技术领域
本发明属于食品加工技术领域,涉及一种挂面。
背景技术
挂面,一直是深受中国老百姓喜爱的传统食品。然而,随着生活水平的日益提高,人们对挂面的色、香、味、营养要求越来越高,功能型、保健型营养挂面越来越受到欢迎。在追求营养和健康的当今社会,传统挂面由于其配料单一、口感欠佳而渐渐失去往日之辉煌。因此研制开发一种新型营养挂面势在必行。
发明内容
本发明的目的是在传统挂面的基础上取长补短、推陈出新,提供一种虫草菇挂面,使其具有较高的营养价值,满足现代消费需求。
本发明的虫草菇挂面按照质量比由以下原料加工而成:面粉100~200、虫草菇粉2~10、食盐1~5、食用碱0.1~0.5、瓜尔胶0.2~0.6、黄原胶0.1~0.5、味精0.2~0.8、Vc 0.01~0.05、谷朊粉1~5、魔芋精粉0.2~0.6。
本发明中,面粉为75粉。
虫草菇是一种新食用菌,它片状圆形无柄,肉质厚嫩味甘微苦,气味清香,45天生成。因形似菇片固称虫草菇。经检测虫草菇含有人体必需的8种氨基酸,丰富的蛋白质、组纤维、多种V生素和有益身体的微量元素,还含有虫草酸、虫草素、虫草多糖、腺苷、尿苷、胞嘧啶、尿嘧啶、胸腺嘧啶等。毒理评价证明:虫草菇用于人体安全可靠。重金属含量低于国标。虫草菇秉承了天然虫草的性质,功效与天然虫草相同。它能有效地调节人体免疫,增强体质,延缓衰老。特别是对气血双虚、精髓不足、咳喘阳萎、失眠健忘、腰肢冷痛、月经不调、内分泌紊乱有明显迅速的功效,对肺癌、肝癌有较好的辅疗作用。
本发明具有如下优点:

具体实施方式四:本实施方式的虫草菇挂面按照质量比由以下原料加工而成:面粉180、虫草菇粉8、食盐4、食用碱0.4、瓜尔胶0.5、黄原胶0.4、味精0.6、Vc 0.04、谷朊粉2、魔芋精粉0.3。

1.一种虫草菇挂面,其特征在于所述挂面按照质量比由以下原料加工而成:面粉100~200、虫草菇粉2~10、食盐1~5、食用碱0.1~0.5、瓜尔胶0.2~0.6、黄原胶0.1~0.5、味精0.2~0.8、Vc 0.01~0.05、谷朊粉1~5、魔芋精粉0.2~0.6。
2.根据权利要求1所述的虫草菇挂面,其特征在于所述挂面按照质量比由以下原料加工而成:面粉100、虫草菇粉6、食盐2、食用碱0.2、瓜尔胶0.43、黄原胶0.3、味精0.4、Vc 0.03、谷朊粉3、魔芋精粉0.43。
