技术领域
本发明涉及饮料加工领域,尤其涉及一种甘蔗汁饮料的制备方法。
背景技术
甘蔗的营养价值很高,它含有水分比较多,水分占甘蔗的84%。甘蔗含糖量最为丰富,其中的蔗糖、葡萄糖及果糖,含量达12%。甘蔗还含有人体所需的其他物质,如蛋白质0.2克、脂肪0.5克、钙8毫克、磷4毫克、铁1.3毫克。另外,甘蔗还含有天门冬氨酸、谷氨酸、丝氨酸、丙氨酸等多种有利于人体的氨基酸,以及维生素B1、维生素B2、维生素B6和维生素C等等。甘蔗的含铁量在各种水果中,雄踞“冠军”宝座。
发明内容
本发明的主要目的是提供一种半透明、酸甜比例适中,纯天然营养丰富的复合型保健饮料。
本发明的另一个目的是提供甘蔗汁饮料的制备方法。
为达到上述目的,本发明采取以下技术方案:
一种甘蔗汁饮料的制备方法,包括以下步骤:
取以下原料,按下述重量份数配制:
甘蔗300~400份、马蹄100~150份、糯米汁50~80份、柠檬汁40~60份、羟甲基纤维素钠0.01~0.03份、黄原胶1~2份;
第一步制甘蔗汁:①将甘蔗切段,放在蒸煮锅中加温到70~85℃,蒸煮50~70分钟;
②将蒸煮的甘蔗通过榨汁机榨汁,然后进行膜过滤,得甘蔗汁,备用;
第二步制马蹄汁:将马蹄破碎成3~5mm的小块,经压榨机取汁,然后进行膜过滤,得马蹄汁,备用;
第三步均质:将步骤一的甘蔗汁、步骤二的马蹄汁、糯米汁和柠檬汁混合后加热到40℃,放入羟甲基纤维素钠和黄原胶搅拌直到溶解均匀,然后放入均质机,在23~28MPa的压力下进行均质处理;
第四步精滤:将步骤三的产品放入硅藻土过滤机进行过滤,取清液,得甘蔗汁饮料;
第五步杀菌:将步骤四的甘蔗汁饮料杀菌后,进行无菌灌装。
本发明所述糯米汁是以优质糯米为原料,采用发酵工艺酿制的醇甜清香、略带酸味的糯米汁。
本发明具有以下有益效果:

一种甘蔗汁饮料的制备方法,包括以下步骤:
取以下原料,按下述重量份数配制:
甘蔗400份、马蹄150份、糯米汁80份、柠檬汁60份、羟甲基纤维素钠0.03份、黄原胶2份;
第一步制甘蔗汁:①将甘蔗切段,放在蒸煮锅中加温到70~85℃,蒸煮70分钟;
②将蒸煮的甘蔗通过榨汁机榨汁,然后进行膜过滤,得甘蔗汁,备用。
第二步制马蹄汁:将马蹄破碎成3~5mm的小块,经压榨机取汁,然后进行膜过滤,得马蹄汁,备用;
第三步均质:将步骤一的甘蔗汁、步骤二的马蹄汁、糯米汁和柠檬汁混合后加热到40℃,放入羟甲基纤维素钠和黄原胶搅拌直到溶解均匀,然后放入均质机,在23~28MPa的压力下进行均质处理;
