本发明公开了一种薰衣草助睡眠玉米芯饼干,由下列重量份的原料制成:低筋面粉70-80、马铃薯淀粉10-20、干海带18-20、过80-120目玉米芯粉30-40、黄油18-20、糖10-15、鸡蛋10-20、小苏打0.2-0.3、山药粉10-12、食盐0.6-0.7、葱姜末20-30、白扁豆2-2.8、枇杷花2.2-2.3、薰衣草2-3;本发明配料合理,富含膳食纤维,工艺新颖,综合感官评定效果好,与普通饼干相比,具有能量低,不易氧化等优点,并通过白扁豆、枇杷花、薰衣草等食材的添加,赋予了本发明紫薯片镇静催眠、清凉爽快、助消化的保健功能。

技术领域
本发明涉及一种粗粮保健饼干,尤其涉及一种薰衣草助睡眠玉米芯饼干及其制备方法。
背景技术
随着人们生活水平的提高、工作和生活节奏加快、“三高”食品摄入过多等原因,与饮食结构有关的冠心病、动脉硬化、高血脂、糖尿病、肥胖症等“文明病”的发病率日渐提高,给人们的工作和生活造成诸多不便。膳食纤维具有较强的持油、持水能力及增容作用,可以加快肠蠕动的频率和时间,近年来,国内外研究学者发现膳食纤维在预防和治疗上述疾病方面具有潜在的有利作用。
玉米加工的副产品-玉米芯约占整棵玉米重量的45%,经研究玉米芯含糖54.5%、粗蛋白质2.2%、粗脂肪0.4%、粗纤维29.7%,含有丰富的膳食纤维,如何充分利用玉米中的有效成分、提高玉米的使用价值、增加经济效益是摆在粮食加工业面前一项非常重要且紧迫的问题。
笔者利用玉米芯粉制作成具有耐储藏易携带、口味多样等特点的饼干,实现对玉米原料的综合利用,提高其经济价值。
发明内容
本发明克服了现有技术中的不足,提供了一种薰衣草助睡眠玉米芯饼干及其制备方法。
本发明是通过以下技术方案实现的:
一种薰衣草助睡眠玉米芯饼干,由下列重量份的原料制成:
低筋面粉70-80、马铃薯淀粉10-20、干海带18-20、过80-120目玉米芯粉30-40、黄油18-20、糖10-15、鸡蛋10-20、小苏打0.2-0.3、山药粉10-12、食盐0.6-0.7、葱姜末20-30、白扁豆2-2.8、枇杷花2.2-2.3、薰衣草2-3;
所述的一种薰衣草助睡眠玉米芯饼干的制备方法,其特征在于包括以下步骤:
(1)将白扁豆、枇杷花、薰衣草混合用4-5倍量的水浸提后浓缩,滤得到药汁,将药汁经喷雾干燥,得药粉;
(2)将干海带用温水浸泡20-25分钟,用刷子洗净去杂后,切成条状,再兑7-8倍水混合打浆,滤得浆液;
(3)将海带浆加入适量温水调匀,得海带浆稀释液,待用;将黄油进行搅打并加入鸡蛋、山药粉、小苏打、糖、食盐进行预混后打发,然后倒入玉米芯粉、药粉、面粉与马铃薯淀粉的混合物,再在20-25℃温度下一边兑入海带浆稀释液一边均匀搅拌,搅拌8-10分钟;
(4)将搅拌好的面糊分装入模具中,做成饼干胚片,并在胚片上均匀撒上剩余各物料,将处理好的胚片送入微波炉中,按烧烤键中火烘烤10-12分钟;
(5)将烘烤好的饼干在室温下自然冷却,拣出烤焦的次品并及时包装即得。
本发明的优点是:
玉米芯粉是粗纤维,与面粉不易粘合成团,易掉渣,添加的海带浆溶出的藻胶主链间所形成具有一定粘弹性的连续三维凝胶网络结构,能改变面团的流变学特性,面团调制和面时,淀粉、糊化淀粉、海带浆体等遇水,其中面筋性蛋白质、淀粉等吸水胀润,形成坚润的面筋网,这种网状结构的形成对面团特殊的粘性延伸性等特性具直接的作用,海带浆体对淀粉糊化的影响有利于膨化工艺操作;
同时海带浆含碘量高,可以缓解我国人群普遍缺碘的现状, 是缺碘地区理想的营养方便食品,但是海带有利水作用,长期食用会引起伤阴后果,本申请采用海带与山药搭配使用,山药可以补益脾益,有收涩作用,与海带配合,平补缓攻,增强了饼干的适应性,克服长期食用海带制品可能引起的副作用;
本发明配料合理,富含膳食纤维,工艺新颖,综合感官评定效果好,与普通饼干相比,具有能量低,不易氧化等优点,并通过白扁豆、枇杷花、薰衣草等食材的添加,赋予了本发明紫薯片镇静催眠、清凉爽快、助消化的保健功能。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例1:
一种薰衣草助睡眠玉米芯饼干,由下列重量份(斤)的原料制成:
低筋面粉80、马铃薯淀粉20、干海带20、过120目玉米芯粉40、黄油20、糖15、鸡蛋20、小苏打0.3、山药粉12、食盐0.7、葱姜末30、白扁豆2.8、枇杷花2.3、薰衣草3;
所述的一种薰衣草助睡眠玉米芯饼干的制备方法,其特征在于包括以下步骤:
(1)将白扁豆、枇杷花、薰衣草混合用5倍量的水浸提后浓缩,滤得到药汁,将药汁经喷雾干燥,得药粉;
(2)将干海带用温水浸泡25分钟,用刷子洗净去杂后,切成条状,再兑7-8倍水混合打浆,滤得浆液;
(3)将海带浆加入适量温水调匀,得海带浆稀释液,待用;将黄油进行搅打并加入鸡蛋、山药粉、小苏打、糖、食盐进行预混后打发,然后倒入玉米芯粉、药粉、面粉与马铃薯淀粉的混合物,再在25℃温度下一边兑入海带浆稀释液一边均匀搅拌,搅拌10分钟;
(4)将搅拌好的面糊分装入模具中,做成饼干胚片,并在胚片上均匀撒上剩余各物料,将处理好的胚片送入微波炉中,按烧烤键中火烘烤12分钟;
(5)将烘烤好的饼干在室温下自然冷却,拣出烤焦的次品并及时包装即得。
Claims (2)
1.一种薰衣草助睡眠玉米芯饼干,其特征在于由下列重量份的原料制成:
低筋面粉70-80、马铃薯淀粉10-20、干海带18-20、过80-120目玉米芯粉30-40、黄油18-20、糖10-15、鸡蛋10-20、小苏打0.2-0.3、山药粉10-12、食盐0.6-0.7、葱姜末20-30、白扁豆2-2.8、枇杷花2.2-2.3、薰衣草2-3。
2.根据权利要求1所述的一种薰衣草助睡眠玉米芯饼干的制备方法,其特征在于包括以下步骤:
(1)将白扁豆、枇杷花、薰衣草混合用4-5倍量的水浸提后浓缩,滤得到药汁,将药汁经喷雾干燥,得药粉;
(2)将干海带用温水浸泡20-25分钟,用刷子洗净去杂后,切成条状,再兑7-8倍水混合打浆,滤得浆液;
(3)将海带浆加入适量温水调匀,得海带浆稀释液,待用;将黄油进行搅打并加入鸡蛋、山药粉、小苏打、糖、食盐进行预混后打发,然后倒入玉米芯粉、药粉、面粉与马铃薯淀粉的混合物,再在20-25℃温度下一边兑入海带浆稀释液一边均匀搅拌,搅拌8-10分钟;
