刺梨(Rosaroxbunghii)为蔷薇科多年生落叶灌木缫丝花的果实,又名山王果、木梨子,别名刺菠萝、九头鸟,是滋补健身的营养珍果,是一种稀有的果实。生于海拔500米-2500米的向阳山坡、沟谷、路旁及灌丛中,是贵州、鄂西山区、湘西、凉山、冕宁山区等地的天然野果,目前,在贵州省和河南省开封市有较大面积的人工种植。
刺梨果肉脆,成熟后有浓芳香味。果皮上密生小肉刺,果实内含有丰富的维生素C,是当前水果中最高的,每100克鲜果中含量841.58毫克~3541.13毫克,是柑橘的50倍,猕猴桃的10倍,具有“维生素C之王”的美称。另外刺梨富含超氧化物歧化酶(简称SOD),SOD是国际公认具有抗衰、防癌作用的活性物质,还具有抗病毒、抗辐射的作用,在心血管、消化系统和各种肿瘤疾病防治方面,应用十分广泛。
刺梨具有以下功效:1、增强机体对传染的抵抗力。刺梨的营养非常丰富,据研究,Vc可促进抗体的形成,发挥抗炎、抗过敏作用。2、防癌抗癌。据刺梨专家谢惠民等研究,维生素C与亚硝酸胺类等具有烷化剂物质相互作用,使亚硝酸失去致癌作用。3、治疗坏血病。摄入丰富的维生素C可使坏血病得以治疗,故维生素C称抗血酸。4、排铅作用。食用刺梨鲜果及其加工的食品可摄入丰富的维C,有利于人体健康。5、抗衰老。刺梨中含有丰富的超氧化物岐化酶(SOD),食用刺梨鲜果及加工品可提高人体内SOD的活动,降低过氧化脂质(LPO),有明显的抗衰老作用。6、治疗脚气病。维生素B1(硫胺酸)是人体必须的六种维生素之一,人的正常生长与代谢不可缺少。缺乏维生素B1时,出现脚气病,感觉神经与运动神经影响周围神经炎,在器官与组织发生病变。7、治疗口腔炎症。维生素B2(核黄素)是中国人食谱中最缺乏的维生素之一。当缺乏B2时,常患唇炎和舌炎。男成人日需量1.8mg,女成人日需量1.3mg,刺梨汁含VB20为0.3mg/100g,服一定理的刺梨汁后,可治疗口炎症。8、促进人体正常发育及治疗夜盲症。胡萝卜素是维生素A的前身并具其生理活性,缺乏时,会导致儿童生长发育不良,导致夜盲症。服用刺梨汁可治疗维生素A的缺乏症。9、健脾助消化解疼痛。据1985年刺梨专家孙学惠等研究发现,刺梨能健脾助消化,并具有阿托品的解痛作用。10、降三高。SOD进入备注中将沉积的自由基清除,使沉淀的脂蛋白重新变成游离状态,血管通畅了疾病自然减轻或痊愈。SOD对心脑血管病症,预防老年性痴呆有效。
但是,刺梨的收获期不足30天,同时不方便长期贮藏、附加值低、没得到有效开发利用。
饮料是指以水为基本原料,由不同的配方和制造工艺生产出来,供人们直接饮用的液体食品。饮料除提供水分外,由于在不同品种的饮料中含有不等量的糖、酸、乳以及各种氨基酸、维生素、无机盐等营养成分,将水果加工成果汁饮品,既便于储存、运输,同时能够带动产业深加工的发展。
发明内容
为解决以上问题,本发明的目的之一是提供一种营养丰富、口感纯正的刺梨果汁饮料;
本发明的目的之二是提供一种生产上述刺梨果汁饮料的专用设备;
本发明的目的之三是提供一种上述刺梨果汁饮料的生产工艺。
一种刺梨果汁饮料,它是由下列重量份数的原料配置而成:水83~93份,刺梨果汁2~7份,白砂糖1~5份,CMC0.5~1.0份,瓜尔胶0.2~0.7,黄原胶0.1~0.4份,柠檬酸1.0~1.8份,柠檬酸钠0.1~0.4份,混浊剂0.1~0.2份,果蔬稳定剂0.1~0.3份,甜橙乳化剂0.1~0.15份,苯甲酸钠0.1~0.2份。
其中,刺梨果汁的制备方法为:a、挑选果粒饱满、表面橙黄的刺梨,并且将烂果、病虫果、霉果去除,刮去刺梨表面的刺并挖去种子;
b、将刺梨放入水池中用自来水冲洗1次,将水从水池中放掉,再往水池中放入纯净水清洗1次,然后用漏勺捞起来放入盆子中备用;
C、将清洗过的刺梨果汁放入压汁机进行压汁,并将汁液采用0.2μm中空纤维膜进行超滤即可。
其中,所述水为纯净水、蒸馏水或矿泉水;
一种生产上述刺梨果汁饮料的专用设备:所述专用设备包括通过不锈钢管道依次连接的加热锅、研磨泵、1号冷热缸、自吸泵、2号冷热缸、自吸泵、双连过滤器、均质机、超高温瞬时灭菌机、双连过滤器、3号冷热缸、自吸泵、热灌装机。
一种用于制备上述刺梨果汁饮料的生产工艺由以下步骤组成:
(1)将加热锅内注满水加热至沸腾,对管道进行高温冲洗灭菌。
(2)将CMC、瓜尔胶、黄原胶三种原料按比例混合均匀,加入纯净水搅拌混合,使其充分吸水。
(3)将柠檬酸、柠檬酸钠、白砂糖按配方比例混合均匀后加入烧开的水搅拌均匀,使其充分溶化为液体。
(4)通过研磨泵将(2)的混合料加入(3)的混合液研磨均匀后打入1号冷热缸,在1号冷热缸内搅拌后,加纯净水至配方要求量后进行加热。
(5)将混浊剂、果蔬稳定剂、苯甲酸钠按配方比例依次加入1号冷热缸搅拌均匀。
(6)按照配方加入刺梨果汁、甜橙乳化剂,搅拌均匀,并加热至95℃。
(7)通过自吸泵将调配好的料液打入2号冷热缸进行搅拌,使其充分混合均匀。
(8)将料液通过高压均质机,使其更加细腻均匀。
(9)从均质机出来的料液通过超高温瞬时灭菌机对料液进行超高温灭菌,将灭菌后的料液打入3号冷热缸搅拌。
(10)通过热灌装机对调配完成的料液进行分瓶灌装并包装。
本发明有益效果:本发明配料合理,生产工艺简单方便、口感好、营养丰富的刺梨饮料,它能有效解决刺梨不便长期贮藏、没得到有效开发利用等问题,并能丰富饮料市场。刺梨饮料营养价值高,质地清纯,口感酸甜,饮用方便,成本低,有益身体健康,且生产工艺科学合理,可操作性强,易于控制。
本发明还具有以下优点:1.生产工艺简单、方便且成本低,易于推广。2.以新鲜刺梨为原料,口感较好,营养丰富,满足了不同消费者的需求。

具体实施方式
一种生产上述刺梨果汁饮料的专用设备:所述专用设备包括通过不锈钢管道依次连接的加热锅1、研磨泵2、1号冷热缸3、自吸泵4、双连过滤器5、2号冷热缸6、自吸泵4、均质机7、超高温瞬时灭菌机8、双连过滤器5、3号冷热缸9、自吸泵4、热灌装机10。
采用流程表示为:加热锅1→研磨泵2→1号冷热缸3→自吸泵4→双连过滤器5→2号冷热缸6→自吸泵4→均质机7→超高温瞬时灭菌机8→双连过滤器5→3号冷热缸9→自吸泵4→热灌装机10。
首先,将加热锅内注满水加热至沸腾,对管道进行高温冲洗灭菌,然后具体实施例如下:
实施例1:
a、将CMC0.5份、瓜尔胶0.2份、黄原胶0.1份三种原料混合均匀,加入纯净水1份搅拌混合,使其充分吸水;b、将柠檬酸1.0份、柠檬酸钠0.1份、白砂糖1份混合均匀后加入100℃的水2份搅拌均匀,使其充分溶化为液体;c、通过研磨泵将a中的混合料加入b的混合液研磨均匀后加入1号冷热缸,在1号冷热缸内搅拌后,加纯净水80份进行加热;d、将混浊剂0.1份、果蔬稳定剂0.1份、苯甲酸钠0.1份依次加入1号冷热缸搅拌均匀;e、在1号冷热缸中依次加入刺梨果汁2份、甜橙乳化剂0.1份,搅拌均匀,并加热至95℃;f、通过自吸泵将调配好的料液打入2号冷热缸进行搅拌,使其充分混合均匀,再将料液通过高压均质机,使其更加细腻均匀,从均质机出来的料液通过超高温瞬时灭菌机对料液进行超高温灭菌,将灭菌后的料液打入3号冷热缸搅拌,通过热灌装机对调配完成的料液进行分瓶灌装并包装。
实施例2:
a、将CMC0.7份、瓜尔胶0.5份、黄原胶0.25份三种原料混合均匀,加入纯净水2份搅拌混合,使其充分吸水;b、将柠檬酸1.4份、柠檬酸钠0.25份、白砂糖3份混合均匀后加入100℃的水3份搅拌均匀,使其充分溶化为液体;c、通过研磨泵将a中的混合料加入b的混合液研磨均匀后加入1号冷热缸,在1号冷热缸内搅拌后,加纯净水83份进行加热;d、将混浊剂0.15份、果蔬稳定剂0.2份、苯甲酸钠0.15份依次加入1号冷热缸搅拌均匀;e、在1号冷热缸中依次加入刺梨果汁5份、甜橙乳化剂0.13份,搅拌均匀,并加热至95℃;f、通过自吸泵将调配好的料液打入2号冷热缸进行搅拌,使其充分混合均匀,再将料液通过高压均质机,使其更加细腻均匀,从均质机出来的料液通过超高温瞬时灭菌机对料液进行超高温灭菌,将灭菌后的料液打入3号冷热缸搅拌,通过热灌装机对调配完成的料液进行分瓶灌装并包装。
实施例3:
a、将CMC1.0份、瓜尔胶0.7份、黄原胶0.4份三种原料混合均匀,加入纯净水3份搅拌混合,使其充分吸水;b、将柠檬酸1.8份、柠檬酸钠0.4份、白砂糖5份混合均匀后加入100℃的水5份搅拌均匀,使其充分溶化为液体;c、通过研磨泵将a中的混合料加入b的混合液研磨均匀后加入1号冷热缸,在1号冷热缸内搅拌后,加纯净水85份进行加热;d、将混浊剂0.2份、果蔬稳定剂0.3份、苯甲酸钠0.2份依次加入1号冷热缸搅拌均匀;e、在1号冷热缸中依次加入刺梨果汁7份、甜橙乳化剂0.15份,搅拌均匀,并加热至95℃;f、通过自吸泵将调配好的料液打入2号冷热缸进行搅拌,使其充分混合均匀,再将料液通过高压均质机,使其更加细腻均匀,从均质机出来的料液通过超高温瞬时灭菌机对料液进行超高温灭菌,将灭菌后的料液打入3号冷热缸搅拌,通过热灌装机对调配完成的料液进行分瓶灌装并包装。

Claims (5)
1.一种刺梨果汁饮料,其特征在于:它是由下列重量份数的原料配置而成:水83~93份,刺梨果汁2~7份,白砂糖1~5份,CMC0.5~1.0份,瓜尔胶0.2~0.7,黄原胶0.1~0.4份,柠檬酸1.0~1.8份,柠檬酸钠0.1~0.4份,混浊剂0.1~0.2份,果蔬稳定剂0.1~0.3份,甜橙乳化剂0.1~0.15份,苯甲酸钠0.1~0.2份。
2.根据权利要求1所述的刺梨果汁饮料,其特征在于:所述刺梨果汁的制备方法如下:a、挑选果粒饱满、表面橙黄的刺梨,并且将烂果、病虫果、霉果去除,刮去刺梨表面的刺并挖去种子;
b、将刺梨放入水池中用自来水冲洗1次,将自来水从水池中放掉,再往水池中放入纯净水清洗1次,然后用漏勺捞起来放入盆子中备用;
c、将清洗过的刺梨果汁放入压汁机进行压汁,并将汁液采用0.2μm中空纤维膜进行超滤即可。
3.根据权利要求1所述的刺梨果汁饮料,其特征在于:所述水为纯净水、蒸馏水或矿泉水。
4.一种生产权利要求1所述的刺梨果汁饮料的专用设备:所述专用设备包括通过不锈钢管道依次连接的加热锅、研磨泵、1号冷热缸、自吸泵、2号冷热缸、自吸泵、双连过滤器、均质机、超高温瞬时灭菌机、双连过滤器、3号冷热缸、自吸泵、热灌装机。
5.一种用于制备权利要求1所述刺梨果汁饮料的生产工艺,其特征在于:所述生产工艺包括以下步骤:
(1)将加热锅内注满水加热至沸腾,对管道进行高温冲洗灭菌。
(2)将CMC、瓜尔胶、黄原胶三种原料按比例混合均匀,加入纯净水搅拌混合,使其充分吸水。
(3)将柠檬酸、柠檬酸钠、白砂糖按配方比例混合均匀后加入烧开的水搅拌均匀,使其充分溶化为液体。
(4)通过研磨泵将(2)的混合料加入(3)的混合液研磨均匀后打入1号冷热缸,在1号冷热缸内搅拌后,加纯净水至配方要求量后进行加热。
(5)将混浊剂、果蔬稳定剂、苯甲酸钠按配方比例依次加入1号冷热缸搅拌均匀。
(6)按照配方加入刺梨果汁、甜橙乳化剂,搅拌均匀,并加热至95℃。
(7)通过自吸泵将调配好的料液打入2号冷热缸进行搅拌,使其充分混合均匀。
(8)将料液通过高压均质机,使其更加细腻均匀。
(9)从均质机出来的料液通过超高温瞬时灭菌机对料液进行超高温灭菌,将灭菌后的料液打入3号冷热缸搅拌。
(10)通过热灌装机对调配完成的料液进行分瓶灌装并包装。
