技术领域
本发明涉及一种食品,具体是一种以百合为原料的一种清心安神的百合脆片食品。
背景技术
百合不但是甜美的食品,又是有益的中药。尤其是百合汤、八宝饭之类的甜食,均少不了它,红白相映,清而不腻,色、香、味俱全,可谓别有风味。用百合煮粥,可滋润肺胃,对呼吸道和消化道黏膜有保护作用。据营养学家分析,百合内含蛋白质、淀粉、脂肪、蔗糖、果胶、磷、钾、钙、铁、胡萝卜素及维生素B族、维生素C等成分,是一种食疗佳品。现代医学研究表明,百合具有明显的镇咳、平喘、止血和增强小鼠肺灌流量等作用,能提高淋巴细胞转化率和增加体液免疫功能的活性,还能有效抑制癌细胞增生。可见百合具有广阔的市场开发前景,百合食品深受人们的欢迎。
脆片食品是近年来发展起来的一种新产品,常规是以面粉为主原料,以水果蔬菜为辅料,以食用植物油为热介质,采用低温真空油炸等先进技术获取含水量很低的果蔬脆片食品。该食品八十年代一经问世就倍受青睐,被国外营养学家称为本世纪的“绿化革命”。该产品的特点是质地酥松、味道鲜美,具有原果蔬的风味,是一种纯天然休闲食品。脆片作为主要烘培食品之一,具有消费量大,保质期长,贮运方便等优点,但目前尚未见有利用百合作为原料制备百合脆片食品的相关报导,利用百合具有清心安神功效生产纯天然脆片食品,一定会受到人们喜爱。
发明内容
本发明所要解决的技术问题是提供一种区别于目前市面上常规的脆片及其制备方法,使制备得的脆片营养丰富,工业化程度高且易于进行营养强化,改进目前以面粉为主原料的脆片营养元素较少、营养保健价值不高的缺失。
本发明以如下技术方案解决上述技术问题:
一种清心安神的百合脆片食品,其特征是以鲜百合、鲜山药、鲜藕、鲜莲子为原料,将其清洗干净,用蒸锅常压蒸煮至熟透后取出,置于烘房内烘干至含水量<8%,超微粉碎成150目以上的细粉,再加入蜂蜜搅拌均匀,然后采用压片设备压制成型、入炉烘烤、冷却、充氮包装制成,其原料组分的重量百分比为:鲜百合30-50%,鲜山药20-40%,鲜藕20-40%,鲜莲子10-30%。
所述的蜂蜜采收新鲜的蜂蜜。
所述蜂蜜的添加量为配方物料总重量的1%-10%。
所述的烘烤,烘烤温度为上火200-220℃,下火150-170℃,时间为8-12分钟,冷却,整理出炉后置室温下冷却5-10分钟,即可包装,制成脆片成品。
为了便于产品的储存和保鲜,百合脆片的包装采用抽真空包装充氮包装。
本发明的解决方案是以新鲜百合为主要原料,根据中医药理论科学配伍,制成天然、营养、方便、口感好的脆片食品,让人们可经常食用,以达到清心安神作用的目的。
本发明组分中的百合具有润肺止咳、养阴清热、清心安神之功,常以治疗心肺疾患为主,如肺热、肺燥咳嗽、咳血吐血、低热虚烦、惊悸失眠等症;组分中的山药含有丰富的淀粉、蛋白质、无机盐、维生素B、烟酸、抗坏血酸、胡萝卜素等营养物质,山药也属于中药,能清心安神,补中益气,助五脏,强筋骨;组分中的鲜藕可催眠,藕中含有大量的碳水化合物及丰富的钙、磷、铁等和多种维生素,具有清热、养血、除烦等功效,可治血虚失眠,有安神入睡之功效;组分中的莲子性味甘平、莲子清香可口,具有补脾止泻、益肾固精、清心安神等功效,莲子除含有大量淀粉外,还含有β-固甾醇,生物碱及丰富的钙、磷、铁等矿物质和维生素,还具有补心益脾、养血安神等功效。综观全方,不但可养血除烦,更可清心安神。
本发明的优点:

采收鲜百合、鲜山药、鲜藕、鲜莲子为原料,按照鲜百合40%,鲜山药30%,鲜藕20%,鲜莲子10%的比例配置,将其清洗干净,用蒸锅常压蒸煮至熟透后取出,置于烘房内烘干至含水量7%,超微粉碎成150目以上的细粉,再加入按照细粉总重量7%的蜂蜜搅拌均匀,然后采用压片设备压制成型,再入炉进行烘烤,烘烤温度为上火220℃,下火170℃,时间为12分钟,冷却,整理出炉后置室温下冷却10分钟,即可进行充氮包装,制成本发明清心安神的百合脆片食品。
实施例2:
采收鲜百合、鲜山药、鲜藕、鲜莲子为原料,按照鲜百合35%,鲜山药30%,鲜藕25%,鲜莲子10%的比例配置,将其清洗干净,用蒸锅常压蒸煮至熟透后取出,置于烘房内烘干至含水量7%,超微粉碎成150目以上的细粉,再加入按照细粉总重量7%的蜂蜜搅拌均匀,然后采用压片设备压制成型,再入炉进行烘烤,烘烤温度为上火200℃,下火150℃,时间为10分钟,冷却,整理出炉后置室温下冷却10分钟,即可进行充氮包装,制成本发明清心安神的百合脆片食品。
实施例3:
采收鲜百合、鲜山药、鲜藕、鲜莲子为原料,按照鲜百合45%,鲜山药25%,鲜藕25%,鲜莲子5%的比例配置,将其清洗干净,用蒸锅常压蒸煮至熟透后取出,置于烘房内烘干至含水量7%,超微粉碎成150目以上的细粉,再加入按照细粉总重量8%的蜂蜜搅拌均匀,然后采用压片设备压制成型,再入炉进行烘烤,烘烤温度为上火220℃,下火150℃,时间为8分钟,冷却,整理出炉后置室温下冷却10分钟,即可进行充氮包装,制成本发明清心安神的百合脆片食品。

1.一种清心安神的百合脆片食品,其特征是以鲜百合、鲜山药、鲜藕、鲜莲子为原料,将其清洗干净,用蒸锅常压蒸煮至熟透后取出,置于烘房内烘干至含水量<8%,超微粉碎成150目以上的细粉,再加入蜂蜜搅拌均匀,然后采用压片设备压制成型、烘烤、冷却、充氮包装制成,其原料组分的重量百分比为:鲜百合30-50%,鲜山药20-40%,鲜藕20-40%,鲜莲子10-30%。
2.根据权利要求1所述的一种清心安神的百合脆片食品,其特征在于所述的蜂蜜的添加量为配方物料总重量的1%-10%。
3.根据权利要求1所述的一种清心安神的百合脆片食品,其特征在于所述的烘烤的温度为上火200-220℃,下火150-170℃,时间为8-12分钟。
