背景技术
豆类及豆制品含蛋白质很高,一般在20~40%之间,以大豆含量最高。有人计算,1斤黄豆蛋白质的含量相当于2斤多瘦猪肉或3斤鸡蛋或12斤牛奶,因此,黄豆被人们称之为“植物肉”。豆类及豆制品的蛋白质不仅含最高,而且质量也好,豆类蛋白质的氮氨酸组成与动物蛋白质相似。接近人体需要,其中谷类食物中较为缺乏的赖氨酸在豆类中含量丰富,因此宜与谷类混配食用。
豆类的脂肪含量因种类不同相差很大,大豆含18%左右,故可作为食油原料。而除大豆外的其他豆类仅含脂肪1%左右。大豆脂肪多为不饱和脂肪酸组成,其溶点低,易于消化吸收,并含有丰富的亚麻油酸和磷脂,是优质脂肪,因此,黄豆和豆油常披推荐为防治冠心病、高血压、动脉粥样硬化等疾病的理想食品。
豆类的营养价值非常高,我国传统饮食讲究“五谷宜为养,失豆则不良”,意思是说五谷是有营养的,但没有豆子就会失去平衡。现代营养学也证明,每天坚持食用豆类食品,只要两周的时间,人体就可以减少脂肪含量,增加免疫力,降低患病的几率。因此,很多营养学家都呼吁,用豆类食品代替一定量的肉类等动物性食品,是解决城市中人营养不良和营养过剩双重负担的最好方法。
豆类所含蛋白质含量高、质量好,其营养价值接近于动物性蛋白质,是最好的植物蛋白。
氨基酸的组成接近于人体的需要,是我国人民膳食中蛋白质的良好来源。豆类所含的脂肪以大豆为最高,可达18%,因而可作食用油的原料,其他豆类含脂肪较少。豆类含糖量以蚕豆、赤豆、绿豆、豌豆含量较高,为50%~60%,大豆含糖量较少,约为25%左右。因此,豆类供给的热量也相当高。豆类中维生素以B族维生素最多,比谷类含量高。此外,还含有少量的胡萝卜素。豆类富含钙、磷、铁、钾、镁等无机盐,是膳食中难得的高钾、高镁、低钠食品。
大豆异黄酮是黄酮类化合物中的一种,主要存在于豆科植物中,大豆异黄酮是大豆生长中形成的一类次级代谢产物。由于是从植物中提取,与雌激素有相似结构,因此大豆异黄酮又称植物雌激素,能够弥补30岁以后女性雌性激素分泌不足的缺陷,改善皮肤水分及弹性状况,缓解更年期综合症和改善骨质疏松,使女性再现青春魅力。大豆异黄酮的雌激素作用影响到激素分泌、代谢生物学活性、蛋白质合成、生长因子活性,是天然的癌症化学预防剂。
红豆:红豆补心脏。红豆被李时珍称为“心之谷”。红豆含有较多的膳食纤维,具有润肠通便、降血压、降血脂、解毒抗癌、预防结石、健美减肥的作用,同时有良好的利尿作用。

丁葵草:是一种多年生豆科小草本,生于荒野。全草夏秋采收,晒干,可以祛瘀消肿,调起利湿。
蘘荷:一种多年生姜科草本,根部具有药用价值,其嫩花序、嫩叶可当蔬菜,花序可治咳嗽,配生香榧治小儿百日咳有显效。
余甘子:大戟科叶下珠属植物,其果鲜食酸甜酥脆而微涩,回味甘甜。
一种八宝粥的制备方法,其特征在于包括以下几个步骤:
(1)将绿豆、红豆、赤豆、白芸豆、豌豆、莲子、黑豆混合,准备炒锅,倒入香油,烧至冒青烟,倒入混合豆类,反复翻炒至豆表面出现糊焦为止;
(2)将(1)所述的经过翻炒的豆子放入高压锅中,加入水,烧开,之后转为文火慢炖30~40min至豆类表面炸开露出内仁为宜;
(3)准备砂锅,加入薏仁米、枸杞、食用碱、葡萄干、水,大火烧开,焖8~10min,将红糖、蜂蜜、水混合后加入砂锅,再倒入助剂、(2)所述的炖烂的豆类及其它剩余材料,搅拌混匀,文火继续煮15~25min即可。
本发明的优点:本发明的八宝粥特别添加了多种豆类,有红豆、绿豆、黑豆、豌豆等;众所周知,豆类所含蛋白质含量高、质量好,其营养价值接近于动物性蛋白质,是最好的植物蛋白,而黄豆更被称为“植物肉”,豆类中的纤维可以疏肠通便,促进消化;本发明中的豆类在入粥之前,先是经过翻炒,使其表面焦糊,在经过高压锅炖烂,这样煮好的粥吃起来有一种特有的糊香味,还入口即化,营养丰富,美味多滋。

所述助剂由以下重量份的原料制成:炒薏仁粉5~6、蘘荷花苞3~4、小麦胚芽1~2、煅牡蛎2~3、海藻2~3、丁葵草4~5、余甘子10~12;
所述助剂的制备方法是将除炒薏仁粉以外的各原料混合,加水煎煮,过滤得提取液,提取液浓缩后烘干,与炒薏仁粉混合即得;
所述一种八宝粥的制备方法,包括以下几个步骤:
