本发明属于一种食品添加剂,特别涉及一种膨松剂食品添加剂。
背景技术
食品添加剂是为改善食品色、香、味等品质,以及为防腐和加工工艺的需要而加入食品中的化合物质或者天然物质。膨松剂(Bulking Agents)在食品加工过程中加入的,能使面胚发起形成致密多孔组织,从而使制品具有膨松、柔软或酥脆的物质。膨松剂是常见的食品添加剂之一,一般分为生物膨松剂和化学膨松剂,不同膨松剂的使用原理是一致的。常用的的膨松剂是含铝的泡打粉,而饮食中铝的含量过多会减退人的记忆力和抑制免疫功能,应用范围及其存在的安全隐患。油炸食品是一种传统的方便食品,利用油脂作热交换介质,使油炸食品中的淀粉糊化,蛋白质变性,水分子以蒸汽的形式逸出,使食品具有多孔性以及外皮酥脆的特殊口感,同时由于食品中的蛋白质、碳水化合物、脂肪及一些微量成分在油炸过程中发生变化而产生特殊的风味。因此,油炸食品在国内外倍受消费者的喜爱,油条就是深受广大消费者喜爱的食品之一,更是一种物美价廉的方便食品,通常作为早餐使用,在饮食业占有重要的地位,已随着华人的足迹遍布世界。面包、蛋糕、馒头等食品的特点是具有海棉状多孔组织,因此口感柔软。在制作上为达到此种目的,必须使面团中保持有足量的气体。物料拌和过程中混入的空气和物料中所含水份在烘焙时受热所产生的水蒸气,能使产品产生一些海棉状组织,但要达到制品的理想效果,气体量是远远不够的。所需气体的绝大多数是由膨松剂所提供,因此膨松剂在食品制造中具有重要的地位。膨松剂是在以小麦粉为主的焙烤食品中添加,并在加工过程中受热分解,产生气体,使面胚起发,形成致密多孔组织,从而使制品具有膨松、柔软或酥脆咸的一类物质。它可有碱性膨松剂和复合膨松剂两类。前者主要是碳酸氢钠产生二氧化碳,使面胚起发。酸性物质尚可中和在产生一氧化碳过程中所形成的碱性盐,以及调节二氧化碳产生的速度。而淀粉等则具有有利于膨松剂保存,调节气体产生速度,使气泡分布均匀等作用。膨松剂是在以小麦粉为主的焙烤食品中添加,并在加工过程中受热分解产生气体,使面胚起发,形成致密多孔组织,从而使制品具有膨松、柔软或酥脆的一类物质。膨松剂也称膨胀剂、疏松剂或发粉。它不仅可提高食品的感官质量,而且也有利于食品的消化吸收,这在今天大力发展方便食品并强调其营养作用时具有一定的重要性。不同的膨松剂在原理上是一致的,即都是通过发酵剂在面团中产生大量二氧化碳气体,在蒸煮过程中,二氧化碳受热膨胀,于是面团就变得松软,形成疏松的结构。膨松剂不仅能使食品产生松软的海棉状多孔组织,使之体积膨大、口感柔松可口;而且能使咀嚼时唾液很快渗入制品的组织中,以溶出制品内可溶性物质,刺激味觉神经,使之迅速反应该食品的风味;食品进入胃之后,各种消化酶能快速进入食品组织中,使食品容易、快速地被消化、吸收,避免营养损失。传统的泡打粉、膨松剂;一般含有明矾、酒石酸氢钾、磷酸盐等成分,产气速度难以控制,发泡不均匀;过去曾认为这样的含铝复合膨松剂是无害的,但随着人们对铝的认识逐步深化,其生物毒性也逐渐被人们认识。各种科学研究表明,过量食用铝会对人体的造血系统、骨骼以及神经系统产生不可恢复的伤害,导致老年痴呆、骨质疏松等疾病。有资料表明,使用含铝复合膨松剂很容易导致铝超标,危害消费者的身心健康。经中国公开专利检索,没发现与本专利申请相同的方案。

本发明具有原料易得,成本低,无铝绿色环保,使用方便,效果好的优点。
