Abstract
一种果粒开胃白酒及其制备方法,其特征在于由下列重量份的原料制成:大米200-210、麦芽20-22、黑豆40-45、谷糠14-15、酒曲5.5-6、山楂35-37、生姜超微粉8-10、桑椹子20-22、大蒜10-11、芦荟30-34、山药5-6、鸡内金2-3、甘草4-5、猪苓2-3、火棘果1-2、唇香草2-3、木鱼石25-27、营养保健液10-11。本发明的白酒的主要原料经与木鱼石混合蒸煮,木鱼石中的微量元素渗入其中,提升了营养价值,同时,本发明中添加了芦荟的果粒,使得本发明别具风味,此外,本发明还添加了山楂及多种中草药,具有开胃健胃的功效。

技术领域
本发明属于食品加工技术领域,尤其涉及一种果粒开胃白酒及其制备方法。
背景技术
食品工业的发展直接影响人民的营养健康水平。近年来,随着现代城市化步伐的加快,亚健康问题日益突出,而长期服用药品不但起不到理想的疗效,还会使健康进一步受损。现在市面上出现的种类繁多的保健食品功能单一,营养成分单一,无法均衡保证营养摄入,且价格昂贵,不适合长期服用。因此,如何通过饮食达到健康保健功效日益引起人们的重视,而功能性保健白酒近年来受到人们的极大关注,同时随着消费者追求健康、天然的意识的不断提高,国内市场对品种的需求也在发生变化,研发各种功能性保健白酒已经是势在必行。
发明内容
本发明的目的是提供一种果粒开胃白酒及其制备方法,本发明具有香味浓郁、营养丰富的特点。
本发明所采用的技术方案是:
一种果粒开胃白酒,其特征在于由以下重量份的原料制成:
大米200-210、麦芽20-22、黑豆40-45、谷糠14-15、酒曲5.5-6、山楂35-37、生姜超微粉8-10、桑椹子20-22、大蒜10-11、芦荟30-34、山药5-6、鸡内金2-3、甘草4-5、猪苓2-3、火棘果1-2、唇香草2-3、木鱼石25-27、营养保健液10-11;
所述营养保健液由下列重量份的原料制成:竹炭1.5-2、橄榄6-7、麦芽糖浆3-4、食醋15-17、灵芝孢子粉1-1.2;
制备方法为:将橄榄加食醋密封浸泡6-8小时后将橄榄滤除,所得醋液与一倍的清水合并,然后加入剩余物料,小火煮沸,过滤收集滤液,即得。
所述的果粒开胃白酒的制备方法,其特征在于包括以下步骤:
(1)将山药、鸡内金、甘草、猪苓、火棘果、唇香草加5-7倍的水文火煎煮40-50分钟,过滤除渣,得药液;
(2)将山楂去核打浆,过滤除渣,得山楂汁;将大米、麦芽、黑豆、谷糠混合,加物料重量80-85%的清水及药液、山楂汁,浸泡30-35分钟;
(3)将木鱼石入锅,均匀铺在锅的底部,然后倒入步骤(2)所得物料,在98-100℃下蒸50-60分钟后出料,将木鱼石去除,所得物料均匀摊开,待温度降至28-30℃时撒上酒曲,拌匀,再待温度降至17-20℃时将物料送入缸中,加入1.2-1.5倍的清水,密封发酵15-17天后出料,上甑蒸馏,得酒;
(4)取芦荟果肉,切成丁,得芦荟果粒;将桑椹子、大蒜加步骤(3)所得物料密封浸泡7-8小时后过滤除渣,然后与芦荟果粒及剩余物料混合,即得。
本发明中的火棘果为蔷薇科植物火棘的果实,唇香草为唇形科植物唇香草的全株。
本发明的有益效果为:
本发明的白酒的主要原料经与木鱼石混合蒸煮,木鱼石中的微量元素渗入其中,提升了营养价值,同时,本发明中添加了芦荟的果粒,使得本发明别具风味,此外,本发明还添加了山楂及多种中草药,具有开胃健胃的功效。
具体实施方式
一种果粒开胃白酒,其特征在于由以下重量份(公斤)的原料制成:
大米200、麦芽20、黑豆40、谷糠14、酒曲5.5、山楂35、生姜超微粉8、桑椹子20、大蒜10、芦荟30、山药5、鸡内金2、甘草4、猪苓2、火棘果1、唇香草2、木鱼石25、营养保健液10;
所述营养保健液由下列重量份(公斤)的原料制成:竹炭1.5、橄榄6、麦芽糖浆3、食醋15、灵芝孢子粉1;
制备方法为:将橄榄加食醋密封浸泡6-8小时后将橄榄滤除,所得醋液与一倍的清水合并,然后加入剩余物料,小火煮沸,过滤收集滤液,即得。
所述的果粒开胃白酒的制备方法,包括以下步骤:

1.一种果粒开胃白酒,其特征在于由以下重量份的原料制成:
大米200-210、麦芽20-22、黑豆40-45、谷糠14-15、酒曲5.5-6、山楂35-37、生姜超微粉8-10、桑椹子20-22、大蒜10-11、芦荟30-34、山药5-6、鸡内金2-3、甘草4-5、猪苓2-3、火棘果1-2、唇香草2-3、木鱼石25-27、营养保健液10-11;
所述营养保健液由下列重量份的原料制成:竹炭1.5-2、橄榄6-7、麦芽糖浆3-4、食醋15-17、灵芝孢子粉1-1.2;
制备方法为:将橄榄加食醋密封浸泡6-8小时后将橄榄滤除,所得醋液与一倍的清水合并,然后加入剩余物料,小火煮沸,过滤收集滤液,即得。
2.根据权利要求1所述的果粒开胃白酒的制备方法,其特征在于包括以下步骤:
