技术领域 本发明涉及一种杂粮浒苔凉粉,凉粉的主要成分为浒苔纤维质、豌豆粉、红薯粉、荞麦粉、柠檬汁,配以香菜、白芝麻、花生碎、蒜泥、麻油、辣椒油、鲜酱油、醋、盐、糖等佐料。技术属于食品加工领域。本发明的目的在于提供一款消暑解渴而又有补气益血的新型保健食品,夏季食用既可清凉解暑,又可补中和血、益气生津、养血安神、延缓衰老、促进肠胃蠕动、预防肺气肿、糖尿病、肥胖、胆结石、便秘、肠胃病等代谢性疾病,降血压降血脂降胆固醇,绿色健康。本发明利用天然浒苔纤维质复配杂粮粉熬制凉粉,完全纯天然生物配方,不添加任何化学成分,色泽青翠、晶莹剔透、滑嫩爽口、营养丰富、风味独特,是老弱妇孺皆宜的食物,尤其适合高血压、糖尿病、高血脂等三高患者、人群食用。
背景技术 凉粉是中国传统美食之一,其色泽洁白,晶莹剔透,嫩滑爽口。有诗称赞:“冰镇刮条漏鱼穿,晶莹沁齿有余寒。味调浓淡随君意,只管凉来不管酸。” 盛夏时间,吃一碗凉粉,真是凉盈盈、冰飕飕、酸溜溜、辣酥酥,别具风味,据《东京梦华录》载,北宋时期已有“细索凉粉”应市,距今有近千年的历史。传统的凉粉制作工艺需添加白矾,白矾的主要成分是十二水合硫酸铝钾,当白矾作为食品添加剂,被人食用后,基本不能排出体外,它将永远沉积在人体内。明矾中的铝不是人体需要的微量元素,过量摄入会影响人体对铁、钙等成分的吸收,从而导致贫血和骨质疏松,毒副作用主要表现为明矾可以杀死脑细胞,使人提前出现脑萎缩、痴呆等症状。2003年世界卫生组织曾将明矾列为有害食品添加剂。而且,凉粉大多都是由淀粉制作,吸收过多的淀粉会危害肠部和胃部消化,凉粉不宜空腹吃,会对消化道造成负担,引发腹痛等症状。因此,消费者夏季消暑解渴急需一种性温、清凉、爽口的凉粉。本发明采用天然浒苔纤维质复配豌豆粉、红薯粉、荞麦粉等杂粮制作凉粉,味甘、性平,补气和血,低热量又有丰富的营养价值。浒苔自古即为食用和药用藻类,据史书记载,浒苔可“烧末吹鼻止衄血,汤浸捣敷手背肿痛"。此外,它还有软坚散结、降低胆固醇的功效,可用于预防和治疗甲状腺肿等疾病。杂粮浒苔凉粉不仅具有预防疾病增强免疫力的保健功效,而且色泽青翠、晶莹剔透、滑嫩爽口,夏季可以消暑解渴,冬季多调辣椒又可驱寒,是老少皆宜的保健养生食品。
发明内容 本发明的要点在于使用浒苔纤维质复配杂粮熬制凉粉,完全纯天然生物配方,是一种高膳食纤维、低脂肪、低能量、富含矿物质和维生素的天然理想营养食品和保健食品。
本发明选择的配方如下(组分及其重量百分比%):浒苔纤维质10.0-12.0、豌豆粉1.0-3.0、红薯粉1.0-3.0、荞麦粉1.0-3.0、柠檬汁0.1-0.5、水至100.0,配以香菜、白芝麻、花生碎、蒜泥、麻油、辣椒油、鲜酱油、醋、盐、糖等佐料食用。
浒苔纤维质具有很高的食用价值,营养丰富,含糖、酸量高,含氨基酸,VitB1、VitB2、VitC、VitA,Fe,p等24种对人体有益的微量元素,素有天然维生素丸之称。营养成分分析表明在浒苔所含的17种氨基酸中,必需氨基酸含量较高,在其13种脂肪酸组成中,多不饱和脂肪酸、单不饱和脂肪酸和饱和脂肪酸的含量分别为50.5%、12.7%和36.8%,其中包括近4%的奇数碳原子脂肪酸,浒苔粗蛋白质含量为13.21%,粗脂肪为1.04%,灰分为21.87%,因此浒苔是一种高蛋白、高膳食纤维、低脂肪、低能量,且富含矿物质和维生素的天然理想营养食品和保健食品的原料。浒苔纤维质在本产品中具有健胃养脾,润肝利胆,祛滞化瘀,健美防衰,增强心脑血管机能及防癌抗癌、延年益寿之功效。
浒苔纤维质的功效作用主要有以下几方面:①双向调节免疫系统。浒苔提取物能够提高巨噬能力,明显增高白细胞数,同时增加白细胞自身的吞噬功能,促进体内白介素的分泌,增加血清免疫蛋白的产生。浒苔提取物可以保护肾上腺和胸腺及内分泌器官,使之不随年龄的增长而萎缩,维持内分泌系统的正常机能。正是由于浒苔提取物的这种功效,所以它具有降血糖和改善糖代谢作用,是糖尿病人理想的药品和保健品;②浒苔提取物具有显著降低胆固醇(TCH)、甘油三脂(TG)、低密度脂蛋白(LDL)、升高高密度脂蛋白(HDL)、保护血管内壁,阻止脂质在血管壁沉积,抗动脉硬化的作用。浒苔提取物可以调节氧在体内分解后产生的废物——脂肪酸,达到降血脂的目的;③浒苔提取物具有明显降低血粘稠度、调整血压功能、同时能防止微血栓形成并增加心肌细胞对缺氧的耐力,起到保护心肌的作用。科学实验证:浒苔提取物能降低脑血管及冠状血管阻力,增加冠状动脉血流量,减少心脏耗氧,浒苔提取物的这一作用及效果超过人参皂甙;④浒苔提取物的显著功效还在于,浒苔提取物在降压的同时,并不影响脑血管血流量,因此浒苔提取物对高血压、心血管痉挛性疾病及心功能不全的病人十分有益。浒苔凉粉具有色泽青翠、晶莹剔透、滑嫩爽口,除能降血脂、降胆固醇、糖尿病治疗,软化血管外,还具有怡神醒脑、清火明目、消食醒酒、清肝润肺、缓解疲劳、养生益寿保健之功效。
豌豆为一年生藤本作物,羽状复叶,小叶卵形,开白色或淡紫色的花,果实有荚。豌豆粉味甘、性平,归脾、胃经,具有补中益气,解毒利用的功效。豌豆富含优质蛋白质、胡萝卜素,可以提高机体的抗病能力和康复能力,增强机体免疫功能,防止人体致癌物质的合成,降低人体癌症的发病率。豌豆中还含有较为丰富的膳食纤维,能促进大肠蠕动,保持大便通畅,起到清洁大肠、防止便秘、抗癌防癌的作用。豌豆与一般蔬菜有所不同,所含的止杈酸、赤霉素和植物凝集素等物质,还具有抗菌消炎,增强新陈代谢的功能。
红薯粉是由晒干的红薯直接磨成的粉,非红薯制的淀粉。红薯含有蛋白质、各种维生素与矿物质、胡萝卜素和维生素C以及抑制癌细胞生长的抗癌物质、大量食物性纤维,所以能预防便秘、肠癌;同时能减少热量的摄取,是减肥的最佳食品之一,是 一种药食兼用的健康食品。红薯含有膳食纤维、胡萝卜素、维生素A、B、C、E以及钾、铁、铜、硒、钙等10余种微量元素,营养价值很高,被营养学家们称为营养最均衡的保健食品。吃红薯不仅不会发胖,相反能够减肥、健美、防止亚健康、通便排毒。每100克鲜红薯仅含0.2克脂肪,产生99千卡热能,大概为大米热量的1/3,是很好的低脂肪、低热能食品,同时又能有效地阻止糖类变为脂肪。红薯含有大量膳食纤维,无法被消化吸收,在肠道内能刺激肠道,增强蠕动,通便排毒,尤其对老年性便秘有较好的疗效。
荞麦粉又叫甜荞、乌麦、花荞,比其他谷类更能提供全面的蛋白质,是素食者很好的选择。荞麦的蛋白质中含有丰富的被称为人体第一必需氨基酸的赖氨酸成分,其能促进胎儿发育,增强孕妇的免疫功能。荞麦中的铁、锰、锌等微量元素和膳食纤维的含量比一般谷物丰富,还含有丰富的维生素E、烟酸和芦丁(芸香甙)。芦丁有降低人体血脂和胆固醇、软化血管、保护视力和预防脑血管出血的作用;烟酸能促进肌体的新陈代谢,增强解毒能力,降低血液中的胆固醇。荞麦巾丰富的镁能促进纤维蛋白溶解,使血管扩张,抑制凝血块的形成,可抗血栓和降低血清胆固醇。这些营养成分对孕妇很有意义。
柠檬汁在本产品中的作用是酸度调节剂 是用以维持或改变食品酸碱度,增进食品质量的许多功能特性,例如改变和维持食品的酸度并改善其风味;增进抗氧化作用,防止食品酸败;与重金属离子络合,具有阻止氧化或褐变反应、稳定颜色、降低浊度、增强胶凝特性等作用。
本发明产品的制备方法是:
(1)将浒苔纤维质按比例一边搅拌一边缓慢加入水中,充分搅拌均匀;
(2)将豌豆粉、红薯粉、荞麦粉按比例一边搅拌 一边缓慢加入(1)溶液中,充分搅拌均匀;
(3)加入少许鲜柠檬汁调节至合适口感;
(4)将⑶溶液放到中火上加热,一边加热一边不停搅拌,防止糊锅;
(5)约5min左右,⑷溶液变成哩状时,停止加热;
(6)将煮好的⑸溶液倒入容器中,自然冷却凝固,也可放入冰箱中冷藏;
(7)待凉粉凝固好后,配以香菜、白芝麻、花生碎、蒜泥、麻油、辣椒油、鲜酱油、醋、盐、糖等佐料按自己的口感调配好,搅拌均匀即可。
本发明具有以下优点:
(1)使用浒苔发纤维质复配豌豆粉、红薯粉、荞麦粉制作凉粉,营养丰富,补中和血、益气生津、养血安神;
(2)日常食用可延缓衰老、促进肠胃蠕动、预防肺气肿、糖尿病、肥胖、胆结石、便秘、肠胃病等代谢性疾病;
(3)本产品具有降血糖和改善糖代谢作用,是糖尿病人理想的药品和保健品;
(4)本产品具有显著降低胆固醇(TCH)、甘油三脂(TG)、低密度脂蛋白(LDL)、升高高密度脂蛋白(HDL)、保护血管内壁,阻止脂质在血管壁沉积,抗动脉硬化的作用;
(5)本产品具有健胃养脾,润肝利胆,祛滞化瘀,健美防衰,增强心脑血管机能及防癌抗癌之功效;

具体实施方式 下面结合实施例对本发明作进一步的详细说明:
以100kg为例按所述步骤进行配置:
1.配方(组分及其重量百分比%):浒苔纤维质10.0-12.0、豌豆粉1.0-3.0、红薯粉1.0-3.0、荞麦粉1.0-3.0、柠檬汁0.1-0.5、水至100.0,配以香菜、白芝麻、花生碎、蒜泥、麻油、辣椒油、鲜酱油、醋、盐、糖等佐料食用。
2.制备工艺流程:准备食材→按比例调开粉浆→上锅煮制凉粉→冷却凝固→切割凉粉→依次加入佐料→搅拌均匀,即可摆盘食用。
3.制备工艺:
(1)将浒苔纤维质按比例一边搅拌一边缓慢加入水中,充分搅拌均匀;
(2)将豌豆粉、红薯粉、荞麦粉按比例一边搅拌 一边缓慢加入(1)溶液中,充分搅拌均匀;
(3)加入少许鲜柠檬汁调节至合适口感;
(4)将⑶溶液放到中火上加热,一边加热一边不停搅拌,防止糊锅;
(5)约5min左右,⑷溶液变成哩状时,停止加热;

1. 本发明涉及一种杂粮浒苔凉粉,其特征在于具有如下配方(组分及其重量百分比%):浒苔纤维质10.0-12.0、豌豆粉1.0-3.0、红薯粉1.0-3.0、荞麦粉1.0-3.0、柠檬汁0.1-0.5、水至100.0,配以香菜、白芝麻、花生碎、蒜泥、麻油、辣椒油、鲜酱油、醋、盐、糖等佐料食用。
2. 根据权利要求1所述的一种杂粮浒苔凉粉,其特征在于具有如下制备工艺:
(1)将浒苔纤维质按比例一边搅拌一边缓慢加入水中,充分搅拌均匀;
(2)将豌豆粉、红薯粉、荞麦粉按比例一边搅拌 一边缓慢加入(1)溶液中,充分搅拌均匀;
(3)加入少许鲜柠檬汁调节至合适口感;
(4)将⑶溶液放到中火上加热,一边加热一边不停搅拌,防止糊锅;
(5)约5min左右,⑷溶液变成哩状时,停止加热;
