Abstract
一种益肝明目的鳕鱼糕点,由以下重量份原料制成:鳕鱼80‑90、干酪乳杆菌3‑5、食盐2‑3、葡萄糖2‑3、亚硒酸钠0.01‑0.02、猪肝10‑15、苹果醋10‑15、豆瓣酱8‑10、粳米3‑4、银耳8‑10、枸杞6‑7、桑葚4‑5、决明子5‑6等;本发明将鳕鱼通过干酪乳杆菌富硒发酵,可使鱼肉蛋白经有机酸缓慢酸化形成凝胶组织,增加鱼肉的弹性和硬度,改善了色泽和风味,且富集有机硒,具有保健功效,与黑糖、果醋等搭配制成糕点,具有香甜的风味,为了增加糕点的膳食纤维含量,还添加柠檬果渣膳食纤维,能够避免柠檬果渣的浪费。

本发明涉及一种益肝明目的鳕鱼糕点,尤其涉及一种益肝明目的鳕鱼糕点及其制备方法。
背景技术
糕点是人们经常食用的一种方便食品,其口感很好,作为辅食,营养丰富,能够饱腹,但是市面上在售的糕点通常都是以口味不同为主,并不具有什么保健功能,且通常膳食纤维含量不足容易导致胃肠动力不足,便秘的情况发生,随着人们生活水平的提高,人们对食品的保健功能也越来越重视,市场上的糕点满足不了人们的需求。
发明内容
本发明克服了现有技术不足,提供了一种益肝明目的鳕鱼糕点。
本发明是通过以下技术方案实现的:
一种益肝明目的鳕鱼糕点,由以下重量份原料制成:鳕鱼80-90、干酪乳杆菌3-5、食盐2-3、葡萄糖2-3、亚硒酸钠0.01-0.02、猪肝10-15、苹果醋10-15、豆瓣酱8-10、粳米3-4、银耳8-10、枸杞6-7、桑葚4-5、决明子5-6、菊花4-5、零陵香1-2、薰草1-2、柠檬果渣10-15、绿色木霉0.6 -0.65、面粉60-70、黄豆粉30-35、蔗糖30-35、绿豆30-35、无水乙醇适量、水适量。
一种益肝明目的鳕鱼糕点的制备方法,包括以下工艺:
(1)将猪肝洗净,切碎后置于容器中,加入苹果醋、豆瓣酱,密封腌制10-12小时,取出猪肝,置于锅中,加入粳米、适量的水,加热焖煮,待汤浓,取锅中所有物料,用纱布过滤,得滤液备用;
(2)将银耳洗净,与2-3倍质量的纯净水混合置于磨浆机中磨浆,得银耳浆液,置于锅中,加热煮沸,待其冷却后,加入纤维素酶酶解,得酶解液备用;
(3)将枸杞、桑葚、决明子、菊花、零陵香、薰草用5-10倍量的水加热提取,过滤,得中药提取液备用;
(4)将柠檬果渣洗净,与2倍质量的水混合置于容器中,搅拌均匀后,与120℃条件下灭菌10min,快速冷却至室温,接入绿色木霉,调节pH至5.0,在34℃条件下培养50h,发酵结束后倒入95%的酒精,得到沉淀后过滤,得沉淀,在70℃的环境下烘干,再粉碎,过60目筛,得柠檬果渣膳食纤维,备用;
(5)将鳕鱼洗净,取其肉,用无菌水冲洗两次,放入搅拌机中,低温搅拌30s,静置5min,添加食盐、葡萄糖、干酪乳杆菌、亚硒酸钠,搅拌混匀后置于25℃条件下发酵24h,得发酵富有机硒鱼糜备用;
(6)将绿豆洗净,沥干水,烘干后碾磨成粉,置于浸提反应釜中,高温浸提,加入70倍质量的水,温度100℃,在200-300W的超声条件下浸提,浸提结束后离心,过滤,得滤液 ,将滤液置于容器中,冷却至室温,倒入无水乙醇,静置沉淀,再离心过滤,得含有毛蕊花糖的总糖备用;
(7)将步骤(1)、(2)、(3)、(4)、(5)、(6)中处理得到的物料与面粉、黄豆粉、蔗糖合并,加入适量的水,充分搅拌,混合均匀后将物料置于压制机中压制成型,切成小块后,蒸熟,得糕点,包装即可。
与现有技术相比,本发明的优点是:
本发明的一种益肝明目的鳕鱼糕点,将鳕鱼通过干酪乳杆菌富硒发酵,可使鱼肉蛋白经有机酸缓慢酸化形成凝胶组织,增加鱼肉的弹性和硬度,改善了色泽和风味,且富集有机硒,具有保健功效,与黑糖、果醋等搭配制成糕点,具有香甜的风味,为了增加糕点的膳食纤维含量,还添加柠檬果渣膳食纤维,能够避免柠檬果渣的浪费,本发明将绿豆糖类进行提取,绿豆中的糖类含有丰富的毛蕊花糖,能够改善和防止便秘、提高机体免疫力且热量低,与柠檬渣膳食纤维合并使用,具有协同作用,增强预防和改善便秘的作用,有益身体健康,还添加猪肝、银耳等,丰富了本发明高点的营养,且具有一定的养肝的作用,以及枸杞、桑葚、决明子、菊花等中药提取物的添加,具有一定的益肝明目的作用,具有多重保健效果。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例:
一种益肝明目的鳕鱼糕点,由以下重量份(Kg)原料制成:鳕鱼80、干酪乳杆菌3、食盐2、葡萄糖2、亚硒酸钠0.01、猪肝10、苹果醋10、豆瓣酱8、粳米3、银耳8、枸杞6、桑葚4、决明子5、菊花4、零陵香1、薰草1、柠檬果渣10、绿色木霉0.6、面粉60、黄豆粉30、蔗糖30、绿豆30、无水乙醇适量、水适量。
一种益肝明目的鳕鱼糕点的制备方法,包括以下工艺:
(1)将猪肝洗净,切碎后置于容器中,加入苹果醋、豆瓣酱,密封腌制10小时,取出猪肝,置于锅中,加入粳米、适量的水,加热焖煮,待汤浓,取锅中所有物料,用纱布过滤,得滤液备用;
(2)将银耳洗净,与2倍质量的纯净水混合置于磨浆机中磨浆,得银耳浆液,置于锅中,加热煮沸,待其冷却后,加入纤维素酶酶解,得酶解液备用;
(3)将枸杞、桑葚、决明子、菊花、零陵香、薰草用5倍量的水加热提取,过滤,得中药提取液备用;

(5)将鳕鱼洗净,取其肉,用无菌水冲洗两次,放入搅拌机中,低温搅拌30s,静置5min,添加食盐、葡萄糖、干酪乳杆菌、亚硒酸钠,搅拌混匀后置于25℃条件下发酵24h,得发酵富有机硒鱼糜备用;
(6)将绿豆洗净,沥干水,烘干后碾磨成粉,置于浸提反应釜中,高温浸提,加入70倍质量的水,温度100℃,在200W的超声条件下浸提,浸提结束后离心,过滤,得滤液 ,将滤液置于容器中,冷却至室温,倒入无水乙醇,静置沉淀,再离心过滤,得含有毛蕊花糖的总糖备用;
(7)将步骤(1)、(2)、(3)、(4)、(5)、(6)中处理得到的物料与面粉、黄豆粉、蔗糖合并,加入适量的水,充分搅拌,混合均匀后将物料置于压制机中压制成型,切成小块后,蒸熟,得糕点,包装即可。

1.一种益肝明目的鳕鱼糕点,其特征在于,由以下重量份原料制成:鳕鱼80-90、干酪乳杆菌3-5、食盐2-3、葡萄糖2-3、亚硒酸钠0.01-0.02、猪肝10-15、苹果醋10-15、豆瓣酱8-10、粳米3-4、银耳8-10、枸杞6-7、桑葚4-5、决明子5-6、菊花4-5、零陵香1-2、薰草1-2、柠檬果渣10-15、绿色木霉0.6 -0.65、面粉60-70、黄豆粉30-35、蔗糖30-35、绿豆30-35、无水乙醇适量、水适量。
2.如权利要求1所述的一种益肝明目的鳕鱼糕点的制备方法,其特征在于,包括以下工艺:
(1)将猪肝洗净,切碎后置于容器中,加入苹果醋、豆瓣酱,密封腌制10-12小时,取出猪肝,置于锅中,加入粳米、适量的水,加热焖煮,待汤浓,取锅中所有物料,用纱布过滤,得滤液备用;
(2)将银耳洗净,与2-3倍质量的纯净水混合置于磨浆机中磨浆,得银耳浆液,置于锅中,加热煮沸,待其冷却后,加入纤维素酶酶解,得酶解液备用;
(3)将枸杞、桑葚、决明子、菊花、零陵香、薰草用5-10倍量的水加热提取,过滤,得中药提取液备用;
(4)将柠檬果渣洗净,与2倍质量的水混合置于容器中,搅拌均匀后,与120℃条件下灭菌10min,快速冷却至室温,接入绿色木霉,调节pH至5.0,在34℃条件下培养50h,发酵结束后倒入95%的酒精,得到沉淀后过滤,得沉淀,在70℃的环境下烘干,再粉碎,过60目筛,得柠檬果渣膳食纤维,备用;
(5)将鳕鱼洗净,取其肉,用无菌水冲洗两次,放入搅拌机中,低温搅拌30s,静置5min,添加食盐、葡萄糖、干酪乳杆菌、亚硒酸钠,搅拌混匀后置于25℃条件下发酵24h,得发酵富有机硒鱼糜备用;
(6)将绿豆洗净,沥干水,烘干后碾磨成粉,置于浸提反应釜中,高温浸提,加入70倍质量的水,温度100℃,在200-300W的超声条件下浸提,浸提结束后离心,过滤,得滤液 ,将滤液置于容器中,冷却至室温,倒入无水乙醇,静置沉淀,再离心过滤,得含有毛蕊花糖的总糖备用;
(7)将步骤(1)、(2)、(3)、(4)、(5)、(6)中处理得到的物料与面粉、黄豆粉、蔗糖合并,加入适量的水,充分搅拌,混合均匀后将物料置于压制机中压制成型,切成小块后,蒸熟,得糕点,包装即可。
