱萸5份、玉竹5份、桃仁5份以及白术5份。
所述捻果果酒的制备方法,包括如下步骤:
(1)选取新鲜、成熟、无病害的捻果,洗净后,于60℃的烘箱中干燥至分水含量低于百分之五,得到捻果干备用;
(2)选取新鲜、成熟、无病害的百香果,洗净后,去掉最外层硬壳,保留海绵层以及内腔果肉和籽,于60℃的烘箱中干燥至分水含量低于百分之五,得到百香果干备用;

一种捻果果酒及其制备方法,由以下重量份的原料制成:

所述捻果果酒的制备方法,包括如下步骤:
(1)选取新鲜、成熟、无病害的捻果,洗净后,于70℃的烘箱中干燥至分水含量低于百分之五,得到捻果干备用;
(2)选取新鲜、成熟、无病害的百香果,洗净后,去掉最外层硬壳,保留海绵层以及内腔果肉和籽,于70℃的烘箱中干燥至分水含量低于百分之五,得到百香果干备用;
(3)将冰糖捣碎,在50度以上白酒中溶解,然后倒入洗净切碎后盛放山茱萸、玉竹、桃仁、白术、百香果干和捻果干的容器中,在25℃的阴暗处密封浸泡40天,即得。

1.一种捻果果酒及其制备方法,其特征在于,由以下重量份的原料制成:
50度以上白酒500~800份、捻果干200~250份、百香果干50~80份、冰糖20~30份、山茱萸5~8份、玉竹5~8份、桃仁5~8份以及白术5~8份。
2.如权利要求1所述捻果果酒的制备方法,其特征在于,包括如下步骤:
(1)选取新鲜、成熟、无病害的捻果,洗净后,于60~70℃的烘箱中干燥至分水含量低于百分之五,得到捻果干备用;
(2)选取新鲜、成熟、无病害的百香果,洗净后,去掉最外层硬壳,保留海绵层以及内腔果肉和籽,于60~70℃的烘箱中干燥至分水含量低于百分之五,得到百香果干备用;
(3)将冰糖捣碎,在50度以上白酒中溶解,然后倒入洗净切碎后盛放山茱萸、玉竹、桃仁、白术、百香果干和捻果干的容器中,在20~25℃的阴暗处密封浸泡30~40天,即得。
