本发明涉及食品加工领域,更确切地说是涉及一种蜂蜜干粉及其制备方法。
背景技术
蜂蜜香甜可口、营养健康,是一种为人们所熟知的天然绿色食品。蜂蜜的主要成分是葡萄糖和果糖,还含有多种氨基酸、维生素、矿物质、有机酸等高级营养成分,具有清热解毒、润肺止咳、补中益气、美容养颜、滋阴润燥、抗疲劳、改善睡眠、提高免疫力、促进细胞再生等养生保健功效,一般人群均可食用。但目前市场上出售的蜂蜜多为天然的液体状态,易遭受金属的污染,且含水量高,吸潮性强,易发酵变质,不便于储藏和运输,本发明提供的一种蜂蜜固体饮料,即可冲泡做茶饮,也可以添加到其他食物中做调味食用,方便卫生,便于携带,在保持蜂蜜原有营养成分的同时添加多种天然食材及有益中草药成分,具有美味营养,绿色健康等优点。
发明内容
本发明的目的是在于提供一种葛仙米保健蜂蜜干粉及其制备方法,方便人们的生活。
为解决这一问题,本发明所采取的技术方案为:葛仙米保健蜂蜜干粉由以下重量份的原料组成:蜂蜜320-330、葛仙米25-26、雪蛤1-2、茭白20-21、莼菜13-14、黑花生22-23、香蕉粉9-10、芜菁12-13、黑布林7-8、赤小豆15-16、干贝粉2-3、蛇皮果4-5、芭蕉花2-3、金樱子1-2、水适量。
本发明的葛仙米保健蜂蜜干粉制备过程按以下步骤进行:
(1)选取干净无杂质无沉淀的蜂蜜原料与等质量助干剂混合均匀,助干剂的成分为麦芽糊精、可溶性玉米淀粉、卵磷脂、大豆分离蛋白,比例为10:1:1:1,得到预处理蜂蜜;
(2)黑布林、蛇皮果取果肉,与茭白、莼菜、芜菁、芭蕉花、金樱子洗净处理后加适量水打磨成浆,经200目筛布过滤2次,接种果胶酶在常温发酵25h-28h,调节酸碱度至6.5-6.7,均质化处理后浓缩,得到复合浓缩果汁;
(3)葛仙米、雪蛤、黑花生、赤小豆洗净晾干后研磨成粉,过100-120目筛后加适量清水混合均匀,静置3h-4h,经糊化处理,糊化温度为92℃-95℃,时间为20min-22min,低温烘干后进行超微粉碎,得到超微粉;
(4)将上述步骤得到的预处理蜂蜜、复合浓缩果汁、超微粉及其他剩余成分混合搅拌均匀,喷雾干燥处理,喷雾干燥处理时入料速率为20mL/min,雾化器转速为2000r/min-2100r/min,最后过180-200目筛,分袋密封包装即可。
本发明的有益效果:提供一种葛仙米保健蜂蜜干粉,其中葛仙米具有清火、明目、抗衰老、益气养胃等功效,本发明的蜂蜜固体饮料不仅香甜味美,而且含有丰富的营养,能增进血液循环、促进新陈代谢、增强脾胃功能、有助消化、润肠通便等作用。
具体实施方式
葛仙米保健蜂蜜干粉,由以下重量份(千克)的原料组成:
蜂蜜320、葛仙米25、雪蛤1、茭白20、莼菜14、黑花生22、香蕉粉10、芜菁12、黑布林7、赤小豆16、干贝粉2、蛇皮果5、芭蕉花2、金樱子1、水适量。
制备方法,包括如下步骤:
(1)选取干净无杂质无沉淀的蜂蜜原料与等质量助干剂混合均匀,助干剂的成分为麦芽糊精、可溶性玉米淀粉、卵磷脂、大豆分离蛋白,比例为10:1:1:1,得到预处理蜂蜜;
(2)黑布林、蛇皮果取果肉,与茭白、莼菜、芜菁、芭蕉花、金樱子洗净处理后加适量水打磨成浆,经200目筛布过滤2次,接种果胶酶在常温发酵28h,调节酸碱度至6.7,均质化处理后浓缩,得到复合浓缩果汁;
(3)葛仙米、雪蛤、黑花生、赤小豆洗净晾干后研磨成粉,过120目筛后加适量清水混合均匀,静置4h,经糊化处理,糊化温度为95℃,时间为20min,低温烘干后进行超微粉碎,得到超微粉;
(4)将上述步骤得到的预处理蜂蜜、复合浓缩果汁、超微粉及其他剩余成分混合搅拌均匀,喷雾干燥处理,喷雾干燥处理时入料速率为20mL/min,雾化器转速为2100r/min,最后过200目筛,分袋密封包装即可。
Claims (2)
1.一种葛仙米保健蜂蜜干粉,其特征在于,由以下重量份的原料组成:蜂蜜320-330、葛仙米25-26、雪蛤1-2、茭白20-21、莼菜13-14、黑花生22-23、香蕉粉9-10、芜菁12-13、黑布林7-8、赤小豆15-16、干贝粉2-3、蛇皮果4-5、芭蕉花2-3、金樱子1-2、水适量。
2.根据权利要求l所述的葛仙米保健蜂蜜干粉的制备方法,其特征在于包括如下步骤:
(1)选取干净无杂质无沉淀的蜂蜜原料与等质量助干剂混合均匀,助干剂的成分为麦芽糊精、可溶性玉米淀粉、卵磷脂、大豆分离蛋白,比例为10:1:1:1,得到预处理蜂蜜;
(2)黑布林、蛇皮果取果肉,与茭白、莼菜、芜菁、芭蕉花、金樱子洗净处理后加适量水打磨成浆,经200目筛布过滤2次,接种果胶酶在常温发酵25h-28h,调节酸碱度至6.5-6.7,均质化处理后浓缩,得到复合浓缩果汁;
