本发明涉及食品加工技术领域的烘焙食品饼干,具体涉及一种适于糖尿病人的营养饼干及其加工方法。
背景技术
辣木(Moringa Oleifera Lamarc),属于辣木树科(Moringaceae),为多年生常绿小乔木至大乔木, 原产印度北部西马拉雅山麓和非洲北部地区,被称为“神奇之树”。供食用栽培的有印度辣木树(Moringa oleifera)和非洲辣木树(Moringa stenopetala)两种品种。
辣木树性味:辛、微温、无毒,经研究辣木含有丰富营养,高维生素A、B、C、E,高蛋白质、高纤维;其中含有六种宏量元素(钙、镁、磷、钾、钠、硫)五种微量元素(锌、铜、铁、锰、硒)及十一种人体必需氨基酸(其中八种人体无法自行合成)。每100g辣木叶中含蛋白质27.1g,约为牛奶的2倍,维C约为鲜橙的7倍,钾是香蕉的三倍,铁是菠菜的三倍,维生素A是胡萝卜的四倍。根据统计只要三汤匙的辣木树叶粉,就含有幼儿每日所需的27%维他命A;42%蛋白质;125%的钙;70%的铁,22%的维生素C。近年来,辣木已成为欧、美、日等国家和台湾地区的加工新兴保健食品的主要原料,辣木被视为新时代健康的食物,其将成为人们提高生活及饮食品质,增强免疫力,促进身体健康,预防疾病的神奇植物。在印度传统的医学体系中,就有用辣木籽治疗糖尿病,用辣木叶治疗高血压的实例。
辣木籽的长相怪异,它的果荚像豇豆,但它的籽实却一点也不规矩,长得有菱有角,可生吃,对糖尿病,高血压有显著保健及防治作用。据研究种仁中各成分的质量分数为辣木油33.5%、辣木蛋白37.9%、淀粉6.1%、可溶性总糖17.1%(其中辣木多糖12.3%)、粗纤维7.5%、及丰富的宏量元素如:钙(Ca)、钾(K)、镁(Ma)、钠(Na)、磷(P)和微量元素如:锌(Zn)、铜(Cu)、铁(Fe)等。辣木籽很入口很脆且甜,慢慢咀嚼后吞下喉咙中的甜味仍然可保留好几分钟,其间吃其他食物的同时均会感觉到甜味。经常食用辣木籽可加强免疫力、排毒、塑身、抗老化、抗癌、并对多种慢性及弘远疾病都有极大的改良功效。
辣木油为非干性油, 含有76% 的单不饱和脂肪酸, 主要是油酸。另外, 辣木油中还含有天然的抗氧化物质, 这使辣木油具有非常稳定, 不易腐败的特性。
糖尿病是由遗传和环境因素相互作用而引起的常见病,糖尿病是一组常见的代谢内分泌病,临床以高血糖为主要标志,常见症状有多饮、多尿、多食以及消瘦或肥胖、疲乏无力等。糖尿病可引起身体多系统的损害。近30年来,我国糖尿病患病率显著增加。据中国中医科学院糖尿病研究总院调查资料显示,中国的糖尿病患者人数占世界糖尿病人群总数的五分之一,患病率居世界第二位,并且以每天至少3000人的速度增加,每年增加超过120万人。可对糖尿病患者来说,米饭不能吃饱,水果不能吃多,甜品基本不碰,食品单一,生活质量不佳。
随着人们健康观念的提升,预防高血糖无糖饼干愈发受到消费者的青睐。所谓无糖就是用不易被人体吸收的甜味剂代替传统的蔗糖、果糖和麦芽糖等,从而使饼干在具有甜味的同时又可以保障健康。现有的无糖饼干一般由精制面粉及木糖醇制成,口味及营养单一,难以满足人们对于饼干风味和健康的消费需求。伸筋草(申请号20141017995.7)、玫瑰茄(申请号200610048632.0),防治高血糖的保健饼干,虽然有其保健功能,但性能单一。本发明利用辣木种仁的特有甜味使饼干在具有甜味的同时又具有保健功效。
截至目前,未见在饼干配方中添加辣木种仁的公开记载。
发明内容
本发明目的在于提供一种营养丰富、口感酥脆,味道香甜,对糖尿病患者具有一定保健功效的营养饼干。为达到以上目的,本发明通过下列质量份的组分完成:
面粉60-90 份;
辣木种仁粉10-50 份;
辣木油10-20份;
鸡蛋10-20 份;
食盐0.1-0.5份。
所述面粉为荞麦粉、高粱粉或玉米粉中的一种或几种。
所述辣木种仁粉为辣木种仁粉直接破碎为碎粒,过1.0mm筛或辣木种仁冷榨后的油粨粉碎,过100目筛。
所述辣木油为辣木种仁冷榨的并经过常规处理的精油。
所述适于糖尿病人的营养饼干是将上述原料按常规方法进行原料预混、和面、成型、烘焙后制得。
由于上述技术方案的运用,使本发明与现有技术相比具有以下优点:
1、本发明在饼干中加入辣木种仁粉后,使饼干营养较普通饼干更全面、平衡,同时营养饼干中蛋白质、维生素、膳食纤维含量均高于普通饼干;
2、营养饼干的宏量元素钙、钾、磷、镁和微量元素铁、硒、锌、铜等含量均高于普通饼干。这些元素都有活化细胞,增强免疫力的功能,有助于防止糖尿病的繁衍。
具体实施方式
下面结合实施例对本发明作进一步的详细说明,但实施例并不是对本发明的限定。
实施例1
将采摘的辣木籽破壳取出种仁,种壳留做他用,种仁经60℃烘干后,破碎成细颗粒,过1mm 筛,得辣木种仁粉。
按下列配比备料:
荞麦粉60份;
辣木种仁粉20 份;
辣木油10份;
鸡蛋10份;
食盐0.1份。
将上述原料按常规方法进行原料预混、和面、成型、烘焙,得到营养丰富,口感酥脆,味道香甜,对糖尿病患者具有一定保健功效的营养饼干。
实施例2
将冷榨出油后的辣木种仁油粨,80℃烘干,粉碎,过100目筛,得辣木种仁粉。
按下列配比备料:
玉米粉90份;
辣木种仁粉40 份;
辣木油15份;
鸡蛋15份;
食盐0.2份。
将上述原料按常规方法进行原料预混、和面、成型、烘焙,得到营养丰富,口感酥脆,味道香甜,对糖尿病患者具有一定保健功效的营养饼干。
实施例3
按下列配比备料:
荞麦粉40份,高粱粉40份;
辣木种仁粉30 份;
辣木油15份;
鸡蛋20份;
食盐0.2份。
将上述原料按常规方法进行原料预混、和面、成型、烘焙,得到营养丰富,口感酥脆,味道香甜,对糖尿病患者具有一定保健功效的营养饼干。
实施例4
按下列配比备料:
荞麦粉60份,玉米粉30份;
辣木种仁粉30 份;
辣木油20份;
鸡蛋15份;
食盐0.2份。
将上述原料按常规方法进行原料预混、和面、成型、烘焙,得到营养丰富,口感酥脆,味道香甜,对糖尿病患者具有一定保健功效的营养饼干。
应当理解的是,对本领域普通技术人员来说,可以根据上述说明加以改进或变换,而所有这些改进和变换都应属于本发明所附权利要求的保护范围。
Claims (4)
1.一种适于糖尿病人的营养饼干,其特征在于由下列质量份的组分组成:
面粉60-90 份;
辣木种仁粉10-50 份;
辣木油20-40份;
鸡蛋10-20 份;
食盐0.1-0.5份。
2.如权利要求1 所述的适于糖尿病人的营养饼干,其特征在于所述面粉为荞麦粉、高粱粉或玉米粉中的一种或几种。
3.如权利要求1 所述的适于糖尿病人的营养饼干,其特征在于所述辣木种仁粉为辣木种仁粉直接破碎为碎粒,过1.0mm筛或辣木种仁冷榨后的油粨,粉碎,过100目筛。
4.如权利要求1 所述的适于糖尿病人的营养饼干,其特征在于所述辣木油为辣木种仁冷榨的并经过常规处理的精油。
