本发明提供一种果冻杯即食高钙养颜皮冻及其制作方法,其步骤为:将猪皮和猪骨按配方洗净处理后加4倍水与调料一起熬制浓缩后,添加调味品、防腐剂,分装灌入果冻杯灭菌封口成为即食产品。食品添加剂搅拌均匀,倒入果冻杯中,冷却成型后包装、杀菌、得到即食皮冻。本发明制作的果冻杯高钙养颜皮冻富含胶原蛋白质和高钙成分,营养丰富,风味独特,食用方便,是果冻的换代产品,利于儿童健康。

本发明涉及一种食品加工方法,具体涉及一种果冻杯即食高钙养颜皮冻及其制作方法。
背景技术
猪皮是一种胶原蛋白含量很高的肉制品原料。它在烹调过程中可转化成明胶,明胶具有网状空间结构,它能结合许多水,增强细胞生理代谢,有效地改善机体生理功能和皮肤组织细胞的储水功能,使细胞得到滋润,保持湿润状态,防止皮肤过早褶皱,延缓皮肤的衰老过程。
儿童非常喜爱食用果冻,但因果冻是一种明胶添加果味和防腐剂的产品,没有营养成分,过多食用会对身体造成伤害。将皮冻开发成为一种儿童喜爱的高钙高营养即食产品市场前景广阔。
发明内容
为解决上述问题,本发明提供一种果冻杯即食高钙养颜皮冻及其制作方法。
本发明采用的技术方法为:一种果冻杯即食高钙养颜皮冻,包括以下按重量份数的组分组成:
主料:猪皮1500份、猪腿骨500份;
辅料:食用碱40份,食醋20份,盐50份,味精15份;
调料:葱段:50份,姜块30份,胡椒15份,八角10份,新鲜柠檬皮5份,枸杞10份;
添加剂:琼脂5份,卡拉胶2份,魔芋粉3份,防腐剂5份。
本发明所述一种果冻杯即食高钙养颜皮冻制作方法,其步骤为:
(1)将猪皮洗净,放入开水中煮5分钟后捞出、沥干,将肉皮上的肥膘肉与残毛刮净后,切成宽度为4-6cm的长条;
(2)将切成长条的肉皮放入盆中,加入浓度为1%的热碱水进行搓洗5-10分钟后,用清水再冲洗两遍;
(3)将切成丁的肉皮放入钢制容器内,加入肉片重量的4倍开水,放入调料包,用大火煮30分钟后,漂除浮沫,改为小火熬制,蒸发去80%的水分,捞出调料包,得到养颜皮冻液;
(4)趁热向养颜皮冻液中加入盐、味精和添加剂,搅拌均匀,分装灌入果冻杯中,灭菌封口冷却成型,即可得到果冻杯即食高钙养颜皮冻。
本发明所述调料用布袋包装,与主料和水放入锅内熬制,结束后捞出。

1.一种果冻杯即食高钙养颜皮冻,其特征在于:一种果冻杯即食高钙养颜皮冻由以下按重量份数的组分制作而成:
主料:猪皮1500份、猪腿骨500份;
辅料:食用碱40份,食醋20份,盐50份,味精15份;
调料:葱段:50份,姜块30份,胡椒15份,八角10份,新鲜柠檬皮5份,枸杞10份;
添加剂:琼脂5份,卡拉胶2份,魔芋粉3份,防腐剂5份。
2.一种果冻杯即食高钙养颜皮冻的制作方法,其特征在于:包括以下制作步骤:(1)将猪皮洗净,放入开水中煮5分钟后捞出、沥干,将肉皮上的肥膘肉与残毛刮净后,切成宽度为4-6cm的长条;
