背景技术
黑色食品随着人们生活水平的不断提高,追求营养注重保健已成为一种科学生活的时尚,因此国内外出现了一股黑色食品热,黑米、黑麦、黑豆、黑玉米、黑芝麻、黑木耳、紫菜、海参、海带等日益受到人们的青睐。黑色食品以其特有的高营养价值和保健功效成为当今食品与医药行业研究的热门课题。研究表明,黑色食品含有天然黑色素、蛋白质、氨基酸、多种微量元素和维生素,能调节人体的某些生理功能,是发展天然保健食品的理想原料。代初赖来展首次在国际上提出了黑色食品的科学概念:黑色食品是指自然颜色相对较深,阴阳营养较丰富平衡,并具有一定调节人体生理功能的食物,经科学精制而成的一类功能性食品。
1.黑色食品的营养价值
黑色食品具有“四重性”,即自然性、营养性、功能性和科学性。营养学家经过广泛的深入研究后一致认为,黑色食品是一种理想的保健食品,营养不但丰富,而且具有抗衰老、防癌治病的功效[经分析,黑色食品富含黑色素、黄酮、类黄酮、膳食纤维及多种不饱和脂肪酸,蛋白质丰富,人体必需氨基酸比例较高,锌、硒、铁等微量元素含量突出,维生素种类丰富。黑色食品的营养成分。
1.1富含膳食纤维
由于黑色食品中的天然色素一般都富集在其种皮(果皮)或表皮上,在食用时为了避免色素的损失一般都是全粒食用,因此,其膳食纤维的含量较高。据研究,黑米含纤维素3.9%、黑豆10.2%、黑玉米4.06%、黑芝麻14.26%、黑木耳(干)29.9%、海带(干)6.1%、黑枣9.2%等,与普通浅色同类相比一般高出2-3倍。这些纤维素,除20%左右为不溶性粗纤维外,多数为可溶性多糖和水溶性纤维,是较理想的膳食纤维源。
1.2蛋白质丰富
黑色食品中蛋白质、氨基酸的含量普遍高于同类普通食品,且氨基酸种类齐全,必需氨基酸比例优于普通食品,配比比例合理,更接近于人体氨基酸模式。刘树兴等研究表明:黑小麦面粉与普通小麦面粉相比,蛋白质含量高26-12%,氨基酸总含量。
1.3不饱和脂肪酸含量高
必需脂肪酸对机体健康是十分必要的,缺乏会使动物发育受阻,形成前列腺能力减退等[7]黑小麦中的脂肪含量一般在1%-3%,与普通小麦相差不大,但是其不饱和脂肪酸含量很高,多为不饱和脂肪酸C20B4、C20B5、C20B6、C18B1、C18B4等组成,占总脂肪的53%,仅次于大豆刘慧芳等研究发现,河东乌麦中人体必需脂肪酸亚油酸和亚麻酸等的含量,占总脂肪酸的20%-30%,有/脑黄金之称的C20B5(EPA)和C20B6(DHA)约占10%。巨艳红从黑大豆中分离鉴定出5种脂肪酸,不饱和脂肪酸占总量的78%,其中亚油酸的含量高达55%。

黑小麦中B-胡萝卜素、VC、VE含量均显著高于普通小麦。它们都是天然抗氧化剂,都可以有效降低冠心病、恶性肿瘤的发病率,有助于延缓衰老,延长机体寿命[12]
2.黑色食品的功能价值
黑色食品的黑色素属于黄酮类花色素甙类化合物,含有黄酮素、花青素、生物碱、植物甾醇、强心苷、皂苷、鞣质等生理活性物质,从而具有一些特殊的保健功能。
2.1清除自由基延缓衰老
通过对黑米、黑大豆、黑木耳、黑芝麻、黑蚂蚁、乌骨鸡等食品资源研究,对活性氧自由基的清除率为80%以上。陈文等应用黑粘米酶解液进行小鼠灌胃试验,表明黑米能使小白鼠脑单胺氧化酶活性降低40.68%,,肝脏超氧化物歧化酶活性、全血谷胱甘肽获利分别增加10.41%和19.31%,肝脏过氧化脂含量降低25.71%,证实有延缓衰老的作用食品具有清除氧自由基的能力,这与黑色食品的营养和药用成份有关,特别是黑色食品中某种耐热性的抗氧成份的功效,对维护体内活性氧的产生与清除的平衡有着一定的影响,故多食黑色食品,则有利于清除体内过多的氧自由基,从而起到强身益寿,养颜美容,延缓衰老的作用。
2.2改善营养性贫血
由于黑色食品中的补血素Fe含量较高,一般都具有明显的改善营养性贫血的功能。徐飞研究表明,黑米在贫血大鼠血红蛋白恢复作用上明显高于白米(P<0.01)。
2.3改善性功能
黑蚂蚁能显著提高雄性大鼠血浆睾丸酮含量,显著增加棉酚致大鼠精子低下时精子的含量,降低精子异形产生率,显著增加正常大鼠精子数,增加正常大小鼠包皮、会阴复合体及睾丸的重量,从而达到改善性功能的目的[15]
2.4促进造血功能
黑色食品对患有贫血症的病人有一定益处,尤其是对癌症患者,化疗造成骨髓造血细胞严重损伤时,可能有帮助恢复造血功能的良好作用。
3.黑色食品存在的问题
近年来,黑色食品的研究开发取得了重要进展,主要表现为:黑色食品的发掘、收集、整理与保护为其新品种选育和开发应用奠定了基础;黑色食品新品种的培育及推广为其加工业的起步和发展创造了条件;黑色食品的营养、功能评价研究为其新产品开发提供了科学依据;黑色食品加工技术的研究与黑色食品拳头产品的形成推动了黑色食品的产业化进程。
发明内容
本发明目的在于提供一种营养价值高、食用方便的粉末状黑色食品,以及粉末状黑色食品的制备方法。
实现上述发明目的技术方案:
一种粉末状黑色食品,其重量组成为黑米20-30份、黑麦20-30份、黑豆15-20份、黑玉米10-15份、黑芝麻5-10份、干的黑木耳5-8份、海带4-6份、黑枣3-5份、无花果2-4份;
其制备步骤如下:
(1)根据配比进行计量称重;
(2)将计量称重原料精磨后过筛;
(3)将精磨过筛后原料进行超微粉碎,超微粉碎采用超临界撞击流粉碎技术,用二氧化碳作为工作流体、压力为15-20MPa,粉碎后粉末状黑色食品粒径为15-20μm。
优选重量组成为黑米25-30份、黑麦20-25份、黑豆15-18份、黑玉米12-15份、黑芝麻6-80份、干的黑木耳5-8份、海带4-6份、黑枣3-5份、无花果2-4份。
本发明的特点及效果
使用超临界撞击粉碎技术,可以得到粒径为15-20μm粉末状食品,用开水冲泡即可食用。这类食品的溶解性、吸附性和分散性好,容易消化吸收,故可作为减肥食品、糖尿病人专用食品、中老年食品、保健食品、强化食品和特殊营养食品。
在本发明食品制备过程中不需要进行熟化这一过程,微细化的食品具有很强的表面吸附力和亲和力,因此,具有很好的固香性、分散性和溶解性,特别容易吸收消化。
本发明将黑色食品原料与超临界撞击流粉碎技术结合在一起,开创一种食品制备新技术,生产食品营养价值高。
具体实施方式
下面结合实施例进一步描述本发明,但并不限制本发明的保护范围。
实施例1
按重量组成为黑米25份、黑麦25份、黑豆20份、黑玉米10份、黑芝麻5份、干的黑木耳5份、海带4份、黑枣5份、无花果4份计量称重;将称重的原料在磨粉机进行干磨,干磨后过筛,粒径在3mm以上的返回磨粉机,3mm以下的进入超临界撞击流装置进一步粉碎,用二氧化碳作为工作流体、压力为18MPa,粉碎后粉末状黑色食品粒径为15-20μm。
实施例2
按重量组成为黑米20份、黑麦30份、黑豆20份、黑玉米10份、黑芝麻5份、干的黑木耳5份、海带4份、黑枣5份、无花果4份计量称重;将称重的原料在磨粉机进行干磨,干磨后过筛,粒径在3mm以上的返回磨粉机,3mm以下的进入超临界撞击流装置进一步粉碎,用二氧化碳作为工作流体、压力为18MPa,粉碎后粉末状黑色食品粒径为15-20μm。
Claims (2)
1.一种粉末状黑色食品,其重量组成为黑米20-30份、黑麦20-30份、黑豆15-20份、黑玉米10-15份、黑芝麻5-10份、干的黑木耳5-8份、海带4-6份、黑枣3-5份、无花果2-4份;
其制备步骤如下:
(1)根据配比进行计量称重;
(2)将计量称重原料精磨后过筛;
(3)将精磨过筛后原料进行超微粉碎,超微粉碎采用超临界撞击流粉碎技术,用二氧化碳作为工作流体、压力为15-20MPa,粉碎后粉末状黑色食品粒径为15-20μm。
2.根据权利要求1的粉末状黑色食品,其特征在于其重量组成为黑米25-30份、黑麦20-25份、黑豆15-18份、黑玉米12-15份、黑芝麻6-80份、干的黑木耳5-8份、海带4-6份、黑枣3-5份、无花果2-4份。
