将医用纱布消毒晾干后铺于容器内,在纱布表面喷洒上述配比的微量元素混合溶液后将沥干的南瓜子放在纱布表面,再在南瓜子上方铺医用纱布并再在纱布表面喷洒上述配比的微量元素混合溶液,而后转入30℃-37℃恒温培养箱内培养,每隔5-7h喷洒一次上述配比的微量元素混合溶液,保持其湿度在65%-75%范围内,直至培养48h;
1.4、烘干
将培养好的芽长为15mm-25mm的南瓜子平铺于不锈钢铁盘中,放入50℃-60℃烘箱中烘干3-5h;
1.5、包装
将烘干的南瓜子无菌定量包装,封口即得成品。
本发明的有益效果是:
1、从南瓜子本身的生物学特性出发,通过选择适宜的发芽条件,利用种子本身发芽产生的内应力顶破果壳,工艺简单,增加了南瓜子食品的食用方便性,解决了南瓜子剥壳困难的问题,并且得到破壳的种子的完整度高;
2、人体必需的15种微量元素锌、铁、锰、铜、钴、铬、钼、钒、锡、锶、镍、碘、氟、硒、硅主要来源于土壤。目前公认的与植物生长有关的必需微量元素有硼、锰、钼、锌、铜、铁、氯7种元素,对于这些微量元素中重要元素的缺乏现象,通过控制发芽环境的湿度促进南瓜子在发芽过程中对微量元素的吸收,同时确保发芽效果,提高南瓜子的发芽率,为微量元素缺乏人群提供更多的微量元素来源;
3、天然有机化的微量元素的毒性低于无机化合物,且吸收率高,生理活性较好,发芽后的南瓜子具有上述天然有机化的微量元素,同时发芽将外壳顶开,更方便食用;
4、将种子发芽破壳应用在处于市场空白的食品的开发中,同时南瓜子富锌破壳的成本很低,南瓜子的市场拓宽空间大,在产品开发中有很大优势,适合商业开发。
具体实施方式
实施例1
利用发芽破壳南瓜子并制备南瓜子休闲食品的方法,具体步骤是:
1.1、南瓜子的筛选
挑选种粒饱满、大小均一且无机械破损的完整南瓜子。
1.2、破除休眠处理(浸泡处理)
将挑选好的南瓜子放入含Ca80mg/kg、Zn50mg/kg、Cu2.5mg/kg、Fe0.6mg/kg的微量元素混合溶液中浸泡,溶剂为水,而后将微量元素混合溶液放于45℃水浴锅中保温1h,取出后于室温下浸泡24h。
1.3、发芽富锌
将医用纱布消毒晾干后铺于容器内,在纱布表面喷洒上述配比的微量元素混合溶液后将沥干的南瓜子放在纱布表面,再在南瓜子上方铺医用纱布并再在纱布表面喷洒上述配比的微量元素混合溶液,而后转入35℃恒温培养箱内培养,每隔6h喷洒一次上述配比的微量元素混合溶液,保持其湿度在65%-70%,直至培养48h,其中南瓜子上、下纱布的层数均为4层。
1.4、烘干
将培养好的芽长为15mm-25mm的南瓜子,平铺于不锈钢铁盘中,于60℃烘箱中烘3h。
1.5、包装工艺
将烘干的南瓜子无菌定量包装,封口即得成品。
实施例2
1.1、南瓜子的筛选
挑选种粒饱满、大小均一且无机械破损的完整南瓜子。
1.2、破除休眠处理
将挑选好的南瓜子放入含Ca70mg/kg、Zn30mg/kg、Cu3mg/kg、Fe1.0mg/kg的微量元素混合溶液中浸泡,溶剂为水,而后将微量元素混合溶液放于50℃水浴锅中保温1.5h,取出后于室温下浸泡12h。
1.3、发芽富锌
将医用纱布消毒晾干后铺于容器内,在纱布表面喷洒上述配比的微量元素混合溶液后将沥干的南瓜子放在纱布表面,再在南瓜子上方铺医用纱布并再在纱布表面喷洒上述配比的微量元素混合溶液,而后转入30℃恒温培养箱内培养,每隔7h喷洒一次上述配比的微量元素混合溶液,保持其湿度在70%-72%,直至培养48h,其中南瓜子上、下纱布的层数均为4层。
1.4、烘干
将培养好的芽长为15-25mm的南瓜子,平铺于不锈钢铁盘中,于55℃烘箱中烘4h。
1.5、包装工艺
将烘干的南瓜子无菌定量包装,封口即得成品。
实施例3
1.1、南瓜子的筛选
挑选种粒饱满、大小均一且无机械破损的完整南瓜子。
1.2、破除休眠处理
将挑选好的南瓜子放入含Ca50mg/kg、Zn40mg/kg、Cu4.0mg/kg、Fe0.8mg/kg的微量元素混合溶液中,溶剂为水,而后将微量元素混合溶液放于45℃水浴锅中保温2h,取出后于室温下浸泡18h。
1.3、发芽富锌
将医用纱布消毒晾干后铺于容器内,在纱布表面喷洒上述配比的微量元素混合溶液后将沥干的南瓜子放在纱布表面,再在南瓜子上方铺医用纱布并再在纱布表面喷洒上述配比的微量元素混合溶液,而后转入37℃恒温培养箱内培养,每隔5h喷洒一次上述配比的微量元素混合溶液,保持其湿度在72%-75%,直至培养48h,其中南瓜子上、下纱布的层数均为4层。
1.4、烘干
将培养好的芽长为15-25mm的南瓜子,平铺于不锈钢铁盘中,于50℃烘箱中烘5h;
1.5、包装
将烘干的南瓜子无菌定量包装,封口即得成品。
本申请实施例1~实施例3的南瓜子在培养过程中破壳情况,结果如表1所示:

Claims (1)
1.一种利用发芽破壳南瓜子并制备南瓜子休闲食品的方法,其特征在于,具体步骤是:
1.1、南瓜子的筛选挑选种粒饱满、大小均一且无机械破损的完整南瓜子;
1.2、破除休眠处理
将挑选好的南瓜子放入调配好的含有Ca50mg/kg-80mg/kg、Zn30mg/kg-50mg/kg、Cu2.5mg/kg-4mg/kg、Fe0.6mg/kg-1.0mg/kg的微量元素混合溶液中浸泡,溶剂为水,然后将上述微量元素混合溶液放于45℃-50℃水浴锅中保温1-2h,取出后于室温下浸泡12-24h;
1.3、发芽富锌
将医用纱布消毒晾干后铺于容器内,在纱布表面喷洒上述配比的微量元素混合溶液后将沥干的南瓜子放在纱布表面,再在南瓜子上方铺医用纱布并再在纱布表面喷洒上述配比的微量元素混合溶液,而后转入30℃-37℃恒温培养箱内培养,每隔5-7h喷洒一次上述配比的微量元素混合溶液,保持其湿度在65%-75%范围内,直至培养48h;
1.4、烘干
将培养好的芽长为15mm-25mm的南瓜子平铺于不锈钢铁盘中,放入50℃-60℃烘箱中烘干3-5h;
1.5、包装
将烘干的南瓜子无菌定量包装,封口即得成品。
